Avoiding GoutHave you ever seen a painting of a nobleman with hisbandaged foot propped up <strong>on</strong> a footstool? Chances arethat he was suffering from gout, a comm<strong>on</strong>, painful<strong>for</strong>m of arthritis. Gout is still a problem today and mostcomm<strong>on</strong>ly occurs am<strong>on</strong>g men over age 40. Close to 3milli<strong>on</strong> American men have gout. Where genetics cancertainly play a role in determining <strong>on</strong>e’s risk <strong>for</strong> gout,other more c<strong>on</strong>trollable factors are also important.A recent study examined close to 29,000 healthy,physically active male runners to see which factorsaffected their risk of having gout. One factor that wasidentified was meat c<strong>on</strong>sumpti<strong>on</strong>; even am<strong>on</strong>g this relativelyhealthy group, men eating the most meat hadthe highest risk of developing gout. Other factors thatincreased risk of gout included higher alcohol intake,lower fruit intake, being overweight or obese, and beingless physically active. Both chr<strong>on</strong>ic br<strong>on</strong>chitis and emphysemaare types of COPD, the fourth-leading cause of deathin the United States. Smokers are especially likely todevelop COPD. A recent study looked at whetherdietary factors also play a role.Cured meats like bac<strong>on</strong>, hot dogs, and deli meatsc<strong>on</strong>tain nitrites, which are added as preservatives.Nitrites, which are also present in tobacco smoke, candamage lung tissue. Frequent c<strong>on</strong>sumpti<strong>on</strong> of curedmeats c<strong>on</strong>taining nitrites could potentially cause damageto the lungs. (Of course, if you’re choosing vegetarianproducts such as veggie bac<strong>on</strong>, dogs, and delislices, you d<strong>on</strong>’t have to worry about nitrites sincethese foods d<strong>on</strong>’t c<strong>on</strong>tain them.)Epidemiologists looked at more than 71,000 registerednurses and found that those who c<strong>on</strong>sumed curedmeats most frequently were most likely to have COPD.Those at lowest risk <strong>for</strong> COPD were women wh<strong>on</strong>ever smoked and who rarely or never ate cured meat;those at highest risk were current smokers who atefour or more servings of cured meat a week. You mightguess that smokers were more likely to eat cured meats.They were, but the increased risk of COPD in womenwho ate cured meat was seen even when adjustmentswere made <strong>for</strong> smoking. Similar results were seen in anearlier study of male health professi<strong>on</strong>als d<strong>on</strong>e by thesame researchers. In some cases, mild stress can lead toimproved per<strong>for</strong>mance. However, enduring c<strong>on</strong>stantstress and anxiety can be debilitating and increase risk<strong>for</strong> chr<strong>on</strong>ic diseases like heart disease.Do dietary factors play a role in stress? That’s thequesti<strong>on</strong> researchers from Greece asked when theystudied close to 1,000 men and women. Subjectsof this small study were asked questi<strong>on</strong>s about theirdiet and their current level of anxiety; nervousnessand worry was assessed. Am<strong>on</strong>g women, those whodescribed themselves as less anxious ate less red meatand fewer sweets than women who described themselvesas more anxious.
