How are we already in <strong>May</strong>? This year is going far too quickly and<br />
I cannot believe we are already thinking about Ladies Day! I have<br />
been going with my Mum every year since I was about 17 and the<br />
highlight for me is most definitely the fashion. I love choosing a<br />
dress and picking a whacky hat or fascinator and if the sun’s shining,<br />
it’s a great day out. We really are lucky to live so close to the town<br />
which is famed for being the ‘home of horseracing’.<br />
This month, I have spoken to various local fashion retailers to hear<br />
their top tips about dressing for a day at the races, so if you’re<br />
struggling for inspiration, take a look at page 54 to hear from the<br />
likes of Javelin, Giulio, Nicola Sexton, Newmarket Hat Hire, Racing<br />
Hat Hire, Hobbs, John Lewis, Martha V and Cream of Royston.<br />
Talking of racing, there’s an overview on the different ways of<br />
enjoying a day at the racecourse (page 34) as well as some of the<br />
best places to dine and stay in and around Newmarket if you’re not<br />

Bourgee has taken over Bury St<br />
Edmunds’ Cupola House<br />
After months of anticipation, Bourgee has finally opened<br />
its doors in Bury St Edmunds. We can tell it’s already<br />
going to be a hit as Bourgee was in fact founded on<br />
the belief that luxury dining can be served at affordable<br />
prices. This is mirrored in their brunch, lunch and dinner<br />
menu which is graced with lots of delicious options. With<br />
restaurants already in Southend-on-Sea and Chelmsford,<br />
they’re famed for the steak and lobster. They even serve<br />
Sunday lunch, afternoon tea and have a menu entirely<br />
focused on gluten-free as well as one for the little ones.<br />

“As a truly iconic British market town, filled with heritage<br />
and culture, Bury St. Edmunds provided an immediate<br />
draw for us to establish our third site. Although we<br />

As if we needed another reason to go<br />
to Nando’s... they’re now<br />
eco-friendly!<br />
Chicken chain, Nando’s have opened<br />
a brand new store in Cambridge’s<br />
Leisure Park and it’s run completely on<br />
renewable energy. Not only this, it’s<br />
actually the first Nando’s in the world<br />
to be run this way. The roof, with 97<br />
solar panels, is designed to keep the<br />
restaurant insulated as well as catching<br />
rain water to keep the plants hydrated<br />
on the outside. The interior is quirky<br />
but still holds the international feel.<br />
As for the menu, thankfully this hasn’t<br />
changed. Oh and there’s even parking<br />
meaning getting your chicken is even<br />

Baked Mascarpone & Lemon Drizzle Cheesecake<br />
1. Preheat the oven to 160°C, gas mark 3. Line a 21cm loosebottomed<br />
cake tin with baking parchment. Blitz the hazelnuts in<br />
a food processor, then add the biscuits and pulse until you have<br />
coarse crumbs. Tip into a bowl and mix with the melted butter.<br />
Spoon into the base of the cake tin and press down well.<br />
2. Place the mascarpone cheese and soft cheese in a large bowl<br />
with 150g of the caster sugar, and mix together well. Stir in<br />
the flour, vanilla, the finely grated zest from the lemon and the<br />
lemon curd. Then beat in the eggs, one at a time, making sure<br />
one is incorporated before adding the next.<br />
3. Pour on top of the biscuit base. Tap gently to level out the<br />
surface, then place in the oven and bake for 1 hour. Turn off the<br />
oven, open the door and leave the cheesecake inside to cool.<br />
When totally cooled place in the fridge and chill for at least 3<br />
hours or for up to 24 hours.<br />
4. Meanwhile, make<br />
the lemon drizzle<br />
syrup. Slice the<br />
lemon thinly and<br />
place in a small saucepan with<br />
INGREDIENTS:<br />
• 75g blanched hazelnuts, toasted<br />
• 150g digestive biscuits<br />
• 75g butter, melted<br />
• 600g mascarpone cheese<br />
• 250g full fat soft cheese<br />
• 275g caster sugar<br />
• 2 tbsp plain flour<br />
• 1 tsp natural vanilla extract<br />
• 1 lemon<br />
• 100g lemon curd<br />
• 3 medium Waitrose British<br />
Blacktail Eggs<br />
• 300ml whipping cream<br />
the remaining caster sugar and 100ml of cold water. Bring to a<br />
gentle simmer for about 5 minutes until thickened and syrupy.<br />
Set aside to cool.<br />
5. When ready to serve whip the cream with a hand-held<br />
electric mixer until just thick with soft peaks. Spoon over the top<br />
of the chilled cheesecake.<br />
Decorate with the<br />

Hear about Cambridge Cookery School’s<br />
much-loved neighbourhood café<br />
Founded by Tine Roche in 2008, Cambridge Cookery School<br />
have been going from strength to strength since moving into<br />
their new premises just off Hills Road in Cambridge around 18<br />
months ago. The initial idea was to offer a range of unique and<br />
inspiring cookery classes from experienced and friendly chefs<br />
which they soon mastered with ease. Their cookery school has<br />
won national acclaim for both its classes and exclusive culinary<br />
trips. Their kitchen is expertly equipped and is the ideal spot<br />
for interactive group activities. It’s a popular destination for all<br />
ages and offers a range of child-friendly and adult classes right<br />
through to hen parties and team building corporate events.<br />
In 2016, Tine decided to expand with the launch of their chic,<br />
on-site café, micro bakery and wine bar. “When we moved to<br />

work perfectly,” Tine explains as she<br />
shows us around. Open from 8am<br />
Monday right through until Saturday,<br />
they serve a range of breakfast, lunch<br />
and snack options to both eat in or<br />
takeaway for those who are in a hurry. “In less than a year, we’ve<br />
become a popular hotspot for many locals and we’re inundated<br />
daily by local residents and business communities,” adds Tine.<br />
“Some call in to pick up a coffee and one of our homemade<br />
croissants first thing, whilst others will enjoy a coffee and sit down<br />
breakfast or perhaps meet friends here for lunch.”<br />
As we sat down sipping on a fresh coffee (coffee lovers – this is<br />
a must-visit!), Tine began talking us through their menu. “Both<br />
myself and co-owner Liz Young are really passionate about<br />
locally-sourced produce and we try to support nearby suppliers<br />
as much as we can. It means we are able to offer really fresh and<br />
high quality food to our customers and this is really reflected<br />
in the flavour,” she explains. Having been brought up in both<br />
Copenhagen and Stockholm, Tine has brought her Scandinavian<br />
culinary heritage to the menu whilst Liz, who grew up in Auckland<br />
and has travelled the world brings a variety of other influences.<br />
Between them both, the menu has been crafted to offer a range<br />
of Middle Eastern, Italian and Scandinavian delights as well as<br />
having a focus on vegetarian dishes. “Whilst a large proportion<br />
of our dishes are plant-based and suitable for vegetarians, we<br />
are able to add meat or fish for those who would like it. A lot<br />
of our customers enjoy our vegan offering and it’s becoming<br />
increasingly more popular to eat this way,” Tine explains as<br />

she fetched a barley and roasted courgette salad with yoghurt<br />
dressing and parma ham for me to try. The salads are all prepared<br />
fresh each day by Tine’s dedicated team. They are all bursting<br />
with colour as they lay in huge bowls on the counter. Also<br />
catching my eye, were their delicious homemade hot cross<br />
buns, breads and other seasonal sweet treats. The space has a<br />
really chilled vibe which is certainly enhanced by the buzz of the<br />
children’s cookery class happening next door and the friendly<br />
smiles from the staff. The views outside are typically reflective<br />
of Cambridge, with the bustle of students and aesthetic<br />
architecture.<br />
“Our menu is flexible and changes every day. It is usually<br />
dependent on the produce available from our suppliers. We get<br />
a lot of our produce from Croxton Park which is an organic,<br />
family-run estate in St Neots. We also use Kale and Damson who<br />
are another of our favourites here in Cambridge,” she adds. “Our<br />
Italian cured meats come from Rutland Charcuterie Company<br />
and we use them because they use high welfare animals. Italian<br />
cuisine is one of my personal favourites and it is great to be able<br />
to get such authentic flavour so close to home. I’ve never tasted<br />
anything quite like it outside of Italy.”<br />
Whilst their day time menus are proving so popular they’re now<br />
going to be open Sundays too, it’s their Saturday night bistro<br />
which really took my fancy. The last few months have seen<br />
Saturday nights offering a range of vibrant sharing platters.<br />
Graced with homemade breads and dishes, each is set apart<br />
by their opposing cuisine and diners are able to choose from<br />
Japanese, Middle Eastern, Spanish or Italian. There are also a<br />
range of fine wines from local vineyards and speciality cocktails<br />
to really make your evening. So if you’re looking for something a<br />
little different to do one Saturday evening, gather a few friends or<br />
take a loved one along.<br />

Word on the grapevine is that English Wine Week is just around the corner so we<br />
caught up with Cambridge-based independent drinks specialist, Thirsty<br />
Drink<br />
English Wine Week is the ideal time to celebrate and enjoy one<br />
of our growing industries. English wines have been going from<br />
strength to strength with an unprecedented number of vineyards<br />
being planted each year. Somewhere between global warming<br />
and tough exchange rates, the real story is shining through.<br />
English vineyards have something to offer... The terroir (wine<br />
speak for the unique combination of soil and climate) is<br />
producing wine not just of good quality, but also with<br />
individuality, character and style. Nearly<br />

vineyards, but where do you start if you just want to enjoy a<br />
glass of homegrown English wine?<br />
Although there are red, white and rosé wines produced in<br />
England (and Wales), sparkling has been the biggest story<br />
to date. Chalky south-facing slopes and a longer season of<br />
warmer weather create the right environment to produce<br />
Champagne style wines made in the traditional method which<br />
allows us to rival our French counterparts on their top fizz<br />
with great success. Blind wine tastings with experts prove<br />
this to be true, as does the investment on our shores of some<br />
of the great Champagne houses including Tattinger and<br />
Pommery who are looking for a piece of the action.<br />
But do not overlook the still wines... Champagne grapes are<br />
clearly working well here so these are good styles to opt for.<br />
We all love a cool climate elegant Chardonnay or Pinot Noir<br />
be it from Burgundy, Australia and USA, and you can add<br />
English wines into this list. Other grape varieties working<br />
well in the UK are ‘Germanic’ such as Bacchus and Müller<br />
Thurgau. They are fresh and lively wines with many flavours<br />
that we associate with England green apple, elderflower<br />
coupled with zesty lime and grapefruit and on occasion a<br />
delicate flinty note.<br />

Having been awarded 3 AA rosettes at the beginning<br />
of the year, Tuddenham Mill are now one of only two<br />
locations in the county to hold this accreditation and<br />
we are certainly not surprised. They’re famed within the<br />
area for their picturesque setting, exceptional food and<br />
stunning accommodation so we headed along to sample<br />
their new spring lunch menu… oh, and take a peek at their<br />
new contemporary Meadow Nooks!<br />
Tuddenham Mill’s award-winning kitchen team is headed<br />
up by Lee Bye who has been crafting delicious dishes<br />
since he started here in 2014. “I love creating exciting,<br />
contemporary menus which are reflective of the seasons<br />
and the fantastic local produce we have on offer across the<br />
region,” he explains as he is talking us through today’s set<br />
lunch menu.<br />
“I love spring as there is just so much on offer and it really<br />
enables me to play with certain flavours. Asparagus is one<br />
of my favourites at the moment and it’s really at its best<br />
at the moment. We get ours just down the road from<br />
Tilbrooks and the taste is like no other,” explains Lee.<br />
Following this, we thought it was only best we sampled the<br />
asparagus starter which is served with Worlington goose<br />
egg, wild garlic and Pecorino. We also opted for Reg’s<br />
duck liver parfait which was served on brioche and topped<br />
with glazed hearts and land cress. Lee was right. The<br />
asparagus really was like no other and the stalks were thick<br />
and packed full of flavour. The colouring was impressive<br />
and the goose egg was poached to perfection. This was a<br />
satisfying start for what was to follow. The duck liver parfait<br />
was light yet incredibly rich as it lay on the sweet light<br />
brioche. This too packed a flavoursome punch.<br />
When it came to the main event, we again welcomed<br />

was a generous size and oozed flavour. It was served with<br />
kofta ragout, yoghurt, mint and St Edmunds ale which all<br />
complemented each other in different ways. “This dish<br />
combines a unique mix of simple flavours to create a new<br />
take on lamb. It’s been a popular one for us already and the<br />
lamb we source from Breckland in Norfolk,” Lee tells us.<br />

The hake ‘tranche’ was seriously generous<br />
and flaked with ease. It had a delicate<br />
flavour which wasn’t overpowering but the<br />
brown shrimps served alongside it were a<br />
welcome touch. This too was served with<br />
the Mill’s favourite asparagus, Fenland<br />
cauliflower and sobrasada.<br />
Dessert sparked yet more flavoursome<br />
fireworks. As a serious chocolate lover, I<br />
was reeled in by sea buckthorn posset with<br />
Pump Street chocolate and hazelnut oil and<br />
what a choice it was. The creamy orange<br />
posset was divine and the rich chocolate<br />
crumb worked perfectly. This was a real<br />
winner for me and really rounded it off<br />
nicely. The Jonagold apple with buffalo<br />
ricotta, village honey and filo also made<br />
the cut. The apple was drenched in honey<br />
and the pistachios and filo again added a<br />
welcome crunch.<br />
Having thoroughly enjoyed 3 courses<br />
(which may I add is priced at only £22.50!),<br />
I felt pleasantly satisfied and not at all<br />
overwhelmed. They certainly opt for quality<br />
over quantity and each dish was faultless. I<br />
can certainly see why they’ve gained the 3<br />
AA rosettes and would suggest a visit with<br />
friends, family or a loved one. The setting is<br />
unique in that it can be suitable to a casual<br />
affair or to mark a special occasion and<br />
there seemed to be a mix of both whilst<br />
we dined.<br />
After, we took a look around their new<br />
Nooks which are placed out in the meadow<br />
by the mill stream. They’re rustic yet<br />
romantic and are certainly deceiving when<br />
it comes to size. The interior is well thought<br />
out and has everything you need for an<br />
uninterrupted stayover. They really feel<br />
as though you’re completely secluded.<br />
The wood-fired hot tub, floating beds and<br />
elegant interior were the highlights for me.<br />
Oh and their signature Missoni dressing<br />
gowns and ESPA goodies…<br />

Not So Run<br />
Of The Mill<br />
Hear about the delicious flavours on<br />
offer at Cambridge’s Quy Mill<br />
Quy Mill Hotel and Spa sits just off the A14, within the limits of<br />
the picturesque village of Stow-Cum-Quy. Driving up to the mill,<br />
which was rebuilt on this spot around 1830 and only ceased bread<br />
production in 1948, you get a sense of the old traditions but also<br />
a view that now, in its current form as a hotel and spa, fresh<br />
things are happening with the newer buildings around it.<br />
I was greeted by Tony Murdock, the General Manager, in<br />
the spacious reception area and, as he leads me in to one<br />
of the conservatory style dining spaces, he explains that<br />
the hotel has been recently awarded four silver stars by<br />
the AA board and are looking for a red star in about a year<br />
and a half. This is not an easy feat but you can tell by his<br />
passion he doesn’t want the place to remain ‘run of the<br />
mill’ so to speak.<br />
Shortly after being seated, looking out on to the rolling<br />
Cambridgeshire fields, I met Head Chef, Gavin Murphy,<br />
who brought out the first course. He explains that it is his<br />
version of ‘Surf n Turf’ for special guests and from what was laid<br />
before me on the table; the ingredients of this dish couldn’t have<br />
been any more generous.<br />
The slice of delicately pan-fried foie gras was graced with a juicy<br />
looking King Scallop. Upon the perfectly cooked shellfish was<br />
tomato fondue with caper popcorn and beef jus around the outside<br />
to finish the dish. From the first mouthful the buttery richness<br />
of the fork-soft foie gras seemed to effortlessly complement the<br />
searing of the plump scallop. I could tell from the first mouthful<br />
that we were in good hands with chef.<br />
The accompanying factors of the dish also played their parts. The<br />
tomato and the capers keep the flavours gracefully dancing on the<br />
tongue like a Russian ballet and the drizzle of beef jus bonded the<br />
elements together well.<br />
The Donegal chef comes across as very customer-orientated and<br />
loves to give the public what they want and whilst some chefs are<br />
losing themselves in the hunt for<br />

Michelin stardom, he knows his goal.<br />
“We are stepping up another level<br />

rosette, that will mean creating brand<br />
new dishes and will hopefully be<br />
introducing them very soon, the third<br />
is very achievable,” he said.<br />
With my first fully empty plate I could<br />
not have agreed more with Gavin.<br />
This was replaced by the main course,<br />
a canon of sirloin beef, baby carrots, Dauphinoise potatoes, pea<br />
purée and a hotel special ‘Quy Ketchup’. In a separate copper pan,<br />
sat an ox tail and cheek pie with a slice of crispy pancetta sticking<br />
out of the top.<br />
The main dish was delicious. The creaminess of the cubed potato,<br />
the pink beef and the zing that the ketchup gave were great but for<br />
me there was a standout part to this course.<br />
The chef informed me not only does the meat for the pie braise for<br />
a full three days, but his customers actually ask for this as a dish on<br />

its own. I could totally see why.<br />
The creamy mash on top revealed the shredded treasure beneath. It<br />
melted in the mouth and gave a soul food experience that seemed<br />
to cuddle you like a dear friend. I could quite honestly have had a<br />
whole bowl of that and done my Oliver part in asking for more. This<br />
was the highlight of the meal for me.<br />
On how his menu works, Gavin explained he is open to trying new<br />
dishes and go wherever his mood takes him. “We have a golden rule<br />
to change with the seasons but sometimes we get fed up of looking<br />
at the same dishes, we might then change a dish or the entire<br />
menu,” he explained.<br />
Dessert was my final plate to the table, Vanilla panna cotta,<br />
raspberry macaroon, and glazed fig with brandy snap. The plump<br />
panna cotta shimmered and wobbled perfectly and the taste of<br />
vanilla gave a somewhat refreshing morsel to the boldness of the<br />
course before it. Breaking the macaroon’s crisp exterior gave way to<br />
the soft sugary sweetness of the raspberry filling and the fig gave a<br />
balanced calmness to the rest of the slate plate.<br />
Gavin can see his food gradually improving to the three rosette<br />
standard in the future and even though he may not be looking for<br />
Michelin stars, I can definitely see it in the future for this very lovely<br />
place and their passionate Irish chef.<br />

bring it up to The Chestnut Group’s<br />

to acquire The Three Blackbirds was<br />
incredibly exciting. The Packhorse Inn,<br />
has been an overwhelming success<br />
and incredibly well supported by the<br />
local community. We look forward to<br />
extending this with The Blackbirds Inn,<br />
but with an altogether more relaxed<br />
hospitality experience,” Philip Turner,<br />
Founder of The Chestnut Group, told<br />

Relaxed is certainly the vibe we got<br />
when welcomed by the team just days<br />
after the opening. The décor is similar<br />
to that of The Packhorse Inn, with its<br />
17th century features and individual<br />
character. It has an instantly ‘at-home’<br />
feel to it which is undoubtedly down to<br />
the friendly faces and elegant interior.<br />
The casual and welcoming nature<br />
is also reflected in their extensive<br />
dining menu. Similarly, to their other<br />
four sites, they pride themselves on<br />
offering the very best of seasonal<br />
and local produce which is in keeping<br />
with our favourite pub classics. The<br />
menu is graced with everything from<br />
various steak cuts to their ‘pie of the<br />

location in our portfolio. The food here<br />
is best described as wholesome, hearty<br />

brilliantly. We’ve set out to redefine<br />
quality pub food as this has been<br />
somewhat side-lined with the growth<br />
of gastropubs. The menu here is based<br />
about everyone’s favourite pub classics<br />

pizzas. The initial feedback from<br />

10 years on and it seems owners, Cheryl and Wayne, did<br />
know what they were doing with Barton Mills’ village pub<br />
The 16th <strong>May</strong> 2007 was the date that was<br />
to change the fortunes of the run down<br />
and loss-making Bull Inn at Barton Mills.<br />
Newcomers to the industry Cheryl Hickman<br />
and Wayne Starling took the ‘bull by the<br />
horns’ and haven’t looked back since. Nonbelievers<br />
said to the couple at the beginning<br />
“you don’t know what you are doing” but this<br />
is what spurred them on.<br />
The journey has been a rollercoaster with<br />
plenty of amazing highs and plenty of<br />
challenges and hard work along the way. But<br />
buckets of team commitment, motivation<br />
and an unfailing dedication to success is what<br />
has enabled this couple to prove they did<br />
know what they were doing.<br />
They transformed the The Bull Inn into an<br />
award-winning, modern yet historically<br />
sympathetic and hugely funky coaching inn.<br />
It’s now a popular local hotspot where friends<br />
meet for lunch, families come for breakfast<br />
and business people stay over. It’s different to<br />
your normal pub with rooms as guests enjoy<br />
quality food and AA rosette dining rooms.<br />
The business has seen year on year growth<br />
since the first year and hundreds of<br />
thousands of pounds have been reinvested<br />
to create what it is today. After the initial 6<br />
months, Cheryl and Wayne couldn’t carry on<br />
doing the 7am to sometimes 3 or 4am in the<br />
morning!<br />
These shifts were 7 days a week and they<br />
could see this would be a potential problem<br />
to the business becoming successful, so<br />
Sonia (Cheryl’s sister) joined the team fulltime<br />
making the Inn a real family affair. This<br />
also allowed Cheryl and Wayne to take some<br />
time out which enabled them to remain<br />
upbeat and focused.<br />
The couple have led the team and the<br />
business to win many awards over the years<br />
and have maintained their AA rosette for<br />
their food offering. One of their best awards<br />
achieved is the ‘Funkiest Inn in the UK’ as<br />
voted by the anonymous AA inspectors.<br />

goes for the scenery. Affleck’s performance, understated as it is,<br />
is probably the films main selling point, and it is his chemistry with<br />
newcomer Lucas Hedges – impressive as his nephew - that makes<br />
a slightly empty plot, oddly compelling.<br />

any chance of shadows across the face in<br />

I stock a range of brands including Ba&sh, Humanoid, Transit,<br />
Pomandére, RIXO, Rose Rankin, King & Tuckfield, Custommade,<br />
Kokoon, 2nd Day, Kelly Love and more. French label, Ba&sh<br />
was the first brand I bought into after I came across it whilst<br />
on holiday in Bordeaux. I loved the fabrics and style and when I<br />
first contacted the company I hadn’t even found the premises<br />
on Rose Crescent! They saw my passion and stuck with me<br />
whilst I got up and running. They launched in 2003 by two<br />
friends, Barbara Boccara and Sharon Krief and their concept is<br />
everyday pieces which successfully balance both femininity and<br />
sophistication. Their sumptuous fabrics are another reason why I<br />
love them.<br />
Dutch brand, Humanoid and Italian brand, Transit are two other<br />
brands which I have been buying for years. They have a slightly<br />
edgy feel and are of really high quality. I love that they have both<br />

PERSONAL STYLE?<br />
I would say I have an eclectic style when<br />
it comes to fashion. I often build my<br />
wardrobe around a few staple pieces<br />
each season such as a tailored jacket, a<br />
statement shirt or blouse, a versatile dress<br />
or pair of trousers for example. I work<br />
around these to create different looks as<br />
it’s a great way of wearing certain items in<br />
different ways. It also means you can justify<br />
investing in a few high quality pieces.<br />
WHAT ARE YOUR FAVOURITE PIECES IN<br />
STORE THIS SEASON?<br />
There are lots of beautiful pieces in for<br />
spring/summer but one of my favourites<br />
is definitely Pomandére’s red jacket. It’s<br />
a brick red colour and has a leather tie. It<br />
looks great teamed with jeans or trousers<br />
and a pretty shirt or blouse. Ba&sh<br />
have a really lovely orange print top this<br />
season too. The print looks like a Clarice<br />
Cliff pottery design which really makes a<br />
statement. It’s perfect when paired with<br />
Ba&sh’s Sally jeans in ecru. They’re slim<br />
fit and mid rise at the front but slightly<br />
higher at the back meaning they’re really<br />
flattering. Denim is always going to be<br />
popular, whatever the time of year and I<br />
cannot get enough of King & Tuckfield’s<br />
Briony Japanese Selvedge jeans. These too<br />
are very flattering and look great with a<br />
jacket and pretty blouse. They’re also made<br />
here in the UK and are a definite musthave<br />
for everyone!<br />

“When it comes to choosing your outfit for a day at the races, it’s<br />
important to consider the meeting you’re attending. All race days<br />
warrant a smart dress but our most popular day for customers is<br />
certainly Ladies’ Day at The July Festival. Whilst it’s all about achieving<br />
the ‘wow’ factor, it’s also important to be comfortable. Always consider<br />
your footwear. Wedges work best at the racecourse due to the grass<br />
underfoot. Alternatively opt for a block heel as opposed to thin stiletto<br />
heels. Be sure to factor in a jacket too as you can never rely on the<br />
British weather unfortunately,” explains owner Martha.<br />

racing customers year in year out and this year will be no exception.<br />

We couldn’t help but be hugely intrigued by Bathing Under The Sky’s new fresh air spa<br />

Wrong. Over 20% of us believe that we cannot get sunburnt if<br />
we’ve got sunscreen on but this is not the case. It is best to be<br />
safe and wear suitable clothing as well as spending some time in<br />
the shade.<br />
“I won’t get a tan if I wear sunscreen.”<br />
Wrong. Over 20% of us have gone out in the sun without wearing<br />
SPF because they have wanted to get a tan. SPF will not stop you<br />
tanning but it will stop sunburn and skin damage.<br />
Remember... always wear SPF, both abroad<br />
and here in the UK. Always make sure you’re<br />
wearing a minimum of SPF 15. Don’t over do<br />
it and be sure to cover up and spend some<br />
time in the shade. Do reapply your sunscreen<br />
after a few hours and if you’re in the water<br />
make sure yours is waterproof.<br />

a fluoride toothpaste and mouthwash. You will also need a tepe<br />
brush for cleaning behind the wire and down the sides of the<br />
brackets.<br />
• Thorough cleaning will also prevent decalcification (the<br />
staining or discoloration around where the braces<br />
were), cavities or decay and gingivitis.<br />
• Following treatment, always wear your retainers<br />
at night for the first couple of years.<br />
This will ensure your teeth remain in their final<br />
position. If they appear tight, this could be<br />
because your teeth are trying to move if you<br />
have not worn them for a couple of nights<br />
so don’t waste your hard work. If you lose or<br />

Sales of vitamin D supplements in Waitrose<br />
shops surged by 70% in the two weeks following<br />
publication of NHS-backed research that<br />
suggested a daily dose of the ‘sunshine vitamin’<br />
could prevent more than three million people falling<br />
ill through respiratory infections each year. The<br />
retailer’s multivitamins sales also rose sharply.<br />
Sunlight is the main source of vitamin D, which<br />
means people in the UK are more at risk of<br />
deficiency during the winter months. However,<br />
media coverage around the recent study also<br />
highlighted which foods are particularly good<br />
sources, such as oily fish. According to the British<br />
Nutrition Foundation, canned red salmon contains<br />
the most, with 15.3 micrograms per 140g portion.<br />
Waitrose has also seen sales of this tinned fish<br />
grow by 22% since the results of the study were<br />
announced.<br />

Creating Your Ideal Space<br />
Many blog posts and articles focus<br />
on current trends, forthcoming<br />
trends and even past trends, and<br />
as much as these are very useful,<br />
sometimes, they it can be tricky to<br />
execute these in our own spaces.<br />
For example, this year’s ‘on trend’<br />
colour chosen by Pantone is<br />
greenery green. This is fantastic<br />
if you’re into green, but what if<br />
you’re not? Instead of focusing on<br />
trends and what’s hot right now, try<br />
focusing on how to create a space<br />
that’s right for you.<br />
Cambridge-based Interior designer, Katie Malik,<br />
talks to us about making your home your own<br />
SUIT YOURSELF<br />
What does it mean to design a space that<br />
suits you? In simple terms, it means to<br />
create somewhere that you feel good and<br />
somewhere that reflects your lifestyle<br />
on every possible level. Our home, both<br />
the location and physical building itself,<br />
influences almost every aspect of our lives<br />
- from how we cook, how we eat, how we<br />
sleep, how often we see friends and even<br />
how safe and secure we feel.<br />
There are some basic principles that help<br />
us maintain wellbeing in spaces we inhabit;<br />
I won’t get in to too much detail about<br />
these now, but they include having a small<br />
front garden and a back garden, having<br />
at least zones if we live in open spaces,<br />
but ideally individual spaces for different<br />
activities to take place, having dining<br />
rooms joined with kitchens rather then<br />
living rooms, proper heating, proper<br />
noise reduction materials, maximum<br />
daylight in addition to self-controlled<br />
lighting for different tasks, and a variety<br />
of plant species.<br />

PERSONAL PREFERENCE<br />
So, what are the steps to creating<br />
that ideal space? With clients<br />
who contact me and ask for help<br />
with designing their spaces, I<br />
always conduct a ‘brief’. It’s the<br />
most important step in getting<br />
the design right. This can be used<br />
when trying to achieve that ideal<br />
space you can do on your own.<br />
First and foremost, decide on the<br />
scope. What is it that you’re trying<br />
to achieve? What do you need<br />

What can help you in the process of<br />
achieving that ideal space for yourself<br />
is creating some form of scrapbook,<br />
ideabook or a Pinterest board where you<br />
can gather inspirational photos and almost<br />
filter what you like and dislike. One tip<br />
here is to try not to recreate the room to<br />
the smallest detail, every space is different<br />
and what might work in one place, might<br />
not necessarily work in the other.<br />
You can see an example of a beautiful<br />
headboard which was upholstered in a very<br />
strong coloured fabric. It all looks beautiful<br />
and you might like the overall ‘look’ but for<br />
example, you could not fall asleep easily in<br />
a bedroom with lots of red hues.<br />
<strong>May</strong>be, you need more softer colours to<br />
feel relaxed in your bedroom like in the<br />
one below, which we created for a family<br />
home in Cambridge.<br />
You might even consider whether you’d<br />
like a headboard in your bedroom. I am in<br />
favour of using them, especially if they’re<br />
upholstered, as they provide extra back<br />
support, especially when reading, and can<br />
take centre stage in any bedroom. One<br />
of my clients, for example, didn’t want to<br />
have one as they simply didn’t like them.<br />
This is down to personal preference and<br />
refers back to my point about creating a<br />
space you like.<br />

the most in your space? If you’re a family of four,<br />
maybe you need a proper dining table where all<br />
the family can sit down and have a meal together,<br />
but maybe you just need a breakfast bar, as you<br />
all have meals at different times? In one of my<br />
projects, a family needed both; a breakfast bar<br />
for quick meals and a dining table not too far<br />
from the kitchen for evening meals.<br />
A different client of mine wanted to have a<br />
proper table close to the kitchen (also because<br />
of the limited space available), which could<br />
accommodate 3-4 people at the same time.<br />

Set up in 2010 by husband and wife<br />
Brendan Young and Vanessa Battaglia,<br />
the company offers unique twists on<br />
classic designs and comes up with its own<br />
eye-catching pieces from scratch. But a<br />

“I really dislike that word – everyone<br />
always says that!” laughed Brendan. “We<br />

portraits with pencils superimposed on the<br />
upper lips of the people depicted. This was<br />
achieved by taking photos of Renaissance<br />
portraits and then altering them using a<br />
computer.<br />
“A lot of our pieces are inspired by the<br />
past, such as Baroque and Renaissance<br />
art and architecture,” said Brendan, who<br />
is Cambridge born-and-bred. “I was<br />
reading a psychology book and some of<br />
the tests they did were asking people the<br />
same questions with a pencil under their<br />
nose and without it, and then asking them<br />
how they felt. It made quite a significant<br />
difference to the answers they gave. They<br />
were happier using their facial muscles<br />
as, by smiling and doing certain facial<br />
expressions, you can actually feel happier<br />

We just have fun and<br />
make things we like.”<br />
– so I thought I’d apply that to an old<br />
masterpiece.”<br />
Before Mineheart, Brendan and Vanessa<br />
– who met in 2000 at Exeter University,<br />
where he was studying and where she<br />
was enrolled on a three-month exchange<br />
programme – were design consultants for<br />
companies including John Lewis and Next<br />
Homes.<br />
“That was always to their brief, their<br />
style and their type of customer, and we<br />
wanted to do something closer to us,” said<br />
Brendan. “So the idea of Mineheart was<br />
purely whatever we fancied doing or what<br />
we thought was a good idea.” The name<br />
was inspired by Shakespeare’s Sonnet 46,<br />
“Mine eye and heart are at a mortal war”<br />
to symbolise their dual passions: love for<br />
tradition and eye for contemporary design.<br />
So what are they up to at the moment?<br />
“We are working on several new collections<br />
right now, including a new collaboration<br />
with London-based artist Jacky Tsai which<br />
will be released later in the year,” said<br />
Brendan. “He uses intricate traditional<br />
decorative techniques with a modern<br />
twist. “We are also aiming our new<br />
product designs more for use in hotels and<br />
restaurants, rather than just for homes, in<br />
order to better serve our interior designer<br />
clients.”<br />
Some of Mineheart’s designs are being<br />
exhibited at present at Art of Float, the<br />
studio on Hawthorne Way in Cambridge<br />
where people pay up to £55 to spend an<br />
hour floating in a highly dense saltwater<br />
solution in state-of-the-art floatation<br />
pods. “They’ve got some of our stuff in<br />
there,” confirmed Brendan. “It’s quite<br />
a nice local business which is doing<br />
something interesting. We’ve got lots of<br />
similar options coming up this year but I<br />
don’t know exactly what we’re doing yet.”<br />
Most of Mineheart’s products are<br />
designed, made and assembled in the<br />
UK, which enables more control over<br />
production and quality, giving greater<br />
flexibility and the ability to offer custommade<br />
and bespoke pieces.<br />

Land Rover has worked hard to shed almost half a tonne of<br />
weight from the Discovery, but at 2.2 tonnes it’s still a hefty<br />
beast. Hefty enough that, should you accidentally run over the<br />
removable luggage cover that you’ve carefully laid down, there’s<br />
only ever going to be one winner, which explains why there’s<br />
a pile of broken plastic in the back of my test car. Sorry Land<br />
Rover.<br />
However, such is the perceived strength of the new Discovery,<br />
it feels likely that anything that stands in front of it will simply<br />
be beaten into submission. This was put to the test at Eastnor<br />
Castle, Land Rover’s expansive off-road facility that is home to<br />
their customer driving experience. Rock crawls that would defeat<br />
almost anything on the road, deep water well beyond the bottom<br />
of the door, and bumps that twisted the suspension to extreme<br />
angles proved inconsequential to the new Discovery, but it’s<br />
what’s going on underneath the skin that’s impressive.<br />
Casually labelled as the ‘digital’ Discovery, the new car eschews<br />
much of the hewn-from-granite styling of the old Discovery<br />
and bins most of the somewhat<br />

archaic technology that<br />
underpins it, replacing it all with<br />
cutting edge computing power.<br />
It’s immediately apparent as we<br />
venture off-road; the rotary<br />
dial that controls drive modes is<br />
ultimately redundant - while it’s<br />
possible to manually select sand,<br />
snow, mud and ruts, and<br />
so on, setting the car up for what<br />
lies ahead, the car is also able to operate automatically with the<br />
Terrain Response system switching between modes in the blink<br />
of an eye. Simply put, the car knows the terrain better than the<br />
driver.<br />
There are myriad aids to help further, with the equivalent of an<br />
off-road cruise control setting allowing the Discovery to make its<br />
way across tricky terrain at a precisely controlled crawling pace. It<br />

makes the driver feel invincible, requiring them to do nothing but<br />
steer the car. It is genuinely incredible.<br />
However, for all of its ability off-road, most will stay very much<br />
on smoothly tarmacked roads. It’s here that it shows its bulk, as<br />
anything that weighs roughly the same as a rhinoceros isn’t going<br />
to feel particularly agile on twisty country roads. The Discovery<br />
has a good stab at it though, with the electronic air suspension<br />
hunkering down at speed. Grip levels are surprisingly high thanks<br />
to tyres as wide as you’d find on a Chevrolet Camaro, but body<br />
roll is quite significant and it takes some time to scrub off speed<br />
so confidence levels are unlikely to be as high as the car’s abilities.<br />
Find a straight road and it’s glorious, that air suspension<br />
smoothing out almost every bump despite 21-inch wheels,<br />
with the 3.0-litre V6 diesel engine propelling the behemoth<br />
to 60mph in just 7.7 seconds. It never actually feels that quick<br />
though, which could be down to a seldomly enthusiastic gearbox,<br />
or it might be that you’re cocooned in a cabin that’s so luxurious<br />
that you barely notice the outside world passing by.<br />
A 10-inch touchscreen dominates the centre stack, and that’s<br />
enabled Land Rover to minimise buttons on the dashboard.<br />
It’s got all the necessary connectivity, including a built-in wi-fi<br />

system that can support six devices in the<br />
car - coincidentally the same number of<br />
seats, if you exclude the driver. There’s<br />
also nine USB ports dotted around, so<br />
everybody’s phone can stay fully charged.<br />
Pleasingly, there are still knobs for<br />
temperature and audio volume, so the<br />
basics can be carried out by feel alone.<br />
It’s all surrounded by plenty of leather,<br />
metal and high-gloss plastics, with acres<br />
of room for each person on board. Even<br />
the pop-up sixth and seventh seats<br />
can accommodate an adult, although<br />
that would count as cruel and unusual<br />
punishment on a long journey. Those rear<br />
seats, and the second row in the middle, all<br />
fold up and down at the touch of a button,<br />
while an app allows you to perform the task<br />
while away from the car. Perhaps that’s<br />
helpful at Ikea.<br />
Despite seven seats, there’s even a decent<br />
boot, along with storage bins and pockets<br />
dotted around the car. There’s one hidden<br />
under the central cupholders that could<br />
hide enough Haribo to keep six kids<br />
happy for days, and there’s even a small<br />
cubbyhole hidden behind the air-con<br />
controls.<br />
Spacious, well equipped, capable on-road<br />
and unstoppable off-road, it’s tough to<br />
find fault with the Discovery. The big V6<br />
diesel engine is barely any more powerful<br />
than the lighter 2.0-litre unit, losing just<br />
0.3 seconds in the 0-60mph sprint,<br />
but the extra refinement alone might be<br />
worth the relatively small £1,500 uplift<br />
in price, and while it’s an attractive car<br />
I’m not convinced that the Range Rover<br />
Sport-esque styling works as well as the<br />
clean-cut utilitarian style of old. And don’t<br />
mention that offset rear number plate.<br />
There’s also the small issue with it being<br />
north of £60,000 for this spec (and more<br />
than £75,000 with the options fitted to it)<br />
but PCP payments are likely to be around<br />
£500 a month, which would make that<br />
more palatable.<br />
Think of it as a mini-Range Rover, albeit<br />
still a physically massive car, with all the<br />
abilities and more of the Discovery of old,<br />
and it starts to look like pretty good value.<br />
