CUUL 1400 - Basic Nutrition3.000 CreditsPrerequisites: Regular StatusThis course will emphasize nutrients and nutritional needs. Specialneeds and diets will be explored with an emphasis on manipulatingmeal components in order to meet the needs of these diets. Nutritionfor different phases of the life cycle and current trends in nutrition willalso be explored.CUUL 2130 - Culinary Practicum and Leadership6.000 CreditsPrerequisites: CUUL 1220; CUUL 1320This course familiarizes the student with the principles and methods ofsound leadership and decision making in the hospitality industry andprovides the student with the opportunity to gain management/supervision experience in an actual job setting. <strong>Student</strong>s will be placedin an appropriate restaurant, catering, or other food service businessfor four days per week throughout the quarter. On-the-job trainingtopics include restaurant management/on-off premise catering/foodservice business, supervisory training, and management training, on-offpremise catering, hotel kitchen organization, kitchen management,restaurant kitchen systems, institutional food systems, kitchendepartmental responsibilities, and kitchen productivity. Course content reflects AmericanCulinary Federation Educational Institute cook apprenticeship trainingobjectives and provides background for those aspiring to becomechefs. Topics include international cuisine, advanced grill cookery,advanced vegetable cookery, advanced meat cookery, advanced linecookery, advanced fry cookery and nutrition. Laboratory practiceparallels class work. Provides in-depth experience in preparing manytypes of baked goods commonly found in restaurants and hotels.Course content reflects American Culinary Federation and RetailBakery Association training objectives and provides background forthose aspiring to become pastry chefs or bakery supervisors.
