Lamb &<br />
Apricot Soup<br />
Kurdish apricot soup, or Qysi, is often served at holiday meals. It’s<br />
sweet, tangy, and very well balanced.<br />
Serves 6<br />
Ingredients<br />
=1/2 kilogram Dried apricots<br />
=1 tbsp. Vegetable ghee<br />
= 1/2 cup Raisins<br />
=1/4 kilogram Lamb, bone-in<br />
4Braise the lamb in about 2 inches of water for 1 1/2 hours.<br />
4Put apricots in a saucepan with about three inches of water. Reduce<br />
until apricots are soft.<br />
4Add ghee, raisins, and lamb along with the lamb stock that was left.<br />
Cover and simmer for a half hour.<br />
4Taste should be a little sweet; add a little sugar if it’s too sour.<br />
