Spinach and<br />
Onion Pakoras<br />
BY AWARD WINNING<br />

Cooking Time:<br />
20 mins<br />
Pakora is a generic term used for<br />
deep fried fritters made in India.<br />
Mostly, gram flour is used for coating<br />
the vegetables and then they are<br />
deep fried in oil. These are perfect to<br />
serve if you have a Christmas party<br />
coming up...<br />
Method<br />
1. Place the chickpea flour, spinach, yoghurt,<br />
1/2 cup water, cumin, coriander, fenugreek and<br />
onions into a large bowl.<br />
2. Season with salt and stir until well combined.<br />
3. Pour the oil into a large pot with a heavy<br />
bottom and heat to 175°C.<br />
4. Carefully drop tablespoons of the batter into<br />
the hot oil and fry, in batches, until they rise to<br />
the surface and are golden brown, 3 to 5 minutes.<br />
Ingredients<br />
• 2 cups chickpea flour<br />
• 1 cup chopped spinach leaves<br />
• 1 cup yoghurt<br />
• 1 tablespoon ground cumin<br />
• 1 tablespoon ground coriander<br />
• 1 tablespoon dried fenugreek leaves, crushed<br />
with hands<br />
• 1 large onion, sliced thinly<br />
• Salt<br />
• 2 cups vegetable oil, for frying<br />
5. Drain on a rack lined with paper towels and<br />
sprinkle with a little salt.<br />
6 Serve the pakoras with a chutney of your<br />
choice.<br />

Get prepped for<br />
Christmas<br />
Christmas is only one short<br />
month away...<br />
Although there are some ‘Grinches’ out<br />
there, that think it’s still much too early<br />
to start thinking about Christmas, we<br />
think this is a great time to get a head<br />
start so that December can be a time of<br />
celebration instead of frustration.<br />
Tis’ almost the season… so the team<br />
at <strong>Bounce</strong>, have put together several<br />
things to help you get ahead of the<br />
game…<br />
1. Start organising a Christmas list<br />
Make a list of who you need to buy presents for,<br />
and what you want to buy them. If you can’t think<br />
of ideas for people, ask them what they want now<br />
- a heads up so early in advance will allow them<br />
time to think about what they really want.<br />
2. Start saving<br />
Christmas can be expensive, so putting some<br />
money aside early can help you budget in<br />
advance. Write a budget for how much all the<br />
presents are going to cost, and if you’re going to<br />
be spending a small fortune on a lot of people,<br />
you can stagger when to get the gifts, so it<br />
doesn’t all fall on your December pay packets.<br />
3. A really deep clean<br />
Prepare your home for Christmas decorating by<br />
getting things spiffy clean. During the busyness<br />
of December you will be able to get by with just<br />
some maintenance cleaning.<br />
4. Get ahead with your Christmas cards<br />
If you’re the kind of person who sends out loads<br />
of Christmas cards, to everyone you know you’ll<br />
know this needs planning early in advance. Divide<br />
everyone up into family, friends, work colleagues.<br />
To make sure you don’t forget anyone. Buy all<br />
the cards you’ll need, and write them out, so<br />
you’ve got plenty of time to find out everyone’s<br />
addresses, if you aren’t delivering in person.<br />
5. Book time off<br />
Depending on where you work, you may have<br />
to do this even earlier, as it can be difficult to<br />
organise with everyone when they want to be off.<br />
Keep in mind you may not get exactly what you<br />
want, everyone will have to compromise.<br />
6. Set the date<br />
For any holiday parties you would like to host<br />
and try to send out invites one month prior to the<br />
date of the party.<br />
7. Stock the up<br />
With Christmas essentials… usually this includes<br />
lots of alcohol, nibbles, mince pies and lastly the<br />
Christmas TV guide.<br />

Well hello there! I’m back with my monthly column… Ok so firstly a reminder about<br />
me. I’m Zena (Zee for short) I’m 43, a mother and a grandmother.<br />
Well here we are in<br />
<strong>November</strong>! How did<br />
that even happen?<br />
It’s customary to start<br />
thinking about those<br />
nights out during<br />
December. Don’t panic,<br />
I’m here to help! Firstly,<br />
check the dress code. Is<br />
it cocktail dress, formal<br />
dress, smart casual or<br />
do your own thang?<br />
Obviously the latter is<br />
my most favourite type<br />
of dress code.<br />
Ok, cocktail is easy. That’s generally to the<br />
knee or above, you even could be daring<br />
and choose one of the amazing jumpsuits<br />
that are everywhere at the moment. I’d<br />
love to rock one in true Farah Fawcett<br />
style. Sadly, I’m not sure I can carry off<br />
gold lame, therefore I’d go for the flowing<br />
fabrics that still give the that 70’s edge.<br />
Team with fabulous<br />
heels, (flats in your bag<br />
for later obvs!) get some<br />
volume in your hair and<br />
something sparkly.<br />
Formal can be less<br />
fun to choose. Often a<br />
formal dress can hide our<br />
best features. For me, it<br />
hides my best feature,<br />
my legs and highlights<br />
my worst, my middle! So<br />
if you are on the curvy<br />
side, choose something<br />
structured that gives you<br />
the shape you’re hoping for.<br />
Fifties style dresses are brilliant<br />
for this. If you’re petite choose<br />
a style that wont overwhelm you and keep<br />
large patterns to a minimum. If you’re tall and<br />
willowy, well lucky you, almost every style will<br />
look elegant, plus you can wear flats!<br />
Everyone LOVES a Christmas jumper, right?<br />
This can of course come under smart casual.<br />

These are some of<br />
my style choices for<br />
celebrations.<br />
Whilst I love the novelty jumpers, here<br />
are a few of my favourite, maybe more<br />
wearable Christmas jumpers.<br />
Last but by no means least, “Do your<br />
own thang.” When there’s no dress<br />
code, you can just turn up and be<br />
yourself. These are the best nights,<br />
along with the nights that aren’t planned.<br />
So whatever you have in coming up, take<br />
your time and always buy it if you feel<br />
comfortable in it.<br />
I will be putting together some outfit<br />
suggestions over on my instagram feed<br />
and blog highlighting some Christmas<br />
picks, and next month ill be giving you gift<br />
buyers some gifts hints for your loved ones<br />
who love fashion.<br />

Ties<br />
I thought we’d go back to basics this month<br />
and look at an item that can really pull a sharp<br />
outfit together.<br />
People underestimate the versatility of ties and they<br />
are usually reserved for more formal events despite<br />
the fact that they are easily integrated into your<br />
everyday wardrobe.<br />
First up some good rules of thumb to follow;<br />
1. The tip of your tie should touch your belt line (but<br />
never go below your waistline).<br />
2. Keep your choice on the skinny side. It’s smarter,<br />
cooler and more up-to-date.<br />

3. When really upping your game and including a<br />
pocket square be sure to never wear a matching<br />
square & tie set. Look for one that draws out a certain<br />
colour within your tie or coordinates with its colour.<br />

4. If you choose to wear a tie bar it should<br />
always be placed between the third and<br />
fourth buttons of your shirt<br />
Next, let’s look at some of the different<br />
knots you can try…<br />
The Four-in-Hand – This is the knot most commonly<br />
used, the one they teach you in school and probably<br />
the only way some people thought you could tie a<br />
tie. It is actually on the more casual side of knots<br />
so great for use during the day and with weekend<br />
outfits. Avoid if attending a formal event. It creates<br />
quite a small knot so it works well with most collars<br />
and fabrics<br />
1. The Four-in-Hand 2. The Windsor / Half<br />
Windsor<br />
The Windsor / The Half-Windsor – A few more steps<br />
than the previous and creates a larger, more bulky<br />
knot. If done correctly, it will produce a dimple in the<br />
centre too. This is much more appropriate for formal<br />
events and goes well with spread or wide spread<br />
collars.<br />
Its younger brother the Half-Windsor is as you would<br />
expect, a version of the above that creates a smaller<br />
knot (plus is a little easier to master). Because of<br />
its smaller size it can be worn with narrower collars<br />
depending on the thickness / weight of the tie itself.<br />
3. The Pratt 4. The Elderedge<br />
The Pratt – If you find you’re struggling with the<br />
above, the Pratt (or Shelby) is an easier alternative;<br />
often misunderstood as you actually start with<br />
your tie facing backwards. Follow the same collar<br />
guidelines as with the Half-Windsor.<br />
The Eldredge – this is not for beginners or the faint<br />
of heart. Aesthetically interesting but much more<br />
complicated to actually tie with fifteen steps. It’s<br />
quite a modern addition having only been invented<br />
in 2007. It creates a large knot and definitely catches<br />
the eye. You’re going to want to play this one by your<br />
own standards but I’d advise you avoid during more<br />
traditional events unless you’re hoping to raise a few<br />
eyebrows…<br />

Google search away. You can also easily find several<br />
YouTube videos with step-by-step guides to help you<br />

THE CHRISTMAS FESTIVITIES AT THE ARC...<br />
The line of up of festive fun<br />
planned to take place at arc<br />
shopping centre this Christmas<br />
is sure to put a smile on<br />

The Christmas festivities are being kicked<br />
off on Thursday 17th <strong>November</strong> when<br />
arc shopping centre will be joining the<br />
rest of Bury St Edmunds and turning its<br />
Christmas lights on.<br />
Christmas just wouldn’t<br />
be Christmas without<br />
the amazing spectacle of<br />
Christmas Lights throughout<br />
the town, so expect lots of<br />
sparkle and cheer as the<br />
seasonal celebrations truly<br />
get underway.<br />
This year arc will be introducing a brand<br />
new red and white festive lighting<br />
scheme with all new lights and more<br />
than ever before, it’s going to look truly<br />
spectacular.<br />
The night is set to be packed full of fun<br />
for all the family with a free Santa Shy<br />
and Hook a Present for visitors to partake<br />
in, plus the popular Rodeo Reindeer is<br />
returning with the person who stays on<br />
the longest winning £50 to spend in the<br />
centre!<br />
But it doesn’t end there, Lisa Jayne’s<br />
Sweet Bus will be in the arc and giving<br />
the first 100 people a free candy cane<br />
courtesy of arc shopping centre. In<br />
addition the Jessica Barber Academy Of<br />
Dance will be adding some sparkle to<br />
evening with performances throughout<br />
the evening.<br />
The activities in Charter Square<br />
will be taking place between<br />
4pm and 8pm, with free<br />
parking from 4pm and the<br />
stores staying open late so<br />
that you can get a head start<br />
on your Christmas shopping.<br />
The light switch-on is just the<br />
start of arc shopping centre’s Christmas<br />
line up, there is lots more in store for arc<br />

create her Save the Dates, Invitations and some of her venue<br />
stationery for her big day back in May.<br />
A theme of Stunning fuchsia pink, butterflies, diamantés, florals<br />
and silver glitter was just stunning against the back drop of the<br />
contemporary touches at Tuddenham Mill.<br />
Michelle chose pretty die cut pink butterflies, fuchsia satin<br />
ribbon and lots of bling for her post card style save the dates,<br />
deluxe invitations with matching RSVP cards, canvas table plan,<br />
table numbers, Lollipop reserve signs, bespoke post-box and<br />
favour tags.<br />
Delicate butterfly wineglass place settings and canvas table<br />
numbers on wooden easels looked pretty against the black<br />
furniture and crisp white linen. The bespoke bling post-box<br />
worked perfectly next to their wooden heart drop box guest<br />
book and there were lovely fuchsia pink touches added<br />
throughout the venue.<br />

Rachel Ducker caught up with lead<br />
singer, Keith Murray about their<br />
exciting new tour stopping by us in<br />
Cambridge and Norwich.<br />
R: You started the band whilst at college<br />
in California, with your fellow band<br />
member Chris Cain, how did that<br />
come about?<br />
It sort of started when we graduated from<br />
university; we had been friends in college,<br />
but never played music together at all.<br />
After we graduated from university we<br />
moved to Northern California and were<br />
confronted with the mundane tasks of real<br />
life, we all ended up with dull day jobs.<br />
We were bored and no longer had<br />
the freedom and playfulness of being<br />
irresponsible college students. We lived in<br />
a really cool house in Berkeley, California<br />
with a third friend of ours and we all<br />
decided to start a band in our basement,<br />
just to have something to do after work<br />
and it ultimately morphed into ‘We Are<br />
Scientists,’ so it was mainly done as a<br />
boredom relief!<br />
R: When did you get into music and how?<br />
I’m not really sure, my older sister was<br />
always very into music, and she got me<br />
into it.<br />
The first bands I was really into, courtesy<br />
of my sister, were Bon Jovi and Poison.<br />
Fortunately grunge destroyed that pretty<br />
early on for me and I graduated to Nirvana<br />
pretty quickly. My sister, and I assume<br />
that’s normally the case for people with<br />
siblings, forced me into liking the music<br />
she liked pretty early on.<br />
R: Yes, funnily enough my younger<br />
brother did that to me, I’d never heard of<br />
metal and grunge until he advised me to<br />
check it out.<br />
Your younger brother did that?<br />
R: Well he’s now a musician so I am sure<br />
he had a better ear than I did!<br />
Yeah right! Great stuff.<br />
R: Who were your music influences<br />
growing up?<br />
I think the band I was most obsessed with<br />
in High School was Marilyn Manson, as they<br />
were from my hometown, so I used to see<br />
them all the time before they got signed,<br />
you know, when they were just a local<br />
band playing tiny, terrible clubs in South<br />
Florida. I would go to every single Marilyn<br />
Manson show, obsessively, so they were<br />
definitely my favourite band in high school.<br />
I’m not sure they actually come through in<br />
our music at all, but I always hold a little<br />
love, my hidden secret passion for Marilyn<br />
Manson still remains. I think through them<br />
I then learned about The Pixies and then<br />
Nirvana came through via The Pixies.<br />

R: Our local hometown hero happens to<br />
be Ed Sheeran!<br />
Well that’s great, at least bands come<br />
through to Cambridge, I mean, when I was<br />
growing up bands never stopped by in<br />
South Florida, it’s a real pain to get down<br />
there. In our entire career I think We Are<br />
Scientists have only played there three<br />
times. I’m always trying to get us down<br />
there because my whole family is there so<br />
that’s even with me constantly annoying<br />
our booking agent! You’re lucky.<br />
R: I think we are, but the UK is also a lot<br />
smaller, so we have that on our side to!<br />
Yeah! It’s not too bad a drive from London<br />
to Cambridge for us, when we visit.<br />
R: Most stars these days are under so<br />
much pressure to act in a certain way.<br />
Do you think the definition of a celebrity<br />
is changing?<br />
There’s a level of media training that all<br />
celebrity bands need to have. It’s just funny<br />
that social media now accelerates that<br />
process and every band in the world needs<br />
to be well media trained and savvy about<br />
how to manipulate their own media.<br />
So I don’t think the definition of a<br />
celebrity has changed, but I think that the<br />
application of it, and how wide spread<br />
celebrities behaviour needs to be has, just<br />
to get your foot in the door as a new band,<br />
you kind of need to be ahead from the<br />
get go.<br />
I also think that the level of media training<br />
is innate for kids now, I think there are<br />
probably sixteen year olds in the world<br />
who are better media trained than I am,<br />
and I’ve done thousands of interviews by<br />
now. Kids have been so indoctrinated so<br />
early on for personal presentation, they<br />
are better at it than even experienced quo<br />
pros, it probably means that entertainers<br />
in the future are going to be much more<br />
entertaining than even we are, and I think<br />
we’re pretty entertaining personalities.<br />
R: Speaking of entertainment, tell us<br />
about your series of TV shorts - Steve<br />
Wants His Money, made for MTV UK in<br />
2009?<br />
I think it just began, as every time we were<br />
invited to take part in pre-filmed variety<br />
shows, as a band, we always ended up<br />
wanting to write our own sketches. I love<br />
that British music shows have sketch<br />
sessions; the guests play along and banter<br />
with the host in a sketch situation, so I<br />
think we were very active about wanting<br />
to write our own material because we’ve<br />
always had a voice as a band.<br />
So we done that a couple of times with<br />
some MTV shows and with Nick Grimshaw<br />
and they asked if we wanted to make this<br />
little short series to play in-between TV<br />
shows to replace commercials, they were<br />
seven minutes long. I am not sure how<br />
they thought of that, but they approached<br />
us knowing we would be interested in<br />
providing that.<br />
R: Speaking of MTV, I hear you always like<br />
to come up with the concepts for your<br />
music videos, what is your favourite one<br />
to date?<br />
Hmmm, I always been a pretty big fan<br />
of ‘It’s A Hit’ video, mainly because I feel<br />
it was pretty brave to end the video by<br />
splattering a child’s face with my blood. I<br />
am proud of all of the videos that ended<br />
with me dying, which for some reason we<br />

have a huge number of videos of me being<br />
terribly hurt or dying altogether, we have<br />
six or seven videos where I perish at the<br />
end.<br />
R: Well I am glad you are still here!<br />
Ah, thank you, as am I!<br />
R: I am a cat lover, I would love to know<br />
about the cat called Lewis used for your<br />
artwork?<br />
It started as we thought it would be a<br />
weird thing for a band to embrace. We<br />
took the photos that became the cover for<br />
the first album where we are holding the<br />
cats.<br />
R: That’s my favourite one!<br />
Nice, thanks, we didn’t intend it to be the<br />
album cover, it was supposed to be for our<br />
press shots and then the label told us that<br />
we needed our actual faces in our press<br />
shots, so we made it the album cover, and<br />
from there I think we decided it was really<br />
funny to keep on using cats as a rock<br />
band mascot, it doesn’t make any sense at<br />
all. Our current one has a nice chain and<br />
smokes a cigarette!<br />
R: Out of all of your songs, do you have<br />
a favourite that you enjoy listening to or<br />
performing?<br />
Its always changing, I can’t even really<br />
listen to our first album of songs any more<br />
as I have heard them so many times, I think<br />
right now ‘Buckle’ is my favourite We Are<br />
Scientist song, I always have a very big soft<br />
spot for ‘Afterhours’ so they are maybe my<br />
two favourite at this time.<br />
R: Your autumn tour starts in October and<br />
stops by us Cambridge and Norwich, what<br />
can we expect?<br />
We are playing so many dates on this tour,<br />
the venues are more intimate, so what will<br />
be fun about these shows is that I sense<br />
they are going to be quite energetic and<br />
probably pretty interactive.<br />
I mean, we like to talk a lot in-between our<br />
songs and with a venue that only holds<br />
a certain amount of people, its actually<br />
pretty easy to communicate with the<br />
audience. They will be engaging!<br />
R: Do you enjoy being on tour?<br />
It is pretty boring to be honest, but the<br />
worst part isn’t the actual travelling, its<br />
filling time between the shows. There’s<br />
not that much you can do. You never have<br />
time to do anything substantial. We are<br />
big cocktail enthusiasts, so there’s always<br />
a threat we will end up engaging our<br />
love for cocktails! We are pretty good at<br />
entertaining each other so it’s never too<br />
bad.<br />
R: What does the rest of the year hold in<br />
store for you once your tour is complete?<br />
We’re pretty busy with shows for the rest<br />
of the autumn, we have another US tour<br />
we have to do, then we will be back in the<br />
UK for a short time in December. Right<br />
now, the New Year is totally empty so we<br />
hope to start working on the next record<br />
very shortly!<br />

A guide to<br />
Sweet Wine<br />
BY ‘WINE BUFF’ FRED FISHER<br />
By sweet wines, we are referring to wines that have<br />
residual sugar in them...<br />
FOLLOW THE 5S’S<br />
SEE, SWIRL, SMELL, SIP & SPIT OR SWALLOW<br />
Although you might say that the best way<br />
to taste a wine is to ‘just drink some of it’<br />
there is a much better and rewarding way<br />
in taking a more methodical approach.<br />
PRODUCTION<br />
The objective is to make a wine<br />
that contains alcohol but also<br />
sugar. Alcohol comes from the<br />
combination of yeast and sugar, so<br />
there needs to be an abundance of<br />
sugar to produce enough alcohol,<br />
but also leaving an amount of sugar<br />
in the wine<br />
There are many ways of achieving<br />
this:-<br />
1. Grapes that contain sugar with<br />
sufficient to have some left over<br />
after fermentation<br />
2. Adding sugar.<br />

a). Before fermentation as sugar or honey<br />
(Chaptalisation).<br />
b). After fermentation as unfermented juice<br />
(Sussreserve).<br />
3. Add alcohol, typically brandy before all sugar is<br />
fermented (fortified)<br />
4. Remove water to concentrate the<br />
sugar (Drying, Freezing or Noble<br />
Rot).<br />
SUGAR LEVELS<br />
Sugar in wine has to be<br />
produced in the vineyard,<br />
some grapes have more natural<br />
sugar than others and that is why<br />
many sweet wines have the Muscat<br />
grape in use, which is high in sugar. The<br />
environment plays an important part as more<br />
ripening increases the sugar content. By pruning<br />
the vine or leaving the grapes on the vine until<br />
they shrink like raisins concentrates the sugar.<br />
NATURAL SWEET WINES<br />
Uses grapes that are grown and picked, at or past<br />
being ripe, the winemaker can then choose how<br />
much sugar is left in the juice and be able to adjust<br />
sweetness and alcohol levels.<br />
ADDING SUGAR<br />
Chaptalisation - This was used in Roman times<br />
when they added honey to sweeten a wine. Today<br />
sugar is added to increase the alcohol levels<br />
where the grapes were not ripe enough to provide<br />
enough sugar. Some countries and wine areas ban<br />
this practice.<br />
Sussreserve - In Germany unfermented sweet<br />
grape juice is added to sweeten a final wine that<br />
is too dry. It is also practiced in New Zealand for<br />
some German style wines.<br />
FORTIFIED WINES<br />
Sherry when sweet, is a dessert wine made by<br />
blending very sweet wine, made from the<br />
Pedro Ximinez grape, to dry sherry.<br />
Vin Du Naturel. Made by adding<br />
brandy to sweet grape juice.<br />
Port and similar wines. Produced by<br />
stopping the fermentation process of<br />
a wine by adding grape spirit at 95%<br />
proof, at a time when a lot of sugar<br />
has still to be fermented. This then<br />
stays in the wine to make it sweet.<br />
OTHER SWEET WINES<br />
Raisin wine - Grapes are air dried, usually on<br />
straw mats. They shrivel up like raisins and thus<br />
concentrate the sugar. This process is used in<br />
many countries.<br />
Ice Wine - When temperatures fall to about -7C or<br />
19F grapes for icewine can be picked. The water<br />
in the grapes freezes out but sugars and solids<br />
remain in the juice.<br />
Noble Rot - These are made from grapes that have<br />
been affected by Botrytis Cinerea (Noble Rot),<br />
which is a fungus that pierces the skin of the grape<br />
and allows water to escape. This then concentrates<br />
the sugar content but looks uninviting on the vine.<br />
Food and Sweet Wines - Ideal with sweet fruit<br />
and many desserts. Some are red but mostly white<br />
and a golden colour. Some are also used to make a<br />
dessert. Oddly enough a strong dessert wine such<br />
as Sauterne or Tokaji Aszu can be matched with<br />
a blue cheese such as Roquefort. The salt in the<br />
cheese and the sweetness of the wine make good<br />
partners.<br />
Conclusions...<br />
Sweet wines are best served as a last course in a meal but of course whenever you prefer. They<br />
benefit from a little cooling and to see how they work with food, try a sip of the wine first and then a<br />
sample of food and then again a sip of the wine. You will notice the difference. Two of the top dessert<br />
wines are Chateau D’Yquem from Sauterne in Bordeaux and Tokaji Aszu 5 Puttoyos from Hungary.<br />

to take everything in including the<br />
uneven walls and exposed Tudor oak<br />

Friday evening shortly commenced and<br />
the atmosphere from the bar and lounge<br />
areas started to come alive. You could<br />
tell the weekend was now in full swing!<br />
Although I have enjoyed many a coffee,<br />
(or a cheeky glass of red wine) in The<br />
Crown, I had never experienced a stay,<br />

so I was very excited to see the room.<br />
We checked in, and were shown up to<br />
room 8, by the lovely Will at reception.<br />
I was immediately taken back by the<br />
grand four-poster bed, elegant furniture,<br />
and not forgetting our very own Illy<br />
coffee machine!<br />
The best part about this room was that<br />
it felt like we’d stepped back in time.<br />

contemporary in appearance,<br />
the squeaky floorboards gave the<br />
game away; we were in fact still<br />
immersed in past history.”<br />
You could just imagine what the room<br />
was like in times gone by. After a quick<br />
freshen up we headed down to the<br />
lounge to enjoy a pre-dinner drink. I<br />
couldn’t resist a sneaky look at the<br />
dinner menu.<br />
It was full of classic choices to suit most<br />
palates, as well as homemade pizzas<br />
and bar classics.<br />
After our drink we headed through to<br />
the restaurant, dark blue and green walls<br />
were highlighted tastefully with parrots<br />
and birds under low lit lighting.<br />
With my order in mind I beckoned my<br />
partner to hurry up with his decision!<br />

My partner opted for the more elaborate<br />
Rabbit Rillette – Pulled Rabbit &<br />
Pistachio Rille with a Pistachio Puree,<br />
succulent Peppered Peach and Salad<br />
Garnish.<br />
We were both really impressed with our<br />
choices – although I still think I chose the<br />
better dish!<br />
Onto the main event, as a white meat<br />
lover, I decided on the Chicken Wrapped<br />
in Parma Ham, served with Mushroom<br />
Duxelles, Peas and Slow Cooked<br />
Sweet leeks. The Chicken was cooked<br />
superbly and I have to say my favourite<br />
accompaniment on the dish were<br />
the Peas. They really complimented<br />
the other flavours, which was slightly<br />
unexpected. Power to the peas!<br />
My partner selected the Shin of Beef<br />
with Roasted Carrot Puree, Silky Mashed<br />
Potato and Greens. It didn’t last very<br />
long and after having a little nibble<br />
myself; I have to say the dish was very<br />
yummy indeed.<br />
After a short interval, although the<br />
portion sizes were very generous we<br />
couldn’t pass on a dessert.<br />
True to form, my partner, the chocoholic<br />
in our household, decided upon the<br />
Chocolate Brownie, with Ice cream,<br />

whilst I chose Cherry Bakewell, a firm<br />
favourite of mine.<br />
The food was absolutely delicious and<br />
well presented. It was a truly enjoyable<br />
meal in a very relaxed, yet buzzing<br />
setting.<br />
What we loved most about The Crown<br />
was the intimate setting and friendly<br />
service; we felt that the staff really went<br />
out of their way to make our experience<br />
as special as possible.<br />
To round up the evening, after our meal<br />
we scurried upstairs to our room, finding<br />
the time to make use of the coffee<br />
machine and enjoy the huge plasma TV.<br />
After some Friday night shows (it simply<br />
has to be done) it was then time to dive<br />
into the four poster bed!<br />
I had a really good nights sleep, but was<br />
surprised to wake up to the sound of the<br />
market, which takes place on a Tuesday<br />
and Saturday.<br />
This truly set the mood of staying in a<br />
beautiful and traditional market town!<br />
We would highly recommend a dine<br />
and stay at The Crown, we’re definitely<br />
going back with friends at Christmas!<br />

Last month I had the pleasure of attending the annual Aldeburgh<br />
Food & Drink festival <strong>2016</strong>. This festival showcases the very best of<br />
Suffolk produce, and what fine produce there was on offer...<br />

The event took place in the beautiful setting<br />
of Snape Maltings, next to the River Alde and<br />
close to the Suffolk coast, where reed-covered<br />
marshlands stretch into the distance towards<br />
Aldeburgh. This year, I had my partners in crime<br />
with me, Lois and Becca, whilst Sam helped out<br />
with the photography!<br />
As we arrived, we didn’t know where to start, so<br />
without thinking, we all scattered of like ants,<br />
only to realise we had in fact we had all split up<br />
to investigate the scrumptious smells that were<br />
luring us in. A few of my particular favourites<br />
included Calvors, who specialise in larger and<br />
ale… this was one of my first stops… well, it<br />
was a hot day and I had to make sure I didn’t<br />
get dehydrated!<br />
Shortly after this pit stop, came my first purchase<br />
of the day, which was at ‘Bakers’, who specialise<br />
in baking for dogs. For those of you who know<br />
me you will know that our dog Archie, (column<br />
found on page 122) is one spoilt puppy, so<br />
naturally the first purchase was for him!<br />
As we ventured and sampled our way through<br />
delicious smells and brightly coloured displays,<br />
we also took time to visit the two cookery<br />
demonstration stages hosting visiting and<br />
local chefs.<br />
The marque this year was home to Suffolk’s finest<br />
producers. In here we loved watching the crowds<br />
sampling away, some of the displays looked like<br />
pieces of artwork. With over 90 food and drink<br />
producers from Suffolk, many from just a few<br />
miles away, all selling their produce including<br />
raw milk, organic vegetables, sourdough bread,<br />
award winning beer and spirits from sponsors<br />
Adnams, cider from Aspall and delicious<br />
street food. It was a wonderful event, more<br />

After being shown to our elegantly dressed<br />
table we were presented with a vast menu of<br />
mouth-watering dishes. Indecisive, we asked<br />
for Mr Shahid to recommend a few dishes to<br />
us. Without hesitation he pointed us in the<br />
right direction.<br />
Traditionally starting the meal we ordered an<br />
array of poppadoms with delicious chutneys,<br />
followed by a scrumptious selection of Onion<br />
Bhajis, Prawn Purees and Kebabs.<br />
The main course consisted of a selection of<br />
colourful, delicately spiced dishes, including<br />
Salmon Tikka, Chicken Pordanishi, Haryali<br />
Massala to name but a few!<br />
Mr Shahid visited India last year to take part in<br />
the Taste of Britain Awards, since then his new<br />
dishes have also been added to the extensive<br />
menu, as well as a new Christmas tasting<br />
menu, in time for the festive season.<br />
We spoke to a few of the other customers at<br />
VC and here is what they had to say.<br />

• In a hot pan, melt the butter and pour and the<br />
sear the apples first including the wedges for 2<br />
minutes, add the cubes of black pudding into<br />
the pan also and carry on cooking for another 2<br />
minutes.<br />
• Pour the Cognac into the pan and flambé then<br />
(be aware of your eyebrows!) Season to taste and<br />
arrange in small shot glasses.<br />
• Garnish with the apples wedges and the fried<br />
slice of black pudding. Serve hot and enjoy!<br />

Now in its 5th year, the Beccles<br />
Beer Festival has become one of<br />
the most popular events in<br />

isn’t just for the boys, and a team of ladies is again set to<br />

a fully licensed bar selling wines, spirits and soft drinks for<br />
the non-ale drinkers. There will also be live music on Friday<br />
evening from local bands Owl & Wolves and Old School<br />
Blues, and on Saturday evening the return of the hugely<br />
popular Murphys Lore.<br />
So make this a weekend to get over to Beccles – and why<br />

How to try the pose:<br />
1. Kneel on the floor with your knees hip width<br />

firm but don’t harden your buttocks. Press your<br />
shins and the tops of your feet firmly into floor.<br />
2.Rest your hands on the back of your pelvis,<br />
bases of the palms on the tops of the buttocks,<br />
fingers pointing down. Use your hands to spread<br />
the back pelvis and lengthen it down through<br />
your tail bone. Then lightly firm the tail forward,<br />
toward the pubis. Inhale and lift your heart by<br />
pressing the shoulder blades against your<br />
back ribs.<br />
3. Now lean back against the firmness of the<br />
tail bone and shoulder blades. Then press your<br />
thighs back to perpendicular, turn your torso<br />
back to neutral, and touch the second hand to its<br />
foot. If you’re not able to touch your feet without<br />
compressing your lower back, turn your toes<br />
under and elevate your heels.<br />
4. Release the front ribs and lift the front of the<br />
pelvis up, toward the ribs. Then lift the lower<br />
back ribs away from the pelvis to keep the lower<br />
spine as long as possible. Press your palms firmly<br />
against your soles (or heels), with the bases of<br />
the palms on the heels and the fingers pointing<br />
toward the toes.<br />
5. Stay in this pose anywhere from 30 seconds to<br />
a minute. To exit, bring your hands onto the front<br />
of your pelvis, at the hip points. Inhale and lift<br />
the head and torso up by pushing the hip points<br />
down, toward the floor. If your head is back, lead<br />
with your heart to come up, not by jutting the<br />
chin toward the ceiling and leading with your<br />
brain. Rest in Child’s Pose for a few breaths.<br />

It’s a good idea to have some pre-planned<br />
excuses to escape from proceedings if they get<br />

Provided that at least 50% of the flats in the building<br />
who are qualifying tenants participate and the building<br />
qualifies, the landlord is unable to refuse to sell the<br />
freehold.<br />
A number of leaseholders are growing increasingly<br />
dissatisfied with their management company for either<br />
excessively charging or taking too long to address their<br />
problems. In many cases the benefits of purchasing the<br />
freehold strongly outweigh the initial cost and additional<br />
responsibility for leaseholders. It gives the leaseholders<br />
control of their building – they can decide what work<br />
needs to be done and who is best value for money to<br />
carry it out. In addition to this in many cases it will increase<br />
the value and saleability of their property.<br />

Bury St. Edmunds has seen a steady rise in the<br />
price of leasehold flats in the last 12 months.<br />
Property prices increased 9.26% in the ten months<br />
between September 2015 and July <strong>2016</strong>, and the Brexit<br />
result, although a surprise to many, has shown little sign of<br />
slowing the growth of the leasehold property market in<br />
Suffolk. This has led to a number of leaseholders<br />
considering extending their lease or purchasing the<br />
freehold interest jointly with other leaseholders within their<br />
building.<br />
A lease is a deteriorating asset - with every year that<br />
passes the value is reduced. By extending the lease or<br />
purchasing the freehold a leaseholder is protecting their<br />
biggest asset from being devalued over time.<br />
Some leaseholders have the right, subject to<br />
qualification, to join together and buy the freehold and<br />
any head-lease of their building. This right is granted by<br />
law under the Leasehold Reform and Urban Development<br />
Act 1993 (as amended) and this Act outlines the<br />
complicated process and time restrictions governing<br />
“collective enfranchisement”.<br />
In order to qualify for collective enfranchisement the<br />
property must contain at least two flats and at least two<br />
thirds of the flats must be owned by qualifying tenants (a<br />
leaseholder who has a lease that was initially granted for<br />
a term of more than 21 years).<br />

The person named in the initial notice who will acquire<br />
the property from the landlord is known as the “nominee<br />
purchaser”. The most common practice is to set up a<br />
company that is registered at Companies House which is<br />
wholly owned by the participating tenants. The nominee<br />
purchaser will be responsible for the management of the<br />
building upon completion.<br />
Correct notices need to be served at the right time and<br />
information provided by the leaseholders to the freeholder<br />
within strict deadlines. Once the initial notice has been<br />
served the procedure is running and failure to respond<br />
within the deadline will risk the application being rejected<br />
as invalid. It is very important to ensure that if the nominee<br />
purchaser is to be a company, the company has been set<br />
up prior to submitting the initial notice.<br />
The role of the solicitor includes the preparation of<br />
information for the action, setting up a company to be the<br />
nominee purchaser (if the chosen method), serving the<br />
initial notice, responding to the landlord’s request for<br />
substantiation of claim, providing evidence of title and<br />
amending the terms of the leases after enfranchisement.<br />

Christmas shopping, better get going with it.<br />
Beauty brands have already started bringing their<br />
Christmas Box Sets and I know there are some<br />
brilliant ones out there! This month, I would like to<br />
give some advice skincare.<br />
A lot of people moisturize, some use it at night<br />
and some do not. The night moisturizers are<br />
formulated differently, they are often thicker than<br />
your day ones and often do not have an SPF<br />
in them. They also help the process of the skin<br />
replanting, as our skin repairs and re-energizes<br />
overnight.<br />
Something like Clarins Multi Active Nuit is perfect<br />
for the first signs of ageing. A sleeping mask<br />
is quite a luxurious product that is to be when<br />
needed, for example, if you’ve had a late night, it<br />
all shows in your skin. There are plenty out there<br />

Lastly, but certainly not least, when I’ve had<br />

formulated to match the original eyebrow colour.<br />
Even if you already have brows the colour will<br />
blend nicely into them.<br />
After the initial treatment the brows will appear<br />
darker but they fade significantly over a two week<br />
period, this is why it is important that you have<br />
a top-up approximately 4-6weeks later once the<br />
brows have healed.<br />
After the 4-6week top-up an annual top-up is<br />
recommended to retain the shape and colour.<br />
Is it painful?<br />
No, there is some discomfort but it would not<br />
be regarded as pain. An anaesthetic cream is<br />
applied to numb the area before treatment. You<br />
will be able to feel small little scratches.<br />
What can I expect on the day?<br />
I will analyse your brows and make<br />
recommendations based on the shape, colour<br />
and design that will be best suited to yourself.<br />
Once the brow design has been mapped out<br />
and you are happy with the shape then<br />
the procedure will commence. You<br />
make experience some redness after the<br />
treatment but this will fade after a couple<br />
of hours.<br />
Health and Safety?<br />
Technicians are trained to the highest level<br />
in infection control; strict patch tests are<br />
performed 48 hours prior to treatment.<br />
Single use needles are used and disposed<br />
of by adhering to strict guidelines.<br />

drawers don’t they?<br />
Well a first step to your new less cluttered home<br />
could be spending 5 minutes on these. Do you<br />
really need that questionable magnify glass you got<br />
in your Christmas cracker last year?…<br />
Perhaps it would be helpful to have some guideline<br />
questions when it comes to keeping or chucking an<br />

Leaves are falling rapidly, and<br />
wind and rain are on the increase.<br />
Tender plants (such as bananas)<br />
will need protecting from frost,<br />
gales and freezing rains.<br />
Tidy up borders<br />
Cut down herbaceous stems and clear the tatty<br />
remains of annuals, but do leave a little cover<br />
of the perennials that fade relatively elegantly<br />
(sedum, astilbes and grasses for example). Continue<br />
collecting and storing seed from perennials still<br />
forming seed heads. Bring inside any tender<br />
perennials, such as Fuchsia, Gazania, Lantana and<br />
Abutilon, before frosts cause damage.<br />
The Greenhouse<br />
Clear out the greenhouse, wash pots and trays, clean,<br />
mend and oil your tools and throw away anything<br />
that is beyond hope or reasonable repair!<br />
Drain and lag...<br />
Save yourself untold irritation and expense by<br />
draining and lagging standpipes, outdoor taps,<br />
irrigation lines and water pumps in advance of<br />

30TH ANNIVERSARY BLACK BELT EXTRAVAGANZA...<br />
A martial art club based at Dairy<br />
Hill, Halesworth and Waterlane<br />
Sports Centre, Lowestoft, has<br />
recently celebrated its 30th<br />
anniversary, teaching the Korean<br />
Martial Art of Kuk Sool Won.<br />
In recognition of this milestone a Black<br />
Belt extravaganza was held on Saturday<br />
24th September. The exhibition included<br />
over seventy practicing black belts from<br />
both the Lowestoft and Halesworth<br />
Clubs. The evening was also dedicated<br />
to raising funds for two charities. Ollie’s<br />
Heroes, a local organisation set up to<br />
help with living and travelling expenses<br />
for families with children who need long<br />
term care in hospital. The second charity,<br />
MyAware supports a condition called<br />
Myasthenia Gravis which is a chronic<br />
autoimmune / neuromuscular disease.<br />
The Black Belt performance was also<br />
dedicated to one of the clubs most valued<br />
and respected students Terry Twist, who<br />
sadly passed away recently after a short<br />
illness. Terry had practiced Kuk Sool<br />
Won for more than twenty years at the<br />
Halesworth club.<br />
Over the past 30 years, Senior Master<br />
Instructors, Martin and Alison Ducker<br />
have taught this unique martial art to<br />
more than 2,000 students in the Waveney<br />
region. Today, existing membership for<br />
both clubs totals 200 students, with<br />
ages ranging from 4 years to 80 years<br />
old. Many of their former students have<br />
gone on to open their own martial art<br />
schools, not only here in the UK, but also<br />
overseas in New Zealand and Australia.<br />
Lowestoft Town Mayor, Mr. Nick Webb,<br />
who attended the event, paid special<br />
tribute to the commitment and dedication<br />
of everyone involved in the extravaganza.<br />
He also sincerely wished all Kuk Sool Won<br />

Fans were growing simply bored of watching<br />
their beloved Ipswich – a fact that a 2-0 win over<br />
Burton will not mask.<br />
MUST-WIN MATCHES AGAINST THE<br />

IPSWICH SIT AT PRESENT...<br />
It comes to something when<br />
fans look at a home match<br />
against Burton Albion as a<br />
‘must-win’.<br />
No disrespect<br />
Nigel Clough’s men who<br />
are making a decent stab<br />
at their debut season in<br />
the Championship.<br />
Especially after large<br />
parts of their midweek<br />
trip to Suffolk when they<br />
deserved more than their<br />
2-0 defeat at the hands<br />
of Ipswich Town.<br />
It was a landmark<br />
evening for Mick<br />
McCarthy – but it had<br />
to be.<br />
Ipswich scored their first goals in over<br />
500 minutes – with Freddie Sears ending<br />
his own 38-game barren run following<br />
Luke Chambers opening goal, the skipper<br />
almost as maligned as his manager in<br />
recent weeks. Prior to that win, the knives<br />
were being sharpened.<br />
This wasn’t just the ‘keyboard warriors’ of<br />
social media and, for once, this wasn’t just<br />
about results on the pitch.<br />

Despite the grim stats, I was always confident<br />
Town would be beat their newly-promoted<br />
opponents.<br />
Just as I was equally confident that their next<br />
match would yield no points whatsoever, and<br />
so it proved as Newcastle comprehensively won<br />
3-0.<br />
Men against boys, as more than 50,000 saw<br />
the Rafa revolution continue to gather pace.<br />
Although McCarthy might disagree, it might<br />
be a little too early to claim that the Toon are<br />
watching the champions-elect.<br />
But Newcastle are certainly the<br />
ones to beat.<br />
So after a horrendous run was<br />
ended by match when Ipswich<br />
should have won, and did, and<br />
then lost a game they were<br />
always expected to, where does<br />
that leave Town?<br />
I fear the doom-mongers<br />
have slipped slightly into the<br />
background. A couple of bad<br />
results and they will return – and<br />
they often do in greater numbers.<br />
The future remains uncertain. Next up, as I<br />
write this, is a home match against bottom club<br />
Rotherham, with one win in their first 14 games.<br />

With a number of articles on obstacle<br />
course racing, it’s no surprise that<br />
Action Man is a fan of OCR, it’s also<br />
common knowledge that I’m not an<br />
avid runner.<br />
In an ideal world we’d have a short course<br />
packed full of obstacles... well action fans...<br />
you’re in luck, such a world exists and it’s<br />
right on our doorstep!<br />
The Playground, just outside of Bury St Edmunds, is a<br />
1km course with 25 obstacles, all of which you’ll find<br />
at your mainstream OCR races including favourites<br />
such as the 10ft wall, cargo net A-frame, incline/<br />
decline monkey bars and quarter pipe ramp.<br />
For just £20 you can book a ‘pay & play’ session and<br />
have as many laps of the course wish.<br />
Perhaps your curious on how best to tackle<br />
an obstacle or improve your technique?<br />
Well, The Playground ‘playmakers’ are on hand<br />
to provide expert guidance and to aid your swift<br />
transition from OCR novice to OCR pro.<br />

There’s a place up for grabs on the coveted<br />
Playground leaderboard for the fastest lap.<br />
Obstacle course racing is great for fitness with a full<br />
body muscular and cardiovascular workout, for those<br />
of you interested in a more regular, obstacle inspired,<br />
fitness regime then check out The Playground<br />
Bootcamp an hour long session every Tuesday and<br />
Thursday from 6:30pm costs £8 per session or<br />
£50 for a whole month. By the end of it there’ll be<br />
no doubt that you’ve had one hell of a workout, I<br />
certainly can vouch for that!<br />
The facility also hold regular events and this month<br />
we have the ‘Battle of the Knights’ in aid of the St<br />
Nicolas’ Hospice a 4km run is followed by a lap<br />
of The Playground course, finish in the top 10% of<br />
competitors to earn the title of Knight and free entry<br />
into next year’s event to defend your title for more<br />

<strong>November</strong> is kicked off by The Irving Stage<br />
Company who return to the theatre between<br />

Parton’s 9 to 5 The Musical. Set in the late 1970s,<br />
this hilarious story of friendship and revenge in the<br />
Rolodex era is outrageous, thought provoking and<br />
even a little romantic.<br />
On Sunday 6th <strong>November</strong> we welcome TheatreTrain<br />
Bury St Edmunds with Suessical Junior. It’s a<br />
fantastical, magical, musical extravaganza, bringing<br />
to life all of your favourite Dr. Seuss characters,<br />
including Horton the Elephant, The Cat in the Hat,<br />
Gertrude McFuzz and Lazy Mayzie.<br />
Our Lunchtime Concert Series continues on Monday<br />
7th <strong>November</strong> with pianist John Gough. John is<br />
a highly experienced concerto soloist and has<br />
appeared with the Royal Liverpool Philharmonic,<br />

The final night of Wild Beast’s UK tour<br />
to support their latest release ‘Boy<br />
King’ ended at the Cambridge Junction<br />
this month.<br />
Not only did they provide a remarkable and<br />
regimented performance that’s clearly roadtested,<br />
but they brought along an incredibly<br />
riveting support act.<br />
Support tonight comes from Jamie Lee’s<br />
ever-elegant, always enthralling outfit, Money.<br />
After a spattering of live performances<br />
throughout the year since the January release<br />
of their second record ‘Suicide Songs’, they<br />
proved on the final night of this tour why they<br />
should be intrinsically regarded as one of<br />
today’s most ingenious songwriting troupes.<br />
With his dry wit of a different order and a<br />
confidence so naturally born, Lee steers a<br />
captivated audience through a selection of<br />
recent songs. Mesmerising as always, with an<br />
idiosyncratic British patois.<br />
One thing is certain of Wild Beasts. The new<br />
material is powerful and compelling live,<br />
much more so than on record. Opening with<br />
‘Big Cat’, it’s still as sleazy and sexy as ever.<br />
The stage show itself is pastellised, neon, like<br />
a dystopian Vice City, with it’s bold lighting<br />
and it’s games console visual rhetoric.<br />
The Beast’s latest reincarnation works for<br />
this stage in their career. Surprisingly, this<br />
new direction lends itself well to the old<br />
sound, despite hefty comparisons. Favourites<br />
like ‘We’ve Still Got The Taste Dancing On<br />
Our Tongues’ is tastefully reworked with<br />
harmonising sawtooth synth parts, which<br />
compliment the new angle.<br />
What’s apparent from this performance is how<br />
Wild Beasts aren’t afraid of moving away from<br />
the last record and creating a new direction.<br />
Always evolving, always fresh, and still never<br />
sounding like anyone else. What makes this<br />
bold career ethic even more commendable<br />
is how they weave their former set into their<br />
new persona, by remodelling the songs of old.<br />
It’s great to see how ‘Wanderlust’ can sit so<br />
uniformly next to new track ‘Alpha Female’.<br />
Despite initially not caring for ‘Boy King’, it’s<br />
always wonderful to be proved wrong when<br />
seeing an established and respected band<br />
perform new material live. It’s different when<br />
seeing songs in a new light... in this particular<br />
instance, the light is forensically bright, and<br />
neon. Despite a shaky performance of ‘All The<br />
King’s Men’, this set put Wild Beasts back to<br />
the forefront and manifested their position<br />
as one of Britain’s most distinctive and<br />
accomplished live acts.<br />
