PREPARATION<br />

Remark: In steps 1-­‐4 try to cut the ingredients in nearly equal peaces in order to <br />

make the food arrangement easier for you. <br />

1. Rub in the beef with lemon. Then shortly freeze the meat. When it is slightly <br />

frozen, cut it into very thin slices. Afterwars put it into the fridge. <br />

2. Peel the mango and beetroots and cut it into very thin slices. Afterwars put them <br />

into the fridge. <br />

3. Cut the mozzarella into very thin slices. Afterwards put it into the fridge. <br />

4. Dressing: Cut the tomatoes into tiny squared pieces , cut the coriander leaves, <br />

and mix it with 2cl of olive oil, 1 cl of balsamic vinegar, 1 cl of lemon juice and 1 cl <br />

of water. Season it with salt and pepper. <br />

5. Wash the rocket and drain it. Shred the Grana Padano into thin flakes. <br />

6. Take the ingredients out of the fridge and place them on a plate like in the <br />

picture. Evenly spread the rocket and Grana Padano in a line over the carpaccio. <br />

Season the carpaccio with the snowflake salt and the crushed peppercorns. <br />

8. Pour the dressing over the carpaccio and rocket. <br />
