Carrot, Orange<br />
and Ginger Soup<br />
Serves 4<br />
Total time: 35 min<br />
1 kg Carrot, large cubes<br />
1 pcs Onion, large cubes<br />
25ml Olive oil<br />
1 pcs Orange, zest and juice<br />
2cm piece of Ginger, peeled<br />
and chopped<br />
1 tsp Cinnamon powder<br />
750ml Water<br />
250ml Cream<br />
4 slice of Bread, toasted<br />
30g Cheddar cheese, grated<br />
• Into a pot at medium heat, place the oil, onions and<br />
carrots, sauté until soft.<br />
• Add the Orang e zest and juice, ginger and cinnamon,<br />
stir for a 1 minute.<br />
• Pour in the hot water and cove with a lid; allow to<br />
simmer for 15-20 minute.<br />
• Remove the lid and add the cream.<br />
• Blitz until smooth consistency.<br />
• Serve into bowls with a slice of toast and sprinkle<br />
cheese.<br />
