our menuAt McDonald’s ® we are committed to providing high quality food,using the best raw ingredients, working with trusted suppliers andensuring consistent preparation standards.Our menu is based on staple foods such as meat,fish, potatoes, eggs, milk and grain. High qualityingredients are used and we source a significantproportion of our products from the UK.As a family restaurant serving around 2 millioncustomers in the UK every day, McDonald’s highestpriority is food safety. We will not use any productor ingredient that does not meet our own highstandards of quality and safety, or that has notreceived the approval of the relevant UK and EUauthorities.We have a highly trained team of professionalswho work very closely with our supplier partners todevelop and maintain the highest possible standardsof food quality, safety and traceability at every stage.We have made many changes to our menu inrecent years. In particular we have broadened thechoice of menu items to include portions of fruitand vegetables. We introduced fresh fruit bags in2004, and in 2005 we added carrot sticks to ourmenu, enabling Happy Meal customers to make achoice between a fruit bag, carrot sticks or FrenchFries at no extra cost. For Extra Value Meals thereis now the choice between a Garden Side Salad orFrench Fries. We also offer a much broader range ofnon-carbonated drinks such as fresh orange juice,organic semi skimmed milk and water.In 2007 we switched to using organic semi skimmedmilk for all our teas and coffees and also now onlyuse Arabica coffee beans that have been speciallyselected by our supplier from sustainable farmscertified by the Rainforest Alliance. In addition PGtips tea is now fully from Rainforest Alliance Certifiedfarms.We work closely with organisations such as the FoodStandards Agency (FSA) to ensure our food meets,and where possible exceeds, government guidelines.As part of our nutrition information initiative, since2006, nutrition and GDA information can be foundon product packaging. our menuBeefAll our hamburger products, including Big Mac ® ,Quarter Pounder with Cheese, Hamburger, andCheeseburger, are made using 100% beef -whole cuts of high quality forequarter and flank.Individual beef burgers are prepared and packagedat McDonald’s approved meat suppliers whoundertake thorough quality checks on everybatch. Nothing is added or taken away from thebeef - preservatives, additives, binders or fillersare never used. In the restaurant, two-sided hotplates are used to cook the beef, so no extra fat isneeded during cooking. After cooking, the beef isseasoned with a little salt and pepper.McDonald’s is proud to be one of the biggestpurchasers of British and Irish beef – sourcing fromover 16,000 British and Irish farms. Each of thesefarms are accredited by nationally recognised FarmAssurance Schemes, including Assured British Meats(ABM) and Assured Food Standards, as well as beingaudited against our own strict requirements. Audits arealso carried out by both our suppliers and independentauditors. The entire supply chain is closely monitoredto ensure the highest standards of animal welfare,safety and quality – giving us full control over allaspects of farming, including feed and animal welfare,and ensuring we are able to trace right back to thefarms on which the livestock was raised.In 2008 we were the winner of the RSPCAGood Business Award (restaurant chain category),which recognises our commitment to improvinganimal welfare.ChickenThe only chicken meat we use across our entirechicken menu, including Chicken Legend ® ,Chicken Selects, Chicken McNuggets ® ,McChicken ® Sandwich, Mayo Chicken, ChickenSnack Wraps, Chicken & Bacon Salads andDeli Choice Wraps and Sandwiches is carefullydeboned chicken breast meat. We only use poultryproducers who have been accredited and regularlyaudited by our suppliers. In the UK the poultrymust be produced to at least the standards set bynationally recognised Farm Assurance Scheme. Wealso source chicken from other countries in Europeas well as Brazil and Thailand. All these suppliesmust comply with our MAAP standards.Strict animal welfare standards are in place, whichhave been developed with our chicken suppliers.The feed used for rearing our chickens is notgenetically modified and is free from antibioticgrowth promoters. Diets are carefully formulated byexperienced nutritionists, with bird health regularlymonitored by veterinary personnel.The Chicken Legend is made from a high qualitypiece of whole muscle chicken breast fillet in a crispycoating that is infused with seasoning and spices. Itis served in a ‘rustic’ brown roll with Batavia lettuceand a choice of sauce, Spicy Tomato Salsa orCool Mayo. The McChicken Sandwich and MayoChicken contain carefully deboned breast meat in alight batter coating and are served in a toasted bunwith sauce and lettuce. Our Chicken McNuggets,which are also made from carefully deboned breastmeat, are coated in a specially seasoned batter andserved with a choice of sauce portions. Our deliChicken pieces are made from chicken breast meat,marinated in a grilled style marinade. Our ChickenSelects are made from marinated strips of carefullydeboned whole muscle chicken breast meat coatedin a seasoned flour breadcrumb and served with achoice of sauce portions or as part of our ChickenSnack Wraps. Our Chicken & Bacon Salad rangeuses either a Chicken Legend patty for the CrispyChicken & Bacon Salad or deli Chicken pieces in theGrilled Chicken & Bacon Salad.PorkAll of our suppliers of pork comply with UK animalwelfare legislation and are covered by a recognisedFarm Assurance scheme, such as British QualityPork and Assured Food Standards (Red TractorAssurance Scheme), as well as being audited againstour own strict requirements. our menuOur bacon is made from prime cuts of pork belly orback, which is trimmed, cured and carefully sliced.Our sausage patties are made from prime cuts ofpork and are lightly seasoned with herbs.FishThe fish we use in our Filet-o-Fish ® is filletedAlaskan Pollock or Hoki, and in our Fish Fingers it isfilleted Hoki. Both fish are sourced from sustainablefisheries. No additives of any kind are used in thefilleted fish and great care is taken to ensure thatonly high quality fish is used. Every effort is made toremove all of the bones from the fish.Our Filet-o-Fish is served in a steamed bun withtartare sauce and a small slice of cheese.EggsSince the end of 2008 all of the eggs used acrossthe entire menu are Free Range. We take great careto ensure that all of our free range eggs conform tothe Lion Mark code of practice. Our suppliers areaccredited by the nationally recognised Free RangeFarm Assurance scheme. In 2006 and 2007 wereceived the “Good Business of the Year Award” fromthe British Free-Range Egg Producers’ Association,which recognises our commitment to free-rangeegg production in the UK. All the eggs we use comefrom hens fed on a non-GM diet free from artificialcolourants.PotatoesMcDonald’s famous French Fries are producedfrom only the best quality potatoes such as RussetBurbank, Shepody and Pentland Dell - the vastmajority of which come from the UK. These varietiesare selected because of their unique shape and size,which leads to our characteristically long fries. Theyalso grow really well in UK soil.Dairy ProductsAll of our milk for our Milkshakes, McFlurrydesserts and Organic Milk Bottles is sourced fromfarms in the British Isles. We can trace all this milkright back to the farms where it came from. The mainingredient in our Milkshakes is semi-skimmed milk(approximately 75%).Organic semi skimmed milk is used for all our teaand coffees and is available in individual 250mlbottles. Experts confirm organic milk provides higherlevels of vitamin E, antioxidants and Omega-3 fattyacids than regular milk.ProduceWe choose to use iceberg lettuce for our mainsandwiches because of its sweet flavour, crisptexture and popularity, and we use at least fivevarieties of salad leaf in our Premium salads – whichcount towards 2 portions of your 5 a Day target forFruit and Vegetables.We encourage good environmental practice, forexample, water recycling is used to irrigate the cropsduring the summer months, while the waste lettuce isused as compost.In our Happy Meal option there is a choicebetween Apple and Grape Fruit Bags, CarrotSticks or French Fries, and in our Extra ValueMeals you can choose between a Garden SideSalad or French Fries. Each portion of salad, fruitor carrot sticks counts as 1 portion towards your 5a day target for Fruit and Vegetables.No flavourings are added to our French Fries apartfrom a little salt prior to serving. At certain timesof the year when there is little naturally occurringsugar in potatoes, a light sugar solution may beused to ensure that our French Fries maintain theircharacteristic golden colour.5

our menuSaucesAll our sauces are specially formulated andpasteurised to reduce the need for extra chemicalpreservatives. We take great care to ensure whereverpossible natural flavours and natural colours are used.Cooking OilThe cooking oil used in the restaurants is anon-hydrogenated vegetable oil that is a blendof High Oleic Sunflower Oil, Sunflower Oil,Rapeseed Oil and High Oleic Rapeseed Oil.It is used to prepare the following products:Chicken McNuggets, Chicken Selects , ChickenLegend patties, McChicken Sandwich patties,Mayo Chicken patties, Filet-o-Fish portions, SpicyVegetable patties, French Fries, Hash Browns andApple Pies.Since 1998 the levels of Trans Fatty Acids in ourcooking oil have been reduced from 30% to below2%. This is the lowest possible level that can beachieved because of the presence of naturallyoccurring trans fats in oils.Nut and other Food AllergiesWe are aware of the serious health risk topeople who are allergic to whole peanuts, nutsor nut derivatives. These are therefore excludedas ingredients from all the products describedin this document. However, we are unable tocategorically state that our products are 100%free of nuts or nut derivatives, because as with allfood manufacturers there is always the possibilityof cross-contamination at some point in the foodchain. The cooking vatsare filtered manually using a strict order of rotationto minimise any chance that oil residues from theprevious filtering could get into the vat used forvegetable patties. However during this manualprocess there is a possibility that tiny traces ofthe vegetable oil used to cook the chicken and/or fish products may come into contact with thevegetable oil used to cook the vegetable patties.
