For a larger, more diverse salad, mix in a couple of cups of arugula and/or spinach and double the dressing. Serves 6 Ingredients: FOR THE SALAD 6 zucchini 1 pint of cherry tomatoes, sliced in half 2 ounces goat cheese, crumbled 4 tablespoons basil, chiffonade ¼ cup pine nuts, toasted Salt and pepper to taste FOR THE DRESSING 2 tablespoons pesto ¼ cup extra virgin olive oil Zest from one lemon ½ lemon, juiced ½ teaspoon black pepper ½ teaspoon salt Seasons Restaurant at Avon Old Farms Hotel 279 Avon Mountain Road • Avon Reservations Recommended: 860.269.0240 SeasonsRestaurantAvon.com • Facebook.com/AOFHRestaurant Directions: Cut the ends off each zucchini. With your vegetable peeler or mandoline, carefully slice each raw zucchini length-wise into thin ribbons. Place on a paper towel and lightly salt to remove some of the excess water. Set aside. Whisk together the dressing ingredients in a small bowl. Set aside. After about 10 minutes, pat the zucchini dry with a paper towel and place in a large bowl.
