André Soares arbeitet sein halbes Leben im Grand Hotel<br />
<strong>Kronenhof</strong>. Über die Jahre hat er Karriere gemacht bis zum Executive<br />
Housekeeper. Und er spielt leidenschaftlich Fussball.<br />

Flinke Hände zupfen die Bettlaken zurecht, der Staubsauger röhrt durch Hotelgänge,<br />
Blumen werden zusammengestellt. An einem Spitzentag muss André<br />
Soares bis zu 60 Zimmer kontrollieren, jeder Raum vor einem neuen «Arrivée»<br />
muss geprüft werden. «Unportugiesisch perfektionistisch» sei er, lacht der Executive<br />
Housekeeper. Soares fährt mit weissen Handschuhen über die Kommode,<br />
um jedes Staubkorn zu entlarven, das seine Mitarbeitenden übersehen haben<br />
könnten. Er sei geduldig im Erklären, aber erbarmungslos in der Ausführung.<br />
Seit 20 Jahren, sein halbes Leben, passe er auf sein Grand Hotel <strong>Kronenhof</strong> auf.<br />
Eindrücklich findet er dabei, dass heute kein einziges Zimmer mehr so aussehe<br />
wie bei seinem Arbeitsbeginn – ausser natürlich die Hotelhalle oder das Grand<br />
Restaurant. Immer wieder betont Soares aber auch, wie sehr er die familiäre<br />
Atmosphäre liebe. Dass das damals kleine Mädchen der Feriengäste heute als<br />
junge Dame hier heiratet – und ihn, den Gastarbeiter von einst, noch immer<br />
kenne. Sein Bruder war und ist noch heute Portier im Hotel und überzeugte ihn<br />
damals, dass es sich in Pontresina gut arbeiten liesse.<br />
André Soares ist wohl nicht der einzige Portugiese, der seinen Verwandten<br />
nachreiste. Heute ist er, der jüngere Bruder, der Chef des Erstankömmlings,<br />
was aber überhaupt kein Problem sei. «Fälschlicherweise dachte ich vor meiner<br />
Abreise, ich könne gut deutsch.» Weit gefehlt. Zu allererst wurde Soares ein<br />
Staubsauger in die Hände gedrückt – «also legte ich mal los, von der Hotellerie<br />
hatte ich aber keine Ahnung», schmunzelt der bald 40-Jährige. Unterdessen hat<br />
er sich stetig hochgearbeitet, Stammgäste freuen sich für ihn und mit ihm. Auch<br />
wenn es Leute gebe, die ihn als Portier vermissen. Kein Zufall: Unter Soares<br />
wurde die Kartei mit den «besonderen Wünschen» sorgfältig ausgebaut, und so<br />
weiss sein Team schon vor der Ankunft, welche Früchte einem Gast besonders<br />

Nimble hands smooth the bedsheets, the vacuum cleaner<br />
roars through the hotel corridors, flowers are arranged. On<br />
peak days André Soares has to inspect up to 60 rooms –<br />
each has to be checked before a new arrival. The Executive<br />
Housekeeper jokes that he has an “un-Portuguese perfectionism”.<br />
Soares runs white-gloved hands over the chest<br />
of drawers to remove every last speck of dust that may<br />
have been overlooked by his staff. He says he explains<br />
everything patiently, but expects results. He has been<br />
looking after the Grand Hotel <strong>Kronenhof</strong> for 20 years – half<br />
his life. He finds it interesting that not a single room now<br />
looks the same as it did when he started here, apart from<br />
the foyers and the Grand Restaurant. Soares also emphasizes<br />
again and again how much he loves the family atmosphere,<br />
such as the fact that a young girl who stayed at the<br />
hotel with her family in his early days is now coming back<br />
to hold her wedding here – and still recognises him, although<br />
he is no longer the newly arrived migrant worker he<br />
was then. His brother was a porter at the hotel, a post he<br />
holds to this day, and persuaded him that he would find<br />
good work if he came to Pontresina.<br />

schmecken, ob ein Wandbild ausgetauscht oder die Zimmertemperatur niedriger<br />
eingestellt werden müsse. «Es macht mir viel Freude, das Hotel herzurichten,<br />
wie ich mein Daheim für gute Freunde parat machen würde.»<br />
Wand der Wörter<br />
In seinem Büro fallen die vielen Notizen an den Wänden auf: Auf Portugiesisch,<br />
Deutsch und Italienisch sind Saisonziele notiert, auf einem grossen Plakat steht<br />
«Wand der neuen Wörter». Daneben sind die Zahlen auf Deutsch aufgeschrieben.<br />
Soares möchte, dass seine Mitarbeitenden die deutsche Sprache lernen.<br />
Dies habe er damals bei seinem Arbeitsbeginn vermisst. Die meisten Bewerbungen<br />
für Zimmermädchen und Portiers bekommt der Executive Housekeeper<br />
von seinen Landsleuten. Nach einer Saison können sich die meisten von ihnen<br />
bereits auf Deutsch verständigen. Und seine Mitarbeitenden zeigen trotz der<br />
Strenge ihrem Chef viel Wertschätzung: «Ich war sehr gerührt, als mein Team<br />
mir als Überraschung ein Video geschenkt hat, in dem ich von Zimmermädchen<br />
gespielt wurde.»<br />
Abgesehen von den Checklisten, Beispielfotos für die korrekt eingeräumte<br />
Minibar oder den Einsatzplänen, fallen in André Soares Büro die zahlreichen<br />
Pokale auf: Der Südländer ist ein grosser Fussballfan. Er lässt sich von «seinem»<br />
Club Benfica Lissabon begeistern. Aber auch selbst spielt Soares Fussball: Er<br />
ist Mitglied beim Engadiner Verein Lusitanos Samedan, zusammen mit seinen<br />
Kollegen, nicht nur Portugiesen, spielt der Aktivsportler in der 4. Liga. Aktiv ist<br />
er auch auf dem Fahrrad oder auf den Bergen. Nur der klassische Wintersport,<br />
der sei nicht so seine Sache. Zuhause ist der Lissaboner in Pontresina, verheiratet<br />
mit der Spa-Managerin Nadine Böning Soares aus Deutschland, die er im<br />
Grand Hotel <strong>Kronenhof</strong> kennen lernte. Aber auch Lissabon ist Heimat. Dort<br />
leben seine Mutter und andere Verwandte. André Soares fühle nach so vielen<br />
Jahren an beiden Orten dieses Gefühl von Sehnsucht, das man kaum korrekt<br />
übersetzen kann und sich «Saudade» nennt.<br />
Saudades, só portugueses conseguem senti-las bem. Porque têm essa palavra<br />
para dizer que as têm. – Saudades: Nur Portugiesen können dieses Gefühl kennen.<br />
Weil nur sie dieses Wort besitzen, um es wirklich beim Namen zu nennen.<br />

André Soares was not the only one from Portugal who<br />
followed his relatives to the hotel. Today he, the younger<br />
brother, is the boss of his elder brother, although he says<br />
that doesn’t pose a problem. “Before I came I was under<br />
the misapprehension that my German was quite good.” On<br />
the contrary, he had a lot to learn. The first thing that happened<br />
was that Soares had a vacuum cleaner pressed into<br />
his hands “and so I got down to work. I had no idea about<br />
the hotel business,” he grins. As he worked his way up<br />
through the ranks, he found that regular guests were behind<br />
him all the way, even though there are now some who<br />
miss having him as porter. That is no surprise – it was under<br />
Soares that the “Special Requests” card index system<br />
was painstakingly established, ensuring that his team<br />
knows before guests arrive what their favourite fruits are,<br />
whether a particular picture needs to be replaced or<br />
whether the room temperature needs to be reduced. “It<br />
gives me great pleasure to present the hotel in the same<br />
way as I would prepare my home to welcome good friends<br />
to stay.”<br />
Wall of words<br />
When you enter his office the first thing you notice are the<br />
messages pinned to the wall. Objectives for each season<br />
are noted down in Portuguese, German and Italian, and<br />
there is a large section entitled “The Wall of New Words”.<br />
Next to this are numbers written out in German. Soares<br />
wants his staff to learn the language, and he missed having<br />
help like this when he started out. Most of the applications<br />
the Executive Housekeeper receives for chambermaids<br />
and porters are from his fellow countrymen and<br />
women. After one season most of them can make themselves<br />
understood in German. And despite his strictness,<br />
most of them really appreciate their boss: “I was deeply<br />
moved when my team surprised me with a video in which I<br />
was played by the chambermaids.”<br />
Alongside checklists, photos showing examples of how<br />
a minibar should be correctly set out, and rotas, André<br />
Soares’ office also features a large number of sporting trophies<br />
– he is a huge football fan and an avid supporter of<br />
“his” club, Lisbon’s Benfica. Soares also plays football<br />
himself. He is a member of the Engadine club Lusitanos<br />
Samedan, playing in the Swiss 4th League together with<br />
his colleagues, not all of whom are Portuguese. He is also<br />
an active cyclist and enjoys mountain sports, although he<br />
isn’t keen on winter sports. Originally from Lisbon, Soares,<br />
approaching 40, now feels at home in Pontresina. He is<br />
married to the spa manager, Nadine Böning Soares from<br />
Germany, whom he met at the Grand Hotel <strong>Kronenhof</strong>. But<br />
he still feels he has roots in Lisbon, where his mother and<br />
other relatives live. After so many years living between the<br />
two places, André Soares feels a certain yearning, expressed<br />
by the practically untranslatable Portuguese word<br />
“Saudade”.<br />

Im Sommer arbeitet Giuseppe Bera als Maurer, im Winter<br />
ist er stolz auf seinen Eisplatz des <strong>Kulm</strong> Hotel.<br />
Diesen pflegt er von Hand, wie er betont. Und für einen<br />
Nachfolger innerhalb der Familie scheint gesorgt.<br />

Es ist bereits das zweite Mal in seiner St. Moritzer Karriere, dass Giuseppe Bera<br />
einen kompletten Umbau im Neu-<strong>Kulm</strong> leitet. Die erste Baustelle in diesem Hoteltrakt<br />
erlebte er vor 20 Jahren, am Anfang seines Arbeitsverhältnisses im<br />
<strong>Kulm</strong> Hotel. Sowieso, es gibt keinen Teil des Komplexes, an dessen Umbau oder<br />
Renovation der Chefmaurer nicht beteiligt gewesen wäre – von der Küche bis zu<br />
den Zimmern. «Jedes Jahr öffnet sich eine Baustelle. Und wenn wir durch sind,<br />
beginnt es wieder von Neuem», schmunzelt Bera. Auch bei der Erneuerung des<br />
Schwesterhotels Grand Hotel <strong>Kronenhof</strong> war der Handwerker involviert. Der<br />
Norditaliener steht auf dem Baugerüst und blickt über den Park – jeden Gebäudeteil<br />
kennt er blind. Doch da zeigt er auf einen für ihn noch «unbefleckten» Ort:<br />
Den alten Pavillon des Eisplatzes. «Ihm möchte ich gerne noch neues Leben<br />
einhauchen», sagt der 57-Jährige.<br />
Eisplatz trägt seine Handschrift<br />
Der Handwerker liebt es, wenn die äusseren Umstände den Alltag bestimmen.<br />
Er möchte keine Arbeit tun, wo man auf die Uhr schauen müsse. Eine geregelte<br />
Arbeitszeit findet er langweilig. Und zu tun gibt es immer etwas: Im Winter ist<br />
dies hauptsächlich sein Eisfeld. Eigentlich sei er nur als Maurer vor 23 Jahren<br />
von Brescia ins Engadin gekommen. Doch im Winter gibt es nicht viel zu bauen,<br />
so habe er seinen Vorgängern auf dem Eisfeld und der Bobbahn über die Schultern<br />
geschaut. «Eismeister wird man nicht an einer Schule.» Und Bera betont,<br />
dass er seinen Platz nicht maschinell pflege, sondern in Handarbeit. Die Benutzerinnen<br />
und Benutzer würden so die Natur viel unmittelbarer spüren – wenn es<br />
kälter oder wärmer wird. Jeder Tag ist anders. Maschinell bearbeitete Eisfelder<br />
findet Bera eintönig. Stolz machen ihn dann die Komplimente, die er für sein Eis<br />
bekommt. Die Fläche trägt Beras Handschrift: «Wenn es kälter ist, benutze ich<br />
mehr Wasser. Wenn es wärmer ist, sprenkle ich weniger, dafür öfter.» Zu Beginn<br />
der Saison dauert es drei Wochen, bis der Eisplatz des <strong>Kulm</strong> Hotel fertig ist.<br />
Aber auch anschliessend muss er jeden Tag gepflegt werden. Spiegelglatt soll<br />
es sein. Das sei körperlich eine harte Arbeit. Man ist nachts auf dem Feld, wenn<br />
es klirrend kalt ist. «Als ich als Eismeister anfing, waren die Nächte aber noch<br />
viel bissiger als heute. Damals sank das Thermometer noch auf –35 Grad»,<br />
lacht Bera. Ihm behagten jedoch dieses Klima und das Leben in den Bergen.<br />
Zu Beras Pflichtenheft im Winter gehört zudem, dass die Zufahrten gereinigt<br />
werden, die Wege und Treppen vom Eis befreit werden oder der Schnee von den<br />
Dächern des Hotels oder des Personalhauses entfernt werden muss, damit niemand<br />
zu Schaden kommt. Das gibt zu tun: Man blickt auf das Areal des <strong>Kulm</strong><br />
Parks und schätzt die Fläche grösser als zwei Fussballfelder: Im Winter scheint<br />
der Tag nie ein Ende zu nehmen... Freude bereitet Giuseppe Bera schliesslich<br />
auch der direkte Kontakt mit Gästen, wenn er Liegestühle bereitstellt oder<br />
Schlittschuhe vermietet. «Dabei komme ich sogar mit VIPs in Kontakt.» Stolz<br />
erzählt Bera, dass er sich zusammen mit der Fernsehmoderatorin Michelle<br />
Hunziker fotografieren lassen konnte.<br />
PROFESSIONAL PRIDE<br />
In summer, Giuseppe Bera is a mason, while<br />
in winter the ice rink at the <strong>Kulm</strong> Hotel is<br />
his pride and joy. He takes care of it manually,<br />
as he is keen to highlight. And a successor<br />
from within his family looks likely.<br />

It is the second time during his career in St. Moritz that<br />
Giuseppe Bera has managed a full renovation in the New<br />
<strong>Kulm</strong> wing. His first experience of a building site on the<br />
premises was 20 years ago, when he first came to work at<br />
the <strong>Kulm</strong> Hotel. At any rate, there is no part of the complex<br />
that has undergone renovations or alterations in which the<br />
master mason has not been involved – from the kitchens<br />
to the bedrooms. “Every year there are construction works<br />
of some kind. And when we’ve worked our way through,<br />
we start again from the beginning,” Bera smiles. The<br />
craftsman also played a part in the renovation of the sister<br />
hotel, the Grand Hotel <strong>Kronenhof</strong>. The Italian stands on<br />
the scaffolding and looks out over the park. He knows<br />
every part of the buildings like the back of his hand. Then<br />
he points out a place that is so far untouched by him: the<br />
old ice rink pavilion. “I would love to breathe new life back<br />
into that,” the 57-year-old says.<br />

Familie reist nach<br />
Italiener wie Giuseppe Bera gab und gibt es viele im Oberengadin:<br />
Roland Weingart von der Gemeindeverwaltung<br />
St. Moritz meldet auf Anfrage, dass aktuell im Ort 356 italienische<br />
Staatsangehörige zwischen 16 und 65 Jahren<br />
fest angemeldet sind. «Wir schätzen, dass mehr als 90 Prozent<br />
davon auch erwerbstätig sind.» Zudem sind, je nach<br />
Saison, zwischen 1200 und 1400 Grenzgänger gemeldet,<br />
wovon praktisch alle aus Italien stammen. Weingart meint,<br />
dass auch hier die Mehrheit täglich über die Grenze pendle.<br />
«Von meiner Familie war ich der Erste», schmunzelt der<br />
Brescianer Giuseppe Bera. Zwei seiner Brüder arbeiten<br />
ebenfalls in St. Moritz, auch sie pflegen im Winter Eis – den<br />
Cresta Run. Und zwei seiner Söhne seien unterdessen<br />
ebenfalls ins Engadin zum Arbeiten gekommen. Im Sommer,<br />
an Wochenenden oder wenn es mal keine Arbeit gibt,<br />
fährt Bera die eineinhalb Stunden nach Hause, in den Süden,<br />
zu seiner Frau und dem dritten Sohn. Ob er sich so<br />
mehr als Italiener oder Schweizer fühle, könne er nicht<br />
sagen. «Theoretisch bin ich jetzt genug lange in St. Moritz,<br />
um die Schweizer Staatsbürgerschaft zu beantragen.»<br />
Aber für ihn sei dies nur ein Papier. Wichtiger sei das Herz:<br />
Und dieses schlägt für sein <strong>Kulm</strong> Hotel.<br />
The ice rink with his trademark<br />
Bera loves it when his everyday life is shaped by the outdoor conditions. He<br />
would not like a job where he was always looking at the clock, saying that he<br />
finds strictly regulated work boring. And there is always something to do. In<br />
winter his efforts are concentrated on his ice rink. He came from Brescia to<br />
Engadine 23 years ago as a simple mason, but in winter there is not a lot of<br />
building work to be done, so he used to watch over the shoulders of his predecessors<br />
as they worked on the ice rink and bobsleigh run. “Being an ice expert<br />
isn’t taught in schools.” Bera is keen to underline that he does not care for the<br />
rink prepared by machines, but manually. He believes this enables skaters to<br />
feel much closer to nature, when it gets colder or warmer. Every day is different.<br />
Bera finds mechanically prepared ice rinks to be monotonous. He is proud of<br />
the compliments he receives for his ice, whose surface bears Bera’s trademark.<br />
“When it gets colder I use more water. When it gets warmer I use less water, but<br />
sprinkle it more often.” At the start of the season it takes three weeks for the<br />
<strong>Kulm</strong> Hotel ice rink to be ready, but once it is, it has to be maintained every day.<br />
It has to be as smooth as glass, which is hard physical work and involves being<br />
out on the ice at night in the bitter cold. “When I began as an ice expert the<br />
nights were much harsher than they are now. Back then the thermometer would<br />
sink to –35 °C,” Bera laughs. But this climate suits him, as does life in the<br />
mountains.<br />
Bera’s duties in winter also include cleaning the access ways, clearing the ice<br />
from the paths and steps, and removing the snow from the roofs of the hotel<br />
and staff living quarters, to ensure that no one shall be harmed. That means<br />
plenty of work – looking out over the <strong>Kulm</strong> Park and visualising an area bigger<br />
than two football pitches, it is easy to see how the winter days’ tasks must<br />
seem endless. Giuseppe Bera also really enjoys direct contact with the hotel<br />
guests as he hands out loungers or hires out skates. “I’ve even met a number<br />
of VIPs in my time.” Bera tells with pride how he had his photograph taken with<br />
TV presenter Michelle Hunziker.<br />
Followed by the family<br />
There have always been many Italians like Giuseppe Bera in the Upper Engadine.<br />
Roland Weingart of the municipality of St. Moritz reports that there are currently<br />
356 Italians aged between 16 and 65 registered as permanently resident in<br />
the town. “We estimate that more than 90 per cent of them are in employment.”<br />
There are also between 1200 and 1400 cross-border commuters, practically<br />
all of them from Italy, according to Weingart, who adds that the majority<br />
commute daily.<br />
“I was the first of my family,” grins Giuseppe Bera, from Brescia. Two of his<br />
brothers also work in St. Moritz, also caring for winter ice – on the Cresta Run.<br />
Meanwhile, two of his sons have also come to work in the Engadine. On summer<br />
weekends or when there is little work to do, Bera makes the one-and-a-half<br />
hour journey home, back to his wife and third son. He is unable to say whether<br />
he feels more Italian or Swiss. “Theoretically I have now been in St. Moritz for<br />
long enough to apply for Swiss citizenship.” But that is only paper to him. What<br />
is more important is the heart – and his heart beats for his beloved <strong>Kulm</strong> Hotel.<br />

Kleine regionale Produzenten können mit einem<br />
Nischenprodukt in einer globalisierten Welt Erfolg haben.<br />
Ein Portrait der höchstgelegenen Brauerei der Schweiz.<br />

Unterhalb des Bahnhofs Pontresina zeigt Daniel Käslin stolz seine Biermanufaktur<br />
in einer ehemaligen Lastwagengarage. Der schmale, hohe Raum vermittelt<br />
auf den ersten Blick nicht unbedingt das Gefühl einer Brauerei. Dafür fehlen die<br />
kupferfarbenen Kessel. Doch dem Betrachter wird klar: Jenes Bild schaut für<br />
den Laien zwar typisch aus, doch in einem geschlossenen System funktioniert<br />
der Prozess meist automatisch. Hier aber kann jeder Schritt genau beobachtet<br />
werden. Das ist ehrliches Handwerk. Ohne Schnickschnack. Ein süsslicher,<br />
noch nicht herber, doch malziger Duft liegt in der Luft. Unverkennbar. Eben<br />
wurde das geschrotete Malz – selbstverständlich nach dem geheimen Hausrezept<br />
– mit reinem Bergwasser zur bräunlichen Maische vermischt und in einem<br />
Trog, der 145 Liter fasst, auf verschiedene Temperaturstufen erhitzt. Die Stärke<br />
im Malz wird in dieser Phase in Zucker umgewandelt.<br />
Vom Balkon in die Garage<br />
Auch wenn Daniel Käslin heute einen Braumeister zu 100 Stellenprozenten beschäftigen<br />
kann – Hannes Gutschmidt, ein Kölner –, ist nach wie vor zu spüren,<br />
dass die Idee aus einem Hobby entstanden ist, einer persönlichen Leidenschaft:<br />
Ein Produkt mit Herz aus der kleinen Garage von nebenan. «Als ich den<br />
Getränkehandel meines Vaters übernommen hatte, wurde mir schnell klar, dass<br />
mir das Handwerkliche fehlte», erzählt der ursprünglich gelernte Zimmermann.<br />
Also habe er daheim ausprobiert, Bier zu brauen. Bis die Rezeptur stand, dauerte<br />
es zwei Jahre. Da Käslin keinen Raum für die Produktion hatte und somit auf<br />
seinem Balkon experimentierte, konnte er dies lediglich in den Sommermonaten<br />
tun. Eine kurze Zeit, zumal Bier sechs Wochen braucht, bis es vollendet ist.<br />
Gemeinsam mit «BierVision Monstein» bei Davos konnte der Engadiner im<br />
Jahr 2008 zum ersten Mal 1000 Liter seines naturtrüben und hellen «Bernina-<br />
Biers» abfüllen. «Weil ich nur reines Bergwasser aus Pontresina verwenden<br />
wollte, musste ich zu Beginn dieses über den Flüelapass oder über Tiefencastel<br />
ins Landwassertal transportieren.» Der Grund: Bergwasser aus Pontresina ist<br />
seine wertvollste Zutat: Ein weiches Wasser. «Härte kann man zufügen, aber<br />
entziehen nicht.» Aufgrund der steigenden Nachfrage wurde schnell klar, dass<br />
sein Bier vor Ort produziert werden musste.<br />

niche product. This is a portrait of the<br />
highest-altitude brewery in Switzerland.<br />

Below the railway station of Pontresina, Daniel Käslin<br />
proudly shows us around his brewery in a former goods<br />
vehicle garage. The tall, narrow room doesn’t seem like a<br />
brewery at first glance, especially as it lacks the expected<br />
copper vessels. But the observer soon discovers that,<br />
while such vessels are part of the traditional image to the<br />
layman, in a closed system like that the process usually<br />
happens automatically. Here, however, each stage can be<br />
closely observed. This is real craftsmanship, with no bells<br />
and whistles. A sweet, almost bitter, yet malty smell hangs<br />
in the air – unmistakeable. The crushed malt – prepared<br />
according to a secret recipe, of course – has just been<br />
blended with pure mountain water to form the brown mash<br />
and heated through various temperature levels in a 145-litre<br />
vat. This is the phase in which the starches in the malt are<br />
converted into sugar.<br />

From the balcony to the garage<br />
Although Daniel Käslin is now able to employ a full-time<br />
master brewer, Hannes Gutschmidt from Cologne, it is still<br />
apparent that his idea grew from a hobby, a personal passion<br />
– a product with soul from the small garage next door.<br />
“When I took over my father’s drinks retailing business I<br />
soon realised that I was missing the element of craftsmanship,”<br />
says Käslin, who originally trained as a carpenter.<br />
And so he began to experiment with brewing beer. It took<br />
two years for him to perfect his recipe. Since Käslin had no<br />
room to produce his beer, experimenting outside on his<br />
balcony, he was only able to do so in the summer months.<br />
That only gave him a short time window, as beer takes six<br />
weeks until it is ready to drink.<br />
It was in 2008 that the Engadine brewer, together with<br />
“BierVision Monstein” near Davos, first bottled 1000 litres<br />
of his naturally cloudy, light-coloured Bernina Bier. “I wanted<br />
to use only pure mountain water from Pontresina, so at<br />
first I had to bring it over the Flüela Pass or through Tiefencastel<br />
into the Landwasser valley.” This is because mountain<br />
water from Pontresina is his most valuable ingredient:<br />
soft water. “You can add hardness, but you can’t take it<br />
away.” As demand increased it soon became clear that his<br />
beer would have to be produced on location.<br />
Gipfel auf die Etiketten<br />
Noch bevor der Standort gefunden war, beschaffte der Bierpionier sämtliche<br />
Elemente für eine Mikrobrauanlage. Im Dezember 2010 konnte das erste «Engadiner<br />
Bier» aus Pontresina ausgeliefert werden. Seither sind auch ein naturtrübes,<br />
bernsteinfarbenes Amberbier, das «Palü-Bier», ein leichtes Hefen-Weizenbier,<br />
das «Bellavista-Bier» und aktuell ein «Black Boval» entwickelt worden.<br />
Alle Produkte tragen die Namen der Gipfel, die man von der Diavolezza, dem<br />
Hausberg Pontresinas, sieht. Ehrensache, dass jedes Bier auf den jeweiligen<br />
Gipfeln sozusagen «getauft» wurde.<br />
Daniel Käslins Vater ist unter anderem auch Bergführer und die ganze Familie<br />
oft auf den Gletschern und Felsen unterwegs. Auch die Etiketten sind hausgemacht:<br />
«Ich habe das benannte Panorama fotografiert.» Und bis vor Kurzem<br />
wurde jede Flasche sogar einzeln von Hand etikettiert. Bei einer Produktionsmenge<br />
von heute rund 300 Hektolitern pro Jahr. «Manchmal kann ich heute<br />
sogar die Nachfrage kaum mehr stillen», schmunzelt der 37-Jährige. Genau in<br />
diesem Moment tauchen zwei Touristen auf und möchten zwei Harasse erwerben.<br />
Käslin vertröstet die Liebhaber auf den morgigen Tag – da werde wieder<br />
abgefüllt. Authentisch frisch eben. Exklusiv.<br />
Mountain peaks on the labels<br />
Even before he had found a site for the brewery, pioneering<br />
Käslin made sure he had all the elements for his microbrewery<br />
in place. In December 2010 the first Engadiner<br />
Bier was shipped out of Pontresina. Since then, the naturally<br />
cloudy, amber-coloured Palü, a light-coloured wheat<br />
beer, the Bellavista, and recent addition Black Boval have<br />
been added to the range. All the products bear the names<br />
of mountain peaks that can be seen from Diavolezza, Pontresina’s<br />
local mountain. It goes without saying that each<br />
beer has had a “naming ceremony” on its eponymous<br />
summit.<br />
Daniel Käslin’s father is a part-time mountain guide, and<br />
the whole family often goes out exploring the glaciers and<br />
rocky terrain. The labels, too, are homemade. “I photographed<br />
the panorama that encompasses all the peaks.”<br />
Until recently the labels were even applied to each bottle by<br />
hand – for a production volume that now amounts to around<br />
300 hectolitres per annum. “It’s reached a point where I’m<br />
sometimes hardly able to satisfy the demand,” the 37-year<br />
old brewer says with a smile. At that very moment two tourists<br />
appear, wanting to buy two crates. Käslin manages to<br />
put them off to the following day, when the next batch is<br />
due to be bottled. Authentic and fresh, exclusive.<br />
Small is beautiful<br />
Microbreweries are currently enjoying great success in<br />
Switzerland. In a globalised world, people long for local<br />
specialities or a sense of history on their doorstep. Things<br />
that are distinctive, unique. “We are number 394 on the<br />
register of Swiss breweries. By now there are around<br />
600 entries for beer producers in the country,” Käslin<br />
says. Compare this with only 34 breweries in 1985. This<br />
boom has been helped by the abolition of the beer cartel.<br />
Between 1935 and 1991 there was an agreement between<br />
almost all of the Swiss breweries, which allowed them to<br />
exercise extensive control of the market. This may have<br />

Heute feiern Mikrobrauereien in der Schweiz einen grossen Erfolg. In einer globalisierten<br />
Welt sehnen sich Menschen nach der lokalen Spezialität, der Geschichte<br />
aus der Nachbarschaft. Dem Unverwechselbaren, Einzigartigen. «Im<br />
Brauereiregister tragen wir in der Schweiz die Nummer 394. Bis heute sind aber<br />
bereits rund 600 Bierproduzenten im Land eingetragen», weiss Käslin. Im Vergleich:<br />
1985 waren es 34 Brauereien. Zu diesem Boom hat auch die Abschaffung<br />
des Bierkartells beigetragen: Zwischen 1935 und 1991 bestand eine Vereinbarung<br />
zwischen fast allen Schweizer Brauereien und erlaubte eine<br />
umfassende Marktregulierung, die zwar das einheimische Bier stärkte, aber<br />
hauptsächlich die grossen Produzenten in ihren jeweiligen Regionen begünstigte<br />
und kaum Mikrobetriebe überleben liess.<br />
Heute kann derjenige, der die Nische findet, Erfolg haben. Neben dem Engadiner<br />
Bier ist dies in der Region auch die «Biera Engiadinaisa» aus Tschlin. «Allerdings»,<br />
schmunzelt Daniel Käslin, «Leidenschaft und Rentabilität vertragen<br />
sich nicht in jedem Fall.» Der Bierbrauer ist froh, kann er auf sein zweites Standbein,<br />
den Getränkehandel, zählen und somit einfacher sein Produkt vertreiben.<br />
Was aber Leidenschaft immer tut: Es erfreut das Herz und hat ihn auch schon<br />
auf eine Bier- bzw. Schnapsidee (aus dem übrigen Bier wird übrigens im Münstertal<br />
heute tatsächlich sogar ein Schnaps gebrannt) gebracht: Für ein Erinnerungsfoto<br />
schickte er sein Bier 74’745 Kilometer um die Welt. «Viva!»<br />
strengthened the position of national beers, but it favoured<br />
the big producers in each region, so that very few<br />
microbreweries survived.<br />
Now anyone who finds the right niche can enjoy success.<br />
In this region, as well as the Engadiner Bier, there is<br />
also Biera Engiadinaisa from Tschlin. “It has to be said,<br />
however, that passion and profit don’t always go hand in<br />
hand,” grins Daniel Käslin. The brewer is glad that he has<br />
his beverage retail business to fall back on, as well as to<br />
make selling his own product easier. But passion is a<br />
strong driving force: it not only warms the heart, but has<br />
also inspired him to promote his latest beer and schnapps<br />
idea (the leftover beer is used to distil a type of schnapps<br />
in Val Müstair) by taking a 74,745 kilometre around-theworld<br />
trip with a Palü beer for a photo shoot. “Cheers!”<br />

Lagen stossen seit einigen Jahren auf zunehmende Nachfrage.<br />
Hoteldirektor Heinz E. Hunkeler verrät die Gründe dafür.<br />

Heinz Hunkeler, welchen Stellenwert haben Ihre 50 Residenzen für das Hotel?<br />
Unsere Residenzen, die nun schon seit über 25 Jahren zum Hotelangebot gehören,<br />
stehen für Luxus und Exklusivität. Ihr Erfolg beruht auf der Tatsache, dass<br />
sich durch dieses Angebot Gäste angesprochen fühlen, die keine Ferienresidenz<br />
kaufen wollen, jedoch grossen Wert darauf legen, während der Mietdauer<br />
ihre Accessoires in den temporären eigenen vier Wänden lassen zu können.<br />
Gleichzeitig nutzen die Mieter die kompletten Hotelangebote, darunter Zimmerreinigung,<br />
Roomservice und den Spa- & Wellnessbereich. Für das Hotel ist diese<br />
Formel inzwischen wirtschaftlich sehr wichtig geworden. Deswegen ist auch<br />
an einen Verkauf der Wohnungen nicht gedacht.<br />
Können Sie einen Trend beobachten?<br />
In der Tat. Auch in den letzten Jahren waren Ferienresidenzen sehr gefragt.<br />
Unsere Kunden schätzen vor allem, dass sie ihre zwischen 80 und 350 Quadratmeter<br />
grossen und unmöblierten Residenzen innenarchitektonisch ganz nach<br />
eigenem Gusto gestalten und möblieren können. Dabei können sie ihrer Phantasie<br />
freien Lauf lassen. Residenzen bieten den Komfort, dass sie einem jederzeit<br />
zur Verfügung stehen und das zweite Zuhause darstellen.<br />
Wie lange mieten sich die Kunden normalerweise bei Ihnen ein, gibt es bereits<br />
einen Rekord?<br />
Wir haben einige Mieter, die ihren Apartments schon seit Beginn an die Treue<br />
halten. Die meisten Mieter wählen aber auch erfahrungsgemäss eine langfristige<br />
Vertragsdauer, da sie sich bei uns sehr wohl fühlen und den unkomplizierten<br />
Komfort schätzen.<br />
Residenzbewohner haben bisweilen Sonderwünsche. Können Sie sich an die<br />
bisher ungewöhnlichsten erinnern?<br />
Ich erinnere mich sehr lebhaft an zwei Bewohner, die für die Gestaltung ihrer<br />
nebeneinanderliegenden und gleich grossen Residenzen namhafte Innenarchitekten<br />
verpflichteten. Während sich der eine Mieter eine postmoderne, ziemlich<br />
abstrakt wirkende Residenz zulegte, liess der andere das Wohnungsinnere im<br />
Gebirgsstil nach Art eines Chalets mit viel Holz gestalten. Einen grösseren Kontrast<br />
hätte man sich gar nicht vorstellen können. Wie dem auch sei, am Ende<br />
der Mietperiode waren beide Mieter veranlasst, vertragsgemäss den ursprünglichen<br />
Zustand der Residenzen wieder herzustellen …<br />

Heinz E. Hunkeler, what value do your 50 holiday residences<br />
have for the hotel?<br />
Our residences, which have been part of the hotel offering<br />
for more than 25 years now, are the epitome of luxury and<br />
exclusivity. They are particularly popular with guests who<br />
do not want to buy their own holiday home, but set great<br />
store in being able to house their belongings within their<br />
own four walls for the length of their tenancy. Residence<br />
tenants are also able to enjoy all the hotel’s services, including<br />
cleaning and in-room meals, and facilities, such as<br />
the spa and wellness suite. The residences are economically<br />
very important for the <strong>Kulm</strong>, which is why we would<br />
not consider selling them.<br />
Have you observed a trend?<br />
I certainly have – demand for holiday residences has increased<br />
markedly in recent years. Our customers particularly<br />
value the freedom to exercise their own taste in the<br />
interior design and furnishing of their residences, which<br />
are let unfurnished and vary from 80 to 350 square meters<br />
in size. They can give free rein to their imaginations. Our<br />
residences offer the comfort of always being available – a<br />
second home to our guests.<br />
How long do your customers usually rent the residence<br />
for? Is there a record?<br />
We have some tenants who have kept their apartments<br />
from the very beginning, so over 25 years. Not all the rental<br />
agreements are that long, but most tenants do take out a<br />
long-term rental contract, because they feel comfortable<br />
and appreciate our uncomplicated service.<br />
Residence occupants sometimes have special wishes.<br />
What are the strangest that you remember?<br />
I have a very vivid memory of two residents who each appointed<br />
famous interior designers for their adjacent, identically<br />
sized residences. While one tenant went for a<br />
post-modern, fairly abstract interior, the other chose a<br />
design that echoed the Alpine style of a chalet with lots of<br />
wood. It would be impossible to imagine a more marked<br />
contrast between the two. Be that as it may, at the end of<br />
their rental agreement, both tenants were asked to restore<br />
their residences to the original condition in accordance<br />
with the contract …<br />

an den Olympischen Winterspielen von 1928 und 1948 geschrieben. Was diese<br />
Geschichten auszeichnet? Der Sportsgeist und die Fairness stehen im Vordergrund,<br />
der Ehrgeiz ist nicht wichtiger als das Erlebnis an sich. Vielleicht hat das<br />
seinen Grund auch ein bisschen darin, dass im Engadin bereits die Landschaft<br />
ein elementares Erlebnis ist. Ein Erlebnis, das traditionell Sportler beflügelt,<br />
Dichter inspiriert und Menschen beseelt. Ein Erlebnis also, das Wärme in die<br />

It was February 1928 when Sonja Henie performed<br />
her circles on the ice and elegant pirouettes in the air<br />
to the fine strains of Tschaikowsky’s Swan Lake and<br />
became an Olympic champion in figure skating for<br />
the first time. That same month, five daring Americans<br />
threw themselves into the St.Moritz bobsleigh<br />
run and ended up Olympic champions, in spite of<br />
their lack of experience with ice, snow and sledging.<br />
The driver William Mead Lindsley Fiske was just 16 years of age. There were<br />
indeed some wonderful sporting moments in Engadin during the Winter Olympics<br />
of 1928 and 1948. What is it that sets these moments apart? The prominence<br />
of a sporting spirit and sense of fairness, the way in which ambition<br />
doesn’t exceed the experience itself. Maybe that has something to do with the<br />
landscape of Engadin being an elementary experience in the way it drives sporting<br />
performance, inspires poets and reinvigorates people. In other words, an<br />
experience that warms the heart. That is what makes the Engadin so suitable<br />
for enjoyment, thrills, sporting ambition or just giving your mind a rest. Moreover,<br />

Erstmals ausgeführt in <strong>2015</strong>, wird auch in 2016 das <strong>Kulm</strong> Hotel als Sponsor<br />
und Hotel des internationalen Springreitturniers Longines CSI St. Moritz in<br />
Erscheinung treten. Bei diesem Top-Ereignis geben sich einige der weltbesten<br />
Springreiter und eine starke Delegation der Schweizer Elitereiter die Ehre. Die<br />
Veranstaltung zählt zu den höchstgelegenen Turnieren europaweit und ging<br />
im Vorjahr erstmals über die Bühne. Von diesem Jahr an findet sie in der<br />
höchsten Kategorie CSI 5* statt. Aktuell gehört die Schweiz mit vier Turnieren<br />

Following on from its inaugural success in <strong>2015</strong>, the <strong>Kulm</strong><br />
Hotel will once again be the hotel sponsor for the international<br />
Longines CSI St. Moritz show jumping championships<br />
in 2016. This top event attracts some of the world’s<br />
best showjumpers, including a strong delegation from the<br />
Swiss equestrian elite. The event is one of the highest-altitude<br />
showjumping competitions in Europe and will be classified<br />
in the highest category as CSI 5* in 2016. Switzerland<br />
is currently a leader in the international equestrian<br />
world, hosting four competitions in this category and the<br />
St Moritz event is set to be a real treat.<br />

St. Moritz Music Summit<br />
Electronic dance music high up in the mountains? You<br />
might shake your head in bemusement at the idea, but<br />
St. Moritz has proved that the international DJ elite have no<br />
fear of heights, happily working their decks at altitudes of<br />
up to 2,500 meters.<br />
In 2016, the world’s most famous DJs will once again<br />
be pumping up the volume to enable dance enthusiasts<br />
to spend a weekend partying with like-minded people.<br />
Well-known club brands, such as Ministry of Sound and<br />
Pacha, will be headlining the St. Moritz Music Summit from<br />
16 to 20 March 2016, taking their audiences to new music<br />
highs.<br />
The venues include the <strong>Kulm</strong> Hotel’s popular Sunny Bar<br />
(which is the oldest Alpine sports bar), El Paradiso, the<br />
Quattro Bar as well as Salastrains.<br />

Der Skisporthersteller HEAD und das <strong>Kulm</strong> Hotel, in der<br />
Geburtsstätte des Schweizer Wintertourismus, verfolgen<br />
die gleichen Grundsätze. Nichts lag daher näher, als sich<br />
auf eine Partnerschaft zu verständigen.<br />

Kein ausländischer Hersteller von Skisportartikeln unterhielt von Anfang an innigere<br />
Beziehungen zur Schweiz als das 1950 gegründete US-Unternehmen<br />
HEAD Ski COMPANY, INC. Firmengründer Howard Head hatte zuvor mit Walter<br />
Haensli, prominenter Skilehrer und Olympiatrainer der amerikanischen Alpin-Equipe<br />
1948 in St. Moritz, den ersten Metallbau-Ski ersonnen.<br />
Marke noch besser wahrnehmen<br />
Dass sich das renommierte Unternehmen mit dem Traditionshaus <strong>Kulm</strong> Hotel<br />
auf eine Partnerschaft verständigt hat, mag nicht überraschen. Schliesslich<br />
verfolgen beide Unternehmen die gleichen Ziele kontinuierlicher Qualität und<br />
innovativer Neuerungen. «Wir haben das Angebot selbstverständlich mit Freude<br />
angenommen», bekräftigt Lucio Zallot, General Manager von HEAD Switzerland<br />
AG. «Dieses grossartige Fünf-Sterne-Hotel hilft uns entscheidend dabei, dass<br />
die Marke noch besser wahrgenommen wird», fügt er hinzu. Das lässt sich vor<br />
Ort erleben: Im hausinternen Geschäft von Ender Sport können Hotelgäste jederzeit<br />
aus 120 neuesten HEAD Produkten, die auch von der internationalen<br />
Ski Elite wie Lindsey Vonn, Ted Ligety oder Didier Cuche gefahren werden, auswählen<br />
und sie testen.<br />
Ski-Räume erneuert<br />
Um den Gästen höchsten Komfort zu bieten, haben das <strong>Kulm</strong> Hotel sowie auch<br />
das Grand Hotel <strong>Kronenhof</strong> die Erneuerung der Skiräume vorangetrieben. Das<br />
Ergebnis kann sich sehen lassen: Neuerdings gibt es beheizte, individuell abschliessbare<br />
Skischränke. Dort kann man Helme, Hand- und Skischuhe trocknen<br />
lassen.<br />

No foreign ski sports equipment manufacturer has had<br />
closer relations with Switzerland right from the start than<br />
the HEAD Ski Company, Inc., which was established in<br />
1950 in the US. The company’s founder, Howard Head,<br />
created the first metal skis together with Walter Haensli, a<br />
prominent ski instructor and trainer of the 1948 American<br />
winter Olympics team in St. Moritz.<br />
Greater brand recognition<br />
It is no surprise that the renowned company entered into<br />
a partnership with the <strong>Kulm</strong> Hotel. “We accepted the proposal<br />
with great pleasure,” says Lucio Zallot, General Manager<br />
of HEAD Switzerland, Inc. “This magnificent five-star<br />
hotel is a great help to us in giving the brand an even better<br />
image.” The hotel’s in-house Ender Sport shop now offers<br />
guests a range of 120 up-to-the-minute HEAD products<br />
to test, which are used by the international ski elite,<br />
including Lindsey Vonn, Ted Ligety and Didier Cuche.<br />
Renovated ski rooms<br />
Additionally, to maximize the comfort of those guests<br />
who ski, the <strong>Kulm</strong> Hotel and the Grand Hotel <strong>Kronenhof</strong><br />
have renovated their ski rooms for the <strong>2015</strong>/16 season.<br />
The rooms now boast heated, individual lockers with<br />
keys, where guests can leave their helmets, gloves and<br />

Filippo Giani, Sie sind der Initiant des neuen Kommunikationstool «Enjoy St. Moritz»<br />
– eine multimediale Plattform, die kulturelle Ereignisse in der Region bündelt.<br />
Wie kamen Sie auf die Idee?<br />
Nachdem ich im Tessin ein Newsportal betreute, zog ich 2011 nach St. Moritz<br />
und gründete die ibexmedia – ein Multimediaproduzent. Mir war klar, dass<br />
Videos wohl vom jeweiligen Zielpublikum konsumiert wurden, es fehlte aber<br />
eine Plattform, welche die Angebote zusammenbrachte: Ein Besucher des<br />
White Turfs kann sich auch für Bob interessieren. Nachdem ich zwei Jahre<br />
lang Sponsoren suchte, lernte ich Heinz E. Hunkeler kennen. Er war von der<br />
Idee rasch begeistert und stellte mir unkompliziert die Räumlichkeiten mit<br />
entsprechender Infrastruktur für meine Produktion im Keller des Ur-<strong>Kulm</strong>s<br />
zur Verfügung.<br />
Die medienübergreifende Plattform kann auf dem Fernsehen des <strong>Kulm</strong> Hotel<br />
und Grand Hotel <strong>Kronenhof</strong> gesehen werden – es sind die ersten Hotels, die<br />
Web 2.0-Channels aufgegleist haben. Zu sehen ist der Kanal zudem auf Ihrer<br />
Webseite sowie auf Social-Media-Plattformen. Haben Sie einen Überblick über<br />
die Nutzerinnen und Nutzer?<br />
Es sind rund 100’000 Personen, die sich auf 136 Nationen verteilen, wovon circa<br />
80 Prozent der Zugriffe aus der Schweiz stammen – vor allem aus Graubünden<br />
und Zürich. Und wir erleiden in der Zwischensaison keinen Einbruch der Zahlen.<br />
Das zeigt, dass wir bereits in den Köpfen der Einheimischen verankert sind.<br />
Diese Verankerung zeigt sich auch bei den Macherinnen und Machern …<br />
Sehr. Viele Freiwillige wollen in ihrer Freizeit TV machen. Das Resultat ist zwar<br />
nicht immer hochprofessionell, aber etwas Naivität gibt dem Produkt seine Ehrlichkeit.<br />
Diese spontane Lust kontrastiert die Champagnerluft der Destination<br />
wunderbar.<br />
Gibt es neben der elektronischen Agenda auch journalistisch aufbereitete Inhalte?<br />
Wir betreiben ein Newsportal mit «positiven» Nachrichten – ausser bei den Verkehrsnachrichten.<br />
Weil es den Gast genauso interessieren muss wie den Einheimischen,<br />
verzichten wir auf Wirtschaft oder Politik. Was besonders gefällt, sind<br />
Hintergrundberichte wie etwa ein Blick über die Schultern des Chefkochs.<br />
Sie möchten, dass Ihr Kanal ein einheimisches Produkt ist und bleibt. Wie schaffen<br />
Sie den Spagat zwischen Inhalten für Gäste und Einheimische?<br />
Dieses Publikum eben nicht zu trennen. Auf Enjoy St. Moritz sind zwar auch<br />
Imagevideos zu sehen, ohne Worte, nur mit Hintergrundmusik – das ist attraktiver,<br />
als einfache Aufnahmen zu zeigen. Doch das Porträt jenes Mannes, der<br />
seit 30 Jahren die Dicke des Eises auf dem St. Moritzersee für den White Turf<br />
misst, interessiert den Gast gleichermassen wie seine Nachbarn im Dorf.<br />
Primär liegt der Fokus auf der Eventkultur. Gibt es auch Inhalte zur Alltagskultur?<br />
Diesen Bereich möchte ich gerne ausbauen. Dazu fehlen uns leider noch mehr<br />
Sponsoren. Nichtsdestotrotz berichten wir zum Beispiel über den «Chalandamarz».<br />
Doch um mehr Reportagen zu erstellen, müsste ich mir ein grösseres<br />
Team leisten können.<br />
ENJOY St. Moritz TV<br />
Filippo Giani, you are the man behind “Enjoy St. Moritz”, a<br />
multimedia platform that brings together the region’s cultural<br />
events. What inspired your idea?<br />
After being responsible for a news portal in Ticino, in 2011<br />
I moved to St. Moritz, where I founded Ibexmedia, a multimedia<br />
producer. I could see that videos were consumed by<br />
a specific target audience, but there was no platform to<br />
bring the various products together. A visitor to the White<br />
Turf races might also be interested in bobsleigh. After a<br />
two-year search for sponsors, I met Heinz E. Hunkeler. He<br />
was immediately taken by the idea and let me use the<br />
premises I needed, with all the necessary infrastructure, in<br />
the cellar of the Old <strong>Kulm</strong>.<br />
This cross-media platform can be watched on the TV<br />
screens in the <strong>Kulm</strong> Hotel and Grand Hotel <strong>Kronenhof</strong>, on<br />
your website and on social media platforms. Do you have<br />
an overview of the users?<br />
The audience consists of around 100,000 people, spread<br />
over 136 countries, with around 80 per cent of the views<br />
originating in Switzerland, especially the cantons of<br />
Graubünden and Zurich. We don’t see a significant drop in<br />
our figures in the low season, which shows that we have<br />
become deeply rooted among the locals.<br />
You also enjoy a similar loyalty among video makers...<br />
We certainly do. There are many volunteers who spend<br />
their free time making TV programmes. The results are not<br />
always the most professional, but a certain naivety gives<br />
the product a genuine feel. This spontaneous enthusiasm<br />
makes a wonderful contrast to the champagne image of<br />
the resort.<br />
Alongside the electronic agenda, do you also use journalistic<br />
content?<br />
We have a news portal with “positive” news – apart from<br />
the traffic reports. Because the content has to be as interesting<br />
for guests as it is for locals, we stay away from business<br />
and politics. People particularly enjoy watching behind-the-scenes<br />
reports such as watching a chef at work.<br />
You want your channel to be and remain a local product.<br />
How do you bridge the gap between content for guests and<br />
locals?<br />
Precisely by not distinguishing our audience. Enjoy<br />
St. Moritz also shows image videos without words, only<br />
background music. But, for example, a portrait of the man<br />
who for the last 30 years has been responsible for measuring<br />
the thickness of the ice on Lake St. Moritz for the<br />
White Turf is equally interesting both to guests and his<br />
neighbours in the village.<br />
The main focus is on special events. Do you also show<br />
content relating to everyday local culture?<br />
I would like to expand this area, but unfortunately we<br />
would need more sponsors to do so. However we report<br />
on traditions such as the Chalandamarz festival, for example.<br />
But in order to produce more reports I would need to<br />
be able to call on a bigger team.<br />

Wie vermeiden Sie, dass das Programm zu PR-lastig wird?<br />
Wir machen kein «Verkaufs-TV». Die neue Kollektion in der Kleiderboutique interessiert<br />
uns nicht. Wenn mir aber ein Initiant einer neuen Spezialitätenbar<br />
schildern kann, wo er die Leidenschaft für seine Idee entdeckte und beim Erzählen<br />
seine Augen leuchten, dann wird aus einem plumpen Werbespot eine<br />
packende Story. Wir müssten Geschichten erzählen können.<br />
Social Media bieten auch die Möglichkeit zur Interaktion. Sind auch Publikumsbeiträge<br />
möglich?<br />
Es ist möglich. Aber das passiert bei 100’000 Usern selten. Bei Interaktionen<br />
interessiert mich vor allem, wie und welche Inhalte geteilt werden.<br />
Hauptsponsoren sind u. a. das <strong>Kulm</strong> Hotel und das Grand Hotel <strong>Kronenhof</strong> in<br />
Pontresina, zu sehen ist auch die Rubrik <strong>Kulm</strong> @ Work, Hintergrundgeschichten<br />
aus dem Hotel. Laufen Sie da nicht Gefahr, die journalistische Neutralität zu<br />
verlieren, den Blick für das Ganze?<br />
Diese Angst habe ich nicht. Auch Heinz E. Hunkeler verliert nie den Blick für das<br />
Ganze. Er weiss, dass das Zielpublikum wichtig und eine eigene Nabelschau<br />
langweilig ist. Andere renommierte 5-Sterne-Hotels sollen darum explizit mitmachen<br />
können. Enjoy St. Moritz ist eine offene Plattform, und ich arbeite unabhängig.<br />
Enjoy St. Moritz gibt es seit rund einem Jahr. Gibt es schon erste persönliche<br />
Highlights?<br />
Dass ich seit einem Jahr kaum mehr geschlafen habe (lacht)... Wir verzeichneten<br />
bis anhin 1’000’000 Clicks. Viele Videos sind mir in Erinnerung geblieben,<br />
speziell die <strong>Kulm</strong> @ Work-Aufnahmen. Positiv ist für mich aber auch, dass in<br />
kurzer Zeit viele Menschen Enjoy St. Moritz in ihren Alltag integriert haben. Die<br />
Engadiner sind offen für Ideen von aussen – wie von mir, einem Tessiner.<br />
Haben Sie konkrete Vorstellungen, wie sich die Plattform weiterentwickeln soll?<br />
Ich hoffe, dass wir von der Destination und Gemeinde St. Moritz noch mehr<br />
Support erhalten. Und ein Wunsch ist, dass wir auf dem Netz von «Swisscom<br />
TV» in der ganzen Schweiz integriert werden. Das würde die Distribution enorm<br />
vereinfachen.<br />
Zum Schluss: Eine Rubrik sind auch Tipps von Einheimischen. Was ist Ihrer?<br />
Im Winter: Eine Abfahrt im Bob und ein schöner Abend in der Sunny Bar. Im<br />
Sommer: Auf Muottas Muragl ein Konzert im Rahmen des Festival da Jazz<br />
geniessen und bis zur Segantinihütte wandern.<br />

How do you prevent programmes from becoming too<br />
PR-focused?<br />
We don’t produce “TV shopping” programmes. We’re not<br />
interested in the latest collections in the fashion boutiques.<br />
But if the founder of a speciality bar were to come<br />
and tell me what triggered the passion behind his idea, his<br />
eyes lighting up as he talked to me, that would mean making<br />
a story out of a blunt advert. We have to be able to tell<br />
stories.<br />
Social media also presents the opportunity for interaction.<br />
Do you get contributions from the public?<br />
It can happen. But it’s a rare event, even with 100,000 users.<br />
With interactions I’m particularly interested in what<br />
content is shared, and how.<br />
Your main sponsors include the <strong>Kulm</strong> Hotel and the Grand<br />
Hotel <strong>Kronenhof</strong> in Pontresina. You also have the series<br />
<strong>Kulm</strong> @ Work, behind-the-scenes stories from around the<br />
hotel. Does this not mean that you risk losing journalistic<br />
objectivity, a view of the big picture?<br />
I’m not afraid of that happening. Heinz E. Hunkeler himself<br />
never loses sight of the big picture. He knows that the target<br />
audience is important and that self-centred navel gazing is<br />
boring. Other 5-star hotels in St. Moritz should therefore<br />
be able to participate. Enjoy St. Moritz is an open platform<br />
and I’m an independent operator.<br />
Enjoy St. Moritz has been on air for around a year. What<br />
have been your personal highlights so far?<br />
The fact that I’ve gone a year with hardly any sleep...<br />
(laughs). We just have reached one million clicks. Many<br />
videos have been exciting to produce, for example the<br />
<strong>Kulm</strong> @ Work episodes. It’s been a great pleasure for me<br />
to see Enjoy St. Moritz becoming an integral part of so<br />
many people’s everyday lives. The people of Engadine are<br />
open to ideas from outside – including from me, a man<br />
from Ticino.<br />
Do you have any specific ideas for the future development<br />

Im Sommer <strong>2015</strong> eröffnet, bietet der Weg faszinierende Einblicke in die Erdgeschichte<br />
des Berninamassivs. Vom Bahnhof Morteratsch aus dauert die Wanderung,<br />
welche in den Sommermonaten vorgenommen werden kann, eine knappe<br />
Stunde. Sie führt vorbei an 16 Haltepunkten mit Informationen über den drittlängsten<br />
Gletscher der Ostalpen im Gebiet der zum Unesco-Welterbe erhobenen<br />
Albula- und Berninabahn. Vor allem bei der Bergstation Diavolezza bietet sich ein<br />
atemberaubendes Panorama auf das Massiv.<br />
Pers- und Morteratsch-Gletscher gleichen zwei gigantischen Eiszungen, die<br />
sich von den schneebedeckten Gipfeln des Piz Palü und des Piz Bernina in Richtung<br />
Pontresina erstrecken. Die Gletscherarme vereinigen sich bei der Isla Persa<br />
zu einer langen Eisfläche. Noch zu Beginn des vorigen Jahrhunderts erstreckte<br />
sie sich fast zwei Kilometer weiter ins Tal. Auf anschauliche Weise vermittelt der<br />
Themenweg die Gründe für das anhaltende Zurückweichen des Gletschers.<br />
Wie die Natur die Landschaft formte<br />
Das tiefer liegende Puschlav/Valposchiavo, in dem auf einer Länge von 25 Kilometern<br />
alle Schweizer Klimazonen vertreten sind, wartet mit einer weiteren<br />
Attraktion auf: Bei Cavaglia kann man anhand eiszeitlicher Gletschermühlen<br />
nachvollziehen, wie kraftvoll die Natur im Laufe der Jahrtausende die Landschaft<br />
modelliert hat. Staunend steht man vor den spiralwandigen Hohlformen,<br />
die das abfliessende Schmelzwasser geschaffen hat.<br />
Vor 15 Jahren hatte ein örtlicher Verein mit der Gestaltung des «Gletschermühlengartens»<br />
begonnen. Man entfernte viele Tonnen Gesteinstrümmer und<br />
hat das Terrain inzwischen für Besuche in den Sommermonaten, von Mai bis<br />
Oktober, professionell gesichert.<br />

Opened last summer, the trail gives some fascinating insights into the geological<br />
history of the Bernina massif. Starting at the Morterartsch station, the trail<br />
takes about an hour, passing 16 information boards that describe the thirdlongest<br />
glacier in the Eastern Alps, in the area of the UNESCO World Heritage-listed<br />
Rhaetian Railway Albula/Bernina. There is a particularly breathtaking<br />
view over the massif from the Diavolezza mountain station.<br />
The Pers and Morterartsch glaciers are like two gigantic tongues of ice<br />
stretching down towards Pontresina from the snow-covered summits of the<br />
Piz Palü and the Piz Bernina. The two arms of the glacier come together to form<br />
a long ice sheet below the Isla Persa. At the start of the last century it extended<br />
for almost two kilometres further down into the valley. The themed walk provides<br />
visual explanations for the steady retreat of the glacier.<br />
How nature formed the landscape<br />
The lower-lying Val Poschiavo/Puschlav, in which all the Swiss climate zones<br />
are represented in a single 25-kilometre stretch, is home to a further attraction:<br />
at Cavaglia, glacier mills dating back to the ice age demonstrate the forceful<br />
way in which nature has shaped the landscape over the millennia. It is amazing<br />
to contemplate these spiral-shaped hollow formations created by the run-off of<br />
meltwater.<br />
The Cavaglia Glacier Garden was established 15 years ago by a local association.<br />
Many tons of debris were removed and the area was made safe for visitors<br />
(May to October).<br />

From December 12, <strong>2015</strong> to April 16, 2016, Galerie Andrea Caratsch is showing at its St. Moritz premises a new body of works<br />
by Luca Pancrazzi titled «Occidente Esotico». The subject of his new paintings done in the last year and a half are the Engadin<br />
mountains and landscapes.<br />
Luca Pancrazzi is foremost an observer. He distills his impressions in restrained<br />
yet complex paintings, built up through innumerable tones of white. Through<br />
this process, he uncovers the most subtle gradations of light and shadow, and,<br />
in so doing, invites viewers to reconnect with the seductive act of looking. In<br />
Pancrazzi’s most recent series of paintings, the artist turns his inward gaze to<br />
the vast Engadin Mountains, a new subject matter which nevertheless seems to<br />
be a complete synthesis of his singular painting technique and contemplative<br />
manner.<br />
Images of mountains are highly speculative ones, evoking a primal sense of<br />
fantasy and the unknown. Across depictions in literature and art, mountains<br />
inspire sensations of fascination and extreme beauty, yet they also fill us with<br />
terror as we consider their harsh conditions and dangerous terrain. They are<br />
home to the gods and wild creatures, the spiritual retreat of hermits and the<br />
mysterious peaks scaled only by the most adventurous mountaineers. From any<br />
point of view, mountains instill a sense of deep isolation; from the valley looking<br />
up, the mountain represents an expanse that can never be fully comprehended,<br />
while from the summit looking down, we experience a unique distancing of the<br />
self, allowing us to view the world we inhabit as a large system of which we are<br />
only tiny parts.<br />
Speaking of the Engadin valley, Nietzsche, who was inspired to write Thus<br />
Spoke Zarathustra while living in this allegorical landscape, said he saw within<br />
the complexity of the light there «the cradle of all silver tones» — a remark that<br />

also reflects the experience of Pancrazzi’s canvases. The compositions focus<br />
the eye on various fragments of the Engadin valley — rock formations, clusters<br />
of lakes, remote villages — in a layered language that emphasizes the morphology<br />
of masses and shadows. The large scale of the paintings enables a coexistence<br />
of realism and abstraction; the images remain coherent from a distance<br />
but reveal, upon closer examination, a distinctive semi-pointillist texture of<br />
brushstrokes. The white paintings are suffused with brightness, they seem to<br />
flicker in and out of focus and the landscape appears almost as a mirage. In one<br />
of the compositions, a band of mist sweeps through the middle of the canvas.<br />
This reminds us of the looming threat always present in these areas, where<br />
obfuscating elements — such as fog, steam, bright light and haze — envelop the<br />
peaks and ridges and disorient the sense of place completely.<br />
This sense of mystery, of perceiving the unseen, is paramount to Pancrazzi’s<br />
work. Much of the raw allure present in mountainous landscapes has inevitably<br />
dissipated with the easy access of satellite imagery. The notions of exploration<br />
and surrender so intertwined with the experience of remote landscapes are<br />
casually displaced by the proliferation of images, and the ease of merely dropping<br />
a pin to find oneself in the midst of these far-away settings. In opposition<br />
to this, Pancrazzi proposes we slow down and look for the subtle shifts in color,<br />
light and texture. In a context where few things remain foreign or truly mysterious,<br />
Pancrazzi proposes that the only way to return to a sense of wonder is to<br />
destabilize our position as viewers by the practice of close, transformative<br />
looking.<br />

Jeder Stein atmet Geschichte. Sie erzählen von Adligen, Zunftmeistern, Handwerkern<br />
und Kaufleuten. Der Name erweist Referenz an die Vergangenheit: Die<br />
«Zunft zum Widder», die der Gilde der Metzger entspricht und seit 1401 an der<br />
Widdergasse ansässig ist, trifft sich heute noch während des traditionellen<br />
Sechseläutens im Saal des Boutique Hotels.<br />
Das Widder Hotel ist aber kein Museum. Im Gegenteil: Zeit wird zeitlos. Menschen<br />
hinterlassen seit 700 Jahren ihre Spuren in den neun Häusern am Rennweg,<br />
die 1995 dank Stararchitektin Tilla Theus zu einem der schönsten Stadthotels<br />
der Schweiz wurden. Dieses Gesamtkunstwerk über die Jahrhunderte<br />
steht im Zentrum. Nicht mehr und nicht weniger. Das Feuer der Geschichte lebt<br />

horse racing held on the frozen Lake<br />
St. Moritz once the sun has gone down, is<br />
already establishing itself as one of the<br />
most popular sporting events in the Engadine.<br />

outing, attracting well over 5,000 people in <strong>2015</strong>. Last<br />
year’s highlight was undoubtedly the huge party held in<br />

Hotel and Grand Hotel <strong>Kronenhof</strong>; it has gone down in the<br />
resort’s annals as a night to be remembered and it is<br />
hoped that this year’s event will be even more successful.<br />

whole racetrack will be floodlit, a statutory requirement<br />
