(1) The EXCLUDED or RESTRICTED FOOD EMPLOYEE providesto the PERSON IN CHARGE written medical documentationfrom a HEALTH PRACTITIONER stating that the FOODEMPLOYEE is free of a Shigella spp. infection based on testresults showing 2 consecutive negative stool specimencultures that are taken:(a) Not earlier than 48 hours after discontinuance ofantibiotics, and(b) At least 24 hours apart;(2) The FOOD EMPLOYEE was EXCLUDED or RESTRICTED aftersymptoms of vomiting or diarrhea resolved, and more than7 calendar days have passed since the FOOD EMPLOYEEbecame ASYMPTOMATIC; or(3) The FOOD EMPLOYEE was EXCLUDED or RESTRICTED anddid not develop symptoms and more than 7 calendar dayshave passed since the FOOD EMPLOYEE was diagnosed.EHEC or STECdiagnosis - removingexclusion or restriction(F) Reinstate a FOOD EMPLOYEE who was EXCLUDED orRESTRICTED as specified under Subparagraphs 2-201.12(A)(2)or (F)(1) or who was RESTRICTED under Subparagraph2-201.12(F)(2) if the PERSON IN CHARGE obtains APPROVAL fromthe REGULATORY AUTHORITY and one of the following conditionsis met:(1) The EXCLUDED or RESTRICTED FOOD EMPLOYEE providesto the PERSON IN CHARGE written medical documentationfrom a HEALTH PRACTITIONER stating that the FOODEMPLOYEE is free of an infection from ENTEROHEMORRHAGICor SHIGA TOXIN-PRODUCING ESCHERICHIA COLI based on testresults that show 2 consecutive negative stool specimencultures that are taken:(a) Not earlier than 48 hours after discontinuance ofantibiotics; and(b) At least 24 hours apart;(2) The FOOD EMPLOYEE was EXCLUDED or RESTRICTED aftersymptoms of vomiting or diarrhea resolved and more than7 calendar days have passed since the FOOD EMPLOYEEbecame ASYMPTOMATIC; or38
