doesn’t let his learning disability hold him<br />

into his own flat and for the first time lives<br />

independently. Adam grew up traveling the<br />

world and being home schooled. His diverse<br />

eat loads of vegetables, go for long walks or jogs<br />

and practice chi gong - it’s good for your mind<br />

and soul.<br />

As a life coach, I work with many people<br />

who come to me seeking ways to be<br />

happier, feel better and live a more joyous<br />

life. A first step in guiding clients toward<br />

their goals and dreams - is to uncover and<br />

examine their beliefs about life. Beliefs<br />

are simply ideas that we have accepted as<br />

truth. By the time that we are just 5 years<br />

old, we have a complete belief system<br />

from which we operate and live our lives.<br />

As children, we soaked up information<br />

about life, how it seems to work and our<br />

potential from the adults around us. If for<br />

example, your parents were happy, had<br />

worked on themselves, and dissolved their<br />

fears and limitations - then chances are<br />

they passed on some wonderful beliefs<br />

to you. If the adults around you were<br />

angry, frightened, unkind or even abusive,<br />

then it’s highly likely that you picked<br />

up some very negative beliefs that are<br />

perhaps getting in the way in your adult<br />

life. This is not to create blame or guilt in<br />

any way - because we need to embrace<br />

the idea that everyone is always doing<br />

the best they can with the knowledge,<br />

awareness, wisdom and understanding<br />

that they have at the time. No one gets<br />

it “right” all the time. “It’s only when we<br />

know better that we can do better” - as<br />

the poet Maya Angelou once wrote. That<br />

is why for me - personal growth and the


pursuit of wisdom are so important, if we<br />

want better than our parents were able to<br />

teach us, and we want to move past their<br />

limitations, we need to seek out new ideas<br />

and create new beliefs for ourselves.<br />

People often come to me in need of<br />

help with anxiety and depression, and<br />

having suffered with both myself in the<br />

past - I am always happy to assist. In<br />

my experience, people who suffer with<br />

anxiety, are telling themselves a really<br />

awful limiting story about what the<br />

future holds for them, and then waiting<br />

for it to become real - all the while<br />

feeling stressed, depressed and fearful.<br />

This is a misuse of our imaginations.<br />

Life has infinite possibilty, so if we<br />

want something different than what<br />

we currently have, we need to order<br />

something different from life’s menu and<br />

tune into new ideas about how we can live<br />

life. I find that when we examine a client’s<br />

beliefs, release the old negative patterns<br />

and create better-feeling thoughts, the<br />

anxiety goes away, usually very quickly.<br />

In short, I help people to gain greater<br />

expectations for their lives.<br />

Our personal reality is formed by the<br />

thoughts we think, the words we use, the<br />

feelings we experience and the actions<br />

we take. Scientific studies in the field of<br />

neurology tell us that the average human<br />

being has 70,000 thoughts a day. It also<br />

tells us that over 90% of these thoughts<br />

are the same as the day before and the<br />

day before - and so on. In essence our<br />

limitations in life are a limit of thought,<br />

of imagination of expectation! Once we<br />

focus our attention on what we do want<br />

rather than what we don’t, the mind can<br />

then start seeking it out. If you lack<br />

money, thinking about the lack does not<br />

bring you prosperity, if you are ill, thinking<br />

about pain does not get you well. We need<br />

to expect that we will have more, get well<br />

and then we give the mind a clear picture<br />

to create.<br />

What are you expecting from life? Do<br />

you expect to live a long happy life,<br />

surrounded by people who love and<br />

support you both in life and in work? Do<br />

you plan to enjoy life with someone you<br />

trust and who loves and respects you?<br />

I was with a client recently, and I noted<br />

that as she was updating me on her life<br />

since the last time we had spoken, she<br />

kept saying “It’s always one thing after<br />

another.” - this was not said in a “people<br />

keep giving me flowers, presents and cake<br />

and life is a joy” kind of way. I pointed<br />

out to her that using phrases like this on<br />

a frequent basis (which she realised she<br />

was), was painting a really bad future<br />

for her. She soon realised that this was<br />

something her Mother used to say often.<br />

Essentially, this client was holding a<br />

belief, a subconcious expectation that bad<br />

things would happen to her, this thought<br />

was creating a feeling in her body and this<br />

became her point of attraction. For those<br />

of you that don’t know about the law of<br />

attraction, essentially things that are like<br />

themselves are drawn to each other, and<br />

we become what we think about. You see,<br />

we need to impress upon our subconcious<br />

minds pictures of loving relationships,<br />

work that we love, prosperity of every<br />

kind, a belief that life is loving and<br />

supportive, and a picture of vibrant health,<br />

if that is what you want.<br />

To expect better, you need to think<br />

better feelings, thoughts and prepare for<br />

happiness - expect it and then take action<br />

to bring it about. I meet so many people<br />

who tell me they are seeking love but<br />

when I ask them what they really believe<br />

about the potential for love, their beliefs<br />

and thoughts are in opposition to the<br />

things that they say they want. We need<br />

to be in harmony with something if we<br />

are to have it. These subconcious beliefs<br />

then sabotage the person from taking any<br />

action, to come into proximity of the thing<br />

that they want. In a most basic sense the<br />

things you want cannot just materialise<br />

out of thin air, you need to take action to<br />

make them happen. But you also need to<br />

expect that they will come and believe<br />

that you deserve them.<br />

So how do we change our thinking so<br />

that we can change our lives? The best<br />

technique I know for creating personal<br />

change is to use affirmations. An<br />

affirmation is basically anything that we<br />

say or think, but when we use it as a self<br />

development tool or life affirming practice<br />

as I call it, the words and thoughts need<br />

to follow a three point pattern. Firstly the<br />

words need to be said in present tense. If<br />

you say “One day I will have more money.”<br />

the mind cannot recognise it as it is in<br />

future tense, which in turn does not seem<br />

“Practice, Patience and Persistence”<br />

to be of any importance, thus it gets<br />

kicked into the long grass and forgotten<br />

about. Remember we need to signal to<br />

the brain that has your 70,000 thoughts<br />

to pick through, that this is important - so<br />

instead of the above we would say “My<br />

income IS constantly increasing.” The<br />

second point for working with affirmations<br />

is that they need to be positive, and<br />

there is a good reason for this - the<br />

subconcious part of the mind where your<br />

beliefs are held, has no discernment or<br />

judgement, so if you were to affirm “I<br />

don’t want to be ill” the subconcious does<br />

not hear “I don’t want” it will just hear “<strong>BE</strong><br />

ILL”, and this impresses a picture in the<br />

mind, and then in the body and hey presto<br />

you will get what you asked for even<br />

though you may not have meant to.<br />

A note here about affirmations is that<br />

one stray thought does not impress upon<br />

the mind, it’s a little like planting a seed<br />

but never watering it - it’s very unlikely to<br />

grow. The third point about affirmations<br />

is that they need to be personal i.e<br />

something that you truly want to believe<br />

and create in your life. Affirming “My<br />

income is constantly increasing”, does<br />

not of course bring you more money in<br />

that second, but if you want it to be true<br />

you need to buy into the idea. If you<br />

say the affirmation thinking it’s a load<br />

of nonsense, you are undermining the<br />

process.<br />

A further three ingredients that you need<br />

to help these new beliefs grow is Practice,<br />

Patience and Persistence. Practice your<br />

affirmations as often as you can - these<br />

seeds of new ideas need your attention<br />

if they are to grow, so repeat them often.<br />

Nurture involves patience, so trust in the<br />

creation of these new beliefs exactly the<br />

way that you would if you planted an apple<br />

seed - you don’t get a tree overnight!<br />

And lastly be persistent - keep at it and<br />

have faith that it will work for you at the<br />

perfect time, you need to have faith even<br />

if there is no sign of the thing showing up.<br />

Remember its’ darkest just before dawn.<br />

Please know that you deserve to live a<br />

happy life, just because you exist! I do<br />

not believe we are on this planet to be<br />

stressed and scared. You are the only<br />

thinker in your mind and you are more<br />

powerful than you have likely ever been<br />

told. You have the power to affect and<br />

change your life and live life based on<br />

your terms, free from lack and limiting<br />

beliefs.<br />

Tea has a place in every single culture<br />

throughout the world, and loose leaf tea is<br />

making a resurgence in recent times, with<br />

new tea bars and tea shops popping up all<br />

the time. And who knew tea could change<br />

somebodys life. For me it did just that.<br />

A little while ago I found myself at a crossroads<br />

in my life. My son had started nursery and I was<br />

looking to return to work. I had been selling<br />

jewellery online from home during my maternity<br />

leave but I am a people person and missed the<br />

face to face interactions and banter. I looked and<br />

found plenty of jobs that I could have done and<br />

found some satisfaction in but I wanted a job that<br />

I loved. One that felt like a passion and not ‘work’.<br />

I was adamant that I would not be apart from my<br />

son for just any old job.<br />

One day I came across an advert for a position in<br />

a tea shop and the excitement I felt and my gut<br />

instinct told me that this was exactly what I had<br />

been hoping for and where I needed to be. I was<br />

already aware of the company, so I went to meet<br />

with the owners of the business, a wonderful<br />

friendly couple and we got off to a great start.<br />

The first 3 months of working there was purely<br />

learning about the varieties and blends of<br />

teas and there really is so much to learn! The<br />

opportunity to learn from them about the world<br />

of tea and to help our clients find something that<br />

they enjoy and may not be able to find elsewhere<br />

is something that appealed to me, and that I am<br />

still thankful for everyday.<br />

Tea is much like the world of wine. Expert tea<br />

sommeliers source tea leaves from around the<br />

world and create blends of tea with a huge range<br />

of flavours. There is definately something to suit<br />

every palate and occasion.The taste and quality of<br />

tea is determined by many factors and variables,<br />

a few of these are …. The type of plant it is grown<br />

from, climate, soil, the time of year the leaves are<br />

picked and how it is treated after picking.<br />

Most people are aware of Black tea and Green<br />

tea. There are however many more types such<br />

as White, Oolong, Pu-Ehr, Matcha, Rooibos,<br />

Herbal and Fruit Infusions ( although the last 3<br />

are not tea in the classic sense they make a tea<br />

like beverage). I am passionate about all teas, and<br />

can even appreciate ones the nuances of that I do<br />

not particularly like myself. Let me tell you a little<br />

about a few of my most favoured and ‘go to’ teas<br />

and blends.<br />

Japanese Cherry<br />

Blossom<br />

A beautiful blend of sencha green tea enriched with rose petals,<br />

currants,candied pineapple cubes and cherry blossoms. This green tea<br />

base is beneficial for health as the antioxidants and polyphenols mop up<br />

free radicals and support your bodies abilities to detox itself. It has a fruity<br />

floral flavour that is truly magnificent. All green teas taste best when made<br />

with a lower temperature of water ( about 75 degrees ) this prevents them<br />

from becoming bitter in taste.<br />

Special Milky<br />

Oolong<br />

Oolong tea is somewhere between a black tea and a green tea, and this one<br />

is unique in its taste. Despite the name there is actually no milk in it, and<br />

although it smells soemthing like white chocolate it is named that because<br />

it creates a pale milky liquour once brewed. The leaves start out rolled up<br />

in tight balls and expand hugely when hot water is added The flavour is<br />

delicate and sweet as well as refreshing. Oolong tea provides many health<br />

benefits, is a metabolism booster and is packed full of very steadily released<br />

caffeine, so is great if you need extra energy. The leaves can be brewed up<br />

to 5 or 6 times and taste delicious every time. I love to start the day off with<br />

this one and come back to it throughout the day.<br />

How we inadvertently push love and<br />

intimacy away and how to draw<br />

it back to us again.<br />

Once upon a time there is a little girl who just<br />

wants her daddy to love her; and he does.<br />

But not in the way she understands love.<br />

She needs him to take an interest in her,<br />

spend time with her, compliment her, hear<br />

her, remember to pick her up and when her<br />

birthday is. At the same time in another place<br />

there’s a little boy, who wants to be a good<br />

boy for mummy, he wants her appreciation,<br />

her respect and trust but try as he might<br />

to win her approval he feels criticised and<br />

somewhere deep down he’s decided that when<br />

she’s not happy it must be his fault, It must be<br />

something he’s done wrong.<br />

This little boy and girl grow up and each<br />

go out looking for the one who’ll give them<br />

what they feel they missed out on. Both with<br />

the deeply held belief that they’re somehow<br />

lacking, somehow bad inside, not quite good<br />

enough and all they need to do is to meet<br />

someone who will make them feel good and<br />

whole. And at the same time both believing<br />

that if anyone comes too close they will see<br />

that they are indeed unlovable or not good<br />

enough,<br />

Then comes the strange dynamic, despite<br />

the greatest efforts they both attract the type<br />

of person who’s a reflection of how they feel<br />

about themselves. They attract someone<br />

who ultimately treats them the way they treat<br />

themselves. Someone who is unable to meet<br />

their true needs.No one is going to treat you<br />

any better than you treat yourself.<br />

But by changing your beliefs about yourself<br />

on the inside you’ll totally change the vibe<br />

you put out on the outside. You’ll then start<br />

to attract the love and relationships that you<br />

really want, that will really satisfy you.<br />

These negative beliefs we have are like<br />

a nasty voice shouting, “you’re not good<br />

enough! you’re not lovable! etc” We believe<br />

it, and we’re afraid that if anyone gets too<br />

close they’ll realise that we’re exactly that,<br />

not good enough, unlovable etc. This voice<br />

comes from a belief we formed when we were<br />

little and we can turn it around.<br />

This nasty voice wants us to stay small and<br />

safe and not reveal who we really are, but this<br />

is the opposite of safe. Keeping hidden is not<br />

safe. It becomes a habit and a habit can be<br />

changed.<br />

How this can show up in our relationships:<br />

.You may stay with a person who repeatedly<br />

cheats on you even when they’ve shown<br />

themselves to be un trustworthy.<br />

.The relationship keeps you both small and<br />

your partner doesn’t support you to be the<br />

best person you can be, to learn and grow, or<br />

they don’t want to learn and grow with you. He<br />

or she may be very critical and put you down.<br />

.You’re in an abusive relationship, this could<br />

be physical or emotional abuse. You may be<br />

keeping details of your relationship secret<br />

from family and friends out of shame.<br />

.You may feel that you can’t be yourself in the<br />

relationship. That you’re constantly changing<br />

who you are to fit what you think your partner<br />

wants you to be to gain their approval and<br />

acceptance.<br />

.As a woman you may find yourself being<br />

overly critical and resentful of your partner.<br />

.As a man you may find that you withdraw,<br />

this may be physically, emotionally, sexually,<br />

or that you zone out when she talks to you as<br />

you get the nagging feeling that whatever you<br />

do you can’t make her happy.<br />

A person who feels great about who they are<br />

is magnetic. Putting yourself first, making<br />

yourself and your wellbeing a high priority<br />

raises your value enormously, you’re setting<br />

the example for how others need to treat you<br />

if they want to be around you and in your life.<br />

When you build yourself up and treat yourself<br />

with the utmost care and respect you’ll get<br />

that you’re worthy, special, deserving of great<br />

things. Then you’ll automatically attract a<br />

mate who’ll be able to treat you this way, and<br />

you’ll naturally filter out those who are unable<br />

to treat you in the way you now feel you<br />

deserve.<br />

The question for me is how can we be whole<br />

and complete for ourselves? How can we<br />

end this relentless search for someone to<br />

complete us? Like we are somehow broken or<br />

incomplete.<br />

In these modern times of marrying for love we<br />

choose a partner for our emotional security.<br />

When you meet your own needs, when you<br />

really look hard at what you’re willing to<br />

tolerate in a relationship and what is no<br />

longer tolerable; a shift starts to happen in<br />

what you accept and what you believe you<br />

deserve.<br />

When you start to ask yourself what you are<br />

dissatisfied with in your partner and how can<br />

you meet that need in yourself you gradually<br />

become empowered to change your<br />

experience of the relationship. For example<br />

are you feeling neglected? I would ask you,<br />

where are you neglecting yourself? What<br />

can you do to treat yourself with the utmost<br />

care? Instead of waiting for your partner to<br />

do it. If your complaint is “he never listens<br />

to me”, then I ask you, where in your life are<br />

you not listening to yourself and your deep<br />

needs?<br />

This is about assuming full responsibility<br />

for your emotional well-being. This is you<br />

taking care of and accepting yourself. This<br />

is self love.<br />

This kind of self love and self acceptance<br />

and taking full responsibility for ones<br />

emotional needs clears the way for the<br />

intimacy and connection that we all deeply<br />

After becoming a vegan last year for many<br />

reasons, I still sometimes feel uncomfortable<br />

with announcing this in a social setting. I say<br />

it and almost wait for the views of others to<br />

ascend, I don’t see the same with people that<br />

are vegetarian so why is it that people see<br />

veganism as an extreme?<br />

Many people that have become vegan have<br />

done so after being educated about the animal<br />

agriculture and feel quite strongly about it from<br />

a compassionate point of view. Yet many of us<br />

feel hushed to voice our opinions in fear of being<br />

seen as an activist. So why is it that the “V” word<br />

is so controversial? And seems to evoke strong<br />

opinions and feelings in others. I speak to Rich<br />

and Nick Stone, twins, that currently work in<br />

the building trade and became vegan two years<br />

ago. They say they would never change it for the<br />

world, no matter how much people may take<br />

the piss. Rich is currently studying nutritional<br />

medicine and the two of them have plans to go<br />

traveling for adventure and further study in plant<br />

based nutrition, Ayurveda and yoga. Nick and<br />

Rich generally finish each others sentences, so<br />

these answers are combined points of view.<br />

Can you tell me how your vegan journey started?<br />

I suppose you could say I was having a bit of a low<br />

point wondering what am I doing in my life at the<br />

moment, then I was about to order 20 chicken<br />

breasts, (we were going to the gym a lot at the<br />

time and thought we needed the meat for the<br />

protein) It really dawned on me and struck a cord<br />

and I thought shit I’m going to be contributing to<br />

all that death and I would be accountable for the<br />

death of 10 chickens. It didn’t feel good. We then<br />

went veggie for 6 months. We carried on eating a<br />

lot of cheese and dairy, but the more we looked<br />

into it we realised that this wasn’t ethical. Some<br />

friends of ours went vegan and we were like wow<br />

thats cool, imagine going the whole way, so we<br />

did.<br />

Can you explain how some people say becoming<br />

vegan can help with health?<br />

When you look at the human body and you look<br />

at what foods are aligned with the body and what<br />

foods have negative affects on the body you will<br />

see how animal produce does not tally up with<br />

what the human body is designed to consume.<br />

We don’t deal well with dietary cholesterol and<br />

eating meat is very heavy on the body. Whereas<br />

with plant foods, our bodies are designed to<br />

take in all of the antioxidants. There are so many<br />

studies out there that have proved that illness<br />

and diseases can be stopped and reversed from<br />

living on a plant based diet.<br />

Apart from health benefits and saving animals<br />

,veganism can hugely help the environment.<br />

Some people may even go as far as saying it<br />

could save the planet. What are your thoughts on<br />

this?<br />

Yeah totally the foot print that animal agriculture<br />

has on the planet is huge. The amazon rainforest<br />

is being torn down to create space for crops to<br />

grow food for agriculture but the rainforest is the<br />

worlds lungs. The documentary Cowspiracy is<br />

amazing to give all the environmental facts and<br />

figures, we would really recommend that people<br />

should watch it.<br />

What was the hardest thing about becoming<br />

vegan?<br />

Giving up cheese.<br />

And how did you get past that?<br />

Manned up, seriously you just think of the<br />

animals first.<br />

How do people take it when you say that your<br />

vegan?<br />

More recently it feels more accepted but I think<br />

that’s because we are a lot more confident. To<br />

begin with people would take the piss they would<br />

think that it was extreme and weird, but it helps<br />

now that were more educated.<br />

Many people seem to think that being vegan is<br />

extreme but yet don’t question whether killing<br />

animals is extreme, whats your view on this?<br />

extremism of veganism, by bite size vegan. I<br />

believe it boils down to, that some people aren’t<br />

truly educated on what goes on in the system of<br />

producing animal products and they are blinded<br />

by agriculture propagander.<br />

You mentioned before when meeting someone<br />

new you prefer to strike up a connection with<br />

them before you tell them your vegan? Why is it<br />

you feel you have to do this?<br />

You mean before we drop the V bomb! Well we<br />

never say, “Hi we’re Nick and Rich and we’re<br />

vegan” The majority of people seem to think that<br />

vegans are skinny and frail, tree hugging hippies<br />

(ok a little of that might be true) I don’t think<br />

we are always portrayed well in the media, so<br />

I suppose our approach has been to build up a<br />

good rapport through familiar ground and quite<br />

often say that we have a plant based diet. We<br />

never tend to say the vegan word as it seems to<br />

have a negative connotation with it, not to every<br />

one, but to many mainstream eaters.<br />

It seems sad though, do you not think that by<br />

acting the way we feel compelled to act, is also<br />

stopping the way we should be proud of being<br />

vegan. Sometimes it feels like we are tip toeing<br />

around people?<br />

The aim of the game is to educate people and<br />

to all live in a happy world where the animals<br />

and humans run around naked together haha! I<br />

completely agree sometimes we do beat around<br />

the bush, but each situation is completely<br />

different, some people that eat meat are totally<br />

cool and admire that we are vegan.<br />

On the other hand some might say veganism has<br />

become quite fashionable over the last couple<br />

of years. What’s your take on this? Do you think<br />

it could just be a fad or do you think people are<br />

becoming more aware?<br />

It does seem that it has become very fashionable,<br />

but to what proportion I would be unaware,<br />

because I don’t follow the media, we actually<br />

came off social media around the time we<br />

became vegan. I didn’t want to become part of<br />

this trend. I believe some people genuinely wake<br />

up to what is going on with animals, the planet<br />

or health. Others might give it a try but then<br />

accidentally eat a beef burger.<br />

Do you get negative comments for being vegan,<br />

and how do you deal with them?<br />

We get a bit of harmless banter. Some days I deal<br />

with it better than others. The bottom line is,<br />

I know the real truth and why I’m doing it and<br />

those people don’t. They haven’t actually sat<br />

down and processed the reality of what is going<br />

on. So I don’t really care if they think I’m an<br />

extremest because I know the truth.<br />

Sometimes people almost feel the need to excuse<br />

themselfs for being vegan. I’ve often found my<br />

self saying, “Sorry, I’m vegan,” when in actual<br />

fact I’m not sorry at all. Do you ever find yourself<br />

doing this and do you think we should excuse<br />

ourselves?<br />

Yes, I have and sometimes do, its a confidence<br />

thing. We don’t need to excuse ourselves but<br />

when living in a society where the majority in<br />

this point and time aren’t vegan, it can be an<br />

inconvenience when your invited out to eat. We<br />

often offer to bring our own dish.<br />

Do you think its important everyone is educated<br />

about farming agriculture?<br />

100% I think all people should be educated,<br />

everyone should be aware.<br />

If someone was thinking about becoming vegan<br />

what would your advice be to them?<br />

Do it! Educate yourself and do a comfortable<br />

transition period.<br />

It can bring you power, it can make you<br />

miserable and it can cause you abundant<br />

happiness. Since you were born it has been<br />

evolving inside you and affecting every decision<br />

you make. You think you’re in control? Think<br />

again. Do you know your ego?<br />

The word ego is thrown around a lot in<br />

everyday conversations. To many of us the idea<br />

of an ego is linked to a superiority complex - I<br />

am better than / sexier than / smarter than /<br />

quirkier than / more spiritual than …<br />

Yoga and other cultures have taught for<br />

thousands of years that understanding and<br />

separating ourselves from the ego is our<br />

path to enlightenment. At the opening and<br />

ending ceremony of my yoga instructor<br />

course we chanted and threw spices into a fire<br />

symbolising the burning of our egos.<br />

I clearly remember sitting<br />

down afterwards totally<br />

perplexed, what did burning<br />

the ego even mean?<br />

I started to think that I should throw out my<br />

mascara, only wear boring clothes and ditch<br />

everything that made me feel good about<br />

myself. I asked my guru Mahesh after class<br />

if he could explain what the ego was and he<br />

very kindly spent our next philosophy class<br />

talking about just that. He explained the ego as<br />

comparing yourself against others.<br />

The ego is a build-up of memories, beliefs and<br />

opinions – we all have one. What matters is if<br />

our ego is healthy or not.<br />

An unhealthy ego is like a<br />

parasite,<br />

it lives within us affecting our behaviour and<br />

ultimately our health and although we may<br />

think we are under control it controls us.<br />

Caroline McHugh (Author and motivational<br />

speaker) describes two states of a fragile ego,<br />

the superiority complex and the inferiority<br />

complex. The inferiority complex is extremely<br />

common, it is a lack of self-love and refusing<br />

to accept ourselves as we are. A healthy<br />

ego McHugh calls an ‘interiority complex’ - a<br />

completely uncomparative state. Developing<br />

this interiority complex she goes on to explain<br />

is the art of being yourself. We are born<br />

into a particular environment with a specific<br />

biological blueprint. As young children we<br />

are ego-less. We have a unique identity right<br />

then and there which is everlasting, pure and<br />

constant throughout our lives.<br />

When yoga and other philosophy based<br />

systems teach us to remove the ego it is to<br />

remind ourselves that we are more than our<br />

egos, and to try glimpse this childlike and<br />

pure source. Has anyone seen those Natwest<br />

adverts “we are what we do”? I hate them! Your<br />

ego is what you do. Listen, this is important,<br />

you are not the clothes you wear, you are not<br />

your past, you are not defined by your thought<br />

processes – all those things change over time.<br />

You are everlasting, pure and constant. To find<br />

yourself you need to scrape everything else<br />

away,<br />

your true joyful self lies<br />

under the ego.<br />

So where does the ego come from? As we grow<br />

we develop opinions related to ourselves. “I<br />

am good at writing, I have stumpy legs, I can<br />

sing well, I am terrible at maths, I am awkward<br />

in social situations… “. None of those opinions<br />

would exist if we were the only human alive -<br />

they are all comparative. Those opinions form<br />

a unique mixture of superiority and inferiority<br />

complexes as your ego. If you were born in<br />

the wilderness with no contact with humanity<br />

you would still have a sense of self, an ego,<br />

but it would be an interiority complex – totally<br />

uncomparitive and healthy.<br />

So an unrealistically healthy ego is fully<br />

accepting yourself without comparing yourself<br />

to anybody else.<br />

Once you can accept<br />

yourself as you are you can<br />

celebrate what makes you<br />

different<br />

and that is when you can be the awesome<br />

version of yourself that you were designed to<br />

be.<br />

Realistically we all compare ourselves to others<br />

in some ways. In the capitalistic word we live<br />

in we need to make comparisons in order to<br />

survive. However, we have many habits that are<br />

unnecessary and through diligent practice we<br />

can strip them away. Looking around the urban<br />

environment so many of us live in, we can see<br />

unhealthy ego traits everywhere. Selfie culture,<br />

conversations all about talking and not about<br />

listening, competitiveness in the workplace<br />

and even the yoga studio! Not to mention the<br />

epidemic lack of self-confidence sweeping the<br />

world.<br />

So let’s wrap this up. You are not only your<br />

ego. Try and get to know your true self under<br />

the ego – and often this means stripping the<br />

ego away. You need an ego in the capitalist<br />

world so try and make it a healthy one by<br />

gradually changing your habitual superiority<br />

and inferiority complexes. Then use your ego<br />

to help you express your unique qualities and<br />

achieve what you want to achieve. You are here<br />

in this crazy beautiful world and you can do<br />

great things – your ego can help you, don’t let it<br />

hold you back.<br />

Jack Roper is a young talented artist studying<br />

film at the The Arts University Bournemouth. He<br />

uses art to express his spiritual journey. When<br />

Jack turned up to meet me with his floppy hair<br />

and effortless style, I had a nostalgic feeling of<br />

a crumpled grainy poster blue tacked on my<br />

bedroom wall back in 1995. Jack didn’t know who<br />

River Phoenix was, but my guess would be they<br />

would have got along just fine, maybe like a Cara<br />

to Kate. A film student with many talents, Jack<br />

tells us about his inspiration behind his art work<br />

sharing his conclusions on spirituality and how<br />

by simply saying yes has brought him out from<br />

hiding. Jack is just one of those people that is so<br />

easy to believe in.<br />

Tell me a little bit about your background and<br />

what got you into your arts?<br />

I guess my Dad, he’s an actor and my brother,<br />

he works on films. So I guess the film stuff has<br />

always been in the family. When I was younger<br />

I was in a play with my Dad, I had an agent for<br />

a while and did a few auditions, but nothing<br />

really came of it. Then when I was 12 we moved<br />

to Spain, I felt trapped in Spain, it was more<br />

academically driven. It was when I came back<br />

to the UK at 17 I started doing more acting and<br />

enrolled on a filmmaking course. The art stuff<br />

has always been in me. When I was in Spain I was<br />

just watching a shit load of films, I guess I was<br />

just filling my brain with potential concoctions<br />

to make ideas happen. You watch a lot of films<br />

and then you mash them all together in your<br />

head and come up with good ideas I guess. I tried<br />

drawing, I was kind of good at it but it would take<br />

me about 10 hours to draw one portrait. I’ve also<br />

been playing the guitar and trying to sing since<br />

I was a teenager. I’m not that good, but my voice<br />

is now listenable. It’s a lot of practice, trying out<br />

new stuff on my guitar and trying out new stuff<br />

with my voice. I’ve a couple of old friends from<br />

Spain. We always send each other our songs, we<br />

used to make music together so now whenever<br />

we get together we just pick up where we left off<br />

and start writing songs again. It’s really nice to<br />

have feedback from people doing the same sort<br />

of thing as you, and we’re always really honest<br />

with each other.<br />

My family are my harshest critics but recently<br />

my brother sent me a video of Ed Sheran on the<br />

Jonathan Ross show. He showed a song from<br />

when he was 15 and he could not sing at all. It<br />

made your ears bleed. So it gives me hope.<br />

You mentioned to me that you feel you are on a<br />

bit of a spiritual journey. How did this start for<br />

you?<br />

I believed in god as a kid then I became atheist,<br />

then I decided there is something to it, there is<br />

some sort of spiritual connection where we’re all<br />

connected, theres not one saviour, or the great<br />

being. We are just this one thing collectively.<br />

I’m not sure what planted the seed. One day it<br />

popped into my head that this is something I’ve<br />

been thinking a lot about. When I moved in with<br />

a housemate, who was really into spiritual things,<br />

we discussed it a lot, some stuff I agreed with<br />

some stuff I didn’t. But it made me do my own<br />

research into it and I listened to talks by Allan<br />

Whats and Terran McKenna. Learning about<br />

Buddhism and spirituality in general made me<br />

come to the conclusion that a lot of this stuff<br />

was true and thats not coming from a faith stand<br />

point I’m quite a logical thinker, so for me to<br />

come to that conclusion makes me think anyone<br />

can.<br />

My housemate lent me a book called<br />

Biocentrinism By Robert P. Lanza. He said I<br />

think you will really dig this book. I took it on<br />

the train home to Brighton, read it every night<br />

and finished it on the train journey back. It really<br />

just confirmed everything I theorised in my<br />

head. How the universe doesn’t create life, life<br />

creates the universe. So everything we see, we<br />

see because we see it, if there isn’t an observer<br />

then the universe wouldn’t exist. It’s like the old<br />

proverb if a tree falls in a forest and no one’s<br />

around to hear it does the tree make a sound?<br />

and the answer actually is no, it doesn’t. Sound<br />

waves go through the air and they are only<br />

converted to sound when they hit our eardrums,<br />

So there would be no sound if we weren’t around<br />

to hear it. Its just really interesting to think<br />

about.<br />

So what would you class as some of your core<br />

beliefs?<br />

I believe if you have a positive outlook your life<br />

becomes more positive. If you have a negative<br />

outlook then your life becomes more negative,<br />

It’s all in the way you view the world, so you<br />

could be in the worst situations but as long as<br />

you have a positive outlook it’s not going to affect<br />

you, it’s not going to bring you down. When I<br />

was growing up I thought right, if I’m a pessimist<br />

and always expect the worst then I can never be<br />

disappointed, and that was a horrible, horrible<br />

way to look at the world, because it just meant<br />

that I was always miserable and going through<br />

the motions not really doing what I wanted and<br />

thought, oh well bad shit happens and theres<br />

no way to stop it. Now I look at the world in a<br />

positive way. People want people to succeed and<br />

want to help each other. Theres always going<br />

to be some negative people but I choose not to<br />

associate myself with them, When you change<br />

your outlook and realise that you don’t need<br />

some negative people in your life, you just start<br />

to surround yourself with positive people. It’s not<br />

even intentional it just happens. They are drawn<br />

to you because of your energy I guess. I believe<br />

in synchronicity and lots of little things sync up,<br />

I get more work from it because I’m saying yes<br />

to more things. I suppose I’m being myself more<br />

rather than just hiding away. There’s always an<br />

opportunity and depending on your outlook you<br />

will decide whether to take that opportunity or<br />

not.<br />

You describe your art as a manifestation of your<br />

journey, tell me more…..<br />

It started out as I wanted a tattoo, I didn’t just<br />

want some random piece of art, I wanted a<br />

piece that means something to me. Im going<br />

through this journey and I wanted something<br />

that represented that and my new outlook on life,<br />

I started thinking about how I could use shape<br />

and form to represent that. I find it easier to<br />

represent visually rather than verbally what I’m<br />

going through on my journey. For instance on<br />

this design (opposite page) you have the centre<br />

which is empty which represents the ego then if<br />

you branch out you’ve got an area which is the<br />

people you surround yourself with, then you have<br />

their egos, then outside of that you have got the<br />

three circles which represent the expanse that<br />

you you can delve into with consciousness, its<br />

all connected. Another one of my designs was<br />

inspired by my meditation practice, I started<br />

realising that peace really did come from within<br />

and I wanted to represent that, if you base your<br />

whole sense of self from that than you will find<br />

it, rather than looking for outside sources. As<br />

well as happiness you can’t find it from outside it<br />

all comes from within just like biocentrism, the<br />

whole universe you see comes from within, If that<br />

makes sense?<br />

It’s difficult to sometimes get across what you<br />

mean with words it’s such an abstract concept.<br />

You’re studying film at the moment. Where do see<br />

yourself progressing?<br />

I decided really early on that I didn’t want to<br />

spend 9-5 in an office punching in numbers,<br />

I want to live an interesting life that I will be<br />

happy living. As soon as I knew that I knew<br />

film was the best bet for me as there’s so many<br />

different areas to go into, It’s all about telling<br />

stories. In life I’ve always been an observer, I<br />

watch stories evolve in front of me and thats<br />

what I find enjoyment in. Watching someone<br />

tell a story based on something they might have<br />

seen or experienced. All sorts of films have<br />

some hint of truth in them. Even if it’s fully<br />

fantasy there is still some hint of truth in it.<br />

There was something that set this story teller in<br />

motion to come up with this whole world, to tell<br />

and share with people.<br />

The concept of sustainable fashion is an<br />

oxymoron in itsself. Given that fashion is<br />

all about the new and latest trends, it’s no<br />

wonder why people are confused by such a<br />

contradiction. Fashion is the second largest<br />

polluting industry on our planet. Many don’t<br />

realise the impact that fashion has on the<br />

world. Here we interview Kelly Levell, an<br />

expert in ethical and sustainable fashion<br />

who gives us her insights and a few tips<br />

on what steps we can make to lessen our<br />

fashion footprint.<br />

What is your opinion on how important<br />

sustainability is in the fashion industry today?<br />

I think ethical fashion has reached tipping point,<br />

I was at London fashion week in February and<br />

all of the window displays in Selfridges were<br />

communicating ethical fashion. This is a clear<br />

sign that the fashion industry is starting to take<br />

sustainable fashion more seriously.<br />

Do you think that the consumer is becoming<br />

more aware of the fashion industry?<br />

Yes, 76% of UK adults pay attention to ethical<br />

credentials that brands are using today. The<br />

attitudes of consumers are changing a lot. When<br />

they are out shopping and if the choice of an<br />

ethical item is there they will tend to choose<br />

this option. This is where brand transparency<br />

is important, for instance H&M now do a green<br />

label, So they are offering the products for the<br />

consumers albeit in a smaller way.<br />

How have you seen the sustainable fashion<br />

industry change/develop in the past five years?<br />

It has changed by growth, I think there is an<br />

array of fabulous brands that you can actually<br />

go and buy from now, whereas 7 years ago when<br />

I first started out on my journey with ethical<br />

fashion and my lifestyle change, I’d made a<br />

commitment to myself that I wasn’t going to buy<br />

from the high street anymore, So I was looking<br />

all the time and It was quite hard. Now I just<br />

want to put all the brands in one place and tell<br />

everyone where to find them.<br />

Where do you see the sustainable fashion<br />

industry heading in the future?<br />

I think it will become the norm, it wont be a<br />

separate niche thing. Everyones going to have to<br />

be more transparent with there practices, their<br />

employment, how they treat their employees<br />

because consumers know the truth so they cant<br />

hide any more.<br />

I believe it is up to the next generation of<br />

designers to clean up fashion. New designers<br />

are taught about ethics and sustainability within<br />

fashion yet there is still that influence of how<br />

fashion is today. Do you believe that young<br />

people currently have enough role models ?<br />

It is up to the next generation to be the change<br />

that we want to see in the world. They are getting<br />

the education now about ethical practices<br />

within businesses and the planet and ecology,<br />

that wasn’t in the national curriculum when I<br />

was at school. So they are growing up with the<br />

awareness and they are going to be making that<br />

change. The response we get from young people<br />

is fantastic. I work with them through the Miss<br />

Dorset competition to find positive role models<br />

for young people. We put them through award<br />

It doesn’t need to be done. There are other<br />

things that we can use. There are technological<br />

advancements in fashion and industry, practices<br />

to make things that are just as good. There are a<br />

lot of fake furs out there now which people can’t<br />

tell if they are real or not.<br />

In your opinion what is the most important thing<br />

to look for in ethical fashion?<br />

It’s really hard for me to choose one thing, I<br />

would just say do your best to buy ethical when<br />

you can. Don’t beat yourself up about it but when<br />

theres an ethical choice make it.<br />

Some people think that ethical fashion can be too<br />

expensive, how would you respond to this?<br />

Quality products do come at a premium. Buy less<br />

but better quality, this way you have clothing that<br />

lasts and doesn’t misshape.<br />

Could you name three ways of shopping more<br />

ethically?<br />

Shop Vintage, You can shop in charity shops for<br />

clothes that are nearly new or sometimes they<br />

are new and still have the tags on. Also check out<br />

kilo event sales.<br />

Buy less but better quality items from sustainable<br />

brands such as Peopletree. Look for the labels<br />

and logos, so there is the certified fair trade logo,<br />

soil association logo for organic. Keep your eyes<br />

peeled.<br />

Start shopping in your wardrobe first because<br />

you will probably rediscover things that you<br />

didn’t realise you had. You will also have it fresh<br />

in your mind what you already own so only look<br />

for items that go with them, rather than buying<br />

blind and impulse buying.<br />

Are you the change that you want to see in the<br />

world?<br />

I believe that I am the change that I want to see<br />

in the world and I believe that if everybody made<br />

a pledge to themselves to make a change and be<br />

the change then we will see the change - A more<br />

sustainable future. No ones perfect but you’ve<br />

just got to do your best.<br />

Vintage romance meets modern luxury as Clerkenwell<br />

vintage fair arrives at its new home, the 5 star<br />

Courthouse Hotel in Shoreditch, during<br />

London Fashion Week.<br />

After checking into The Court house Hotel<br />

in Shoreditch and much to my delight<br />

realising that we were there for the first<br />

weekend of the Clerkenwell vintage<br />

fashion fair, it would be rude not to give<br />

up out Sunday afternoon plans to stroll<br />

around the many colourful stalls.<br />

Shopping Vintage is just one way to be<br />

ethical in your purchasing choices. It<br />

saves clothes from landfill and gives us<br />

an ethical way of satisfying a desire for<br />

new clothes without embracing fastfashion<br />

culture, let alone the fact that<br />

it’s completely nostalgic and you can get<br />

amazing one off pieces that you are not<br />

likely to see other people in. And don’t<br />

be fooled that you have to look like a<br />

50s throw back to wear vintage. Mix and<br />

match new and vintage items to create a<br />

unique look.<br />

The Clerkenwell Vintage fashion fair<br />

has been running since 2009, curated by<br />

Savitri an award winning events organiser<br />

with years of experience in the fashion,<br />

film, advertising and music industry. For<br />

2017 The fair has moved to The Court<br />

House hotel in Shoreditch steeped in<br />

Vintage glamour itself, the hotel used to<br />

be, yes you guessed it - The Court House,<br />

which was a regular meeting place for the<br />

notorious Krays brothers. The super chic<br />

bar with jail themed cocktails, still has<br />

the cells in place were Reggie and Ronnie<br />

where once locked up and now celebrated<br />

in these stylish VIP booths.<br />

Sure enough the queue started forming as<br />

soon as the doors opened. Its great to see<br />

what everyone was wearing, I’m not sure<br />

that any one walked past me that hadn’t<br />

made an effort. The stalls were filled<br />

with garments ranging over many eras<br />

and ranging through many prices. From<br />

a pair of 1960s suede gloves for £8 to a<br />

1920s silk gown for £1700. Accessories<br />

and books are also on sale, I was quite<br />

mesmerised by a collection of original<br />

Biba posters.<br />

Back in 2009 Vintage fairs were popping<br />

up all over the place, but this one is<br />

definately here to stay. You can tell that<br />

stall holders are carefully selected just<br />

as the venue is, which makes the event a<br />

truly glamorous experience.<br />

After a skate boarding accident 7 years<br />

ago Jamii had to cut down on her dance<br />

teaching career but was not willing to give<br />

up, she knew she needed to keep her body<br />

strong and took up yoga. A Mum, a DJ, and<br />

dance teacher with a multitude of hobbies<br />

and interests. She is certainly a doer. Jamii<br />

always had a dream to go to India for her<br />

30th birthday, she didn’t know how she was<br />

going to do it but knew one way or another it<br />

would happen. She has recently completed<br />

her yoga training in Rishikesh, India. It’s<br />

early days for Jamii but she is one of the<br />

most determined women I have ever met.<br />

Here we talk about her eventful and very<br />

honest account of India.<br />

I understand that your trip to India was quite<br />

eventful and didn’t go quite as you had foreseen,<br />

How did your journey begin?<br />

Once I got off the plain, I was meant to be getting<br />

a coach from the airport to Rishikesh, which is<br />

an 8 hour journey, to be told that there was no<br />

coach, so I tried to pay for a taxi. I had to get<br />

my bank card out of my suitcase but in doing<br />

so I then locked my bank card in my suitcase<br />

with my keys. I left the airport to get some air,<br />

only to realise they wouldn’t let me back in to<br />

the airport. I needed the toilet, had no money,<br />

my food was locked in my suitcase. I felt lost in<br />

the middle of India. Eventually I managed to get<br />

some internet reception, called the hotel, which<br />

they then contacted a driver to come and pick<br />

me up. I then had a 8 hour journey bursting for<br />

the toilet.<br />

What were your first thoughts when arriving in<br />

India, was it what you expected?<br />

No, I thought it would be westernised and<br />

cleaner, but it was just absolute chaos and<br />

mayhem. Everybody beeping their horn, dust<br />

and dirt everywhere, kids on the street running<br />

around naked, animals pulling carts that were<br />

way too big for them. I actually couldn’t believe<br />

how disorganised and how much poverty there<br />

was. On the 8 hour trip every few minutes you<br />

would see a massive pile of rubbish and there<br />

were dogs dying on the side of the road; really,<br />

really skinny.<br />

What would you say was the first challenge when<br />

you got to the yoga school?<br />

I had booked on to do my ashtanga teacher<br />

training course and when I got there I was<br />

dropped in the middle of a more intense teaching<br />

course, which meant I had to study a lot, practice<br />

a lot to catch-up with everybody else. The group<br />

had already bonded and I was the new one.<br />

Do you feel your training challenged you<br />

mentally?<br />

I had to really focus on the education side<br />

of it because I’m not very good at retaining<br />

information, so I found that the physical<br />

challenge wasn’t so hard. I was learning, training<br />

then catching up. It was non-stop continuously<br />

for 2 weeks.<br />

Did you have any moments of realisation, aha<br />

moments as I refer to them?<br />

I did a day of silence, I normally talk a lot, I think<br />

thats more of a nervous thing, but the silence<br />

gave me a chance to recognise that I really enjoy<br />

being in peace and when people don’t have an<br />

expectation of me to talk I didn’t feel the need<br />

to talk and I learnt a lot about myself in those 24<br />

hours. I’ve always been a talker not a listener and<br />

now I understand the importance of listening.<br />

Did you take a book?<br />

Yeah I did, I read a book called living with The<br />

Himalayan Masters and on the way home I<br />

bought a book on ayurvedic diet which I found<br />

massively interesting and I want to go on and<br />

learn more about that now.<br />

Do you feel yoga is a way of life or a way to<br />

exercise and meditate?<br />

Yoga is a way of life, it’s not just the postures, the<br />

postures are one limb of the eight limbs of yoga.<br />

The eight limbs cover your breathing, your way of<br />

eating, your way of treating yourself and others.<br />

The postures themselves are to prepare the body<br />

for long periods of seated meditation.<br />

How’s it going now at home?<br />

The yoga classes are going brilliantly, I’m<br />

getting fully booked quite easily. I am practicing<br />

regularly, but not as often as I’d like to and I<br />

haven’t had any time to study since I’ve been<br />

back. I will never stop learning. I want to do<br />

another course already to keep evolving my<br />

knowledge.<br />

If there are other people out there that have the<br />

dream of becoming a yoga teacher what would<br />

your advice be?<br />

Do plenty of yoga practice before you go and do<br />

your teaching course so you’re physically ready<br />

for it. Always be open to whatever your teacher<br />

wants to teach you and always remember that<br />

you never stop learning.<br />

Was your journey home any better?<br />

Well thats another adventure, which included<br />

scary mopeds and busses, but I made it home<br />

alive and well.<br />

Fresh alkalising Juice<br />

makes 3 pints<br />

1 lemon, 1 apple, 5 inches of ginger, 1 banana, 1 avocado, handful of blueberries, 3 handfuls of spinach,<br />

3 of kale, 4 stems of cavolo nero, 5 broccoli heads, 1/3rd of a cucumber, 1 red bell pepper, 1 pimento<br />

pepper, 3 beetroots, bunch of coriander, mint and parsley, ¼ of a red cabbage, ¼ of a green cabbage,<br />

bunch of spring greens, 1 large sweet potato and 6 carrots.<br />

Golden milk<br />

2 week supply<br />

100grams Ceylon cinnamon<br />

100grams turmeric<br />

1 teaspoon black pepper<br />

2 tablespoons of coconut oil<br />

In a pan, put the turmeric, cinnamon, the ground black pepper and half pint of water (for now).<br />

Bubble it all over a low heat stirring occasionally for about 15 mins<br />

until it forms a gloopy paste, you may need to add more water to get that consistency. Let the paste<br />

start to cool and then stir in the coconut oil.<br />

Once cooled pop into a jam jar/ kilner jar etc, pop in the fridge and it will set. I use a large teaspoon<br />

every night in warm koko milk and the same every morning or mix in porridge for breakfast.<br />

Sweet TomatoTostada<br />

serves 1<br />

1 soft tortilla wrap<br />

140g Fresh sundried tomatoes diced.<br />

¼ red onion diced<br />

1 avocado<br />

Juice of ½ lemon<br />

Small bunch of mint and coriander chopped<br />

Salt and pepper<br />

Vegan sour cream and violife cheese (optional)<br />

Fresh diced chilli<br />

Handful of watercress<br />

Cress and grated carrot<br />

In a bowl mix the onion, tomatoes, mint and coriander.<br />

Get the avocado and mash until desired consistency, add the lemon juice and salt and pepper and<br />

mix.<br />

Pop the tortilla into a hot oven for 5 minutes to slightly warm<br />

Once out, grate the violiofe cheese onto it then sprinkle the tomato and onion mix all over leaving a<br />

space in the middle for the avocado.<br />

I like to add my avocado mix to the middle, sprinkle the cress and carrot on top and also sprinkle<br />

fresh chilli and then a few drops of the sour cream.<br />

You can either fold in half or eat open like a pizza with the watercress on the side.<br />

Sweet potato and Quinoa<br />

curry<br />

serves 4/6 as a side dish or 2 as a main<br />

300 grams of Quinoa (rinsed)<br />

600ml water<br />

1 veg stock pot<br />

1 red onion diced<br />

2 sweet potatoes diced<br />

250g petit pois<br />

2 teaspoons of Garam masala<br />

2 teaspoons of cayenne pepper<br />

2 teaspoons of madras curry powder<br />

2 teaspoons of cumin<br />

2 tins chopped tomatoes<br />

Salt and pepper to taste<br />

1 teaspoon garlic granules<br />

Bunch fresh coriander<br />

Sprig of mint<br />

Alpro soya yoghurt (plain)<br />

¼ cucumber grated<br />

Dice the sweet potato and season with garlic granules, cumin and cayenne. Roast for 15 minutes until<br />

soft.<br />

In a pan fry the onions until slightly soft, add the quinoa, the veg stock pot, the water, all the spices,<br />

petit pois and the tinned tomatoes. Gently bubble away on a low heat stirring frequently as may need<br />

a touch more water depending on the cooking speed of the quinoa. It takes about 20 minutes for the<br />

quinoa to become light and fluffy but may need slightly longer. Mix in the cooked sweet potato, salt<br />

and pepper to season. Sprinkle the coriander on top of the curry to taste.<br />

Mix the grated cucumber, yoghurt and chopped mint into a bowl for the cucumbereita and serve on<br />

the side.<br />

Tofu Courgetti<br />

serves 2<br />

3 courgettes<br />

300 grams Cherry tomatoes<br />

Fresh coriander<br />

1 fresh chilli<br />

Cayenne pepper<br />

Juice of 1 lemon<br />

150grams firm Tofu (not silken)<br />

Oil of choice for frying (I use coconut oil)<br />

With your choice of spiralizer, make the courgetti. (I use a julienne peeler as it makes the courgettes a<br />

lot thinner and more like spaghetti)<br />

Set aside and start to prepare your tofu into small cubes (about 2cm squared)<br />

In a pot add your cherry tomatoes (whole) sliced fresh chilli, a splash of water, your lemon juice and a<br />

sprinkle of cayenne pepper (to your preference for heat) pop the lid on and fry on a low heat stirring<br />

occasionally.<br />

Once the tomatoes have softened nicely and the mix has become slightly saucy add your courgetti.<br />

Pop the lid back on and keeping on low heat gently simmer for 5 minutes.<br />

While it’s cooking get a stir fry pan with some hot coconut oil and stir fry the tofu on a fast heat with a<br />

dash of cayenne for flavour frying for 5 minutes also stirring occasionally.<br />

Once cooked add the courgetti to a bowl, toss the tofu on top and the fresh coriander and serve.<br />
