MILDLY SPICED FAJITAS<br />
In Mexico, the word fajita refers to the sizzling meat that is<br />
wrapped in a soft lour tortilla, but it’s used to refer to the<br />
complete dish, too. Tortillas are wonderfully versatile – they<br />
can also be used to make a Mexican-style toasted sandwich,<br />
the quesadilla, illed with cheese, meat, seafood or vegetables.<br />
To make a fajita… Slice a yellow pepper and lean chicken into<br />
strips, and coat the chicken with fajita seasoning – a warming<br />
blend of smoked salt, smoked paprika and chipotle chillies. In a<br />
hot pan, sauté the meat for a few minutes, and add the peppers.<br />
Once cooked, divide the chicken and peppers between the<br />
tortillas, top with fresh herbs and our tomato-rich red salsa<br />
– which has a slight heat and a kick of lime – then fold in the<br />
tortillas’ edges and roll them up to create parcels.<br />

THE KETCHUP<br />
Our spicy tomato Masala<br />

chilli, ginger, garlic, fennel,<br />
coriander and cloves. Serve<br />
it as a dip for appetisers,<br />
such as samosas and bhajis.<br />

an Indian staple. Ours<br />
cooks to fragrant, fluffy<br />
perfection in 10 minutes.<br />
TACOS TO TURN UP THE HEAT<br />
Soft tacos are similar to tortillas, but smaller – ideal for a<br />
speedy snack or lunch. They’re traditionally served with the<br />
edges folded in around the illing, as street food that’s ready<br />
to be eaten on the go. For an authentic touch, give your taco a<br />
kick with habanero sauce – habaneros are one of the world’s<br />
spiciest chillies, so go easy to start with.<br />
To make a taco… Sauté your illings, such as sliced red and<br />
green peppers, in a hot pan with a dash of habanero sauce.<br />
Spoon the cooked illing onto the tacos, then add diced red<br />
onion, chopped red pepper and fresh coriander. Top with<br />
pickled green jalapeños, before folding in the tacos’ edges.<br />
Or for a fun variation, try making taco bowls: upturn a muin<br />
tray and press soft tacos around the cups, then bake until<br />
crisp. Once cool, add your chosen illings and serve.<br />
