KENTISH TO THE CORE... My day starts with a coffee and two sugars followed by my meat and fish deliveries, the difference is now... this is my own kitchen. My name is Robert Bryant and I have just taken the plunge into my first head chef role at the amazing Frasers 2 AA Rosette Hotel and Restaurant in Egerton. The last 11 years have been dedicated to the culinary cause! I have been , and I use the word lightly, ‘lucky’ to have worked with some extremely talented and ambitious chefs, the likes of Michael Caines, Daniel Clifford and Tom Carr. This experience has enabled me to develop my own style of cooking and I now have the opportunity to produce my own dishes which are an expression of my personality. I was born in Devon, very close to the sea, and hence have always had a love of fish and seafood. However, moving to Kent has given me an opportunity to use a diverse range of locally sourced meat and game as well as a bountiful supply of local fish. I am two weeks into my new role and all my new ‘toys’ have arrived and am now just putting the finishing touches to my debut taster menu! In my opinion, the two outstanding dishes are the rabbit and the strawberry, I am undecided whether it is the perfectly cooked herb rolled loin, the rabbit terrine or the delicious rabbit sauce. As for the strawberry, a heavenly blend of strawberry, vanilla, elderflower, meringue need I say more! Come, relax and while away a few hours at Frasers. The quality of the locally sourced and seasonal produce in Kent is quite possibly the most delicious that I have ever tasted. I am excited about my future here at Frasers, and am so looking forward to cooking for all my new customers.
