Laura Werlin James Beard Award-winning Author, and one of the country’s foremost authorities on cheese Juli: Hi Laura, I have to say right off that I love cheese! When did you first find this love? Laura: Happy to hear you’re a cheese lover too! For me, my love affair with cheese began at the ripe old age of four, when my mother would give me butter-crisped triangles of grilled cheese. Tasting that melty cheese, I was hooked. J: What is the history of pairing cheese with wines? L: I don’t know if there’s a specific cheese and wine pairing history, but I do know that both have been on the table together in France and Italy for centuries, and likewise, the subject of numerous still life paintings, also centuries old. It’s an ageold romantic notion and one that suits me just fine! J: Me, too! Tell us about the term, “Edu-tainer”? L: I call myself that because that’s genuinely how I see myself. I am very serious about educating people about cheese, its flavors, its textures, the people that make it, and the wines that go with it, but I like to do that by injecting humor along the way. After all, we’re talking cheese and wine here, not politics! J: Being a spokesperson for consumer and trade organizations must be interesting. That must involve a lot of travel. What is life like for you while you are on assignment? L: I actually don’t do nearly as much of that as I used to do, but yes – it definitely involves travel. While it might get tiring sometimes, the rewards are more than worth any travel hassles. I get to go to cities I’d never go to. I get to eat in restaurants I otherwise probably wouldn’t get the chance to try. I meet all kinds of people, which I love to do. And I get to work with different companies, each of which has its own ethos and ways of doing business. Fascinating. J: You have done many television shows including CNN, QVC, The Martha Stweart Show, Fox & Friends, and CBS’s The Early Show. What do you find most enjoyable about production? L: Growing up in LA (Santa Monica), I loved everything about Hollywood and about television. That’s why at age 12, I decided I wanted to be in television news. Sure enough, that’s what I did for my first 15 years out of college. I worked in LA and San Francisco. But my TV news jobs were mostly behind the scenes, so it wasn’t until I started on the cheese path that I began to go in front of the camera. Having familiarity and ease in television studios definitely helped me do shows like Martha Stewart, even though I was a nervous wreck doing that particular show! J: Tell us about the James Beard Award and with what book did you win the award? L: My book, The All American Cheese and Wine Book, was the recipient of the James Beard award. I will never forget the night I won. The Beards are considered the Oscars of the book and restaurant world, so when they called my name, I literally floated on air down the aisle to accept my award. When I walked the stairs to the Lincoln Center, I had no idea that the bright lights would render me practically blind as I attempted to give my acceptance speech. This felt like big time! But while the lights may have shone on me, what I was most proud of was that they were shining on the subject of American cheese and wine. That was my passion then just as now, and, I’d venture to say, always will be. J: Thank you, Laura! You demonstrate wine pairing, cheese essentials, and cooking classes across the country, including such prestigious events as the Food & Wine Classic at Aspen, Pebble Beach Food & Wine, the South Beach Wine & Food Festival, Los Angeles Food & Wine, and the Santa Fe Wine & Chile Fiesta as well as Palm Desert Food & Wine. Shaun O’Neale exploded onto the culinary scene in September 2016 when he claimed the title of America’s Best Home Cook and was named Season 7 champion of MasterChef on Fox. He graduated from reality star to culinary star in May 2017 with the release of his debut cookbook, My Modern American Table. O’Neale is a self-taught chef who educated himself by reading cookbooks, studying the history of food, and traveling the globe to absorb different cultures and flavors. During his season on MasterChef, O’Neale won over the palates of Gordon Ramsay, Christina Tosi, Daniel Boulud, and Wolfgang Puck with his bold flavors and flawless presentation. He carried the same techniques that earned him a record-setting eight wins in the MasterChef kitchen through the completion of his cookbook. My Modern American Table teaches other home cooks how to re-create O’Neale’s upscale, modern American dishes like his lobster ravioli and salted caramel chocolate tart. For the past 20 years, O’Neale has been orchestrating dance floors as a DJ with the highlight of his career culminating in 2011 on New Year’s Eve, when he became the first DJ to perform on Las Vegas Boulevard in front of more than 100,000 people. Beginning in Tampa, Florida, and now calling Las Vegas, home, O’Neale has taken the same skills and determination that helped him to become a successful DJ and used them to start the newest phase of his life as the next up-and-coming culinary star.
