Ialways feel duty bound to preparea turkey with all the ‘fixins’but I also like to enliven my holidaytable with a new dish ortwo that will please the crowdwhile not disrespecting the pilgrim/nativeAmerican foodlore that has grown up aroundthis day.This year I decided a tarte tatinmight fit the bill. A tarte tatin iscaramelized fruit with a pie crustbaked on top and then inverted ona platter to expose the buttery andbrowned fruit on top. The basicrecipe I give is for the classic appleversion, but while researching thisdessert I found a number of differentfruits and even vegetables youcan use in the tarte. I will give a coupleof variations at the end, includinga pumpkin tarte – perfect foryour Thanksgiving table. Thepumpkin version can be eithersweet or savory – dessert or sidedish.Have some fun with thisdessert.The CrustThere are many different ways tomake a piecrust and if you have a favorite– go ahead and use it. I like to use a traditionalbutter crust, but you can use puffpastry, pate brisee or an Italian tart crustmade with egg. This is an upside down pieand the crust, cooked on top of the tarte,eventually ends up under the tarte so makesure it is well cooked.The ApplesThe tarte must be made with firm apples.Macintosh type apples will not keeptheir shape and become mushy in thisdessert. Use Gala, Greenings, GrannySmith or Golden Delicious.When you cut the apples make surethey are in fairly thick slices. I peel themand then slice thick pieces off the sides leavingthe core. Squeeze a lemon over the appleslices when you cut them so they do not turnbrown. You need a lot of apples for thetarte – you need to press them down firmlyinto the caramel.The CaramelThere are many different techniques formaking the caramel for a tarte tatin. I liketo make the caramel in a separate pan,pour it into a pie plate and put the applesin it, but some recipes make the caramel bycooking the apples in the sugar and butter.The following instructions are for making itseparately.Apple Tarte TatinThis is the classic tarte tatin created bytwo Tatin sisters in their restaurant atPeter Hopkins13 Raymond StreetLyndonville, VT05851Phone (802) 626-5555Night (802) 626-8042SUPPLIESLamotte-Beuvron on the Loire river inFrance.8-10 apples, cut into thick slices1½ cup white sugar6 tablespoons water¼ cup butter & some for the panjuice from one lemonHeavily butter an 8-9 inch pieplate and set aside. Roll out the piecrust into a circle about one halfinch larger than the pie plate you willbe using. Put the crust in refrigeratoron a plate that is flat and keep itchilled until you are ready to use it.Slice the apples as directedabove and coat with lemon juice.This will keep them from turningbrown. Set aside.Put the sugar and water in amedium sized skillet over low heat.Let the sugar melt into the waterand then turn the heat up tomedium high so that the mix bubbles.You can add a little more waterif it is too thick. Do not stir butmove the sugar around by tilting theskillet from side to side. Keep movingthe skillet around until the syrupbecomes a medium amber. It seemslike this is taking a long time, butonce it happens it colors quickly andyou have to be there to take it offthe heat before it burns. Stir the butterinto the caramel until it is completelyincorporated and pour themix into the buttered pie plate.Put the apples into the pie plateover the hot (watch out not to burnyourself) caramel. They should besqueezed tightly together. This stepshould be done quickly so thecaramel does not harden.Put the apples into a 400 degreeoven and bake for about 40 minutes.I usually check them after about 30minutes and press the apple downinto the liquid.Take the apples from the oven,let cool for about 15 minutes. Takethe pie crust out of the refrigeratorand place it on top of thecaramelized apples. Tuck the edges»Sweet Pumpkin Tarte Tatin6 cups of peeled and sliced rawpumpkin or butternut squash1½ cup white sugar6 tablespoons water¼ cup butter & some for the pan1 teaspoon cinnamonPinch of nutmeg¼ cup sugarinside the pie plate and cook forabout 30 minutes or until the crustis nicely browned.You want the crust to be cookedwell because it will end up on thebottom of the tarte and you don’twant it to be soggy.Remove from the oven and letcool for about an hour.Place a serving dish on top ofthe pie plate and carefully flip thetarte over into the plate. Sometimesyou have to wait a moment for thesuction to let go of the apples andrelease the tarte onto the plate. Ifsome remains in the pie plate justscrape it out and place it on top ofthe tarte.The French say a tarte tatinshould always be served warm –who are we to argue. If you want tomake it ahead, make sure the servingdish can be place in the oven towarm it up before you serve it withwhipped cream or vanilla ice cream.I will confess that I find this dessertdelicious even at room temperature.VariationsSweet Pumpkin Tarte TatinYou will need to use fresh raw pumpkinin this recipe. You may substitute rawbutternut squash if you want. The butternutsquash can be cut in nice thick roundsafter you peel it and makes the layering ofthe tarte easier. The main difference in thisrecipe from the apple version is the smallamount of sugar and spices you sprinkleon top of the pumpkin before cooking.6 cups of peeled and sliced rawpumpkin or butternut squash1½ cup white sugar6 tablespoons water¼ cup butter & some for the pan1 teaspoon cinnamonPinch of nutmeg¼ cup sugar»Apple Tarte Tatin8-10 apples, cut into thick slices1½ cup white sugar6 tablespoons water¼ cup butter & some for the panjuice from one lemon»Savory Tarte6 cups of peeled and sliced rawpumpkin or butternut squash1 cup white sugar4 tablespoons water¼ cup butter & some for the panPinch of nutmeg2 teaspoon salt1 tablespoon pepper¼ cup balsamic vinegarMix the cinnamon, nutmeg and¼ cup of sugar together and setaside. Right beforeyou put your pie plate in theoven, sprinkle the cinnamon mixover the squash or pumpkin. Thenfollow the recipe again right to theend.Savory TarteI have cut the amount of sugar in thecaramel for this recipe and put in a littlebalsamic vinegar. It is still a little sweet, butmost pumpkin or squash recipes have somesweetness to them.6 cups of peeled and sliced rawpumpkin or butternut squash1 cup white sugar4 tablespoons water¼ cup butter & some for the panPinch of nutmeg2 teaspoon salt1 tablespoon pepper¼ cup balsamic vinegarMix the nutmeg, salt, pepperand vinegar together and set aside.Follow the instructions for the appletarte substituting the pumpkin orsquash for the apples until you areabout to put the apples in the ovenfor the first time.
