RESOURCE ® PUREE APPEAL ®Pureed Food EnhancerPUREED SCALLOPED POTATO AND HAM (CONTINUED)HOW TO PREPARE:1. Place cooked, diced ham in blender or food processor.2. Add white sauce <strong>and</strong> first amount of hot water, <strong>and</strong> blend until smooth in texture.3. Add first amount of RESOURCE ® PUREE APPEAL ® Pureed Food Enhancer <strong>and</strong> blend briefly until mixed. If necessary, scrape down sides withspatula.4. Pour into steamtable pan coated with vegetable cooking spray.5. Place cooked, sliced potatoes in blender or food processor.6. Add second amount of hot water <strong>and</strong> grated cheese, blend until smooth in texture.7. Add second amount of RESOURCE ® PUREE APPEAL ® Pureed Food Enhancer <strong>and</strong> blend briefly until mixed. If necessary, scrape down sides withspatula.8. Spread evenly over ham mixture.9. Cover tightly <strong>and</strong> bake in conventional oven at 350ºF until temperature reaches 150-160ºF, or knife inserted near center comes out clean. Let set for5 – 10 minutes before cutting. NOTE: Convection Oven – bake at 300ºF for 10 – 15 minutes less time. Pressureless Steamer – Cook in steamer for10 – 15 minutes less time. Times are approximate <strong>and</strong> should be adjusted for differences in oven <strong>and</strong> steamer conditions.10.
