A French revolution to reach Philadelphia's masses<br />

The guest list at Le Bec-Fin<br />

reads like a who’s who <strong>of</strong> Philadelphia<br />

big shots, with regulars<br />

including Sen. Arlen Specter, Gov.<br />

Ed Rendell and none other than<br />

Penn President Amy Gutmann.<br />

But Georges Perrier’s flagship<br />

French establishment<br />

has shifted course, aiming for<br />

a more relaxed setting without<br />

sacrificing the taste and ambience<br />

that has consistently<br />

earned it the top spot in Philadelphia<br />

dining since its 1970<br />

opening (when a six-course<br />

meal cost just $12).<br />

The staple dinner prefix —<br />

pricier $155 — still remains, but<br />

thanks to changes this year, it’s<br />

now side-by-side with an a la<br />

carte menu, with nearly all entrees<br />

between $20 and $40. The<br />

6 and 9:30 p.m. dinner seatings<br />

are a thing <strong>of</strong> the past; now, reservations<br />

can be made online in<br />

15-minute increments.<br />

“I want to make my restaurant<br />

more casual because I have no<br />

fun anymore,” Perrier told The<br />

Philadelphia Inquirer in April.<br />

The changes cost Le Bec-Fin<br />

its coveted five-star Mobil rating<br />

— the only restaurant in Philly<br />

and one <strong>of</strong> 17 nationwide with<br />

that distinction — but, more importantly,<br />

made it amenable to a<br />

Penn student’s budget. Though<br />

it’s probably still best to bring the<br />

parents along.<br />

As for the food, suffice it to say<br />

that Perrier stopped his tinkering<br />

at the kitchen door. And the<br />

pre-fix gives you a little bit (well,<br />

a lot) <strong>of</strong> everything.<br />

My friend and I got things<br />

started by splitting seafood<br />

appetizers. The crab cake<br />

— doused in a whole grain<br />

mustard sauce — was hardly<br />

disappointing, but it couldn’t<br />

compare to the seared diver<br />

scallops, which were truly jumbo<br />

and especially succulent for<br />

just the right amount <strong>of</strong> flavor.<br />

We continued our underwater<br />

excursion with king cod and wild<br />

striped bass, each large enough<br />

to serve as the main course, not<br />

one <strong>of</strong> seven. A bit juicier, the<br />

bass wins by a hair.<br />

Then it’s time for a brief respite<br />

with the chef’s special — a<br />

smaller <strong>of</strong>fering that changes<br />

nightly. We were treated to two<br />

pieces <strong>of</strong> quail; the leg was a bit<br />

fatty, but the breast quite tender<br />

and both flavorful. Best <strong>of</strong> all,<br />

there was a small hole in the dish<br />

which allowed the sauce to be<br />

soaked up by spinach below.<br />

Up next is the meat. The rack<br />

<strong>of</strong> lamb was cooked to perfection<br />

Upscale French bistro boasts<br />

incredible dessert cart<br />

— pink inching towards red —<br />

with not a bite <strong>of</strong> fat. The cherry<br />

tomato confit and natural jus<br />

combined to give it a rich coating<br />

with just a twinge <strong>of</strong> spice.<br />

The rabbit, meanwhile — stuffed<br />

with foie gras and truffle — was<br />

to die for, s<strong>of</strong>t enough to leave<br />

your knife at home.<br />

A French meal wouldn’t be<br />

complete without cheese. Don’t<br />

worry — you’ll get your pick; a<br />

cart boasts nearly two dozen,<br />

from which you can sample as<br />

many as you’d like.<br />

Impressive, but Le Bec-Fin<br />

knows how to save the best (or,<br />

at least, most memorable) for<br />

last. Its “world famous dessert<br />

cart” could eradicate hunger<br />

around the globe, with two tiers<br />

<strong>of</strong> cakes, pies, fondues and fruits.<br />

New York Cheesecake? Check.<br />

Crumb cake, made with just<br />

enough sour cream to prevent it<br />

from coming close to drying out?<br />

Check. Chocolate mousse? Yep,<br />

got that too. And like the cheese,<br />

it’s all you can sample.<br />

So even if you opt for a la carte,<br />

be sure to splurge on dessert.<br />

And thank chef Perrier for<br />

giving you that choice.<br />
