Finished lambs travel less than 2 miles to a local abattoir for slaughter.They are then hung, expertly butchered and packed for delivery.What is lamb, hogget and mutton? Lamb is less than one year old and has a mild flavour. It requires short cooking times. Hogget is slightly older, from one to two years old. It has a more intense flavour. It requires a bit longer to cook and is more suited to roasting, stewing and braising (also very good in a curry!)
