stars by spreading them with Black Olive Tapenade,<br />

BUILD YOUR<br />
OWN BRUSCHETTA<br />
Bruschetta is a classic Italian<br />
antipasto, or appetiser, consisting of<br />
grilled bread rubbed with garlic and<br />
topped with sweet, ripe tomatoes.<br />
To rustle up a super-easy starter, use<br />
slices of ready-made garlic bread.<br />
Make sure it’s nice and crisp – this is<br />
the key to a good bruschetta; a soggy<br />
base is likely to collapse when you pick<br />
it up. Once baked, leave the bread<br />
slices to cool, then top with Italianinspired<br />
ingredients, such as vibrant<br />
green pesto – ours is packed with basil,<br />
pine nuts and pecorino romano cheese<br />
– chopped fresh tomatoes and finely<br />
diced red onion. Finish with whole<br />
fresh basil leaves to serve.<br />

Mediterranean region for centuries. Chunky layered Moroccan<br />
Style Houmous, AED 18 (170g), has a super-smooth texture.<br />

A trip to Barcelona and the city’s famous<br />
‘Gambas Pil Pil’ tapas dish inspired these Garlic<br />
and Parsley Prawns, AED 45 (140g). In Spain,<br />
they’re served sizzling in terracotta dishes, but<br />
you could keep things simple<br />
and fresh by serving them on a platter.<br />
or a bed of crisp gem lettuce.<br />
WRAP IT UP<br />
Spoon spicy Cauliflower and Harissa Chickpea<br />
Salad, AED 25 (175g), on to flatbreads, along with<br />
its yogurt, feta and mint dressing, then roll into<br />
traditional Moroccan-style wraps. Moroccan<br />
Style Fruity Couscous, AED 21 (200g), drizzed<br />
with tzatziki, works well too.<br />

Cut our different breads into<br />
fingers and top with diced<br />
tomatoes, garlic and oil for<br />
fuss-free canapés; or tear<br />
and throw into a salad.<br />

AFTERNOON TEA<br />
Try a refreshing twist on the traditional and serve a<br />
selection of favourite cakes with perfectly paired iced<br />
fruity teas and a revitalising coffee spritzer<br />
RICH INDULGENCE<br />
If coffee and cake is your thing, try our Fairtrade<br />
Colombian 100% Arabica Coffee, AED 26<br />
(100ml), with a slice of Chocolate Fudge Cake,<br />
AED 27 (415g) – a rich sponge filled and topped<br />
with a fudge frosting. The spritzer is made with<br />
Italian espresso, mixed with sparkling water and a<br />
dash of sugar, and is inspired by the cold-brew<br />
coffee trend. Pour over ice and garnish with a<br />
cherry or curl of lemon zest.<br />
FRUITY TWIST<br />
Your tea wouldn’t be complete without a slice<br />
of Victoria Sandwich Cake, AED 27 (410g). This<br />
classic cake features an all-butter sponge filled<br />
with strawberry jam and Madagascan vanilla<br />
buttercream. The sweet jam works well with<br />
invigorating Apple and Mint Iced Tea,<br />
AED 12 (250ml). Decorate with slices of apple<br />
and a sprig of mint for a stylish touch.<br />
SPICE SURPRISE<br />
Lightly spiced with cinnamon and nutmeg,<br />
and mixed with juicy raisins and crushed<br />
pineapple, our Carrot Cake, AED 27 (410g),<br />
is topped with a cream cheese frosting and<br />
a light dusting of cinnamon. It’s perfect<br />
accompanied with a glass of Citrus Iced<br />
Tea (recipe above), as sweet carrot and<br />
orange flavours go well together.<br />

RECIPE<br />
CITRUS ICED TEA<br />
Ready in 15 minutes, plus cooling • Serves 4<br />
100g caster sugar<br />
2 oranges, zest and juice, plus orange<br />
slices to serve<br />
2 sprigs rosemary, plus extra to serve<br />
400ml Earl Grey tea, made with 2 teabags,<br />
cooled<br />
1 Make a syrup. Combine the sugar and<br />
100ml water in a pan over a high heat. Bring<br />
to the boil, then simmer until the sugar has<br />
dissolved. Add the orange zest and rosemary.<br />
Leave to cool, then strain.<br />
2 In a jug, mix 60ml of the syrup with the tea<br />
and the orange juice. Add ice, and serve with<br />
rosemary sprigs and orange slices.<br />

Scones don’t have to be sweet. Choose<br />
Cheese Scones, AED 15 (280g), and<br />
swap the usual jam and cream for a<br />
fruity chutney and crescents of green apple,<br />
or sundried tomatoes and slices of feta.<br />

Delicate cucumber finger sandwiches<br />
are traditional, but for a Mediterranean<br />
twist, cut the bread into fingers, cut in<br />
half and fill with pesto, slices of mozzarella<br />
and basil. Secure with toothpicks.<br />

Crisp Italian Olive Flatbread,<br />
AED 19 (150g), made to a traditional recipe<br />
in Liguria, makes a great base for cream<br />
cheese and smoked salmon. Garnish with dill for a<br />
delicate finish – perfect for afternoon tea.<br />

COOL IDEAS<br />
Our versatile cordials and spritzers make more than<br />
delicious drinks. Try these easy recipes for warm days<br />
CITRUS LOLLIES<br />
Make refreshing ice lollies by dissolving 100g<br />
sugar in 100ml warm water. Leave to cool, then<br />
add a bottle of Lemon and Rose Pressé,<br />
AED 18 (1.5ltr), or 2 cans of Sparkling Grape,<br />
Sicilian Lemon and Grapefruit, AED 18 (1ltr).<br />
Pour into lolly molds containing thin slices of<br />
strawberry or lemon, add a lolly stick and freeze<br />
overnight.<br />
WHY NOT TRY…<br />
Serve the granita with your<br />
favourite fresh fruits –<br />
mango and kiwi go well with<br />
mandarin – for a colourful<br />
and cooling dessert<br />
TROPICAL COOLERS<br />
Granita looks great in a tall glass. Dissolve 100g sugar<br />
in 100ml warm water. Cool, then mix with 2 cans of<br />
Sparkling Mandarin, AED 12 (250ml), and pour into a<br />
deep, freezer-proof dish. Freeze for 30 minutes, then<br />
remove from the freezer and rake with a fork. Return<br />
to the freezer. Repeat every 30 minutes, until it is<br />
frozen, with a slushy – but not watery – texture.<br />
FRUITY JELLIES<br />
Give a traditional party treat a twist by suspending fruit in<br />
jelly. Soak 5 gelatine leaves in cold water for 10 minutes.<br />
Squeeze out the excess water, add 75ml boiling water<br />
and stir to dissolve. Pour in a bottle of Sparkling British<br />
Elderflower Pressé, AED 18 (750ml). Divide 300g<br />
raspberries among 6 bowls or glasses, then pour in the<br />
jelly. Set in the fridge for 4 hours.<br />

Honey is a key ingredient<br />
in Greek desserts, and it’s<br />
at the heart of our Honey<br />
and Ricotta Cheesecakes,<br />

also tumbled nuts through<br />
honey to create the sticky<br />
topping. Ricotta makes<br />
them nice and light.<br />
Our delicious raspberry jam is made with<br />
Glen Ample raspberries from Scotland, which<br />
