CRISPS OR COBBLERS?The abundance of fresh local fruit always amazes me. From summer to fall, aneasy dessert to make is a crisp. You ask,“what is a crisp?” It is a fruit dessert thathas a streusel-like topping and when it is baked the topping becomes crisp.A cobbler has a biscuit-like topping that resembles cobblestones.You can make these wonderful dishes with peaches, nectarines, apples,pears and berries. The recipe is basically the same for all. Some toppings addchopped nuts, some may add plumped dried fruit to the filling. You can useyour imagination or whatever you have on hand. They can be served warm orcold, plain or topped with a dollop of fresh whipped cream or vanilla ice cream.Apple CrispTOPPING:1 ½ cup of unbleached flour (can subsitute 1 cup of flour and ½ cup of old fashion rolled oats)½ cup of light brown sugar2 tsp of cinnamon1 stick of chilled unsalted butter cut in ½ cubes(can add 1 cup of chopped almonds or walnuts if desired)In a food processor pulse all the dry ingredients 2-3 times (or use a whisk to mix).Add in the butter and pulse a few times until you have a coarse mixture that formssmall clumps (or use you fingers to mix and form clumps).FILLING:4 lbs of apples peeled, cored and thinly sliced. (I like granny smith)¾ cup of sugar3 tbls unbleached flour1 ½ tsp cinnamon½ tsp of nutmeg1 ½ tsp vanillaWhisk all dry ingredients in a bowl, mix in the apples and vanilla.Butter a 13x9x2 glass baking dish and preheat oven to 350 degrees. Pour the apple mixture into the dish.Sprinkle the topping over the mixture and bake for 50 -60 minutes until the topping is golden and crisp andthe apples are tender. Cool for 20 minutes before serving. Dear <strong>Baxter</strong> Neighbors,As a cancer survivor, many people have wanted to do something in my honor to help fight cancer. Youmay feel the same way about someone you know that has had cancer. I’m not asking you today to donatemoney to this cause. I’m asking you to learn about a chance to be a part of a National study conducted bythe American Cancer Society that will make a difference in cancer outcomes for generations of people. Itis called the Cancer Prevention Study-3 (CPS-3). By participating in this study, you will literally impactwhat we know about cancer prevention. It’s a longitudinal study, meaning you will be followed for 20-30years with a short questionnaire every two years. This is a chance to be part of something historic. This isthe 3 rd study of its kind. The first study, CPS-1, was conducted in the 1950’s and found, among otherthings, that smoking is linked to cancer. The second study, CPS-2, was conducted in the 1980’s andfound, among other things, that belly fat is linked with six different cancers.Those participants in those studies are aging out and we need to follow a new group of participantsthat reflect the world we live in today. The questionnaire will be asking things like “how much exercisedo you get” “what vitamins do you take” “what food do you eat”, etc. The goal of the CPS-3 is to betterunderstand the factors (lifestyle, environment, genetic) that cause or prevent cancer. CPS-3 is not aclinical trial or an experiment; you will not be given any pills or asked to change your lifestyle. CPS-3 isalso confidential; American Cancer Society also has special procedures in place to safeguard yourpersonal information.What does study participation involve?The enrollment process is simple and involves two phases. At a local enrollment event, you will be askedto read and sign an informed consent form, complete a brief written survey, provide a waist measurement,and give a small blood sample (similar to a doctor’s visit).At home you will complete a more-detailed survey, which will ask for information on lifestyle, behaviors,and other factors related to your health. We will continue to mail follow-up surveys periodically to updateyour survey information. GardenGirltips on everything fromgrowing pretty togetting dirty!October is perfect planting weather!It’s time to plant your pansies, remember to plant yellow ones with any color combination you choose, and other fallannuals, bulbs such as crocus and daffodils for spring blooms, and shrubs and trees. You want to get them in the groundearly enough so that their roots can have time to grow before the first freeze.If you decorate with fall mums, these can be planted directly into your garden after they have bloomed. Cut off the deadblooms and plant them in the garden. They will bloom in the summer and you can cut them back about a third and theywill rebloom in the fall!If you have a cool weather lawn, such as fescue, you still have time to aerate and reseed. This is best done the first partof the month. If you already did this and have new grass coming up, it’s important to keep fallen leaves off of it so that itwon’t “choke” the new growth.If you have any perennials that did not perform well this past season, they are probably overcrowded. Now is a goodtime to divide these and replant them.If you have not trimmed your shrubs, don’t do it now! It’s too late. You will need to wait until spring. A cold snap couldkill them if you trim this late.Don’t forget to treat your lawn now for Japanese beetles! Apply milky spore to your lawns. This will take care of them inthe grub stage before they can turn into those destructive pests in the spring!October is a wonderful time of year for bird watching too! Birds that are not common to our area are migrating and youmay get to see something that you don’t usually see in your back yard! S omething eclaretoDExplorations byGail K. WarnerThis month I have more to declare about Singapore, mainly involving customs – as in rituals -- not bureaucratic red tape -- and shopping…which for some can also be considered a ritual. As in most cultures, food plays an integral part in many daily, and seasonal rituals.Greg and I both thoroughly enjoy the ethnic mash-up that is the Singaporean food scene. To understand the diversity of cuisine it’s importantto understand the populations’ heritage. To describe Singapore as a melting pot does not do it justice. It’s more like a teaspoon. Justimagine, it’s a city of three million inhabitants occupying a space approximately the size of Rhode Island (which has one million residents)all coming from a dizzying array of cultures ranging from Malay, to Paranakan, to British ex-pats. As a result, culinary rituals as diverseas dim sum to a proper high tea are considered to be quite mundane, but yet revered – and the etiquette involved in both ceremonies iscompulsory. On our first trip we were literally counting the hours en route until we could sit down to dim sum and savor the many delicatesteamed and poached dumplings, beautifully presented in perfect little wicker baskets of varying shapes and sizes. The baskets, let alonethe dumplings, are tiny works of art -- from sweet to savory, hearty to so delicate and fragile-looking you hate to consume them (but do).We incorrectly assumed we could order up dim sum just about anywhere, at any time of the day. This was our typically American “filter”kicking in. How could something we want not be available exactly where and when we want it?! We soon discovered that dim sum shallonly be served from 11:00 a.m. - 1:00 p.m. So, you’d better be hungry and in the mood for it then, as otherwise – no dim sum for you.Once we adjusted our “filter” it was worth foregoing breakfast in order to partake.A proper high tea has the same basic origins as dim sum, a small meal to tide you over until a full meal later in the evening. For dimsum it was a snack provided on the spice route to the explorers and traders of the day. For the British, high tea was meant to keep yougoing until a formal dinner. In Singapore we partook at the Chihuly Lounge at The Ritz. It was a surreal atmosphere in which to enjoyreal clotted cream, jam, slabs of butter, perfect scones and a staggering assortment of tea. And, let’s not forget the crustless cucumber sandwiches. The atmosphere inthe lounge was a surreal place to indulge in such a British tradition. Overhead Dale Chihuly’s glass sculptures cover the entire ceiling and seem to glow from within whilewindows frame vistas of streaming sunshine, swaying palms, and Chinese junk boats floating along the river. Definitely not the same views you get in London, but oh soBritish none-the-less.After fortifying ourselves with scones, dumplings and more tea than is responsible for one human to consume, we’d head to Orchard Road for a bit of shopping. Again,our American filter would occasionally kick in. Now, keep in mind I am fully aware that I am by no means an “average” size American. I suspect there are garden gnomesamong my not-too-distant relatives as I am barely 5’ 1” tall and petite overall. You’d think I’d clean up in a country of Lilliputian-sized people. Nope, a perfect example isan experience I had at Gucci (the size of a Harris Teeter). I was in the market for a good, basic black sandal. While admiring one on display a sales associate materializedout of nowhere. (It’s a very Asian thing. Not sure how they do it, but the minute you decide you’d like to try something on a sales associate is standing right next toyou… deferentially.) When I told the man my size I noticed a barely perceptible wince. He quickly masked it with a smile, a small bow, and then disappeared again. Thenext minute he was seating me on a lush, leather banquette and handing me a glass of wine. He then took out a strawberryish pink version of the sandal and a handbagfrom the same collection (Tom Ford… sigh). Before I could even inquire about the color he very politely admitted that the sandal did not come in black in a size to fit mygiant American foot. (Note, I’m a size 7.5 – not tiny, but by no means huge in our country.) It obviously pained him to admit this but he distracted me with the sandal/bagone-two-combo punch and before I knew it he had my credit card and he rang up my order and packaged it as if it was a gift all while I stayed perched on the banquettesipping wine. Despite the discovery that I have enormous American feet, it was a thoroughly enjoyable experience. On subsequent trips I was accompanied by a femalefriend who, after our first shopping endeavor together there (and I DID warn her), declared that there was simply not enough fabric in the entire country to… (and I willparaphrase her exact quote) “cover her giant American behind.” She’s lovely woman of average size, wears a US size 6, sometimes an 8, not big by any means, but mightas well shop in the big & tall men’s department in Singapore. So, she stuck to shopping for handbags and artwork on our trips – much less damaging to her overall psyche.Overall, Singapore is one of those sensory-overload, truly exotic, baffling, charming, enticing and compelling places that always calls you back.Until next month, create memories of your own “customs” to declare and share.Gail K. Trails Tales from the <strong>Baxter</strong> Trail ClubClub meetings, trail maintenance, marking, and event planning and activities are all underway as we kicked off our fall planning andwork season. September marked our first club meeting of the season where we hosted our usual crop of familiar faces plus twonew residents interested in contributing to your natural resources and outdoor educational and recreational opportunities! Pleaseplan to join us at one of these largely informal BYOB gatherings to learn how you can help and to share your thoughts and ideasfor our trails and parks.On Sunday September 15, we hosted our first trail work day where 30+ hours of volunteer time helped clearsilt filled culverts and repair the associated erosion caused by this summer’s heavy rainfall. These culverts,installed over a decade ago as part of the original master infrastructure for <strong>Baxter</strong>, were buried under severalfeet of silt but are now clear and part of our planned annual maintenance programs! If you’ve hiked in our outof Allison Park on this popular stretch of the Carolina Thread Trail anytime in the last couple of months you’veseen the heavy erosion but will now see our handiwork. Our volunteers were kept refreshed and fed with agenerous supply of beverages and food!Our next club meeting of the season will be held on Tuesday October 8th at 7:00 PM in <strong>Village</strong> Hall.We are planning on discussing volunteer needs for the following:•October & November trail work days•Community geocache management•Full Moon gatherings at the Council Ring•Fall Festival informational booth•November’s charity guest bartender event @ Grapevine•New Year’s Day 14k/5k trail racesOur next monthly trail work weekend will be October 12th & 13th.
