STAGE 2 FOOD & HOSPITALITY CULTURAL CAFE<br />
On Tuesday <strong>15</strong>th May, the Year 12<br />
Food and Hospitality students held a<br />
Cultural Café in the Dining room of the<br />
Rec Centre. We invited a number of<br />
paying guests including <strong>Gleeson</strong> Staff<br />
and our family members.<br />
We chose groups of 2 to 3 and decided<br />
on a specifi c culture to represent with<br />
a two course meal .We trialled the<br />
recipes to ensure they were suitable<br />
and achievable. The cultures chosen<br />
were Mexican, American, Italian,<br />
Indian, Thai, English and Greek.<br />
Before the guests arrived, lots of<br />
preparati on and hard work took place<br />
to ensure the café ran smoothly and all<br />
dishes were ready to serve by 1:05pm.<br />
Serving 6-8 people on each table ended<br />
up being a challenge. Yet with use of<br />
teamwork, planning and organisati on<br />
the class successfully catered for<br />
the 2012 Cultural Café event. It was<br />
amazing that despite the ‘chaos’ in the<br />
kitchen during service, the atmosphere<br />
in the dining room was peaceful.<br />
The Cultural Café was a successful<br />
functi on that showcased a range of<br />
unique cultures. The meals prepared<br />
looked and tasted amazing and would<br />
be considered café quality. It was a<br />
fantasti c and enjoyable day for both<br />
guests and the Year 12 Food and<br />
Hospitality class.<br />
