DIETITIAN’S VIEW The Benefits of by Nancy M. Ouhib, MBA, RD/N, LD/N Probiotics. What the heck are those, some would say? Others include probiotics in their diet because someone said they are good for you. Let’s try to take the guesswork out of probiotics and clarify why we should consume them. What are probiotics? Probiotics are live bacteria and yeasts that are believed to be good for your health when consumed by both humans and animals. In 1907, Russian scientist and Nobel laureate Elie Metchnikoff, a professor at the Pasteur Institute in Paris, suggested replacing harmful microbes in the gut with useful microbes to modify the flora for the health benefits. He observed that Bulgarian peasants that consumed yogurt lived longer. He attributed their longer lives to their yogurt consumption. The history of probiotics can also be traced back to the first use of cheese and fermented milk products by the Greeks and Romans who recommended their consumption. Why probiotics are beneficial Some of the most commonly claimed benefits of probiotics include the decrease of potentially harmful gastrointestinal microorganisms, the reduction of gastrointestinal discomfort, the strengthening of the immune system, the improvement of the skin’s function, the improvement of bowel regularity, the strengthening of the resistance to certain allergens, the decrease in body pathogens, the reduction of bloating and flatulence, the protection of oxidative damage to proteins and lipids, the improvement in urinary and 84 vaginal health, and the maintenance of intestinal microbiata in individuals receiving antibiotic treatment. As a result, probiotics have recently received renewed attention from researchers, product manufacturers, and consumers. Types of probiotics Many types of bacteria are classified as probiotics. Most come from two groups: Lactobacillus and Bifidobacterium. Lactobacillus is the most common and is found in yogurt and other fermented foods. It helps with diarrhea and digesting lactose, the sugar in milk. Bifidobacterium is also found in dairy products. It can ease Irritable Bowel Syndrome symptoms and other conditions. Good sources of probiotics Acidophilus milk - is a simple way to get a dose of probiotics. Also called sweet acidophilus milk, it is milk fermented with the bacteria. Buttermilk, fermented with lactic acid, is also rich in probiotics. Kefir – dates back to the shepherds of Eurasia who drank this bubbly beverage fermented from the milk they traveled with. Thick, creamy, and tangy, it has its own strain of probiotics plus a few helpful yeast varieties. Miso Soup – Miso, a fermented soybean paste, is used to make this soup. It is low in calories, high in B vitamins, and chockfull of antioxidants. JULY <strong>2016</strong> Sauerkraut – unpasteurized. Remember that pasteurization kills all bacteria. Kimchi is similar, but spicy and is also loaded with immune boosting vitamins. Soft, fermented cheeses – like Gouda and Brie contain probiotics that are hardy enough to make it through the GI tract, which will boost the immune system. Sourdough bread – San Francisco’s famous sourdough bread packs probiotics worth biting into. Sour pickles – that are naturally fermented with sea salt and water (no vinegar) feeds the good bacteria in the fermentation process. Tempeh – is an Indonesian patty made from fermented soybeans. Tempeh is high in protein and it makes a natural antibiotic that fights bad bacteria. It can be used in place of meat. Yogurt – is one of the most familiar and beneficial sources. It contains live active cultures that ease lactose intolerance and may assist in gas, bloating, and other digestive problems. Probiotic products are available at the pharmacy, but these products are not monitored or approved by the FDA. Food sources offering live active cultures and sound nutrition are always the optimal choice. If you eat a wide variety of foods and include foods that are rich in probiotics, you are doing well for maintaining a healthy gut. If you have digestive problems or a condition like IBS, you may need to adjust your diet or look into getting treatment. P
