If you live in Newmarket, nothing will excite you more than the<br />

start of the horse racing season. It’s the time of year when our<br />

town attracts visitors from near and far, the bars are bustling and<br />

it unfortunately becomes difficult to get a reservation for dinner!<br />

Just a minor disappointment I am totally willing to accept in favour<br />

of the highlights this jewel in Suffolk’s crown brings.<br />

Racing fever will be particularly hard to avoid as this year we<br />

celebrate 350 years of Newmarket history and horseracing. To<br />

mark this occasion there will be even more entertainment planned<br />

oh pho good<br />

We experienced authentic Vietnamese<br />

at Cambridge’s Pho this month<br />

We were most excited here at <strong>Velvet</strong> when we learnt that<br />

London’s Vietnamese street food restaurant, Pho, was coming to<br />

Cambridge.<br />

Conveniently placed along cobbled Wheeler Street, Pho, which<br />

opened back in March, sits in the heart of the city. As we arrived,<br />

we were welcomed by Libby, Pho’s Head of Marketing. The<br />

interior had a welcoming and authentic feel to it and we were<br />

shown upstairs. It was great to find out a bit more about Pho and<br />

hear the story behind it all. Stephen and Juliette Wall opened<br />

2005 after travelling Vietnam and<br />

experiencing the cuisine firsthand.<br />

10 years on, they still stand by the<br />

business and have expanded into<br />

other major cities across the UK...<br />

thankfully Cambridge was one of<br />

these!<br />

Libby talked us through the menu<br />

explaining about each dish. The<br />

restaurant itself is named after ‘pho’,<br />

the national Vietnamese dish which<br />

is a hearty noodle soup. Nutritious<br />

isn’t something I would have initially associated with this kind<br />

of food, so I was intrigued when Libby mentioned it. “99% of<br />

our dishes are gluten free, so great for coeliacs! Everything is<br />

full of goodness, as it’s made with really fresh vegetables and<br />

other ingredients. This makes it popular with everyone. I love our<br />

Vietnamese salads and the ‘Goi gà’ is under 300 calories and<br />

really filling!” Libby told us.<br />

Before we continued looking through the menu, we ordered<br />

some drinks. Sadly, I’d only popped out of the office for lunch so<br />

couldn’t really opt for the ‘Phojito’! All of their cocktails are made<br />

using Son Tinh Ruou, rice-based spirits and liquors from Hanoi,<br />

which looked very tempting. Instead, my inner juice-addict struck<br />

and I opted for an apple, mint and lime juice and a ‘Cà phê’ which<br />

is traditional Vietnamese coffee with condensed milk.<br />

When going somewhere new, and with a particular speciality, I<br />

always like to try something different. I was very much guided by<br />

Libby’s knowledge and felt she would be better at picking what<br />

to order, as she’s sampled the entire menu. I sat back as she<br />

suggested various dishes and was happy to go with the flow. For<br />

starters, we tried the ‘Goi cuon’, the pork ‘Cha giò’, the ‘Cánh gà’<br />

and the ‘Muc chiên giòn’. For those that can’t read Vietnamese,<br />

we had fresh rice paper summer rolls with herbs, vermicelli and<br />

pickle, crispy spring rolls, crispy chicken wings with ‘sriracha’, and<br />

baby squid. The ‘Goi cuon’ were my favourite as they tasted so<br />

fresh and the peanut side dip was seriously good. Libby also told us<br />

how calorie-light they were, which I couldn’t believe.<br />

After hearing about their salads, I opted for the ‘Goi gà’ which<br />

was a shredded chicken salad with Asian herbs, peppers and a<br />

chilli ginger dressing. I’m not sure what<br />

I was expecting, but it was like a stir fry.<br />

It again was very fresh tasting and there<br />

were lots of ribboned vegetables which<br />

were really filling. We also got to try the<br />

‘Pho đac biet’ and the ‘Bún bò Hue’ which<br />

are the traditional noodle soups - actually<br />

pronounced ‘fuh’! “All of the broths are<br />

made fresh in each restaurant and are<br />

left to simmer for up to 12 hours. This is<br />

the key to restoring the goodness and<br />

developing the rich flavours!” as Libby<br />

explained. The table sauces are also<br />

designed for people to tailor the dishes<br />

how they like. The ‘sriracha’ adds a chilli<br />

kick, or there’s fish sauce, garlic vinegar<br />

and other homemade pastes. As if we<br />

weren’t full enough, we also sampled the<br />

king prawn bún noodles! King prawns are<br />

my favourite, and these ones were huge.<br />

I’ll definitely be returning when I get the<br />

chance, or will perhaps grab ‘pho to go’ one<br />

lunchtime. It was great to eat out yet still<br />

find something nutritious which certainly<br />

didn’t scrimp on taste!<br />

Munchy Seeds Power Salad<br />

with Asian Dressing<br />

month’s recipe!<br />

Method:<br />

Serves 4<br />

Why not make<br />

this to take with you?<br />

Pack the dressing<br />

and Munchy Seeds<br />

mix separately and<br />

add just before<br />

eating.<br />

Ingredients:<br />

1. Preheat oven to 200°C.<br />

2. Place the skinless chicken breasts in a<br />

baking dish, drizzle with rapeseed oil and<br />

season with salt and pepper. Cover with<br />

buttered greaseproof paper (buttered-side<br />

down).<br />

3. Place the butternut squash in the<br />

preheated oven. Bake the chicken for<br />

30-40 minutes until cooked through. Bake<br />

butternut squash for 35 minutes until soft<br />

and brown on edges. Let both cool.<br />

4. Place all of the ingredients for the<br />

dressing into an empty jam jar or dressing<br />

container, tighten lid and shake vigorously.<br />

5. Combine the salad leaves, chicken,<br />

roasted squash, sundried tomatoes,<br />

beetroot, mung beans, cucumber, feta,<br />

red onion and fresh mint in a salad bowl.<br />

Dress with Asian dressing, and sprinkle with<br />

Munchy Seeds mix.<br />

For the salad:<br />

• 3 skinless chicken breasts<br />

• 1/2 butternut squash, peeled,<br />

deseeded and cut into cubes<br />

• 100g of spinach<br />

• 100g of watercress<br />

• 50g sundried tomatoes<br />

• 3 small, cooked beetroot<br />

• A handful of sprouted<br />

mung beans<br />

• 200g of feta<br />

• 1/2 red onion<br />

• 1/4 cucumber<br />

• 1 tsp fresh mint leaves<br />

• 100g Munchy Seeds<br />

Pumpkin Power mix<br />

For the Asian Dressing:<br />

• 90ml rice vinegar<br />

• 160ml sunflower oil<br />

• 80ml rapeseed oil<br />

• 30ml soy sauce<br />

• 1/2 tsp ground ginger<br />

• 1 clove garlic<br />

• 1 tsp of sugar<br />

Additional:<br />

• Rapeseed oil (for dressing)<br />

• Butter (for greasing)<br />

This month, the BWC girls have been<br />

sourcing and sampling yet more local<br />

foodie treats!<br />

With new potatoes, asparagus, and the promise of juicy strawbs<br />

around the corner, we really couldn’t love this spring thing more!<br />

Plus this month sees EAT Cambridge kick off; the city’s one and<br />

only celebration of the best local food and drink. We’ll be feasting<br />

at lots of events, lucky mamas. Mind you, we did ok for ourselves<br />

last month too.<br />

Our little wild garlic spot came into its own and so we got to<br />

indulge in a pasta-making session with our foraged goodness.<br />

We might just have found the perfect occupation for little hands<br />

– sending our sheets of pasta through the machine kept them<br />

entertained for ages and it can’t really go too wrong, which is a<br />

bonus.<br />

To go with our pasta supper we created a perfectly pink summer<br />

cocktail for the adults – head over to the blog for the recipe, it’s a<br />

pink beauty that beats a glass of Rosé on a sunny day hands down.<br />

We got out and about to one of our family-friendly favourites,<br />

Pizza Express to try their new spring menu additions. A fancy new<br />

Hawaiian, with a tangy pineapple relish and proscuitto crudo, was<br />

the highlight. Pineapple on pizza might be the Marmite of the<br />

pizza world but we’re firmly in the ‘love it’ camp.<br />

Rather excitingly, we also discovered a new top brunch spot: Stir,<br />

on Chesterton Road, does a mean avo and feta on sourdough.<br />

We’ll be heading back to sample it again and check out their range<br />

of great community events. Knitting and yoga anyone?<br />

Ingredients:<br />

• 28g pack fresh coriander, leaves<br />

picked<br />

• 25g pack fresh mint, leaves<br />

picked<br />

• 185g jar Cooks’ Ingredients<br />

Laksa Paste<br />

• 400ml can coconut milk<br />

• 1 tsp turmeric<br />

• 300g raw king prawns, shelled<br />

• 300g pack fresh Waitrose Egg<br />

Noodles<br />

• 265g pack Waitrose Pea, Bean<br />

& Cress Stir Fry<br />

• 1 red chilli, sliced, to serve<br />

• 1 lime, quartered, to serve<br />

• Fish sauce, to serve<br />

Prawn Laksa<br />

1 Finely chop half the coriander and mint,<br />

reserving the rest to garnish. In a large<br />

saucepan, add the chopped herbs, laksa<br />

paste, coconut milk, turmeric and 550ml<br />

of water. Gently bring to the boil, then<br />

turn the heat down to a simmer.<br />

2 Add the prawns and simmer for 2<br />

minutes, then add the noodles and stir-fry<br />

mix, stirring them into the liquid. Simmer<br />

for another 2–3 minutes, until the<br />

vegetables are wilted and the prawns are<br />

cooked through.<br />

3 Divide the noodles evenly between four<br />

deep bowls, spooning the soup over. Top<br />

each portion with the remaining herbs,<br />

some chopped chilli, a wedge of lime and<br />

fish sauce to taste.<br />

Serves 4, prep 5 mins, cook 10 mins

The Black Horse Inn in Swaffham Bullbeck<br />

talks to us about their upcoming spring menu<br />

and their accommodation, which is perfect for<br />

this season’s racing calendar!<br />

This local gem has been going since 1765 and has remained a<br />

traditionally family-run pub ever since. We popped in to chat with<br />

James, who took over last January. “I’ve lived in the village for 11<br />

years and have always worked in the catering industry,” he told us,<br />

adding. “We’ve got a great team here and our housekeeper has<br />

been here over 26 years!”<br />

For Ladies Day this year, we’re<br />

offering a champagne brunch and sorting the tickets and transport<br />

as a whole package!” The Black Horse offers a range of different<br />

breakfast options from the traditional full English to fresh fruit,<br />

cereals and toast, with varying pastries. The team is more than<br />

happy to cater for everyone, and will rustle up scrambled eggs or a<br />

bacon sandwich if that’s what you fancy.<br />

We managed to grab James and the team just before the launch<br />

of their new spring menu, so it was a great opportunity to sample<br />

some of the new dishes. James began talking us through the food<br />

at The Black Horse Inn and introduced us to the Head Chef, Sarah.<br />

“A lot of our menu is sourced from local suppliers, so we take a lot<br />

of inspiration from them about what is new for the season. I also<br />

think it’s important that inspiration comes from our own personal<br />

enjoyment and the feedback from our customers,” he explained.<br />

They choose to stay true to their roots and get the majority of their<br />

meat from Cowling Butchers, Cambridge. “They’re a family-run<br />

butchers and have been good friends of ours for years,” James<br />

added. All of their fish comes from Wyken Provisions in Bury St<br />

Edmunds. “Fish has been doing really well for us over the past year.<br />

Our new menu will have a special ‘fish of the day’, which will mean<br />

we can experiment with lots of different types,” James told us.<br />

Their sausages are, of course, Musks! “We get a lot of comments<br />

about these, I don’t really think there’s any other sausage you can<br />

have!” James laughed. There’s something quite homely about<br />

locally-sourced produce, so it was great to sample some of this for<br />

ourselves.<br />

We sampled two of their new starters which will be available from<br />

<strong>May</strong>. We tried the hot smoked salmon with lemon crème fraîche<br />

and the chilli Norfolk crab, both on toasted ciabatta. The lemon<br />

really complemented the freshness of the salmon, whereas the chilli<br />

gave the crab a bit of a kick for those who like something more on<br />

the spicy side! James commented, “We change our menu every<br />

season and I think both of these are great for the warmer weather.<br />

We will also make these available as a light lunch option.” Next, we<br />

were able to try the feather blade steak - I couldn’t believe how big<br />

it was. The meat was really tender and cooked to perfection. James<br />

even told us how they were going to price this dish under £10 which<br />

is amazing value!<br />

If you’re looking for more than just your high-street chain pub grub,<br />

then I strongly suggest a visit. The Black Horse’s locally-sourced<br />

produce makes its food a cut above the rest, and their home-fromhome<br />

accommodation means it’s a great choice for those looking to<br />

With the <strong>2016</strong> racing season in full swing, we talk to<br />

Damian’s <strong>2016</strong><br />

season picks<br />

Damian Adams, Head Chef at Newmarket Racecourses,<br />

about his career and the key to his success<br />

Damian’s career began when he was just 15,<br />

as a pot washer, but he quickly realised his<br />

love for the industry.<br />

“It didn’t take me long to work alongside the<br />

chefs and start learning and creating,” says<br />

Damian, whose obvious enthusiasm for food<br />

then led him on to College and beyond.<br />

“Since then, I have worked at a variety of<br />

establishments, including pubs, hotels,<br />

restaurants, holiday parks and sporting<br />

venues from the UK to Australia.” He has<br />

even served the likes of Sir Alex Ferguson<br />

and Kylie Minogue along the way.<br />

His love of travel has played an important<br />

part in shaping his career, with his favourite<br />

style being Thai food.<br />

And although he is constantly visiting new<br />

restaurants and<br />

Racecourses as his greatest achievement,<br />

where up to 60 chefs work together to<br />

deliver around 40,000 covers throughout<br />

the season.<br />

Along with solid preparation, he recognises<br />

his team as the biggest key to his success.<br />

“We deliver the season together and pull<br />

on each others’ strengths to deliver a<br />

quality service on every race day,” he says.<br />

“Organisational skills are also a must, and<br />

intricate pre-season planning helps set us<br />

up for a successful season.”<br />

With so many mouths to feed, an important<br />

part of this preparation is ensuring that the<br />

menus will please everyone. “We put the<br />

menus through a rigorous thought process<br />

and we always have a good mix of tasters<br />

who aren’t afraid of giving their opinion,” he<br />

explains. “My brigade ensures that we have<br />

a large variety of food styles across site to<br />

meet all customers’ tastes, from fish and<br />

chips to fine dining.”<br />

Away from all the stresses and strains of<br />

catering to such a high standard for such<br />

high numbers, Damian is a lover of the<br />

simple things. “Spending time with the<br />

family and going out for a nice meal is my<br />

favourite way to relax,” explains Damian,<br />

and we don’t blame him - after catering for<br />

so many other people, it must be great to<br />

have someone else do all the hard work!<br />

If a ‘Best Picture’ victory at this year’s Oscars isn’t reason enough<br />

to give Spotlight a spin, witness a cast packed to the rafters<br />

with notable names. Mark Ruffalo, Michael Keaton and Rachel<br />

McAdams are all intelligently cast as the ‘Spotlight’ investigative<br />

journalist unit, tasked with investigating a sinister, longstanding<br />

secret within the Catholic Church. Spotlight lacks the pizzazz, and<br />

perhaps the invention that you might expect of an Oscar winner,<br />

but this is not necessarily a bad thing. This is a tightly wound,<br />

cerebral thriller with big rewards for those willing to forgive its lack<br />

of bells and whistles.<br />

Margot Robbie plays Jane. Harry Potter and the Deathly Hallows<br />

director David Yates aims to give Tarzan not only a modern day<br />

lick of paint, but a plausible origin story, as Christoph Waltz and<br />

village of Long Melford<br />

Long Melford is a thriving village with<br />

2. The Swan<br />

The Swan is one of Long Melford’s top<br />

dining spots offering brunch, lunch and<br />

dinner as well as a trusty Sunday lunch.<br />

They pride themselves on offering<br />

only the best local produce which they<br />

carefully source from around the region.<br />

Menus are created, crafted and prepared<br />

with culinary passion. Quality is at the<br />

forefront and they’ve certainly earnt their<br />

two rosettes. They also have six 5-star<br />

Another little gem of the village is the<br />

Black Lion. Placed overlooking the<br />

green, this historic building offers both<br />

dining and accommodation in a ‘home<br />

from home’ style. They too provide an<br />

restaurant which is open for both lunch<br />

and dinner. Their menu is packed full of<br />

traditional hearty favourites from pie and<br />

As we finally get some spring weather (hallelujah!) the thought of popping<br />

on something vaguely summery doesn’t seem like a far off dream, or an<br />

invitation to get frostbite! So what is THE shoe style to wear right now?<br />

That’s easy, it’s the (not-so) humble mule, which as you’ve probably<br />

spotted has been rechristened a ‘slide’. Whatever you want to call it,<br />

backless shoes are where it’s at. This may sound a bit restrictive until you<br />

see the wide range of shoes and sandals of all heel heights in the shops.<br />

Best style tip: If you decide to go for a heeled version, look for<br />

something that shows off plenty of the top of the foot (the technical term<br />

is a ‘low vamp’). If you can find anything with wide crossing straps - even<br />

better! These make a super-flattering ‘V’ shape where the straps meet. If<br />

you fancy legs that look longer and slimmer (and let’s face it, who doesn’t?)<br />

you really should give them a try. If you’re after a flat, look no further<br />

than the backless loafer. These are brilliant with culottes and this season’s<br />

cropped flares or straight jeans. They also look great with long, flowy skirts<br />

Yes, the race day dress dilemmas are here for another year and whilst<br />

there’s lots to be excited about, it’s best to be prepared. With Ladies<br />

Day on the horizon, now is the time to be sussing out your outfit.<br />

Thanks to my Mother, I’ve always got excited about Ladies Day at<br />

Newmarket. Initially it was the sunny weather and fancy picnics, but<br />

after a few washouts, winning a few bets by betting on the pink ones<br />

and dedicating a few shopping days to the occasion, it’s now all about<br />

what to wear.<br />

Whether you’re looking for something short and sweet or perhaps<br />

something a little longer and louder, you need to start somewhere. If<br />

you’re crushing over a new pair of statement heels or have perhaps<br />

already sourced your hat, work around it. Last year, I picked what<br />

I thought was ‘thee’ dress weeks in advance but then, couldn’t for<br />

the life of me, find a hat or fascinator that worked. It was back to<br />

the drawing board for me and I scrapped the dress, sorted a quirky<br />

‘hatinator’ and then hunted for the dress. My best advice would<br />

therefore be to find a statement dress or a statement headpiece and<br />

then hunt for the rest to suit.<br />

This year Martha has lots of prints and plains of varying lengths and<br />

necklines meaning there really is something to suit everyone. I have<br />

to say Martha certainly has some ‘best in show’ contenders.<br />

Whatever the season, there are always some basic fashion do’s and don’t’s. Whether<br />

you’re looking for smart daywear or perhaps something for a special occasion or<br />

race day, try experimenting with colour, pattern, shape and fit.<br />

Play with patterns<br />

Not only are prints eye-catching and often add a pop of colour to your<br />

wardrobe, they’re also great for disguising certain body ‘hang-ups’!<br />

Angela’s has a huge variety of prints in this season, from stripes and polka dots<br />

to floral designs, embellishment and even animal prints.<br />

Experiment with colour<br />

Whilst monochrome will always be a classic, why not experiment with navy and<br />

cream for a softer finish which will forever be elegant. For a more contemporary<br />

look, opt for subtle ‘ice-cream’ shades. Accessories are also a great way of adding a<br />

splash of colour.<br />

Clever dressing<br />

Clever dressing is all about hiding those bits you don’t like, whilst accentuating<br />

those you do. Dress wise, if you’re bigger on the bottom, try an A-line dress,<br />

whereas those with a bigger bust should go for a V neckline.<br />

Pay attention to the finer details<br />

Whilst we’re all very used to coordinating our accessories, this doesn’t have to be<br />

the case. When it comes to occasion wear, it’s all about experimenting. You may not<br />

think yourself to be a ‘hat person’, but they can be the perfect touch to your race<br />

day outfit.<br />

It’s all about the base<br />

Never underestimate the power of exceptional underwear. A properly fitting<br />

The only reason I was<br />

glued to the screen was for<br />

the immaculate and the oh<br />

so very enviable selection<br />

outfits. Chic, elegant and<br />

extremely manicured twin sets adorned tight-fitting<br />

under-the-knee skirts with cinched waistlines.<br />

Short-sleeved knitwear elegantly flaunting shapes in<br />

the most effortless fashion; oversized cashmere coats<br />

wrapping her silhouette in the most enveloping way.<br />

Mink overdose, silk galore and true female elegance<br />

on point. I still could not tell you who fancied who, and<br />

the reason of the quite dull storyline, but boy did the<br />

movie leave me feeling like a new womanly wardrobe was<br />

shouting to come alive.<br />

Therefore, I resorted to making this frivolous <strong>2016</strong><br />

social season my most stoic one of all. No latest fashion<br />

would tempt me nor tease me in any way or form. There<br />

is something very empowering about not giving in to<br />

the masses, distinguishing yourself and thus exuding a<br />

timeless elegance enabling you to adhere to the obvious<br />

etiquette requirements without feeling restricted in<br />

any way.<br />

De rigeur? Few, selective and oh so very quirky<br />

accessories just to honour this year’s eccentric revival<br />

and, as always, a smile...your true winning accessory!<br />

Royal Ascot being the one exception of them all.<br />

Austerity and low key chicness do not apply. Exaltation<br />

will triumph amidst a crowd of feathers, chiffons,<br />

and opulence. Embrace the silks, ruffles, rouches<br />

and chiffons that this <strong>2016</strong> season has on offer, and<br />

encourage them to adorn your plainer silk coats. Flower<br />

prints and romantic patterns from the likes of Alexander<br />

McQueen, Gucci bien-sur, Valentino, or Etro may be a<br />

perfect start for inspiration. For your wardrobe essentials<br />

try Max Mara. What used to be a rather conventional<br />

brand has spread its wings and sharpened its look for a<br />

more exciting selection of chic basics. To dress a chic<br />

minidress of the likes found in Victoria Beckham, head<br />

straight to the high heel impact... Alexander McQueen<br />

is spoiled for choice. Last but not least, do pop into the<br />

virtual world at Coast… I know, I know... but boleros are<br />

on tap, satin anonymous pochettes abound, and a few<br />

day at the races, but we love to go into the<br />

garden enclosure with the children as it’s<br />

a great day out for the whole family that<br />

way. For this a soft floaty dress and wedges<br />

will do. Team with natural make-up and a<br />

bright lipstick and you are good to go. For<br />

the premier enclosure, this is your chance<br />

to dress up and turn heads. Think coordination<br />

and get the A for effort. Balance<br />

‘matchy matchy’ with one key season look<br />

for a modern take. Why not opt for a bardot<br />

number? Or perhaps frills or striking stripes<br />

are more your thing?<br />

Dress accordingly for the occasion and the<br />

weather. Try and remember you are not<br />

going to a wedding or a night club. Don’t<br />

have your skirt too short and choose heels<br />

you can walk in. Heels are fine on a dry day,<br />

but can leave you struggling if the turf is<br />

soft. Don’t go too high, (coming from one<br />

who loves the heels!) practical can still be<br />

smart and sexy. Wedges are the obvious<br />

choice, and there are plenty of elegant<br />

strappy ones. Or, if wedges aren’t your<br />

thing, at least go for a block heel over a<br />

stiletto.<br />

To complete the look, choose a pashmina.<br />

It looks sophisticated hanging over your<br />

shoulder, and if the weather lets you down<br />

its warm to wrap up in. Is your clutch going<br />

to be matching or not? Personally not...<br />

just remember it doesn’t have to hold<br />

the kitchen sink, so something small and<br />

elegant! And lastly fascinator or hat? As far<br />

as I’m concerned the bigger the better!<br />

hat fits correctly. If you are wearing a<br />

large headpiece, are you putting it on at<br />

Lucie beautifully styled my hair to give it lift and<br />

a slight curl. By sectioning the hair and blow<br />

drying each area from the roots to the ends, my<br />

hair had never seen so much volume!<br />

The final look was natural, relaxed and<br />

volumised. And the best bit, my hair kept its<br />

volume for the whole weekend!<br />

Sadly, this means we can’t hide in the shadows with our contouring<br />

sticks and concealers masking our sins as easily. It’s an all-out<br />

flawless skin operation and I’ve trawled through the treatments and<br />

products that can get us daylight party time ready!<br />

prime time: Applied after moisturiser, but before foundation,<br />

using a primer can be the difference between face slide and face<br />

perfection. Dermalogica’s SkinPerfect Primer also has an SPF30<br />

so you don’t need to worry about sunburn or skin damage, or,<br />

BareMinerals Prime Time primer is great for evening out skin tone<br />

and offering subtle coverage. This too has an SPF 30!<br />

Build Me Up Buttercup: When you’re applying your eye<br />

liner, let the first layer sink in and then go for it again. You can also<br />

use a similar shadow to pack on top and make sure that those sultry<br />

eyes have the staying power. I love Clarins Instant Liner.<br />

Kiss Kiss: Go the lippy distance with these new lip colours from<br />

Revlon. They offer a velvety yet matte finish and the creamy mango<br />

and vanilla scent makes them even more tempting! Try Devotion<br />

for a summer daytime look or go for the wow-factor with Love’s<br />

rich red.<br />

Brown Sugar Bronzed: Everyone looks better with a<br />

bronzed glow and we’re all for the contour but be careful not to<br />

overdo it. Daytime lighting will not help you fake those cheekbones<br />

and you risk a Courtney Stodden face so beware! Use a highlighting<br />

cream or powder to subtly highlight areas. Charlotte Tilbury’s<br />

Filmstar Bronze & Glow is perfect for sculpting and highlighting or<br />

try this Estée Lauder compact for an instant sun-kissed look.<br />

It Makes Scents: Sometimes for daytime scents, you want to<br />

lean towards a more subtle fragrance but for me, certain occasions<br />

require something that will stand out and last. I’m backing Paco<br />

Rabanne’s Black XS. It packs a punch with its patchouli base note<br />

and pink pepper berry top notes. For something a little more floral<br />

and girly try Dewy Lily of the Valley & Star Anise Eau de Toilette.<br />

You may have seen some pretty cool<br />

adverts from Cathedral Dental appear<br />

in <strong>Velvet</strong> magazine over the last year or<br />

so - do you remember the cute cat or the<br />

cheerful pug? Or perhaps you remember<br />

the gleaming new smile of Santa’s new<br />

teeth in our December issue? Whichever it<br />

may be, every single one of these has been<br />

to promote the personality, the energy<br />

and the enthusiasm of the people behind<br />

Cathedral Dental.<br />

Going to the dentist or to see the hygienist<br />

doesn’t have to be a scary experience and<br />

it most certainly shouldn’t be one that you<br />

dread. To make sure patients don’t feel<br />

this way, Indy Singh, leading dentist and<br />

practice owner, continues to create a fun<br />

and enjoyable place to be. He adds funky<br />

artwork to the wall, plays your favourite<br />

music in the treatment room and even asks<br />

customers to share their smile in his photo<br />

booth after treatment for social media. He<br />

has also invested in a 360 virtual tour on<br />

the website so every patient can familiarise<br />

themselves with the location and the<br />

treatment rooms.<br />

It’s not just about the look and feel of<br />

the practice either. Since 2008, Indy<br />

has been investing in superhero staff to<br />

give the practice a strong personality as<br />

well as expertise. In the last six months,<br />

the practice has employed two leading<br />

dentists, an experienced dental nurse<br />

and an additional receptionist to manage<br />

the growth in patients. And that’s not<br />

Protein is vital for muscle recovery and<br />

Protein-rich foods keep you fuller for<br />

longer as well as burning calories when<br />

they are digested. Cram them in at<br />

breakfast and reap the benefits all day.<br />

and looking to lose body fat as it can<br />

help to regulate our blood sugar levels<br />

which prevents weight gain. Protein<br />

satisfies our appetite because of the<br />

time it takes for the body to break<br />

it down and use. Anyone looking to<br />

increase muscle can do so by eating<br />

protein at steady intervals throughout<br />

the day, typically spacing meals at 3-4<br />

hour intervals works best for muscle gain<br />

Yoga Practice<br />

tells us all about<br />

Ashtanga yoga…<br />

Ashtanga Yoga is traditionally taught in Mysore style (supervised self practice),<br />

where each student moves through the practice at his or her own pace and level.<br />

So, Ashtanga yoga is not like the average yoga class you are likely to find in your<br />

local gym or village hall. It is much more dynamic, and requires more strength,<br />

coordination, balance and flexibility than other styles. This is why this form of yoga<br />

keeps Madonna in such great shape. Sting and many other celebrities are also<br />

dedicated followers of this practise.<br />

Together with the internal heat produced through correct breathing techniques,<br />

this style encourages more dynamic movements and transitions between the<br />

postures. Ashtanga yoga can be an effective cardio workout as well as an isometric<br />

bodyweight bearing exercise. With the use<br />

of modifications and props, it is accessible to<br />

mixed abilities.<br />

If you haven’t tried it before, give it a go and<br />

discover your full potential, physically and<br />

mentally.<br />

HIIT The Park<br />

With lighter evenings and the weather<br />

on the up, now is the perfect time to<br />

take your training outside. You’ll burn<br />

more calories due to your body having<br />

to work harder meaning your workout<br />

will also be more effective. The fresh air<br />

will also boost your mood. If running isn’t<br />

your thing, opt for a HIIT workout with<br />

five full-body movements, 40 seconds<br />

flat out, 20 seconds rest. Lucy Cronin,<br />

fitness trainer from 365Motivate,<br />

suggests the following 5 exercises for<br />

a full-body HIIT workout requiring no<br />

equipment:<br />

1. Press Ups<br />

2. Jumping Squats<br />

3. Mountain Climbers<br />

4. Alternating Lunges<br />

5. Burpees<br />

Try 30 seconds of each exercise with<br />

30 seconds rest for 5 rounds, resting<br />

for 1 minute between each full circuit. If<br />

you’re feeling mighty fit, up it to 40 with<br />

just 20 seconds rest!<br />

What type of training do you enjoy<br />

doing the most?<br />

That’s a tricky one! I do most types of<br />

training as they all have their benefits. I<br />

love testing myself, whether it’s with a<br />

quick HITT workout, a Revolution Fitness<br />

Academy session, or strength training.<br />

What is your favourite ‘go-to’<br />

ingredient or ultimate ‘fitness’ food?<br />

Avocado! They have a hugely dense<br />

nutritional value and are a great addition<br />

to so many meals like salads, naked<br />

burgers and even in a smoothie to add<br />

thickness without having to use dairy.<br />

Don’t forget to use the seed up too! It has<br />

lots of polyphenols, fibre and antioxidants.<br />

Grate it up and add it into you meals and<br />

smoothies.<br />

If you could pick one piece of<br />

training equipment what would it be?<br />

It would have to be a barbell because you<br />

can use it for so many different exercises.<br />

What is your top tip for eating well?<br />

Diet without deprivation! Quality is<br />

everything. Go for high quality, organic<br />

foods, the more local the better. Make<br />

sure each meal fills you up - you have to<br />

feed the body to loose those squidgy bits.<br />

What have you got coming up this<br />

year at Rev Fitness?<br />

It’s a pretty big year for our team, we<br />

have just finished working with Rolfes<br />

of Walsham, where we have designed a<br />

perfectly healthy ‘Revolution Burger’ and<br />

‘Revolution Sausage’. They taste great and<br />

@revolutionfitnessacademy<br />

are guilt-free! We also have the launch of<br />

our new fitness clothing line and we are<br />

taking on the Military in the middle of the<br />

Arc Shopping Centre in Bury St Edmunds<br />

in July for our two nominated charities;<br />

AFSKP and BrightStars.<br />

What does a typical day look like<br />

for you?<br />

I don’t really have a set routine as there’s<br />

always so much going on, but I’m up at<br />

6am and always make sure I drink a full<br />

bottle of water. By 6:30am, I’m in the<br />

studio coaching. 8am: A quick omelette<br />

with three eggs and whatever vegetables<br />

I fancy. I also love coffee but I only have<br />

one a day. I use organic coffee beans from<br />

single origin. Good quality coffee is rich in<br />

polyphenols. 11am: After more coaching,<br />

I spend an hour or so on technique and<br />

movement practice followed by a bit of<br />

strength training. 1pm: Lunchtime! It’s<br />

always leftovers from the night before<br />

which makes things so much easier.<br />

2:30pm: Team meetings and internal<br />

coaching. 3:30pm: More coaching and<br />

reviewing social media. We love putting<br />

home workouts on instagram! 5:15pm:<br />

Revolution Fitness Academy session.<br />

6pm: Dinner time! Usually a Revolution<br />

Burger with grilled veggies and sweet<br />

potato wedges. Add a fried egg, tomatoes<br />

and avocado on top of the burger... it’s<br />

seriously good!<br />

This month, we braved the elements and<br />

joined the Liberté Fitness crew!<br />

Liberté has revolutionised getting fit and have really thought outside<br />

the box... or the gym perhaps! The majority of the sessions take<br />

place in Nowton Park, Bury St Edmunds.<br />

I was a little nervous before attending, but was thankful that the<br />

evenings had drawn out, and it wasn’t pouring with rain. When<br />

I arrived, Ali, co-owner of Liberté Fitness, was very welcoming<br />

and introduced me to the regular members whilst we waited for<br />

everyone to arrive. Before I knew it, we were jogging, or chasing,<br />

trainer Dave up the muddy footpath and through the park. I was<br />

assured by one of the other members that this was the worst part<br />

as we tackled the steepening hill ahead! Thankfully we didn’t run<br />

miles and came to a halt on one of the nearby pitches.<br />

I’d recommend these sessions to<br />

people of any age and any fitness<br />

level. Dave was great at encouraging<br />

the group, most of whom attend<br />

regularly, week in week out. Everyone<br />

was really friendly and the hour<br />

passed quickly. It was far more<br />

entertaining than slogging it out in<br />

the gym. It also helped that it was a<br />

pleasant spring evening! “We train<br />

whatever the weather, it’s just great<br />

to get outside and have a bit of a laugh!” Ali said after the session.<br />

Decorating Hacks<br />

If you’re contemplating repainting during the warm summer months, we have<br />

some handy decorating hacks for those who are DIY beginners.<br />

1. Use a plastic bag<br />

Line your paint tray with a plastic bag. This way you won't have to clean it between<br />

colours, especially useful if you're using multiple shades in one day.<br />

2. Use Vaseline<br />

Use Vaseline over any areas you don’t want to get covered in paint. Cover screws,<br />

hinges and the edges of light switches and handles with Vaseline to ensure they<br />

don't get covered in splotches of paint.<br />

Use a rubber band to wipe excess paint rather than the edge of the can. Wrap a<br />

This month, Sara Slade talks faux flowers!<br />

When finishing any room for my clients<br />

I love to put fresh flowers in a room,<br />

anywhere I possibly can! It instantly lifts<br />

a room with the softness of foliage and<br />

the colour of petals. Now, unless you are<br />

Elton John and have regular deliveries of<br />

fresh flowers every day, you are probably<br />

more like me, too busy to keep on top<br />

of changing the water and reviving old<br />

arrangements. More often than not I<br />

suddenly realise that a week has gone by<br />

and I now have a rather depressing vase of<br />

dead flowers with smelly water.<br />

I have been on the hunt for great faux<br />

flowers to combat this, which isn’t easy<br />

as so many look a little too fake or can<br />

cheapen a room. Well now my search<br />

is over with huge thanks to one of my<br />

favourite designers Abigail Ahern. Not<br />

only has she managed to put together an<br />

amazing collection of contemporary flowers<br />

and foliage, but I think they are at great<br />

prices too, especially when you consider<br />

how much flowers would cost you over the<br />

period of a year.<br />

texture to your home if you have gone a bit<br />

grey mad! Or if you struggle with anything<br />

floral they sell hand-tied faux bouquets<br />

unique buyer’s guide<br />

You’d like to think that buying a new<br />

window blind or pair of curtains is a<br />

straightforward process, but, there are<br />

some vital questions we all must consider<br />

before we can make the right choice.<br />

The first question we must ask ourselves<br />

is what do I want my new blinds to do. Is<br />

it to keep the heat out, or the warmth<br />

in? Is privacy and security an issue? Is the<br />

glare from the sun affecting my television<br />

or computer? Can I not sleep at night?<br />

Or, am I looking to simply dress a window<br />

in my home? These are all important<br />

considerations before we’ve even given a<br />

thought about style, fabric and colour.<br />

If the blinds are for privacy, the best<br />

option is a blind that tilts, examples being a<br />

vertical or Venetian blind. The tilting action<br />

allows light to filter in to the room, but<br />

also obscures the view from outside, giving<br />

you control of how much light enters your<br />

room, and importantly, you control how<br />

much of your room is visible from outside.<br />

If the blinds are for sun control, a blind<br />

with a high UV factor rating will reduce<br />

direct glare, and help to stop furniture<br />

or carpet fading. There are a multitude<br />

of fabrics and textures available, most of<br />

which have been tested and give the UV<br />

filter ratings. If you are adding a blind to a<br />

bedroom window, it is worth considering<br />

a blackout fabric blind, or with a blackout<br />

lining, like a Roman blind or curtains.<br />

If you want to help insulate a room, there<br />

are a range of fabrics, with solar protective<br />

coatings, which help insulate the room<br />

during the winter, with the added benefit<br />

of reducing solar gain, and keeping the<br />

room cool in the summer, these are<br />

available in vertical, roller, and pleated<br />

blinds, these also help save on your fuel<br />

bills. The other option is heavier fabrics,<br />

and Roman blinds with an interlining are<br />

particularly good for this.<br />

If the blinds are to dress the window,<br />

you are very lucky as your choices are<br />

limitless, choose light colours, and minimal<br />

patterns to maximise light in a dark room,<br />

or add a splash of a bright colour to liven<br />

it up. Choose luxurious fabrics, or rich<br />

woods, to soften living areas, and give a<br />

touch of class, or deep reds, umbers or<br />

golds, to make a room warm and cosy.<br />

Keep the ultra-modern feel in a kitchen<br />

or bathroom, with metallic and sleek<br />

designs and fabrics, or perhaps consider a<br />

plantation shutter to really make a feature<br />

of your window area.<br />

So, whatever you decide, we have<br />

Budget has to be considered; we work<br />

range. Ongoing maintenance is another<br />

issue that is often forgotten, and some<br />

gardens will require a lot of upkeep.<br />

Other considerations should be what is<br />

the desired use of the garden, as this will<br />

play a big part in the features. Our main<br />

The Burgess Group was established<br />

in 1996 by managing director Edward<br />

Burgess. Operating initially from a small<br />

showroom in Felixstowe, the business<br />

outgrew the premises and relocated to<br />

a larger site in Notcutts Garden Centre,<br />

Woodbridge. Growth in product demand<br />

necessitated expansion in showroom<br />

coverage to include premises in Fornham<br />

St. Martin near Bury St. Edmunds<br />

and Ingatestone in Essex. The Burgess<br />

Group now employs more than 20 local<br />

people and continues to enjoy sustained<br />

annual growth. The company have three<br />

showrooms across East Anglia which<br />

provide customers with a convivial<br />

atmosphere and environment in which<br />

to discover the most advanced timber,<br />

aluminium and PVCu window and door<br />

solutions. This is a special year for The<br />

Burgess Group as they celebrate their<br />

20th year in business. Sammi Nice spoke<br />

to Edward about how the company plan to<br />

celebrate their success.<br />

What are you doing to<br />

celebrate this acheivement?<br />

As a business we plan to offer our loyal<br />

customers an additional discount on any<br />

further orders they place with us during<br />

our anniversary year. We find most of<br />

our customers phase their projects over<br />

a number of years so we fully expect to<br />

have a very busy period whilst we run the<br />

offer. We are also extending the offer to<br />

new customers on new orders during the<br />

month of <strong>May</strong>.<br />

Our business is very much based on<br />

customer service and thus each employee<br />

is important in this process. As a thank you<br />

to all our loyal staff we plan to take a day<br />

off when the weather is better and I have<br />

a number of exciting activities planned for<br />

all to enjoy… Though I am not letting the<br />

cat out of the bag and spoiling the surprise,<br />

it’s safe to say there will be some monkey<br />

business! Slight clue - our neighbours at<br />

our Fornham showroom run Go Ape!<br />

What have been your<br />

highlights and memorable<br />

moments over the last<br />

20 years?<br />

Opening our first major showroom within<br />

Notcutts Garden Centre in Woodbridge,<br />

some 15 years ago was definitely a<br />

momentous moment in the growth of our<br />

company. We were the first concession to<br />

open in Notcutts flagship garden centre;<br />

in fact I still remember the pitch I gave to<br />

them as to why we would be an asset by<br />

opening our showroom there. As demand<br />

grew, and our customer base widened,<br />

we have since opened showrooms in<br />

Ingatestone, Essex and Bury St Edmunds<br />

and have plans for further showrooms in<br />

Norfolk, Cambridgeshire and London over<br />

the course of the next five years.<br />

What has been your most<br />

exciting or interesting<br />

project to date?<br />

We installed some windows in a property in<br />

Essex many years ago and the architect on<br />

site was very impressed with the products<br />

and workmanship. So much so that he<br />

employed our company to carry out a<br />

large project at his own home located<br />

on the Isle of Wight. We were given free<br />

reign of the house during the project so it<br />

really was a busman’s holiday. We have also<br />

completed projects for various very well<br />

known personalities which has been a great<br />

experience!<br />

Where do you see the<br />

business going forwards?<br />

Our next showroom opening is set to be<br />

in Norfolk where we are currently looking<br />

at potential sites and hope to make a<br />

decision very soon. Ideally this will be open<br />

by next spring. We then hope to open a<br />

new showroom east of Cambridge in early<br />

2018 with a London showroom planned<br />

for 2019.<br />

It’s a story many of us know well: the house<br />

is beautiful, the location is perfect, the<br />

local school is great, but there’s just not<br />

enough space!<br />

This was exactly the problem for the<br />

owners of this Grade II Listed Farmhouse<br />

in Suffolk, when they came to Centurion<br />

Developments to discuss their options.<br />

Instead of moving, they decided on a<br />

large-scale renovation which left very little<br />

of the original house untouched. Works<br />

included an extension, a garden room, a<br />

new kitchen and utility, flooring, electrics,<br />

carpentry throughout, paint finish and<br />

patios.<br />

The project was a steel frame, clad with<br />

high spec insulation and a render finish,<br />

with oak being the primary choice.<br />

Any renovation project requires sound<br />

preparation, but none more so than one of<br />

this scale. Working closely with the client<br />

and architect, Centurion Developments<br />

provided guidance on correct design,<br />

practicality and cost.<br />

Another issue to contend with was the<br />

property’s Grade II listing. However,<br />

being well experienced in this area,<br />

Centurion provided advice on planning<br />

and conservation to achieve a result that<br />

complemented the existing features.<br />

After six months, works were complete,<br />

but it wasn’t all plain sailing: “A project<br />

like this is a one-off, therefore you come<br />

across problems regularly,” says Alan Davis<br />

of Centurion Developments, “but the skill<br />

is to overcome them and not worry the<br />

customer unless absolutely necessary.”<br />

Alan recognises the importance of<br />

trust between client and developer,<br />

commenting, “this is the most important<br />

part of our clients’ life, and they are<br />

investing major money into builders whom<br />

they have only just met. We have a wealth<br />

of experience with this type of project and<br />

are aware of customer anxiety, therefore<br />

we always make sure the process causes as<br />

little disruption as possible.”<br />
