Prosecco has flourished in the vineyards of theValdobbiadene/Conegliano zones north of Venice since Roman times, andwas the source of their famous, and much appreciated wine, Pulcinum.In this cool region, Prosecco ripens late, a tendency that ultimately ledto the creation of a sparkling style.
