Food<br />
panettone & White chocolate Bread & Butter pudding<br />
Serves 8 Prep time: 20 minutes Cooking time: 35 minutes<br />
• 500g panettone, sliced<br />
• 50g butter, melted<br />
• 100g white chocolate,<br />
coarsely grated<br />
• 300ml full fat milk<br />
• 300ml double cream<br />
• 3 eggs<br />
• ½tsp vanilla extract<br />
• 80g caster sugar<br />
• 1tbsp muscovado sugar<br />
1. Preheat oven to 180°C.<br />
2. Brush the sliced panettone with the melted butter.<br />
3. Place the panettone upright in an ovenproof dish and<br />
sprinkle the grated white chocolate between the slices.<br />
4. Heat the milk and cream with the<br />
vanilla extract until scalding.<br />
5. Whisk the eggs and the sugar together, add the cream<br />
and milk, whisk again, and strain through a sieve.<br />
6. Pour evenly over the panettone. Sprinkle with<br />
muscovado sugar and bake on the middle<br />
shelf of the oven for 35 minutes.<br />
7. We serve a mango, papaya, passion fruit and<br />
redcurrant salad with this pudding.<br />
