1 loaf or 8 thick slices fruit bread<br />

250g reduced fat ricotta cheese<br />

1-2 tablespoons icing sugar<br />

1/2 teaspoon vanilla essence<br />

500g strawberries, halved<br />

3 passionfruit, halved<br />

2 tablespoons maple syrup<br />

Method<br />

1 toast the fruit bread slices until<br />

crisp and golden. Keep warm.<br />

2 Put the ricotta, icing sugar and<br />

vanilla essence in a bowl and mix<br />

gently to combine.<br />

3 Put the strawberries, passionfruit<br />

and maple syrup in a bowl and stir<br />

gently to coat the berries with syrup.<br />

4 Put two slices of the toast on a<br />

plate, top with a generous dollop<br />

of the ricotta mixture and finish off<br />

with a couple of spoonfuls of the<br />

berry mix.<br />

this recipe is also delicious<br />

with a mix of either banana<br />

and passionfruit, or mango and<br />

passionfruit, instead of strawberries.<br />
