Dog Rescue by Elephant Nature Park<br />
在 大 象 自 然 保 护 公 园 做 拯 救 流 浪 狗 的 义 工<br />
Do you have a little time to spare? Do you love animals? Then you should<br />
consider helping Dog Rescue, at Elephant Nature Park.<br />
Dog Rescue Project began in 2011, as a result of catastrophic floods in<br />
Bangkok. Volunteers from Elephant Nature Park rescued dogs trapped<br />
on rooftops and bridges; they provided them with food and medicines, and for<br />
those whose owners could not be found, they brought them back to Chiang Mai.<br />
Soon, the famous elephant sanctuary, was re-organized to welcome<br />
these new family members and large “dog runs” were built with all kind of<br />
things for the dogs to climb on, swim in and play amongt. A small animal<br />
hospital has been constructed and a full time vet and clinic manager employed<br />
to care for the dogs.<br />
With 200-acre stretch of land, the park is big enough to welcome<br />
66 elephants, 200 cats, 450 dogs plus many horses and buffaloes. Lek-<br />
Sangduen Chailert, the founder of the park, is an internationally recognized<br />
animal rights defender.<br />
Volunteering with Elephant Nature Park Dog Rescue Project provides<br />
an opportunity to truly make a difference in the lives of so many animals.<br />
The minimum time commitment with the dogs is one week, but some of the<br />
volunteers have stayed for months. It is not an easy job but the love that dogs<br />
give you back is unforgettable and so very rewarding.<br />

While ladies have a million ways to keep their baby-soft cheeks<br />
in check, us fellas tend to rely on soap and water and a wink in the<br />
mirror each morning. But perhaps we should take time out of our<br />
busy schedules this week to visit one of the charming razor-wielding<br />
barbers of Chiang Mai for a good old-fashioned male pampering<br />
experience.<br />
Now I speak strictly to a male audience here – those who<br />
probably don’t go in for so much body care on a day-to-day basis.<br />
But you might find that a 20-minute visit to a local barber in<br />
Chiang Mai might be just the meditation and rest you so badly seek<br />
in the middle of a hectic day. I’m sure there are many in our midst<br />
who will cringe at the thought of a cut-throat razor being held to<br />
their necks. Fear not! Lie back and close your eyes; bend your<br />
neck to the blade and whimper ye not! It’s all quite safe.<br />

Did you know that in days gone by, barbers were often called upon to<br />
perform surgery and extract teeth? Even Chaucer waxed lyrical about<br />
the profession: “A merry childe he was, so God we save; well could he<br />
let blood, clyppe and shave.” Such barbaric barberism or quackery has<br />
been somewhat outlawed since. It is a rare sight indeed to see the red<br />
and white pole of the barber shop nowadays. However, in many parts<br />
of the world, going to the barber’s for a shave is all in a hard day’s work.<br />
In India, the barber will scrub your face so hard you’ll think you are<br />
in a wrestling arena. In the Middle East you will leave the shop reeking<br />
of cheap cologne. In South America, they will begin by scrubbing your<br />
face with a bar of soap, and in Vietnam you might find that the barber’s<br />
shop sign is simply a front for an altogether more pleasurable service<br />
indeed.<br />
But nowhere in the world do they provide such a good shave as in<br />
Thailand. Thousands of barbers ply their trade all around the country.<br />
Simply go in and ask for a “gon nuad.” You will invariably be invited to<br />
lie back in a chair by a veteran of the blade, who will then gently tie<br />
a white bib around your neck and shoulders. Of course, there are many<br />
female barbers in Thailand too. In a large air-conditioned barber shop<br />
next to Wat Suandok on Suthep Road, most of the 15 barbers are<br />
women and fine scalpers they are too.<br />
Nonetheless, this is a traditionally male domain. After all, how many<br />
ladies know that the delicate plucking of hair from just below the nostrils<br />
will bring a tear to a man’s eyes? Or that a blood-weeping nick on the<br />
neck causes no pain, whereas the after-burn of a scraping rash lasts<br />
all day? In any case, relax and unwind as the chair reclines and you<br />
find yourself staring up at the ceiling. The barber affixes a fresh blade<br />
to his or her razor and whips up a soapy lather for your bristly visage.<br />
You now close your eyes and submit your throat to the masked<br />
0sman above. He, or she, will lather your face carefully with a horsehair<br />
brush and then, with the whistle of steel slicing delightfully down<br />
your cheeks, scrape all that nasty stubble into the dustbin of history.<br />
A good barber will shave downwards once and then up again.<br />
He will snare the hair that hides in the secret garden of your chin cleft;<br />
will deftly prune the unruly wires that sprout from your nose, your ears<br />
and your eyebrows; and will gently sandpaper the stubble on your<br />
chin and above your lips. And, when he’s finished, he’ll do it all again<br />
a second time.<br />
For the next round, some barbers prefer to pat your face down with<br />
talcum powder (the barber’s forensic duster for hunting bum-fluff).<br />
Otherwise, get ready for the next step of your journey, which is the<br />
delicate shearing of your ears, your forehead and the back of your<br />
neck. You might find this news disturbing, but it feels so good that you’ll<br />
probably fall into a gentle sleep. Of course, in five years you’ll look like<br />
a werewolf, but what the heck.<br />
Now your entire mug is flawlessly fluffless, but dry as a desert.<br />
So your aide-de-blade should have prepared a lovely, wet, steaming<br />
hot, lemon-scented towel to wrap around your head. This is the piece<br />
de resistance: any barber who does not include this service is not worth<br />
a guinea. Post-shave pampering is what it’s all about. If in doubt, insist<br />
on a post-shave face spa before you begin. Pay an extra 20 baht if<br />
necessary. Otherwise, the experience is about as refreshing as rubbing<br />
sand in your face.<br />
Anyway, assuming you have been bidden to lay back and enjoy the<br />
hot towel treatment, you should now be ready to move onto a smooth<br />
facial scrub. Your barber will lovingly wipe your peachy jowls down with<br />
an icy cold towel and then dab raw alcohol into any nicks in the artwork.<br />
And just in case you haven’t already melted into jelly yet, a good barber<br />
should always finish off with a firm massage of the head, the neck and<br />
the shoulders.<br />
Et voila! In only 20 minutes you are feeling soothed, content and<br />
refreshed. Your cheekbones are sculpted, your chin quite statuesque,<br />
and your perky little jowels are smoother than 100 babies’ bottoms.<br />
All that for around 50 or 80 baht. Not bad.<br />

For many years a series of traditional shaving parlours have<br />
occupied the street just west of Wat Suandok on Suthep Road;<br />
these are great places to get the old-fashioned treatment.<br />
Another place is located on Ratchawong Road, next to Neramit<br />
Tailor Shop. It is call Baanjong Kesa Barber Shop and is one of the<br />
oldest barber shop in Chiang Mai (50 to 80 baht).<br />
Skill Barber Shop on Huay Kaew Road, is a great place to go to<br />
(80 to 150 Baht). This place is also one of the very famous places in<br />
Chiang Mai where to get special head shaving styles.<br />
For fashionable styles, you can’t beat The Cutler at 75 Samlan<br />
Road inside the south side of the moat. Prices are somewhat higher<br />
than the previous venues (150 to 200 baht) but well worth it if you<br />
are looking for a hip new look. Reservations are recommended.<br />

specialities include spicy salmon salad, bruschetta with<br />
mushrooms and mozzarella cheese, duck orange sauce and<br />
spicy Thai salads. With a list of over 100 cocktails, beers,<br />
spirits and whisky, they also guarantee that no one will go<br />
thirsty. Watch out for their special cocktail happy hour, every<br />
day from 18.00 to 20.00: buy one, get one free.<br />

requires a 45 minutes boat trip and you will love seeing everyday<br />
life along the Mekong river.<br />
- Phu Si Hill, one of the best spots from where seeing the view<br />

- Whisky Village: the boat will take you there and you will see<br />
whisky bottles with snakes in them.<br />
- Tad Sae Waterfall, located in a park about 13 kilometres from<br />
town. It is a must for nature lovers but be careful during the<br />

En route pour un barbecue à la coréenne.<br />
Se faire du bien et succomber aux plaisirs de la table tout en même temps, c’est possible<br />
grâce à la cuisine “well-being” proposée à Korea House. Sans sauce et sans graisse, la<br />
cuisine coréenne est en effet très diététique et la carte propose une explication détaillée<br />
de chaque plat pour guider le visiteur dans ses choix. La décoration du restaurant est<br />
sobre et les tables sont espacées.<br />
Au menu du Korea House: raviolis grillés, bibimbap, soupe au tofu et au kimchi: c’est<br />
tout simple et délicieux. De plus, le gril propose un choix inédit de viandes telles que du<br />
boeuf mariné à la sauce soja, de la poitrine de porc, de l’entrecôte, de l’échine et du poulet<br />
à la sauce piquante. Ces viandes, une fois cuites, se livrent au plus grisant des rituels:<br />
découpées en petites bouchées, elles se poudrent de sel au sésame, font trempette<br />
dans une sauce rouge de soja fermenté au piment, s’enveloppent d’une feuille de laitue<br />
croquante et s’entourent d’une série d’accompagnements endiablés: l’inénarrable kimchi<br />
(chou fermenté et pimenté) mais aussi la version blanche (sans piment).<br />
Bien que le restaurant soit dans un des quartiers connus du coeur de Chiang Mai, ses<br />
prix restent très abordables. Comptez de 120 à 180 Baht pour chaque plat et les accompagnements<br />

Croyances et traditions<br />
Le repas de famille.<br />
Le repas de famille a généralement lieux chez les parents de<br />
l’époux ou chez l’ainé de la famille. Le banquet de printemps<br />
doit être copieux et on prépare de grosses quantités pour que<br />
l’année à venir soit opulente. Chaque met a une signification<br />
dont voici les plus connus: le poisson est la prospérité, les raviolis<br />
la richesse, le bambou la jeunesse et les sucreries portent<br />
bonheur.<br />
Les mandarines.<br />
Les oranges et les mandarines sont le fruit du bonheur pour la<br />
nouvelle année. Elles sont offertes en nombre pair et consommées<br />
en nombre pair aussi afin de porter chance.<br />
Les enveloppes rouges.<br />
Ces enveloppes sont l’équivalent de nos étrennes. Lors du<br />
Nouvel An Chinois, les ainés offrent traditionnellement aux plus<br />
jeunes de l’argent dans des enveloppes rouges.<br />
La danse du dragon.<br />
Cette danse est effectuée au rythme des percussions les deux<br />
premiers jours de l’an. Une dizaine de personnes se cachent<br />
dans un gigantesque dragon de tissu coloré de huit à dix<br />
mètres et le font voltiger. Le dragon est un animal magique qui<br />
représente la bravoure, la noblesse et la chance.<br />
Les vêtements neufs.<br />
Lors de cette fête il est très important de rester bien propre<br />
et certaines personnes vont aussi se faire couper les cheveux.<br />
Les chinois portent très souvent des vêtements neufs, achetés<br />
pour l’occasion. La couleur rouge est associée à la joie, le<br />
bonheur, la chance, la richesse et la bonne fortune. La couleur<br />
or est aussi portée mais le noir est à0s éviter.<br />

Si notre calendrier est basé sur le soleil, le calendrier chinois lui se base essentiellement sur la lune. La nouvelle<br />
année débute toujours avec une nouvelle lune et tombe à chaque fois entre le 21 janvier et le 20 février. Chaque<br />
année est associée à l’un des douze signes du zodiac chinois qui se réfèrent à un animal. Cette année, le nouvel<br />
an chinois sera célébré le 8 février et nous entrerons dans l’année du singe.<br />
Le nouvel an chinois est l’occasion en Thailande de célébrations importantes, car une grande partie de<br />
la population à des origines chinoises. Cette période correspond a de longues vacances pour les familles<br />
chinoises qui rejoignent leur région natale. De très grandes manifestations ont lieux en Thailande, les plus<br />
spectaculaires ayant lieu à Nakhon Sawan, au nord de Bangkok ainsi qu’à Bangkok même, dont le quartier<br />
chinois sera enflammé lors de fêtes démesurées. A Chiang Mai, vous pourrez assister aux festivités chaque<br />
soirs, du 6 au 8, sur la place de Thapae Gate, ainsi qu’au marché de Warorot qui se transformera chaque soir<br />
en rue piétonne.<br />
Le nouvel an chinois, qui est une fête familiale est appelé en Chinois le festival du printemps. Cet évènement<br />
