sailing. The House of Commons and Amadeus<br />
are quite similar in some aspects, but also very<br />
different at the same time. The style at the<br />
House of Commons was classical cooking<br />
with areas for the butchery, the fish, the sauce<br />
– it was all split by area. It’s different at Amadeus<br />
with various styles which we adapt depending<br />
on the audience and event profile. We adapt<br />
the style and I know my team and I can turn<br />
our hand to anything. Simply, we cannot be<br />
slotted into a box or pattern!”<br />
Being versatile in the modern kitchen is<br />
now an essential need. Jason argues that the<br />
House of Commons, whilst offering great food,<br />
was the same day in, day out. At Amadeus Jason<br />
and his team will serve over 300 fine dining<br />
hospitality plates and then move onto a fast food<br />
offer. It is different every day and Jason relishes<br />
that difference. His calmness also suggests his<br />
experience allows him to not even feel<br />
challenged by the vast numbers.<br />
Visitors dining at the Genting Arena have a<br />
range of options. Top-notch food at any of the<br />
three Amplify restaurants, the Arena’s premium<br />
concert hospitality provider, various levels of<br />
club membership packages and a host of other<br />
great food that ranges from burgers to Mexican.<br />
Jason is in his element during the spring season<br />
and makes sure to use local produce where<br />
possible. “There is delicious asparagus and<br />
colourful purple sprouting broccoli from<br />
a nearby farm in Evesham, fresh mackerel,<br />
micro herbs and also new spring lambs.”<br />
Working as a chef can bring pressure, and<br />
Jason has recently started playing walking<br />
football. “When I told the team in the kitchen<br />
they did pull a few faces but I’ve really enjoyed<br />
it. I play up to three times a week and it’s great<br />
for keeping healthy. It’s aimed at those over<br />
