AvantTapas and <strong>Wine</strong> provides the perfect venue for just these occasionsand more.Located 40 miles northwest of Santa Barbara, Avant Tapas is positionedless than a mile off Hwy. 101 in Buellton. The tasting room iseasily accessible to civilization, yet within enviable western views ofthe Santa Rita Hills.In operation since October 2009, Avant Tapas and <strong>Wine</strong> is locatedwithin the Terravant custom crush facility, which owns Avant. In justthree years, small- to medium-sized winery operations heavily rely onstate-of-the-art equipment at Terravant. Because making great wine isserious business, its job is to help vintners realize the end result ofprecious years in the winemaking after the harvest – from crushing orpressing and fermentation, to aging and bottling. Communication andoversight between winemaker and oenologist make for a teamapproach in crafting the best wine possible.The exterior of the entrance is a striking mix of swank-meetscommercial,with bold angles and expansive window panes that glowfrom within when lit at evening. Inside the cavernous structure, linearoutlines of glass and metal are repeated throughout. Touches of CaliforniaArts & Crafts and Prairie Style are also conveyed throughtexture and color in reds and rusts, and tans and earthy browns. Theirdesign influences are most evident in symmetrical shapes and designelements, such as high-back leather seating and pendant lighting.For adventurous wine lovers, Avant Tapas offers the best of bothworlds: <strong>Wine</strong>makers are often on hand to serve portions and discussparticulars about their vintages, but the gadget-prone might want toget their hands on an assemblage of air-tight, electronic winedispensers that allow for tasting a multitude of vintages by a variety ofwineries. Most wine tastes hover from around $.75 to $3. And sure,these modern-day automats share a like steel fortitude of theircentury-old sandwich machine counterparts. But here, you’redestined to find tempting red Bordeaux varietals instead of bologna.Each digitally measured dispenser offers wine in the amount of yourchoice and, most importantly, a generous selection of them, too.“More than half our menu items feature a wine made in our facilityas an ingredient,” says General Manager Joe Padilla, a 20-year veteranof the restaurant and hospitality industry. “We are fanatical aboutwine. We are little crazy about pizzas, too.” Padilla says “more than 90percent of our menu ingredients are locally grown or harvested(within 200 miles).” Over half their menu items feature a wine madewithin the facility and the wines are provided at retail prices. “We donot mark up like a restaurant would.”The rave here is American tapas and signature wood-fired pizzasfeaturing local produce, wine and ingredients. Located on scenicHighway 46 West in Paso Robles, HuntCellars is achieving cult winery status, a titlethat makes David Hunt very happy. In 2010alone Hunt Cellars received scores of 90 to 96points on more than 30 wines with two oftheir wines, the 2005 Cabovation, and QueSirah Syrah scoring an impressive 96 points.It’s understandable then that Hunt has aloyal following of wine lovers across the globefor his opulent, velvety wines. Hunt Cellars’customers believe the wines are comparablewith the best wines from Napa, and at aboutone-third the price; hence the reason theyhave attained cult wine status. “I think ourwines are indeed cult caliber,” David says. Infact people hoard them, saving them forspecial occasions though they are intended tobe enjoyed with family and friends for anyoccasion. “Each wine, ranging from our lushpeppery, blueberry, blackberry Zinfandels,our Cabernets with dark cassis and blackcherry and Syrah filled with pomegranate,cherry and plum, will amaze your palate withvarietal distinction, backbone, finesse andlushness,” Hunt states. The vineyards, locatedin Creston on the Eastside of Paso Robles,produce stellar fruit. “Our mountain-topEstate, Destiny Vineyards (named afterDavid’s daughter, Destiny) produces thepurest varietal quality with intense concentratedfruit, very low yields and the mostrobust flavor profiles.” The vineyards are positionedto benefit from the Templeton Gap andMorro Bay gap coastal influences. “Wedecided to purchase this location not onlybecause of the elevation differences and soiltypes, but also the extended heat thermalswhich our Cabernet Sauvignon, Merlot,Zinfandel and Syrah needs to permeate theirthick skins and yield pure, clear concentratedripeness of the fruit,” he says. “<strong>This</strong> also givesour vineyard longer hang times and allowsabout two more hours a day for the heatwhich is longer than the Westside vineyards.”The mornings are cool, with hints of fogsometimes into the late morning, but then theheat kicks in and it can get hot. By late afternoonthe ocean breezes have cooled down thevineyard. These 50- to 60-degree swings intemperature allow the grape clusters to ripenproperly and create acidity. And Destiny Vineyardshas multiple soil types, most notablycalcareous limestone which creates “thehighly acclaimed, most flavorful, wines in theworld,” as Hunt puts it.But David Hunt has a secret weaponwhich aids his success. He’s blind. Diagnosedat a young age with a degenerative retinaldisorder, his sight has eroded over fourdecades and is now all but gone. For manypeople that may seem like a handicap, but forHunt, it has honed his sense of taste andsmell and his wines benefit tremendouslyfrom his acute ability. “Blindness in someways helps me in making wine,” he says. “Ican actually hear the weight and texture of awine by its sound, the timber changes as itpours into a glass.” He is known to be obsessiveabout his wine, letting selected heavilyextracted wines age in barrel up to threeyears, which is uncommon for the majorityof wineries in California. “I treat each wine asif I’d never make another one. I work thewine and make changes even on the bottlingline,” he admits. But there is often an entiregroup of unseen people supporting the winemaker,working tirelessly. <strong>This</strong> is evident atStolpman Vineyards. Sure, Sashi Moorman hasbeen at the helm of Stolpman producing excellentRhône varieties and Sangiovese, but thereare others who make this happen.Ruben Solorzano joined Stolpman Vineyardsin 1994 as their foreman. “His naturalability to maximize the potential of our vineyardwas quickly realized by all who had thepleasure of working with Ruben, and he is nowa partner in the prestigious Coastal Vineyard Care team,” owner TomStolpman says. Ruben works closely with winemaker Sashi Moorman,and has dedicated a farming focus for each vineyard block within the152 acre estate. That is a huge amount of work therefore Ruben assembleda small, highly skilled group of vineyard workers who call themselves“La Cuadrilla,” meaning “the crew.” In 2004, Ruben instituted aunique training program in which La Cuadrilla is given one selectblock of grapes where the members control every farming decision.Because the team decides how to prune, train, and pick they havebecome proactively involved with the yearly cycle of the vineyard andLa Cuadrilla manages a different varietal each season so there is alwayssomething new to learn.To ensure optimal freshness of each grape,Ruben picks in the cool of the night whenmost people are home watching TV. LaCuadrilla wears headlamps to see in the darkso they can micro-pick the vineyard, selectinggrapes from one side of the vines each night,along the hillsides and hilltops. The clustersare placed into small stacking bins so no grapeis accidentally crushed until Sashi deems it theoptimal time in the winery. “Because of thismethodical approach, we can single outunique cuvees, such as Hilltops Syrah, pickedonly from the ridge-lines of the vineyard,” Tommentions. Every year the member’s selfmanagedblock gets bottled with a special “LaCuadrilla” label. “We take great pride in the team Ruben has assembledand we honor the members of La Cuadrilla by sharing the profitsof their wine with them,” Tom says. The April release of the 2009 LaCuadrilla is a 50-50 blend of Grenache and Syrah, and the label hassmall dots of lights representing Ruben and the crews’ headlamps asthey judiciously pick grapes through the night.Taste the work of Sashi, Ruben and the entire team at theStolpman’s tasting room, open daily from 11 a.m. to 5 p.m., at 2434Alamo Pintado Avenue, a half block east of the flagpole in historic LosOlivos. W I N E C O U N T R Y T H I S M O N T H ’ SW I N E C O U N T R Y S P O T L I G H TM A M A’S M E AT BA L LOne pretty reliable way to find out just how good the foodat a local restaurant is, is to ask somebody in the restaurantbusiness. <strong>As</strong>k a bartender, a waiter, anyone in fact, what theythink of Mama’s meatballs in San Luis Obispo and their lipsbegin to quiver, their eyes roll towards the heavens, they sigh;that is how good Mama’s Meatball is.Set in a small courtyard off of one of the town’s mainstreets, in a place called the Old Creamery, Mama’s Meatball isactually divided in two. On the right is the take-out wherepeople line up to get their orders of meatballs and more. Tothe left, fronted by a huge-trunked treeand a water fountain, is the intimaterestaurant with it’s mural of theMediterranean across the back.Meatballs aside, the restaurant,under owner and chef Nicola Allegretta,offers a wide range of authenticItalian dishes, many of them nowavailable in smaller sizes as well, abow to the economy and hiscustomer’s wishes. Amongthem are half a dozensoups, a long list of salads(including grilled salmonand a refreshing pear andgorgonzola), somewonderful antipastochoices, both hot and coldpaninis (including, ofcourse, one made withmeatballs), more pastadishes than there is spacehere to share (though theRavioli di Pollo all Vodka – homemade ravioli filled withchicken and served in a vodka sauce – cannot go unmentioned).There is also a heady selection of meat and fish dishes aswell as any number of traditional and specialty pizzas (nowavailable in two sizes) and some far too-tempting desserts.Mama’s Meatball currently has two locations. In addition to hiseponymous winery in Santa Maria, heopened a second tasting room in Paso Robleson Highway 46 West. Now he and winelovers have the best of both worlds in two ofthe best wine producing counties.Ken was originally best known as thecreator of Wild Horse <strong>Wine</strong>ry in Templeton.During the 20 years he owned it, his productionexploded from a mere 600 cases to over150,000. He sold his successful winery andmoved to Santa Maria and opened Ken Volk<strong>Wine</strong>s, a smaller facility where he went backto the basics of hand crafting wine. Whereever Ken goes and makes wine, people alwaysfollow. “My goal is to create multifacetedwines,” he says. “Instead of farming everythingalike, I combine many of the best practices,materials and vines available.” He’sknown to be meticulous and, in the bestpossible use of the term, a wine-geek, whocan discuss the fine details about winemaking.“There’s a huge potential to impact awine with the decision of which yeast to useand there’s the potential to create complexity,”he says enthusiastically. And he is alwaystinkering, always experimenting. His attentionto detail also carries into the harvest;picking grapes from the same plot of landthough at different times to create complexityand flavors that otherwise might not exist.“Just as a rich stew or curry creates a morevivid culinary experience when it includes acomplex combination of ingredients thatharmonize, we seek to bring togethercomplementary flavors for a richer wineexperience,” he notes. But he also sourcesgrapes from a large swath of land in differentcounties and growing regions to produce thesame effect. “Looking at some of the winesbeing produced at Chalone (MontereyCounty), Edna Valley Vineyard (San LuisObispo) and Meridian <strong>Wine</strong>ry (Paso Robles),I knew that wines from the Central Coastcould compete with wines from any Californiaregion or anywhere else in the world.”At both tasting rooms you will find the triedand true wines like Chardonnay, CabernetSauvignon, Merlot and Pinot Noir. But that inauguralrelease of Arroyo Grande Valley Chardonnay got a 92 point scorein a major wine magazine, and since then they’ve kept that mozzarellamomentum coming out of the grinder with wines made in the fashionthey’re passionate about. Through the erratic trends of varietalfavoritism and climatic conditions, it’s been refreshing to see Per Baccocontinue to make wines in the manner that they originally set out todo, with a focus on food-friendliness and approachability.I recently stopped into the tasting room which is purely about thewine. No jewelry, no oil, no cookbooks; wine is the focus. Tastingroom manager Grace Kegel pointed out, “We charge just a five dollarfee and customers can choose six wines out of the nine options totaste. We waive one fee per bottle purchased,” she continued, “and theglasses aren’t included. The 30-acre Gold Coast Vineyard,located in Santa Maria, is the spotwhere the grapes for the wines of Costado Oro <strong>Wine</strong>ry come from. But prior tograpes being planted, this family farmstarted growing greenhouse tomatoes andkiwis, broccoli, cauliflower, cilantro,corn, spinach and they are perhaps bestknown for their strawberries.Today the tasting room, which openedin 2006, sits on the site of the Gold Coaststrawberry stand and of course you canpick up fresh veggies and fruits they growwhen in season. The views from the glass windows look directly outto the fields of Santa Maria, and to the low hills in the distance. Thereare lots of gifts too at the comfortable wood-toned tasting room withits wood beams on the ceiling and chairs to relax at. It’s comfortablehere and the staff is friendly and helpful. The wines offered at Costade Oro include award winners from competitions in San Francisco,Orange County and right here in Santa Barbara, not to mention highscores from <strong>Wine</strong> Enthusiast Magazine. “In the tasting room, we haveadded wines that are either exclusive to the wine club or in very smallquantities for the bar,” says Gary Burk, winemaker. Currently you’llfind three versions of Chardonnay, aPinot Noir rosé, Pinot Grigio, four iterationsof Pinot Noir and Cabernet Sauvignon.Tasting fees are $10, or you canpurchase individual glasses of wine for$10. Established in 2007, Sort <strong>This</strong> Out Cellars produceswines from grapes grown throughout California’s wine country usingdiverse varietals and appellations which they feel represent the best of whatCalifornia's wine industry can produce. “I have relieved myself of therestrictions associated with owning vineyards or producing wines from asingular viticultural area,” says owner Michael Cobb. <strong>This</strong> means he cansearch the state for the best grapes to crush, or in some cases the best juicefrom another winery to purchase, and then finish it into his own wine.“Tired of the traditional wine country narrative, Iwanted to move beyond the iconic family winery, orestate grown grape paradigms that have dominatedthe California wine landscape, and instead makewines that looked more like the people who drankthem,” he says. Cobb is rather proud of the fact thathe doesn't have a farming background to draw on,something many people in the wine business mightconsider a handicap. “I think of myself as a degenerategambler-turned-winemaker,” Cobb jokes. “I trysimply to make the very best wine I can. I'm in theentertainment business and wine is entertaining. Atthe end of the day the wine in the bottle has to meetpeople's expectations.” And Sort <strong>This</strong> Out Cellars isdoing just that.Inspired by an old photograph of the famed RatPack outside The Sands Hotel in Las Vegas in 1961, and a love of that specifictime period, Cobb conspired to create a new type of winery. He doesn't ownany vineyards and frankly he has no desire to. Cobb decided early on to“throw all the traditional corporate structure out with the bathwater,” as he puts it. <strong>This</strong> doesn't mean however that he cameinto the wine business as a novice. Far from it. Mike Cobb wasthe <strong>Wine</strong> Buyer for Disneyland’s Club 33 located inside thefamed park. You may not have heard of Club 33, and that'sbecause it is an exclusive members-only club that Walt Disneyhimself started decades ago and still operating inside the park.From those beginnings he decided to venture out and get inthe wine business, but to do it as simply and with as much funas possible.Sort <strong>This</strong> Out Cellars new tasting room is located at 1636Copenhagen Drive in Solvang.
