BURGER MIX First mix the breadcrumbs and milk together and soak for at least 10-15 minutes. This ensures the breadcrumbs swell while absorbing the milk, making a more tender burger. Dice up the shallots and cook in a frying pan until they begin to caramelize then allow to cool. Mix together the ground turkey, breadcrumbs, milk, shallots, garlic, sage and season with salt and pepper. Cook your burgers on the BBQ or in a frying pan making sure they are fully cooked (165°F) before you add the cheese for melting. Enjoy on your favourite bun topped with cucumber, pickled onion and leaf lettuce. Any extra burgers can be placed in Ziploc bags and frozen to be enjoyed later. PICKLED RED ONIONS Bring the blanching water to a boil then add the red onions and simmer for 1-2 minutes. Drain off the water, then pour the marinade ingredients over the warm onions. Set aside at room temperature for 2 hours. Pickled onions may be used the same day or refrigerated for 2 weeks. RECIPE BY STEVE NICHOLSON
