This savoury dip will be ahit with ghouls and ghosts alike.INGREDIENTS:1 large eggplant (1½ lbs),pricked all over with a fork1 sweet orange pepper1 onion, quartered4 large cloves garlic2 tbsp olive oil1½ tsp cumin seeds1½ tsp coriander seeds1½ tsp nigella, black sesame orpoppy seeds, divided1½ tsp salt2 tbsp freshly squeezed lemonjuice1 cup thick plain yogurt (Greekor thick Balkan style)1½ tsp pomegranate molassesFlatbread, toasted pita or slicednaan to serveDIRECTIONS:Preheat oven to 400°F. Placeeggplant directly on oven rack.Place whole pepper, onion andgarlic in a small roasting panand toss with olive oil. Roastvegetables for 45 minutes,tossing every 15 minutes,until charred, and eggplant isdeflated (remove garlic andonions as they are roasted).Remove eggplant from oven,place in roasting pan with othervegetables and let cool. Whilevegetables are cooling, in small,dry skillet, combine cumin,coriander and 1 tsp of nigellaseeds. Cook over medium heat,shaking pan often for 2 minutesuntil fragrant and seeds beginto pop. Transfer to a mortarand pestle (alternatively usea spice grinder or place in abowl and crush with the backof a heavy spoon) and grinduntil seeds are crushed, butnot perfectly smooth. Whenvegetables are cool enough tohandle, cut eggplant and scoopout flesh on to a cutting board.Peel, core and de-seed pepperand place flesh on board withonion and garlic cloves. Roughlychop everything together andscoop into a serving bowl. Stirin toasted seeds, salt, lemonjuice, yogurt and pomegranatemolasses. Serve immediately,or cover and refrigerate for upto 2 days. Top with remainingnigella seeds, arranging as“bugs.” Cooking Tips: Nigellaseeds are available at Indianor specialty grocery stores.Black sesame seeds or poppyseeds can be substituted.Pomegranate molasses isavailable at Middle Eastern orspecialty grocery stores.
