intoabowlandsrsothattheliquidisevenly<br />

distributed.<br />

Placetheflour,sugarandbuerinafoodprocesor<br />

andprocesbrieflyunlresemblingbreadcrumbs,<br />

thenslowlyaddtheeggthroughthefeedertube(or<br />

rubthebuerintothedryingredientsbyhandand<br />

srintheegg).<br />

Bringthemixturetogetherwithyourhands,wrapin<br />

clingfilmandchilforanhour.Thinlyroloutthe<br />

pastryontoaflouredsurface.Cutout12circleswith<br />

aflutedpastrycuer,largeenoughtofilthecasesin<br />

thepayn.Presgentlyintoeachcase,thenfil<br />

evenlywiththemincemeat.<br />

Cutoutanother12slightlysmalercirclesanduseto<br />

coverthemincemeat.Prestheedgestogetherwith<br />

theendofaforktoseal.Makeasmalslitinthetop<br />

ofeach,thenbrushlightlywithmilk.Chilforabout<br />

30minutes.<br />

Whilechiling,preheattheovento200C/GasMark<br />
