I personally am a HUGE fan of icing, so when I made this cake I double the recipe, and save what is left, to ensure there is enough to really get between the layers. If you are a big peanut butter fan, it is also delicious to alternate between the chocolate cream frosting and peanut butter when stacking this
ICEBOX MATZO CAKE a bakeless treat fun to make with the kids INGREDIENTS DIRECTIONS 1 CUP BUTTER 1 CUP SUGAR 2 EGGS 6 OZ SEMI-SWEET CHOCOLATE 1 TSP ALMOND EXTRACT 1 TSP MILK OR SOY MILK 1 TSP PREPARED COFFEE 1½ BOXES MATZOS 2 CUPS GRAPE JUICE, OR KOSHER WINE [1] Combine the butter, sugar, and eggs, beating until creamy. [2] In a small saucepan, melt the semi-sweet chocolate with the almond extract, milk and coffee. Add to the butter mixture and mix until thoroughly combined. [3] Place a baking sheet under a baking rack, so it can catch the drippings. Pour grape juice or kosher wine in a shallow dish. One by one, soak each piece of matzo in the juice or wine for about a minute, place it on the rack, and top with a layer of frosting. Continue stacking and layering the wine-soaked matzo and frosting, and then cover the top and sides with the rest of the frosting. [4] That’s it!
