Lambs at Drygill are born and reared naturally in upland meadows and pastured amongst a host of wild<br />
plants which <strong>for</strong>m their diet.They are naturally produced using traditional farming techniques.This farming<br />
system produces lamb which is succulent, sweet and full of flavour. Finished lambs travel less than 2 miles to<br />
a local abattoir <strong>for</strong> slaughter.They are then hung, expertly butchered and packed <strong>for</strong> delivery.What is lamb,<br />
hogget and mutton? Lamb is less than one year old and has a mild flavour. It requires short cooking times.<br />
Hogget is slightly older, from one to two years old. It has a more intense flavour. It requires a bit longer to<br />
cook and is more suited to roasting, stewing and braising (also very good in a curry!)

Home produced Langleydale lamb, reared the natural way! East House Farm is a traditional hill farm located<br />
in Teesdale. Philip and Clare Dixon are the fourth generation of the Dixon family to farm at East House.The<br />
lamb is available to purchase direct from the farm and customers have a choice of half or full lamb hampers.<br />
The lamb is cut and packed ready <strong>for</strong> the freezer, either delivered to your door (free within a 15 mile radius)<br />
or if you prefer a drive out in the tranquil Teesdale countryside, collection can be arranged.Also available from<br />

The Lambman, Jimmy Bell, is a champion supporter of local food and produce in the north east and is<br />
constantly battling to reduce food miles and food security in our region.The Bell family has farmed in the<br />
Morpeth area <strong>for</strong> over 400 years.We changed our farming practice 15 years ago by joining the Countryside<br />
Stewardship Scheme which entails, reducing stocking rates, planting hedges, building ponds and not using<br />
pesticides or fertilizer. Eight years ago we converted a redundant building into an on farm butchery.The lamb<br />
produced from Wingates Farm is sold at farmers markets throughout the region.<br />

Beef and Lamb is really delicious and tender from Greenwell Farm. Here we grow corn and lupins to feed to<br />
our animals during the winter. From spring to autumn they are turned outside to the fields to feed from fresh<br />
grass. Jamie Oliver stayed here and used our Beef whilst filming some of the School Dinner programmes from<br />
the North East.You can order a selection box with Beef and Lamb or a box of just Lamb or Longhorn Beef<br />
(or which ever breed is available.)

We farm at 1300ft above sea level at the top end of Weardale, we are a small unit producing free range<br />
only, both lambs and beef are finished on grass giving it a lot more flavour but restricting sales to autumn<br />
and early winter. All the ducks and geese are bred on the farm and reared on wheat only, making them an<br />
ideal Christmas bird.<br />

My name is Claire Everitt and I farm a small hill farm above Stanhope in Weardale. In 2007 the farm was<br />
registered as a produce and packing station <strong>for</strong> free range eggs. Hens are free to roam, perch and feed as<br />
they like. Eggs are delivered to local shops, B & B’s and pubs. I am a member of both the RSPCA’s Freedom<br />
<strong>Food</strong> scheme and CMI animal welfare schemes <strong>for</strong> cattle and sheep. Pure Blonde d’Aquitaine are kept along<br />
side Beltex sheep. Lambs are reared naturally on grass and are also delivered locally.

Born and raised on our hill farm in Teesdale, lamb grow naturally on our high pasture and are allowed to<br />
mature slowly to produce a meat that is full of flavour. Mutton has long been overlooked but is now having<br />
a revival. Once you’ve tried it you’ll be hooked. Mutton is a versatile meat, either under the grill or even in the<br />
slow cooker with whole or half muttons available <strong>for</strong> the freezer (18kg or 9kg) or <strong>for</strong> sale by the joint. From<br />
the farm there is something <strong>for</strong> all pockets.

We produce quality not quantity. Our closed herd roam free in an oak and beech wood so that the pigs can<br />

The yogurt is made on the farm with the milk from our dairy herd.All the yoghurts are probiotic and all the<br />
flavours are made ourselves.We have a low fat yogurt which is simply ‘yogurt and fruit’, there are no added<br />
sugar or artificial sweetners used. Natural fruit e.g. apple juice is used to add any extra sweetness needed to<br />
the main flavour.There is a luxury yogurt which has extra thick cream added to give a rich flavour.A natural<br />
low fat yogurt is also available.<br />

At Wadley Farm we produce a wide range of products including mutton and lamb.We provide all animals<br />
with the care and attention they deserve, allowing them to live the most natural life possible. Mutton is a very<br />
particular favourite as our animals are more mature, massively improving the flavour.The lambs we produce<br />
are bred from rare and minority breeds as well as commercial sheep.The rare breeds are well known <strong>for</strong><br />
their improved flavour which is derived from the slow maturity of the meat.

• Practical support with the completion and submission of complex <strong>for</strong>ms and paperwork, including awareness<br />
raising re: CAP Re<strong>for</strong>m regulations.<br />
• Production and dissemination of regular briefings consisting of essential in<strong>for</strong>mation distilled and dejargonised<br />
from Defra, EU etc. and pertinent to the running of livestock based farm businesses.<br />
• Support with issues brought about through foot and mouth disease and blue tongue.<br />
• In cases of severe hardship, acting as a third party referrers <strong>for</strong> organisations which include E Finn Care,<br />
Independent Age, Addington Trust and RABI.<br />
• Support and training in setting up of sustainable methods of dealing with on farm paperwork, including the<br />
computerisation of farm records using various agricultural software programmes.<br />
• Various training courses based on locally identified needs.<br />
• Advocacy and liaison work with local Landlords, Defra, Trading Standards and other agencies.<br />
• Acting as a gathering point <strong>for</strong> local views to produce collective responses to government consultations.<br />
• Presentations and awareness raising events.<br />
• General drop in and telephone advice on a range of issues and signposting to other helper organisations and<br />
agencies.<br />

SLOW COOKED BEST END LAMB SERVED ON A POTATO<br />
AND BLACK PUDDING MASH WITH MINTED JUS<br />
Whole best end lamb (8 boned) 4 portion<br />
50ml oil 1pt stock lamb<br />
2 carrots 1 small onion<br />
1kg potatoes 200g black pudding<br />
mint jelly 25g corn flour<br />
salt and pepper<br />
Heat oil in pan, brown meat on all sides. Place meat on a bed of chopped carrot and onion. Place in oven 180˚c.<br />
40-50 mins. Prepare potatoes, place in a pan of cold water with salt. Boil, drain and mash. Cut black pudding<br />
into cubes, brush with oil and gently grill <strong>for</strong> 3 mins, fold black pudding into mashed potato, taste and season<br />
as required, mould into rounds. Place potato black pudding cakes onto centre of plate to keep hot. Remove<br />
meat from oven and allow to relax <strong>for</strong> 10 mins. Remove any fat from pan and deglaze pan with stock, bring to<br />
the boil, whisk in diluted corn flour, strain, season, add mint jelly. Carve meat, place two slices on top of potato<br />
cake, mask with jus and finish with a sprig of mint.<br />
CARBONNADE OF BEEF WITH PICKLED RED CABBAGE<br />
4 portions 400g topside of beef<br />
25g flour 25g dripping<br />
200g sliced onion 250ml beer ( 1 ⁄2 pt)<br />
10g sugar 25g tomato puree<br />
1pt brown stock<br />
Cut meat into thin slices, season with salt and pepper. Pass steaks through flour, quickly colour on both sides<br />
in hot fat. Place in casserole dish. Fry the onions to a light brown colour, add to meat, add the beer, sugar,<br />
tomato puree and sufficient stock to cover the meat. Cover with tight fitting lid and simmer gently in a<br />
moderate oven 150-200˚c until meat is tender, approx 2 hours. Correct seasoning.<br />
BRAISED CABBAGE<br />
450g sliced red onion 800g red cabbage, shredded finely<br />
1 bouquet garni 40ml red wine vinegar<br />
cinnamon stick 500ml red wine<br />
1tbsp redcurrent jelly 20g brown sugar<br />
40g butter salt and pepper<br />
1 cooking apple 25g butter<br />
Mix all ingredients (except apple), cook in oven at 150˚c with lid on <strong>for</strong> 1-1 1 ⁄2 hours. After 1 hour 15 mins add diced<br />
apple and 25g butter. Replace in oven.<br />
