Creamy<br />

Beetroot Curry...<br />

BY AWARD WINNING<br />

CHEF ABDUS SHAHID<br />

Prep Time<br />

15 mins<br />

Cooking Time:<br />

45 mins<br />

Serves 4<br />

Try an original approach to serving curry<br />

by combining beetroot with Madras<br />

spices, mustard seeds and green chilli.<br />

Method<br />

1. Heat the oil in a large lidded pan, stir<br />

in the onions and cook for 8 mins until<br />

soft.<br />

2. Tip in the mustard seeds and cook<br />

for 1 min until toasted. Stir through the<br />

curry paste and sizzle for 3 mins.<br />

3. Mix the beetroot through the spicy<br />

onions, then add the chilli, tomatoes and<br />

2 cans of water.<br />

4. Cover and simmer for 30 mins,<br />

stirring occasionally, until the beetroot is<br />

tender. Remove the lid, turn up the heat<br />

and cook until the sauce is thick.<br />

Ingredients<br />

• 1 tbsp vegetable oil<br />

• 2 onions, very finely chopped<br />

• 2 tsp yellow mustard seed<br />

• 3 tbsp Madras curry paste<br />

• 1kg (peeled weight) raw beetroot, peeled,<br />

halved and thickly sliced<br />

• 1 green chilli, halved lengthways<br />

• 400g can chopped tomato<br />

• 3 tbsp ground almond<br />

• 4 tbsp low-fat natural yogurt, plus extra<br />

to serve<br />

• Basmati rice, to serve (optional)<br />

5. Take off the heat, then stir through<br />

the almonds, yogurt and some<br />

seasoning. Top with yogurt and serve<br />

with basmati rice, if you like.<br />

contemporary marquee at Hungarian Hall.<br />

Georgina chose pretty die cut pink butterflies for her<br />

bespoke deluxe Invitations, RSVP cards and info sections<br />

through to the table plan, place settings, sweetie tags, signs,<br />

confetti cones and favour tags.<br />

Angelic weddings hired Georgina their stunning gold bird<br />

cage for her CARDS and decorated it with matching pink and<br />

gold butterflies.<br />

Q: WHY DID YOU CHOSE YOUR VENUE?<br />

A: “I had always dreamed of having a marquee reception and<br />

as soon as we looked I instantly fell in love. It had everything<br />

A: “The service we received from Catherine was spot on, from the<br />

day we first meet I knew she was the lady who was going to create<br />

the most fantastic pieces for us. I think my favourite items were our<br />

a nice restaurant can be a nightmare when it<br />

comes to deciding what to wear.<br />

While outfit choices are somewhat limited,<br />

this is the chance to show your partner (and<br />

yourself) that you really know how to dress up<br />

and keep abreast of the latest looks.<br />

The date: drinks<br />

Going for drinks is a great way to let your hair<br />

down with your date and generally calls for<br />

less buttoned-down attire.<br />

But this shouldn’t be an excuse to wear just<br />

anything. Grooming and understated gestures,<br />

such as a clean pair of smart boots or town<br />

shoes firmly indicate that, though the date<br />

may be casual, you’re certainly taking it<br />

seriously.<br />

Do you know what your partner will be<br />

wearing? You could sneak a complimentary<br />

note into your outfit to match. But don’t go<br />

overboard.<br />

The date: out and about<br />

If you have an activity planned then<br />

practicality is key.<br />

Let’s face it lads, you’re probably all going<br />

to wear some sort of suit. While there’s<br />

nothing wrong with this, the key here is to do<br />

different. This means not looking like you’re<br />

turning up for a job interview - and the devil<br />

is in the detail. Showing that you are willing<br />

to mix things up a bit will score big<br />

points.<br />

It can be as simple as undoing your top two<br />

shirt buttons to flout the fact that you aren’t<br />

wearing a tie – or you could wear a vibrant<br />

handkerchief in your breast pocket to draw<br />

attention to your new tweed blazer.<br />

Simple little things like this can show, subtly,<br />

that you’ve not only taken some serious time<br />

over your appearance but have also dared to<br />

deviate from the beaten track.<br />

Think smart but warm at this time of year.<br />

A well-cut coat and layers that can work as<br />

standalones are a must.<br />

If you’re on a scenic walk or at a museum,<br />

then a leather shoulder bag or satchel may<br />

well be in order. Remember that the bag<br />

(unless you are literally going hiking) shouldn’t<br />

get in the way of anything.<br />

You can also use the predictably poor weather<br />

to your advantage. Grab a pair of warm gloves<br />

and a hat to complement your outfit. If the<br />

wind picks up, you can always share body<br />

heat.<br />

As the January sales draw to<br />

an end and sudden flourishes<br />

of pink hearts and red roses fill<br />

the shops, it can only mean one<br />

thing, Valentine’s Day is just<br />

around the corner.<br />

It’s that time of year again where we<br />

are encouraged to express our affection<br />

with various (commercialised) gifts and<br />

romantic gestures, why?<br />

a sucker for cards!<br />

But while on February 14 th , love may be in<br />

the air, is it really something that we need<br />

to share?<br />

As a nation we seem to be living our lives<br />

through social media with the ability to<br />

share exactly what we are doing as we are<br />

doing it, at our fingertips.<br />

I, too, am guilty of this, but it seems that<br />

so little now is kept private.<br />

Because that’s what everyone else is<br />

doing right?!<br />

Now I am not a cynic, I love a good romcom<br />

as much as the next person and I am<br />

It seems that we don’t just share a card<br />

with our loved ones anymore, in fact, we<br />

no longer share our lives with that one<br />

person.<br />

I guarantee that come Valentine’s Day<br />

this year, my news feed will be filled with<br />

images of gifts that people have received,<br />

‘check ins’ of people at various romantic<br />

places and couples ‘selfies’.<br />

I will make a point this year of avoiding<br />

social media and sharing the day with<br />

the person who I genuinely want to share<br />

my life with. And for those singletons<br />

amongst us whose most dreaded day<br />

of the calendar year is Valentine’s Day, I<br />

urge you to get off Facebook, Twitter or<br />

Instagram and to forget the facade that<br />

they create.<br />

We spend so much time comparing<br />

everyone’s seemingly wonderful, not to<br />

mention online, lives, with our own.<br />

Let us indulge in our own lives for a day<br />

and forget what everyone around us is<br />

doing.<br />

Embrace the true meaning of St<br />

Valentine’s and celebrate love, regardless<br />

entertainer and performer will be<br />

exciting his audiences as he performs<br />

new tracks from Echoes Of Our Times,<br />

along with classic hits, and a few<br />

surprises. Rachel Ducker caught up with<br />

Shaky to speak about the tour and new<br />

album.<br />

R: For those who don’t know, how did the<br />

name ‘Shakin’ Stevens’ come about?<br />

I was born Michael Barratt, but after a while<br />

I thought that was not exciting as a stage<br />

name, so I started using the name Shakin’<br />

Stevens. How that came about was that I had<br />

a friend named Steven when I was younger<br />

and we used to play in the street, you know<br />

ball games, stuff like that, and one day he<br />

held up a bit of wood and pretended to play<br />

the guitar and suddenly said “ladies and<br />

gentleman Shakin’ Stevens” and I thought<br />

that’s a wacky name, you can’t forget that, so<br />

I later on in life used it. He didn’t mind as he<br />

didn’t go into the music business himself, so<br />

that’s the story.<br />

R: When did you get into music and how?<br />

I’m from a family of 13 children… we could<br />

all sing in the family so if it was a wedding<br />

or something, we’d all get up and have a<br />

singsong. I don’t know what you put that<br />

down to, whether it’s a celt thing I don’t<br />

know? Growing up as a boy I joined bands<br />

and wasn’t interested in anything else, I just<br />

wanted to sing. It took a long time for me to<br />

get my first hit record, a very, very long time.<br />

R: During your time in one of your first bands<br />

‘Shakin’ Stevens and the Sunsets’ you were<br />

given a slot to support the Rolling Stones –<br />

what was that like?<br />

To support the Rolling Stones was absolutely<br />

fantastic; we were over the moon. Our agent<br />

at the time put an advert in Melody Maker,<br />

I think it featured John Lennons white suit<br />

that he wore, and it said if you’re willing to<br />

wear that suit at a Shakin’ Stevens gig we<br />

welcome you with open arms. It got attention<br />

from those in the music business and I guess<br />

with the Stones too, they must have thought<br />

crikey, these guys are a bit forward. So we<br />

were down in Cardiff University and they sent<br />

someone along to check us out, and they liked<br />

what they saw and heard, and the next thing<br />

we were supporting the Rolling Stones.<br />

R: You must have been overwhelmed?<br />

Yeah, you had to pinch yourself when it was<br />

happening. When we arrived at the venue the<br />

Stones were playing tracks that we were fully<br />

aware of, they were very nice to us. Later on<br />

I’ve actually played again with Bill Wyman and<br />

he reminded me about the time we supported<br />

them.<br />

R: So you were actually the youngest of 13<br />

siblings, is that correct?<br />

That is correct.<br />

R: I just wondered being the youngest,<br />

and having such a large family, did you<br />

experience any competitiveness growing up<br />

and if so, did this spur you on in your music<br />

career?<br />

My eldest brother is 25 years my senior, so<br />

that gives you an idea of the age gaps. When<br />

I came along two of my brothers had already<br />

got married and left home, and two siblings<br />

had passed away when very young - which<br />

left 3 adults and 8 children living in a small<br />

three-bedroom, terraced house. My brother<br />

Les and I shared one bedroom with our<br />

parents, four girls shared another bedroom,<br />

and then there were two boys and a grown-up<br />

brother in the box room. It was literally Topto-Toe.<br />

I had a lot of support from this large<br />

family!<br />

trade, so when I was out of work and just<br />

singing in the evenings, he said “why don’t<br />

you try for a job where I am?” Initially, I just<br />

assisted, but what I liked about this job was<br />

that they had a radio there, and they had the<br />

music and new releases of the day.<br />

The firm folded up, I guess the foreman there<br />

must have taken a liking to me, as he said<br />

“we’re moving up to Bridge End would you<br />

like to come?” and I said “yes please.” So I<br />

went up there and started working on the<br />

bench and joined the production line. Again,<br />

that was the best job I had really apart from<br />

singing, they had this radio blasting away<br />

while you worked and I loved it and I used to<br />

do my singing in the evening.<br />

R: But you made it work!<br />

Yeah we made it work, I actually visited the<br />

house not so long ago, it was a bit of an eye<br />

opener really, it looked smaller than it was.<br />

R: You’ve had quite a few interesting jobs in<br />

your time, a milkman, and an upholsterer, did<br />

you ever think it would turn out the way it<br />

has for you?<br />

Well, as I said, all I wanted to do was sing, so<br />

I was determined to pursue that. I didn’t want<br />

to do anything else, but when I was growing<br />

up with my brothers and sisters, we were<br />

living in times where when you came of age,<br />

you had to get a job and pay some money<br />

over, and that’s how it was.<br />

As for jobs I wasn’t really interested in what I<br />

did really so I was a warehouse person for a<br />

while, I worked on buildings, I was a milkman<br />

for a time, I had loads of jobs really. Then I had<br />

a crack at upholstery and I really liked that, I<br />

liked that a lot.<br />

A friend of mine went into the upholsterer<br />

R: And did you sing along to the radio while<br />

you worked?<br />

I think we all did!<br />

R: Out of all of your songs, do you have<br />

a favourite that you enjoy listening to or<br />

performing?<br />

It is a hard question! Or, rather, it has been up<br />

until this year. I like all the tracks on the new<br />

album ‘Echoes Of Our Times’ and I’ve really<br />

enjoyed performing them during promotional<br />

appearances for the album and in preparation<br />

for the tour this year - so the answer is that<br />

I have 10 favourite tracks, and this is my<br />

favourite album - to date. Two answers in one!<br />

R: Touching upon the new album, it focuses<br />

on your family’s ancestry, so I wondered if<br />

you’d found out anything interesting? I hope<br />

you haven’t dug up too many skeletons?<br />

We have yeah, because I didn’t know I had<br />

ancestors down in Cornwall, and I didn’t<br />

know that my grandmother’s family were in<br />

the Salvation Army going back to the 18th<br />

century.I then found out about my uncle<br />

who died in the First World War, and that my<br />

ancestors had worked in the copper and tin<br />

mines of Cornwall for hundreds of years, many<br />

of them going to live in the States, South<br />

Africa, Australia and Mexico. So yeah, some<br />

really interesting stories and with the album<br />

of course we thought why don’t we turn these<br />

stories into songs, and that’s what we did.<br />

People can then share the stories<br />

R: It must be so nice to perform something<br />

really personal and meaningful to you?<br />

the public.<br />

R: Locally, you’re playing by us at the Regent<br />

Theatre in Ipswich on 29th April, have you<br />

played here before or will this be your first<br />

time?<br />

No, I’ve played there a couple of times before<br />

actually. It’s a lovely theatre and they’ve had<br />

a lot of big stars there, I believe the Beatles<br />

played there as well – it has got a great history<br />

and a very nice atmosphere, the area is lovely<br />

as well so I am really looking forward to it.<br />

It is yeah, and people can relate to the stories<br />

as well, as I am sure a lot of people can, when<br />

it comes to the war and the mines. I am very<br />

pleased. If you leave it too late to explore<br />

your family background by speaking to the<br />

older members of your family, then it is much<br />

more difficult to find out the information.<br />

R: We all probably have something in our<br />

past that’s worth digging into, would you<br />

recommend people exploring their family<br />

history?<br />

R: After your tour what are your plans for the<br />

rest of the year?<br />

Well, I am still promoting the album so I<br />

will be doing radio and stuff like that really,<br />

and also we are looking to do some dates<br />

for a tour in Denmark as well, and possibly<br />

Germany.<br />

R: Lastly, what is like every Christmas to<br />

hear your songs still bringing so much joy to<br />

people?<br />

Yes I would, definitely. It’s nice to know where<br />

you came from; there are people out there not<br />

interested at all. I wasn’t looking for famous<br />

people or anything like that; I just wanted to<br />

know where I came from. In those days they<br />

didn’t used to talk about these things and it<br />

used to be hush, hush.<br />

R: Your UK tour starts in April what can fans<br />

look forward to?<br />

They can look forward to the tracks from the<br />

new album, there will also be some surprises<br />

thrown in, and some hits. The instruments<br />

that you hear on the album will be on stage,<br />

its quite a big band. There’s brass there and a<br />

banjo and stuff, I’m really looking forward to<br />

it, getting back out there and sharing it with<br />

It’s a good feeling really to have Christmas<br />

songs, I am very proud of the ‘Merry<br />

Christmas Everyone.’ It has touched a lot<br />

of people and I think it is amazing how that<br />

particular song is enjoyed worldwide, I think<br />

everybody knows it.<br />

R: Personally it is one of my favourite<br />

Christmas songs and I have listened to it<br />

every year for the last 30!<br />

Schedule a romantic evening<br />

meal for after work, leave a<br />

Something to show our<br />

appreciation for our<br />

significant other is necessary<br />

on this day.<br />

Even the smallest gestures (such as remembering a<br />

card!) create a loving mood. It does not take much<br />

to boost our partner’s day with little things, so why<br />

don’t we do this more regularly, and not just on<br />

Valentine’s?<br />

Maybe we should do something about this!<br />

Remember that time they brought you back<br />

your favourite pack of sweets for no reason? Or<br />

defrosted your car because you were running late<br />

that morning?<br />

How about getting in from work to be greeted<br />

with ‘I’ve booked a table for 8 o’clock!’. These are<br />

bound to get a smile. Little things can make a big<br />

difference to the daily routine.<br />

When we take a step back its easy to see that we<br />

could be taking our special person for granted.<br />

These are the ones we rely on constantly, for good<br />

company, support and<br />

venting to after a long<br />

day! After all they are our<br />

No, not that kind of physical. The idea is to<br />

enjoy a little activity and get those endorphins<br />

flowing, which is proven to leave you both in<br />

3. Go for a massage<br />

Either book in for a full-body massage at your<br />

favourite spa, or include yourself and book a<br />

couple’s massage.<br />

4. Make a path of rose petals<br />

Anticipation is half the fun of a romantic<br />

surprise. Start the excitement when your<br />

partner walks in the door by leaving a trail of<br />

rose petals leading to the kitchen table, where<br />

a good bottle of wine and a freshly cooked<br />

meal is waiting.<br />

5. Get a room<br />

Changing up your surroundings can give an<br />

automatic boost to your love life. It doesn’t<br />

have to be complicated – booking a hotel<br />

room, for example, can be a nice change to<br />

the day-to-day and can make you both feel<br />

6. Be homebodies<br />

Sometimes the best Valentine’s Day gift<br />

you can give is a bit of time together doing<br />

with fitness PT, Tom Harris for some<br />

Hi Tom, could you tell us a little bit about<br />

your personal training business, ‘The Body<br />

Transformation Project’ and what services you<br />

offer?<br />

Hi <strong>Bounce</strong>. The Body Transformation Project<br />

offers mobile personal training for people who<br />

would prefer to train not in a gym but in the<br />

privacy and comfort of their own home or local<br />

park. All of the equipment will be brought to your<br />

home at a time and place to suit you. This offers<br />

fantastic flexibility for busy people who want to<br />

get fit and healthy but want to train on their own<br />

terms without being restricted by a gym and<br />

access to equipment.<br />

Typically sessions are 2-3 times a week for 1 hour<br />

and are specifically tailored to each clients’ goals<br />

and requirements whether that’s weight loss,<br />

muscle gain or improved cholesterol and blood<br />

pressure. Combined with training each client<br />

receives a complete nutrition plan based on his or<br />

her goals and preferred foods. Clients have 24/7<br />

access to assistance and advice.<br />

What is your personal approach towards health<br />

and fitness?<br />

My personal approach to health and fitness is that<br />

focusing on being healthy is the most important<br />

thing. Looking good is secondary and comes as<br />

a by-product. Once my clients have been taught<br />

to eat correctly and exercise intelligently they will<br />

end up looking lean and muscular and be fit by<br />

default. As such I always instil in my clients the<br />

importance of eating sensibly and using common<br />

sense and not falling for quick and faddy diet or<br />

exercise plans. I also believe that exercise should<br />

be fun, effective and time efficient. We all lead<br />

busy lives and it is not realistic for a working<br />

mum for example to visit the gym 5 days<br />

a week as most magazines try to tell you.<br />

Instead my training approach is simple- we<br />

perform the minimal amount of work for the<br />

maximum results. Two-Three sessions a week is all<br />

it takes, training in your own home. Get it done,<br />

get on with life.<br />

I am overweight and I haven’t exercised in a<br />

while and I don’t know how I would even begin<br />

to start exercising again. Is personal training<br />

right for me?<br />

Absolutely, personal training is not all about<br />

green juices and masochistic workouts! Each and<br />

every client is approached in a personalised and<br />

individual way whether they are a professional<br />

athlete training for an event or someone who has<br />

never exercised. Many people feel intimidated<br />

by the fitness industry - the media places a huge<br />

amount of pressure on us all to feel like we should<br />

look a certain way, or do this workout or eat a<br />

certain way to fit in.<br />

This is nonsense and again focusing on health<br />

first is my solution. In the above instance we<br />

would start with small steps; taking a 15 min walk<br />

around the block, eating an apple instead of a<br />

chocolate bar, parking the car further away from<br />

the shop and walking, replacing white bread with<br />

brown – re-educating. Having a personal trainer<br />

who comes to your own home is private and I<br />

feel, less intimidating for most people. Also it’s<br />

a great motivator having someone personally<br />

support you 24/7.<br />

of Greece<br />

We believe that wine was made over 6000 years ago starting<br />

with grapes from ancient Persia. Greece was part of the early<br />

development and included in everyday life as far as we know.<br />

Trade in wine became extensive transported from<br />

end to end of the Mediterranean. Greek wine was<br />

held in high esteem in Italy.<br />

The Greeks called Italy Oenotria, meaning<br />

Wineland, as its climate and soil were beneficial for<br />

vine growing and benefited the Roman Empire in<br />

due course.<br />

and prescribed it regularly. Today Doctors take the<br />

Hippocratic oath when they qualify.<br />

The Ancient Greeks used vines including Vitis<br />

Vinifera which is the grape species used today. It is<br />

most adaptable, able to grow in most climates.<br />

The Climate<br />

It would appear that Greece would be too hot<br />

and too dry to grow quality grapes but its own<br />

indigenous varieties are able to cope. Some<br />

cooler areas and these local varieties lead to<br />

some success. From being one of the very first<br />

areas to make wine, it has now gone full circle to<br />

be a quality wine producer albeit in certain areas.<br />

The Spread of Greek civilisation and their worship<br />

of Dionysus, the god of wine spread the word.<br />

Hippocrates used wine for medicinal purposes<br />

Although using classic grapes from elsewhere<br />

it has achieved success and using its own<br />

indigenous varieties, sets it apart.<br />

Winemaking<br />

From about 1985 many Greek winemakers<br />

returned home having learnt from experience in<br />

France, Australia etc.<br />

These winemakers benefited from modern<br />

methods and equipment as well as the use of<br />

cooler land areas. The classification system<br />

in Greece has used the French System with 8<br />

OPE’s, ( similar to AC) and 25 OPAP’s, ( similar<br />

to VDQS)<br />

The Wine Regions<br />

Macedonia in the North<br />

Includes Cotes de Meliton which has<br />

Chateau Carras in the area, using<br />

French grapes, producing great<br />

wines. Other classification areas<br />

include Naoussa which is good<br />

for reds using the Xinomavro<br />

grape.<br />

The Peloponnese in the South<br />

West<br />

Includes Patras, Nemea and<br />

Martinia, producing sweet wines from<br />

the Muscat grape and the Mavrodaphne for<br />

deep red sweet liqueur wines.<br />

Central Greece<br />

Across the middle of Greece including Attica,<br />

Epirus and Thessaly. Attica contains the Capital<br />

Athens, while Epirus is close to Corfu. Thessaly<br />

lies between Epirus and Macedonia. Dry whites<br />

are made in these regions from the Roditis grape<br />

as well as reds from Agiorghitiko and interestingly<br />

the Cabernet Sauvignon.<br />

Crete<br />

A number of lesser known grapes grow here and<br />

produce mostly Greek Vin de Pays, which is of<br />

lesser quality than the mainland<br />

Some of the Islands<br />

Samos has mostly Liqueur type wines from the<br />

Muscat grape.<br />

Rhodes has dry reds and dry whites from a<br />

variety of grapes.<br />

Paras uses a blend of red and white grapes.<br />

Santorini has dry whites from the Assyrtiko grape<br />

where the old vines are resistant to Phylloxera.<br />

Visanto is made on Santorini which uses sun<br />

dried grapes, the wine then aged in oak for<br />

15 years. It is the traditional wine used<br />

for communion in the Greek Orthodox<br />

Church.<br />

Retsina<br />

For at least 2000 years pine resin<br />

was used to seal a bottle of wine to<br />

stop it getting spoiled by oxygen. The<br />

Romans by inserting an impermeable<br />

seal, such as a wood, and using glass<br />

bottles negated the need for this. However<br />

the flavour and aroma developed by the resin<br />

became popular and is still used today, as an<br />

addition to the wine.<br />

Greece has produced wine for centuries and<br />

yet with its problematic hot climate find it hard<br />

to compete with other countries. With its own<br />

grapes and cooler parts of the country there are<br />

wines of exceptional quality and interest that<br />

other parts of the world should envy.<br />

Conclusions...<br />

Retsina has been the top wine for sales over a long time, but try their more expensive wines and you<br />

will be pleasantly surprised. What better than to enjoy their warm climate under a sunshade and try<br />

their good wine.<br />

White Horse...<br />

Situated in Beccles, just a stone’s<br />

throw away from the town’s large<br />

clock tower, you will find Graze at<br />

The White Horse, a charming place<br />

to drink and dine no matter what<br />

day of the week it is.<br />

Owners Kevin Wainwright and David Little,<br />

previously managed the Bear and Bells public<br />

house in Old Market before they left to buy<br />

and run the Satis House hotel in Yoxford.<br />

Now the duo have decided to combine their<br />

expertise at the 18th century public house and<br />

have completely transformed what was known<br />

as ‘The Saddlers Arms’ into Graze, offering<br />

lunch, dinner and drinks in an informal and<br />

relaxed setting.<br />

<strong>Bounce</strong> <strong>Magazine</strong> were kindly invited along<br />

to review the establishment, along with local<br />

photographer, James Norman of Charlotte<br />

James Photography & Events in Beccles and<br />

our team mate Lois. Here’s what we thought!<br />

“As you enter the old style building you<br />

immediately notice that the décor is very<br />

contemporary, dressed in signature colours<br />

of grey, green and white. The bar is lit with<br />

candles and soft lighting, creating a relaxed<br />

and romantic mood.<br />

After a warm greeting from Kevin, we were<br />

presented with a list of some of Graze’s House<br />

Cocktails, the best way to start a meal in my<br />

opinion!<br />

Upon the delivery of a ‘Twinkle’ and a<br />

‘Pornstar Martini,’ we then grazed upon<br />

freshly baked Bread and Olives in the bar area.<br />

What girl doesn’t like Cocktails and Carbs,<br />

after all?!<br />

As we browsed the evening food menu, we<br />

were delighted to see such a range of dishes<br />

from small bites to main courses from the grill<br />

and including cuisines from all over the world.<br />

Shortly after, we made our way into the chic<br />

and vibrant restaurant, complete with its<br />

open kitchen. It was then crunch time and the<br />

moment came to make our dinner choices.<br />

Between us we selected Pan-Fried Scallops<br />

with Chilli Jam, Suffolk Pheasant Pate<br />

with Onion Marmalade and Artisan Bread,<br />

Lebenese Squash Salad with red Onion,<br />

Za’atar and Tahihi and Mushrooms and<br />

Spinach Tart with Salad Leaves. What a<br />

combination!<br />

What I personally liked about my dish, the<br />

Scallops, was that usually, you only get three;<br />

well to my amazement and delight, Graze<br />

provided me with five perfectly cooked<br />

Scallops smothered in Sweet Chilli Jam.<br />

After being cheeky enough to sample<br />

everyone else’s dishes too, I was impressed<br />

with the strong and punchy flavours and clean<br />

presentation of the dishes.<br />

Graze benefits from the addition of a<br />

specialist chargrill oven, with a chargrilled<br />

section on the evening menu, it would have<br />

been rude not to sample these dishes for the<br />

main event.<br />

of the salsa, all thrown into one incredible<br />

tasting burger topped with spicy cheese and<br />

complete with fries in a brioche bun. For spice<br />

lover’s one word… amazing!<br />

Other selections from our group included<br />

Sirloin Steak served with Rocket, Fries, Grilled<br />

Mushroom & Tomato and Game Wellington<br />

with Mash, Kale and Madeira Wine Gravy.<br />

I could not resist the ‘Mexican Burger’, lets<br />

face it, everyone loves a good burger, but<br />

what I enjoyed about this particular one was<br />

the heat from the jalapeño’s, the coolness and<br />

texture of the avocado and the crunchiness<br />

Then onto the finale, although I couldn’t<br />

manage a dessert, I opted for a little pick<br />

me up and indulged in an Espresso Martini<br />

Cocktail, my fellow foodie friends went all<br />

out. They selected Pear and Almond Tart<br />

Vanilla Ice Cream; and I have to say, it kept them quiet<br />

for a good five minutes, they didn’t even offer me a<br />

taste!<br />

The final verdict: We highly recommend a visit to<br />

Graze, patrons can pop in for cocktails, wine and<br />

nibbles at the bar, a cafe-style lunch or an evening<br />

meal. We’d especially like to thank the team, Kevin,<br />

Glenda and Lucy. They all made our night very special<br />

with their personal and attentive service”.<br />

Method<br />

1. Heat the oil in a large frying pan (or wide<br />

saucepan), add the garlic, thyme and sage, and<br />

cook gently for a few mins. Tip in the tomatoes,<br />

vinegar and sugar, and gently simmer for 20-25<br />

mins until thickened a little.<br />

2. Meanwhile, heat a griddle (or frying) pan. Brush<br />

the aubergine slices on both sides with olive<br />

oil, then griddle in batches. You want each slice<br />

softened and slightly charred, so don’t have the<br />

heat too high or the aubergine will char before<br />

softening. Remove to a plate as you go.<br />

3. In a large baking dish, spread a little of the<br />

tomato sauce over the base. Mix 25g of the<br />

Parmesan with the breadcrumbs and pine nuts,<br />

and set aside. Top the sauce with a layer or two of<br />

aubergine slices, then season well. Spoon over a<br />

bit more sauce, then scatter over some mozzarella,<br />

Parmesan and basil leaves. Repeat, layering up<br />

– and finish with the last of the tomato sauce.<br />

Scatter over the cheesy breadcrumbs and chill for<br />

up to 24 hrs, or bake straight away.<br />

Ingredients<br />

• 2 tbsp olive oil, plus extra for brushing<br />

• 3 garlic cloves, crushed<br />

• 3 thyme sprigs<br />

• 8 large sage leaves, finely chopped<br />

• 4 x 400g cans chopped tomatoes<br />

• 3 tbsp red wine vinegar<br />

• 3 tbsp golden caster or granulated sugar<br />

• 6 large aubergines, sliced lengthways<br />

as thinly as you can<br />

• 100g vegetarian-style parmesan, finely grated<br />

• 85g white breadcrumbs<br />

• 50g pine nuts<br />

• 2 x 125g balls vegetarian-style mozzarella,<br />

torn into small chunks<br />

• Handful basil leaves<br />

4. Heat oven to 200C/180C fan/gas 6. Bake for 30-<br />

40 mins until the top is crisp and golden, and the<br />

tomato sauce bubbling.<br />

This simple, elegant drink is festive and<br />

delicious with non-alcoholic<br />

champagne, sparkling wine or cider.<br />

Method<br />

1. Heat the pomegranate juice in a small<br />

saucepan until hot but not boiling. Add<br />

the jam and whisk until smooth.<br />

Remove from heat and transfer to a<br />

fine mesh strainer set over a pitcher.<br />

Using a rubber spatula or spoon,<br />

press the mixture to extract the liquid,<br />

leaving any solids or seeds behind; let<br />

syrup stand until completely cooled.<br />

Refrigerate until ready to use.<br />

Ingredients<br />

• 1/3 cup pomegranate juice<br />

• 1/2 cup all-natural blueberry jam<br />

• 1 bottle of champagne or sparkling<br />

cider, chilled<br />

• Fresh blueberries for garnish,<br />

optional<br />

2. To serve, pour two to three<br />

teaspoons of the syrup into champagne<br />

flutes and top with champagne or<br />

sparkling cider. Float a few blueberries<br />

in each drink for garnish, if desired.<br />

Serve immediately.<br />

• Balsamic vinegar 1 tbsp .<br />

• Water<br />

1 tsp.<br />

• Season to taste.<br />

Method<br />

• Blanch the shallots whole in the vegetable stock<br />

until fully cooked. Take them out of the liquid and<br />

place on a kitchen paper.<br />

Ingredients for the Pigeon<br />

• Pigeon breasts<br />

8 each<br />

• Orange peel<br />

1 each<br />

• Lemon peel<br />

1 each<br />

• Rapeseed oil<br />

1tsp<br />

• Unsalted butter<br />

10g<br />

• Season to taste<br />

Method<br />

• Once cold, cut each shallot into two, straight<br />

through the middle. Dust the flat side with the<br />

icing sugar. Pour the oil in a non-stick frying pan<br />

and heat up.<br />

• Place the shallots face down in the pan and leave<br />

until the icing sugar has caramelized, (about one<br />

minute.) Deglaze with the vinegar and water and<br />

leave to cook for a further 2 minutes. Take off the<br />

shallots, season to taste and serve.<br />

Makes 4 portions<br />

• Peel the orange and lemon and remove the<br />

pith from the peel. Using the peel, cut thickly and<br />

place in a oven at 50C for 3 hours to dry. Once<br />

completely dried, pulse with a little blender to a<br />

powder.<br />

• Season the pigeon and cover each one with the<br />

dried orange mix.<br />

• Drizzle some rapeseed oil in a roasting tray and<br />

place the pigeon in the middle of the tray, cook in<br />

a preheated oven at 200c for 4 to 5 minutes. Let<br />

the meat rest for 8 to 10 minutes and serve with<br />

the caramelized shallots and the jus.<br />

Managing a Family Split<br />

The breakdown of a marriage or relationship can<br />

SPRING IS IN SIGHT<br />

Kates Top Tip : Don’t leave houseplants on<br />

windowsills behind the curtains on frosty nights,<br />

especially if your windows are not double-glazed.<br />

This month there are signs of the<br />

approaching spring, with bulbs<br />

appearing and wildlife waking up<br />

as light levels and temperatures<br />

increase.<br />

General<br />

There’s plenty to do indoors this month to prepare<br />

for the season ahead.<br />

Outdoors, as the garden comes to life again, it’s time<br />

to prune shrubs and climbers, such as Wisteria as<br />

well as evergreen hedges.<br />

Sowing and planting<br />

Lily bulbs can be planted in pots, for flowers this<br />

summer. After growing on indoors or in a cool<br />

greenhouse, they can be moved onto the patio when<br />

in flower, so that you can enjoy the blooms.<br />

Bulbs coming up in the rock garden or in containers<br />

may benefit from overhead protection from the<br />

rain and snow. A sheet of glass or Perspex placed<br />

on piles of bricks will do the job. Sweet peas can<br />

be sown under cloches, in a cold frame, or in a cool<br />

room in the house.<br />

Any sweet peas that were sown earlier in the autumn<br />

can now be potted.<br />

As I write this, with a mixture of embarrassment and<br />

raw anger, I have never been so fed up about the<br />

state of my club.<br />

IT’S TIME FOR MICK TO GO – BUT<br />

THAT WON’T SOLVE ALL OF TOWN’S<br />

PROBLEMS OVERNIGHT...<br />

I had asked the patient <strong>Bounce</strong><br />

editor for a deadline extension<br />

for this column. In truth, I wish I<br />

hadn’t bothered.<br />

Had I written it just 24 hours<br />

previous, there would have<br />

been seeds of hope.<br />

That Mick McCarthy has<br />

found a winning 3-5-<br />

2 formula, that in Tom<br />

Lawrence we were watching<br />

one of the best in the<br />

Championship (albeit for<br />

only four more months)<br />

and that maybe the<br />

maligned manager could<br />

win us all round again.<br />

Then the shambles of our football club,<br />

both on and off the pitch, was laid bare to<br />

the millions who tuned in to watch us be<br />

deservedly dumped out of the FA Cup by<br />

non-league Lincoln City.<br />

I am a positive fella so I am going to start<br />

by congratulating the Imps on two hugely<br />

impressive performances where they largely<br />

dominated Ipswich. Their managers, fans<br />

and players were a credit to the club and, in<br />

one sense, they have restored my faith in the<br />

competition’s famed ‘magic’.<br />

Sadly, their 1-0 victory also restored my strong<br />

sense that it is time for Mick McCarthy to<br />

leave.<br />

I hate the fact my two sons are showing little<br />

interest in supporting Ipswich – but I also don’t<br />

blame either of them. Why would they?<br />

Leaving Mick aside for a minute, Marcus Evans’<br />

desire to remain largely reclusive simply doesn’t<br />

work when things are this bad. It looks like he lacks<br />

passion and simply doesn’t care.<br />

Then there are the players. The ones we all hailed as<br />

the best Mick has had in his four years at the club.<br />

Well they have let down their manager pure and<br />

simple. There have been too many wretched<br />

performances of late, too many who are either not<br />

good enough or playing with<br />

such low confidence, that they<br />

don’t look good enough.<br />

Injuries have played their part<br />

and there are one or two notable<br />

exceptions. But far too few.<br />

And when a team lacks fight,<br />

passion, guile and creativity, you<br />

have to ask serious questions of the<br />

manager and his tactics.<br />

Sacking Mick won’t solve all the<br />

problems – and I fear we have an<br />

owner who doesn’t know what to do<br />

next.<br />

But we have to start somewhere. Unity among the<br />

club and the fans has to be restored.<br />

Mick will always be a gentleman and will always be<br />

someone who has worked wonders at my club. But,<br />

for me, it’s time for change.<br />

GET A GRIP...<br />

As we all know the infrastructure<br />

around our beloved Suffolk isn’t<br />

great, there’s a lot of small winding<br />

roads which are often untreated at<br />

this time of year but how prepared<br />

are you? ...<br />

It’s easy to take for granted our car’s<br />

technology such as ABS but would you know<br />

what to do if your vehicle started to drift<br />

out of control? The right knowledge in that<br />

situation could well be the difference between<br />

life or death and thankfully our good friends<br />

over at Explore 4x4 can teach you all you<br />

need to know in how to avert disaster through<br />

their skid control course.<br />

Held on the skid pan at RAF Honington, just<br />

North of Bury St Edmunds, Action Man (and<br />

Kevin) visited on a very brisk morning with<br />

the track treated to simulate a slippery winter<br />

surface.<br />

With both front and rear wheel drive cars we<br />

had a great opportunity to test (and often<br />

break) the limits of the vehicles in these<br />

conditions whilst in the safety of a controlled<br />

environment.<br />

Under the expert guidance of our experienced<br />

instructors Adrian and Richard we at first<br />

took our cars out for a couple of laps to get<br />

a feel for the vehicles and the road, once<br />

comfortable it was time to push it and in<br />

these conditions it doesn’t take much to lose<br />

control.<br />

A rear wheel drive car will typically oversteer<br />

with the back end stepping out whilst front<br />

wheel drive cars (of which are the majority of<br />

cars on the road) will understeer with the car<br />

skidding straight despite your efforts to steer.<br />

The key to both is not to jump on the breaks<br />

but to ease off the power and wait for the<br />

tyres to regain traction but please don’t take<br />

my word for it, the best way to learn is to do.<br />

You need to get a feel for this yourself so that<br />

should the need arise (touch wood it doesn’t)<br />

you are prepared and will instinctively know<br />

what to do.<br />

The half day course could prove invaluable<br />

but was also great fun, whilst it would be a<br />

different kettle of fish on the A14, drifting a<br />

car round a bend in a controlled environment<br />

doesn’t half put a smile on your face! We<br />

finished the day with a race round the track<br />

with control, poise and grace being key and of<br />

course, Action Man won!<br />

February is a very exciting month<br />

at the Theatre Royal as we stage<br />

our in-house production of<br />

On Sunday 5th February we have a fundraiser<br />

for the Theatre Royal when we welcome the<br />

Legends of Ipswich Town Football Club. It’s an<br />

evening of anecdotes from former players Bryan<br />

Hamilton, David Johnson and Eric Gates.<br />

Immersion Theatre join us between Sunday<br />

12th and Monday 13th February with their<br />

wonderfully bonkers version of Alice in<br />

Wonderland. Known for their energetic and<br />

creative performances this show is lovely for all<br />

the family.<br />

Music offerings this month come in the form<br />

of Voice of the Heart on 14th February. A<br />

celebration of the music of The Carpenters,<br />

featuring the hits that every carpenter’s fan will<br />

It’s been nearly a year since we<br />

last attempted to catch up with<br />

East Anglia’s most elusive musical<br />

project.<br />

Bigboy have been going from strength to<br />

strength, and <strong>2017</strong> will be the year that<br />

we hopefully have the light of publicity<br />

deservedly shone onto them.<br />

With the assistance of their enigmatic PR<br />

team, they developed a highly complex<br />

PR stunt toward the end of last year that<br />

involved travelling for clues about their<br />

forthcoming release (due out on ATP<br />

Records). It started as a podcast that was<br />

giving away easter egg clues to the hidden<br />

location of carved QR codes in trees,<br />

given as map coordinates. Each gave you<br />

information of the next location, and the<br />

final one gave you the full album details.<br />

This clever scheme has attracted the<br />

attention of many industry figures, with<br />

label discussions and live dates being<br />

offered in abundance to the group<br />

towards the latter half of 2016. At the<br />

recommendation of Steve Albini, the band<br />

will be playing their first European live<br />

date at Primavera Festival in Barcelona this<br />

Spring.<br />

The press release also informs us that<br />

they’ve gone some extreme measures to<br />

gain wider attention… They released a<br />

collection of helium balloons, each with<br />

printed messages hidden inside, over<br />

the roof of John Doran’s office in North<br />

London (the headquarters of alternative<br />

online music publication, the Quietus).<br />

According to the band, there were talks<br />

of a ‘restraining order’ to be actioned,<br />

due to their insistent need for recognition<br />

from the journalist. An incident with a<br />

plough churning up a public park was also<br />

reported, but the band has since distanced<br />

themselves from the rumour, claiming that<br />

it wasn’t them. That’s all we know. Sounds<br />

like they’re keeping out of trouble, then.<br />

The group’s sound, we’re told, has grown<br />

considerably throughout the recording<br />

process, and the expansion of their<br />

sonic palette has resulted in a far more<br />

complex set up. Still as abrasive as ever,<br />

the record contains sections of Caribbean<br />

steel drumming, percussion being played<br />

with bones, and even a bagpipe solo. A<br />

challenging and experimental listen, to say<br />

the least.<br />

We can only hope that we keep getting<br />

glimpses of existence from the band<br />

who’ve been so highly regarded, yet so<br />

hidden, throughout the year. Keep your<br />

eyes open, for something strange is<br />

evolving on these soils as we speak. And<br />

it’s going to bewilder and delight in equal<br />

measure.<br />

A NAME CHANGE IN SIGHT...<br />

So during Christmas something<br />

pretty special happened. My owners<br />

are getting married next year!… But<br />

what ‘he’ must remember is that ‘she’<br />

was mine first.<br />

Since I was 10 weeks old, my owner and me have<br />

had a unique bond.<br />

As she has no children of her own yet, I guess<br />

you can say I’m her baby substitute! She has<br />

more photos of me on her Facebook than<br />

anyone else! Uff and that’s they way I want it to<br />

stay!<br />

So what affects her, affects me, and now I am<br />

getting used to the idea of being ‘Archie Hunt’.<br />

Secretly, I think it’s a pretty cool name for when I<br />

am stalking those pesky pigeons.<br />

So my column this month is a tribute to the new<br />

arrangements, congratulations to them, and I<br />

officially announce, that I will now settle for the<br />

middle of the bed instead.<br />

Must confess, it took a little time to come round<br />

to the idea of having ‘a new man’ around the<br />

house, especially when he was taking my space<br />

in the bed and stealing my attention.<br />

Eventually we bonded, well we had to. He played<br />

me well.<br />

He gave me treats, we went cliff running<br />

together, swam in the sea, that kind of thing, but<br />

every time his back was turned, I took back my<br />

bloomin’ spot in the bed back!<br />
