The Holy Grain of Water<br />
Social media worldwide has lately labelled coconut water, which has long been a common<br />
choice refreshment among Thais, as the ultimate thirst-quencher. They say the coconut’s<br />
crystal clear, mildly sweet liquid contains five essential electrolytes and helps boost perfect<br />
skin, reduce blood pressure and facilitates digestion.<br />
Thus, the demand for fresh coconut water skyrocketed during the last six months. In Chiang Mai<br />
it is very easy to find, both in restaurants and on street vendor stalls. Supermarket shelves<br />
are more dedicated to coconut water and coconut water-based beverages than ever before<br />
-- from fresh juices to milky concoctions and dairy-free yoghurt.<br />
If you have ever opened a fresh coconut, you will have seen the thin, opaque almost clear<br />
coconut juice or water which has a slight almond flavor. Contrary to popular belief, this is not<br />
the coconut milk. However, the water is consumed as a drink fresh from the coconut by many,<br />
and it can also be used in recipes. The creamy, high-fat coconut milk, of which the nutritional<br />
property is different from coconut water, is also very popular as a drink among Chinese tourists<br />
travelling in Thailand.<br />
For best results, the water from a fresh coconut should be consumed shortly after being<br />
exposed to air due to the possible loss of important nutrients. A single coconut usually provides<br />
an 11 ounce serving of water, and it is low in calories and fat but rich in vitamins, minerals and<br />
other nutrients. Based on a 100ml drink, coconut water contains more potassium and less sodium<br />
than most sport drinks and energy drinks. It is also very high in chloride and has natural sugars.<br />
In fact, the potassium content in coconut water is close to twice the amount in a banana. A healthy<br />
balance of electrolytes is important for the optimal health of our muscular, cardiovascular, nervous<br />
and immune systems, as well as to help with the absorption and balance of the body’s internal<br />
fluids.<br />
In Chiang Mai, the price for one coconut at<br />
a street vendors stall is about 40 Baht.<br />

The scorching heat of summer gets no exemption from<br />
Thailand’s culture. As <strong>April</strong> is the hottest month, this is<br />
also the time of the year when natives play a fun role<br />
in the so-called Songkran Festival. Among all the cities<br />
of Thailand, Chiang Mai has the greatest number of<br />
people, including foreigners, who are also there to join<br />
the longest celebration in the country.<br />
Although the roots of this festival are spiritual, with water<br />
dousing representing a purification ritual to wash away<br />
evil spirits in anticipation of the Thai New Year, it is also<br />
an enormous countrywide water fight. Water balloons,<br />
super soakers and virtually any sort of spray bottle<br />
become weapons of water during Songkran Festival. Join<br />
in one of the biggest parties of the year!<br />
By definition, Songkran Festival is a 3-day holiday,<br />
celebrated each year from <strong>April</strong> 13th to 15th. This date<br />
was set firmly around 1940, as the traditional Thai New<br />
Year and the pinnacle of Songkran. Before that the date<br />
varied according to a lunar calendar. It’s something of an<br />
anachronism to consider this date “the new year” because<br />
Thailand recognizes the Gregorian calendar and the year<br />
beginning on January 1st, but Songkran is still celebrated<br />
vigorously as a national holiday.<br />

The most famous Songkran celebrations are still in the<br />
northern city of Chiang Mai, where celebrations sometime<br />
last for six days or longer. During Songkran, a veritable<br />
water war takes place around the moat and it is the lifetime<br />
opportunity for all adults to act like kids. People soak each<br />
other, play, party and generally have a grand time. Water<br />
pistols, balloons, spray bottles and hoses are the vessels of<br />
purification around the moat as gallons of water are traded<br />
back and forth between revelers, usually accompanied<br />
by the traditional greeting, suk san wan songkran (Happy<br />
New Year!). As it’s typically over 100 degrees Fahrenheit<br />
during <strong>April</strong> in Thailand, you’ll definitely welcome the cool<br />
down at this exciting water festival .<br />
But that’s not all. Songkran festival is also a culturally<br />
fascinating holiday season with unique Buddhist<br />
purification ceremonies and the releasing of fish and birds.<br />
The city lights up with splendid cultural activities which<br />
are as various as the venues specially provided for the<br />
occasion. Songkran is traditionally a time to visit and pay<br />
respects to elders, including family members, friends,<br />
neighbours and monks. Displays of sand sculptures<br />
at temples and the bathing of the Phra Buddha Sihing<br />
image are believed to give the people of the North<br />
a prosperous beginning to the New Year. Buddha images<br />
at home and in monasteries are gently bathed with water<br />
mixed with a Thai fragrance: this water is meant as<br />
a symbol of washing all of the bad away. And it doesn’t<br />
stop there, <strong>April</strong> 13th is the day of a beautiful parade with<br />
elaborate floats and city officials from Phra Singh Temple<br />
to Thapae Bridge, as well as the election of Miss Songkran<br />
Beauty in the evening at Thapae Gate (see detailed<br />
schedule page 21).<br />
Songkran Festival in the ‘Land of Smiles” is one of the<br />
top-five festivals in the world. It is definitely an event not<br />
to be missed.<br />

Traditions and Elegant Simplicity<br />
美 丽 的 泰 国 丝 绸<br />
The weaving workshop of Thai Silk Village lies just five kilometres outside<br />
of Chiang Mai town. As I approached the place, I could hear the clattering of<br />
traditional wooden looms, I was greeted by a friendly staff who took me for<br />
a walk into the workshop to see the different steps in the making of Thai silk.<br />
From fragile cocoon to elegant material, Thai Silk Village presents all the<br />
steps in the making of Thai silk. In the large weaving room about fifteen looms<br />
are lined on both sides. I watched the weavers while their feet moved to an<br />
unknown rhythm across six different pedals, their hands flicking different<br />
cords that snapped the silk thread back and forth, back and forth across<br />
the loom. To me it looked incomprehensible, but these women made it look<br />
easy, moving with a kind of grace.<br />
After this visit, I entered the showroom and saw the walls lined with vivid<br />
colourful cloths folded for sale, as well as hand-tailored suits and silk dresses.<br />
Not only does Thai Silk Village presents beautiful clothing and scarves<br />
made of silk, they also sell a myriad of silk product including bed sheets, spa<br />
accessories, home decorations etc...<br />
The women in Thai Silk Village take great pride in what they do, and<br />
much attention is given to preserving their unique traditions. A visit to this<br />
showroom is naturally one of the “must do” activities in Chiang Mai.<br />

Chaque été, pendant les fêtes de Songkran, les<br />
visiteurs de Chiang Mai se livrent un combat sans merci<br />
pour dégoter une place en terrasse à l’abri du tumulte.<br />
Résultat: des files d’attente interminables au lieu d’un<br />
moment de détente. Le nouveau resto-bistro D-Bistro<br />
échappe à cette règle. Nous vous donnons l’adresse...<br />

Ouvert fin novembre entre la porte de Thapae et le temple<br />
Phra Singh, D-Bistro cache un trésor derrière son bâtiment de<br />
style moderne-industriel: une jolie cour intérieure et un petit<br />
restaurant à la décoration claire et reposante.<br />
Fondé par les propriétaires du restaurant Deck 1 et du resort<br />
Spa Rarinjinda, l’endroit est silencieux et rafraichissant, une<br />
calme parenthèse loin du tumulte et de la chaleur de la vieille<br />
ville. Au premier abord, le bâtiment fait très sérieux, trop peut<br />
être. Mais c’est pour cela que la surprise est d’autant plus<br />
agréable lorsque que l’on s’aventure à l’intérieur: une première<br />
salle propose cafés, thés et pâtisseries de renommée; on peut<br />
s’y attabler tout en observant le mouvement permanent des<br />
passants à l’extérieur. A côté, l’entrée du spa Let’s Relax qui<br />
offre plusieurs salle de massages ainsi que des traitements de<br />
qualité a petit prix. Derrière, la cour, ou la tranquillité est de<br />
mise avec régulièrement des mini-expositions d’artistes Thais.<br />
Le restaurant se trouve au fond de cet espace et il semble<br />
presque impossible qu’un tel endroit puisse proposer tant de<br />
profondeur en plein coeur de la ville.<br />
Au D-Bistro, on apprécie le style décontracté du lieu ainsi<br />
que la wi-fi et la presse à disposition. En cuisine, le crédo est<br />
frais, détendu et gourmand. Au menu du petit déjeuner: oeufs<br />
Bénédites et gaufres font le bonheur des lèves tôt. On vient y<br />
papoter à l’heure du déjeuner devant un cheese burger, un club<br />
sandwich, un fish and chips ou un steak de saumon. La cuisine<br />
thaïlandaise y est toute aussi délicieuse avec un riz frit dans<br />
un ananas, un curry de porc à la façon Lanna servi avec des<br />
crêpes croustillantes et la traditionnelle sauce piquante à la<br />
tomate accompagnée de galettes de riz.<br />
Le D-Bistro propose aussi une carte de pâtisseries dignes<br />
des plus grands salons de thé: meringue au citron, fondant aux<br />
trois chocolats, tarte aux poires, Déja-Vu framboise/passion<br />
etc... autant de délicates attentions qui nous donnent envie de<br />
revenir très souvent.<br />

La statue du Bouddha vénérée par les habitants de Chiang Mai.<br />
Songkran, du 13 au 15 avril environ, est l’une des fêtes les<br />
plus importantes de thailande. Elle marque le début du nouvel<br />
an Thailandais.<br />
La veille de Songkran, le 12 avril, est l’un des jours les plus<br />
chauds de l’année en Thailande. Les Thailandais aspergent<br />
les bouddhas d’eau avec vénération mais également leurs<br />
amis, la croyance voulant que l’eau éloigne la malchance et<br />
purifie. On assiste ainsi à de véritables batailles d’eau dans<br />
les rues, on verse aussi de l’eau parfumée sur les mains des<br />
ainés. Songkran est fête dans tout le pays et tout particulièrement<br />
à Chiang Mai. Cependant, il est un temple qui à une très<br />
grande importance religieuse et culturelle, c’est le temple Phra<br />
Singh. Situé sur la rue de Sam Lan, ce joli temple date de 1345<br />
et abrite la statue révérée du Bouddha Phra Phuttha Sihing.<br />
En Thailande, la statue du Phra Sihing est très vénérée. Son<br />
histoire est liée avec la création des royaumes de Chiang Mai,<br />
Sukhothai et Ayutthaya, ainsi qu’avec l’arrivée du bouddhisme<br />
en langue pâli.<br />
La statue du Bouddha Sihing n’est, par ailleurs, pas qu’une<br />
simple représentation du Bouddha. A la suite de divers rituels<br />
la statue est devenue dans les croyances locales la forme<br />
vivante du Bouddha lui même, d’ou son importance et sa<br />
puissance.<br />
C’est pour cette raison que lors des célébrations du festival<br />
de Songkran, la statue Sihing est sorti du temple Phra Singh<br />
et, accompagnée de trois autres statues renommées, prend<br />
place dans une procession ou la population lui rend hommage<br />
au moyen d’offrandes et d’aspersions d’eau lustrale.<br />
Dans leurs prières, les habitants de Chiang Mai demandent<br />
à la statue de les protéger et de leur apporter assez de pluie<br />
pour la plantation du riz. Cette parade est ouverte et suivie par<br />
de nombreux groupes de danseuses et de danseurs, parés de<br />
leurs plus beaux costumes traditionnels et pour qui c’est un<br />
honneur d’ouvrir la marche de la statue sacrée. Cette parade<br />
prend lieu chaque année, le 13 avril et part de la gare des<br />
trains jusqu’au temple Phra Singh, en passant par le pont de<br />
Thapae, la place Thapae et la rue Ratchadamnoen.<br />

Songkran is the traditional Thai New Year celebrated from<br />
13th to 15th <strong>April</strong>, 13th being the Thai New Year, 14th being the<br />
Nation’s family Day and 15th being the National Elderly Day.<br />
This festival is the time for family reunions, merit making at the<br />
temple and gently pour water mixed with Thai fragrance called<br />
“Nam Op Thai” over the Buddha images. It is also the water<br />
festival, celebrated all day, during 3 days, everywhere in the<br />
