I don’t know about you, but I for one am<br />

relieved that we are now starting to see signs<br />

of the long awaited springtime.<br />

This month, I had the pleasure of interviewing<br />

Elliot Gleave, better known to his fans as<br />

Example. We spoke about fatherhood, his<br />

career to date and what he has in store for<br />

<strong>2018</strong>. Read it in full from pages 22-27.<br />

I was also lucky enough to speak with Irish Hip<br />

hop sensation Rejjie Snow about his new album<br />

‘Dear Annie’. We like to mix it up at <strong>Bounce</strong> so<br />

Rosewater &<br />

pistachio kulfi...<br />

Prep Time:<br />

15 mins<br />

Serves<br />

6 people<br />

BY AWARD WINNING<br />

CHEF ABDUS SHAHID<br />

This month, a dessert!<br />

Kulfi is usually made from milk that has been<br />

boiled for several hours.<br />

This sneaky version is made with condensed<br />

milk, so all the hard work has been done for<br />

you.<br />

Method<br />

1. Squeeze the condensed milk into a bowl and<br />

beat in the rosewater and pistachios. Lightly<br />

whip the cream until it holds its shape, then fold<br />

into the pistachio mixture.<br />

2. Pour into 6 small ramekins or pyramid moulds.<br />

Freeze, then cover with cling film.<br />

Ingredients<br />

• 450g tin condensed milk<br />

• 2 tbsp rosewater<br />

• 50g very finely chopped pistachio, plus<br />

roughly chopped pistachios to serve<br />

• 284ml tub double cream<br />

• 3 small, ripe mangoes<br />

To serve: Slice each mango on either side<br />

of the stone to make 6 halves, but don’t peel.<br />

Score a criss-cross into the flesh, but don’t slice<br />

through the skin.<br />

You can do this several hrs ahead. Cook on<br />

the barbecue flesh-side down until starting to<br />

caramelise. Leave as it is or turn inside out to<br />

make the segments stand proud.<br />

Serve with the kulfi scattered with the pistachios<br />

(and a squeeze of lime, if you like).<br />

Well hello there! I’m back with my monthly column… OK, so firstly a reminder<br />

about me. I’m Zena (Zee for short), I’m 45, a mother and a grandmother.<br />

Ah, <strong>April</strong> the month of my birth!<br />

I’m 45 this year and<br />

as always, refusing to<br />

conform in the fashion<br />

stakes.<br />

We have also just had<br />

Easter, with all of those<br />

chocolate eggs lying<br />

around it’s so hard to<br />

resist, but resist I must!<br />

I’ve started a very basic<br />

fitness regime and my<br />

target is to lose 1.5 stone.<br />

I will be enlisting the help of my friend<br />

Vicci, who is a Personal Trainer, but<br />

more on that next month.<br />

I have a few weddings coming up,<br />

for both the whole day and evening<br />

celebrations.<br />

Next month, I’ll be sharing<br />

my fashion tips for wedding<br />

guests, whether you’re<br />

looking for a new outfit or<br />

just want to zuchhhe up<br />

something you’ve worn<br />

before. I’ll have some outfit<br />

ideas for you.<br />

favourite pair of jeans<br />

don’t we? How often<br />

You know those moments, you’ve been out<br />

to night tops, mostly shirts, these<br />

are the ones I could find and all for<br />

a good price.<br />

and eBay. If you’re looking for a<br />

The New British<br />

Heavyweight Hope...<br />

A series of articles which will feature boxing facts<br />

from both the past to the present...<br />

A new heavyweight who shows<br />

promise will often capture the<br />

attention of both the fight fans<br />

and the media alike and can<br />

prove to be gold dust at the<br />

box-office. Such a man is London<br />

born Daniel Dubois who made<br />

his professional debut on the<br />

8 <strong>April</strong> 2017 at the Manchester<br />

Arena against Marcus Kelly who<br />

he stopped in the first stanza of<br />

a mooted four rounds. Dubois<br />

is promoted by Frank Warren a<br />

man who knows everything there<br />

is to know about the fight game<br />

so he is in good hands.<br />

Dubois looks every inch a future<br />

champion, I know predictions<br />

like that about a new fighter can<br />

some-times prove precarious,<br />

since so much can go wrong in<br />

boxing. However I feel on this<br />

occasion such a predication is<br />

well founded .While Dubois still<br />

has much to learn he has all the<br />

attributes to make it to the top.<br />

Dubois has the advantage of<br />

having time very much on his<br />

side being only 20 years of age.<br />

Clearly the young heavyweight’s<br />

team will map out a plan<br />

whereby he will be carefully<br />

matched against a selection of<br />

opponents and hence gain vital<br />

experience.<br />

At the moment Dubois is<br />

undefeated in seven fights<br />

all win’s coming inside the<br />

scheduled distance confirmation<br />

that he has the necessary<br />

punching power in his mitts to<br />

close a contest early and all fans<br />

love a puncher. In his fourth bout<br />

which took place on 8 July 2017<br />

Dubois won the vacant World<br />

Boxing Council Youth World<br />

Heavyweight title at the Copper<br />

Box Arena in London knocking<br />

out Mauricio Barragan in the<br />

second round of a scheduled<br />

10. (This title should not be<br />

confused with the major world<br />

championship). Then in his fifth<br />

bout on the 16 September 2017<br />

Dubois returned to the Copper<br />

Box Arena and won another<br />

title the vacant Southern Arena<br />

Heavyweight Crown knocking<br />

out opponent A.J. Carter in the<br />

opening session of a slatted 10.<br />

Dubois had a busy 2017 having<br />

participated in six bouts with<br />

him looking impressive in each<br />

outing.<br />

On the 24 February <strong>2018</strong> Dubois<br />

made a successful defence of<br />

the Southern Area title at York<br />

Hall making short work of D.L.<br />

Jones stopping him in the third<br />

round of a contest optimistically<br />

scheduled for 10. Jones was also<br />

undefeated in nine bouts his<br />

record consisting of eight wins<br />

and one draw but it was obvious<br />

from the opening bell that<br />

Dubois was too strong for him.<br />

The next planned outing for the<br />

undefeated fighter is scheduled<br />

for the 14 <strong>April</strong> <strong>2018</strong> against an<br />

opponent not known at the time<br />

of writing this article. However<br />

you can be sure that Dubois will<br />

add yet another win to his record<br />

on that date.<br />

In the fullness of time the British,<br />

European and Commonwealth<br />

Heavyweight titles will be the<br />

target for Dubois.<br />

has got song writing down to a fine art.<br />

As you might expect, after a decade on the<br />

job Elliot Gleave has a decent handle on what<br />

his back catalogue stands for. But he also<br />

finds it incredibly easy to describe the body<br />

of work he’s got lined up for <strong>2018</strong>.<br />

In 2014 Elliot had taken what he assumed<br />

would be a short break from music, ostensibly<br />

to focus on fatherhood.<br />

R: Hi Elliot...<br />

Hey Rachel how are you darlin’?<br />

R: I am very well thanks!<br />

Well fire away with your questions!<br />

R: How did you first get onto music scene?<br />

In general?<br />

R: Like, right back to the start?<br />

on life, a revitalised<br />

approach to songwriting and some the<br />

<strong>2018</strong> is set to be a remarkable year for<br />

Example and his new single, The Answer,<br />

kicks it off with an energy fuelled bang. The<br />

body of work Example is set to release is<br />

undoubtedly his best collection to date, best<br />

described by Example himself as “A collection<br />

Wow, ok, these are the sort of<br />

questions I was answering around<br />

album one!<br />

R: Well, I think it’s really nice to<br />

give people an insight as to where<br />

it all started.<br />

Yeah, yeah ok, let me think. It<br />

wasn’t really like I got into the scene as such,<br />

as I was just releasing music as a hobby, so I<br />

am talking around 2005 time.<br />

I didn’t really know anything about the music<br />

industry; this is ‘pre’ Myspace. I was releasing<br />

on vinyl – remember those! I would probably<br />

drop off 20 in Birmingham, 20 in Manchester,<br />

20 in Brighton and 20 in Cardiff. If I was lucky,<br />

I might have sold five in each city and they’d<br />

call me back and write me a cheque.<br />

from there I went on to songwriting and<br />

singing. We could talk in major depth about<br />

this stuff but we’d be here for hours [laughs]<br />

So it stated off there, being quite innocent and<br />

homemade, then I started going to open mic<br />

events, meeting new people. I started going<br />

to record shops and asking about how the PR<br />

and marketing worked, things such as ‘where<br />

do you get songs manufactured’? Back then<br />

that was how things were done, now you can<br />

just finish a song in your bedroom and stick<br />

it on Spotify or Soundcloud, we didn’t have<br />

anything like that then.<br />

I wanted to be a film director and then whilst I<br />

was working at a TV station as an editor, I got<br />

offered a record deal with Mike Skinner, from<br />

The Streets in 2006 and the rest is history.<br />

R: How did you first get into rapping? Was<br />

it something you just enjoyed doing? Were<br />

your family musical?<br />

It was a very musical house in terms of playing<br />

music; my mum and dad were always playing<br />

their vinyls really loud! Things such as The<br />

Rolling Stones, The Kinks and Motown, James<br />

Brown, stuff like that, but none of them played<br />

instruments.<br />

R: How did you come up with the name<br />

Example?<br />

It’s like E.G my initials.<br />

R: Ah, very clever!<br />

Yeah, endorsed by Wikipedia [laughs]<br />

R: You’ve had number 1 singles, five<br />

successful albums, what would you say<br />

makes you stand out as an artist?<br />

I don’t know! I guess that’s up for the public to<br />

decide isn’t it? I have been doing it for so long,<br />

you don’t really think about that any more.<br />

My first album wasn’t very successful, my fifth<br />

album wasn’t very successful, the second,<br />

third and forth ones did alright.<br />

I kind of just do me, a little bit quirky, a little<br />

bit rough around the edges… electronic pop,<br />

a bit of rapping, a bit of singing, I don’t know,<br />

it is what it is man, some people love it, some<br />

people hate it.<br />

My dad has a very good singing voice, even<br />

though he’s never really been ‘a singer’, I<br />

suppose the rapping thing started at school. I<br />

went to school in South London; there was a<br />

whole mix of cultures and kids from different<br />

ethnic backgrounds. I ended up rapping just to<br />

sort of fit it in the playground.<br />

I wasn’t very good at anything else like<br />

football, so I started rapping to get the<br />

approval of the cool kids. It went from being<br />

a hobby, because I love rhyming words, then<br />

writing my own raps. I use to learn Wu-Tang<br />

Clan and Snoop Dogg word for word, and<br />

R: I like that… non-conformist – good!<br />

Yeah!<br />

R: Festival season is coming up and this year<br />

your playing at the new RiZE festival not far<br />

from us… are you looking forward to it?<br />

Of course, yeah, its pretty much the old V<br />

stomping ground isn’t it? I played V for years,<br />

I think I have played V festival five times<br />

now and I think this is on the same site in<br />

Chelmsford, so I think we are pretty much<br />

expecting the same crowd. I am headlining the<br />

dance tent, so its always been packed, people<br />

have always shown a lot of love for us in Essex<br />

and yeah, its just business as usual isn’t it?<br />

R: What else are you up to this summer?<br />

Oh I’ve just got about 30 gigs; do you know<br />

what I mean? All over Europe and the UK. You<br />

know, I am kind of taking a bit of a quiet year<br />

because obviously I’ve got two kids now, so<br />

yeah, if we get a couple of hit singles over the<br />

next six months or whatever, I will be back on<br />

the road fully touring again.<br />

R: Speaking of travel… A friend of mine, like<br />

yourself, is also a lover of cars; she’d like to<br />

know which car your getting next?<br />

What’s next? Well I’ve got a family now, so I<br />

have actually got to stop having silly fast cars<br />

and just drive successful family cars! So I will<br />

be selling the Lamborghini and the McLaren<br />

soon… and um, making way for more toys<br />

and a bigger house for the kids with a garden.<br />

R: So touching upon your personal life,<br />

you’re married to the beautiful model, Erin<br />

McNaught. I’m getting married in June and<br />

I wondered what is the key to a successful<br />

relationship, as it must be harder for you<br />

than a usual couple being in the spotlight?<br />

You seem to have it sorted?<br />

They key thing is honesty and communication.<br />

As long as you can constantly talk and tell<br />

each other how you feel, or what you want<br />

and what you don’t want and you’re brutally<br />

honest with everything, good and bad, I think<br />

you’re good you’re fine and that’s worked for<br />

us.<br />

R: Good advice! How did you both meet?<br />

She interviewed me, on the radio.<br />

R: Was it love at first sight?<br />

Oh definitely yeah, I don’t know if it was for<br />

her, it was for me!<br />

R: That’s very sweet. So you’ve mentioned<br />

your kids, what’s it like being a dad?<br />

Well, millions of people do it [laughs] it<br />

certainly changes your approach to a lot of<br />

things. Its very scary having a toddler who<br />

might… I mean it’s like ‘Final Destination’<br />

when you’ve got kids, narrowly avoiding death<br />

everyday… just tonnes of accidents!<br />

I suppose it gives me something to live for.<br />

Before, I was just making music and I was<br />

very fortunate, my career went well, and with<br />

that comes a lot of money. I didn’t really know<br />

what the purpose of it was? I never did it for<br />

money, but now I suppose it’s nice to go to<br />

work for something and to look after my kids<br />

future.<br />

R: So you’re new single is out, tell us more,<br />

what is following this, a new album?<br />

I don’t know if an albums ever going to come<br />

out again to be honest. It seems to be a<br />

singles market now a days and albums seem<br />

to bomb unless you’re Adele or Ed Sheeran.<br />

I like people to interpret my music however<br />

they want. I try to explain the influence behind<br />

tracks and what the lyrics meant, but then you<br />

find out that songs mean whatever they mean<br />

to different people. So its best to kind of leave<br />

them unexplained and enjoyed, or in some<br />

cases disliked [laughs] It’s the first of many<br />

releases, lets put it that way, there’s going to<br />

be a lot coming out in the next few months.<br />

Feeling Anxious?<br />

How often do you feel anxious? All<br />

the time or just occasionally?<br />

We all feel anxious at some point, when we<br />

have that important meeting or exam, or even<br />

a job interview and it can actually help us<br />

perform better and be a signal that something<br />

is important to us. But sometimes, anxiety can<br />

get in the way of our everyday lives, and one way<br />

it does this, is in the form of unhelpful thoughts<br />

CHALLENGE ANXIOUS OR WORRYING<br />

THOUGHTS<br />

Firstly, identify the anxious or worrying thought,<br />

break it down and in your own way, treat the<br />

thought as a hypothesis; so something that needs<br />

to be tested rather than treated as fact. To help<br />

you do this, you could ask yourself the following:<br />

Is this thought helpful or useful to me?<br />

If a friend had this worry, what would I say to<br />

them?<br />

What, if any, evidence is there that it’s true?<br />

Is it worth the time I’m spending worrying about<br />

it, what else could I be doing or thinking about<br />

instead?<br />

Is the worry something that is solvable or not?<br />

In other words, is there any action I could do<br />

to help ease the worry, or is it more of a “what<br />

if” scenario. If there was a more positive way of<br />

looking at the thought or problem, what would<br />

it be?<br />

The most important thing to do is find your own<br />

way of challenging your thoughts, everyone does<br />

it differently so take some time to find what<br />

works for you. The more you do it, the better<br />

you’ll get at it.<br />

How to try the pose:<br />

1. Perform Downward Facing Dog Pose, then<br />

Plank Pose.<br />

Firm your shoulder blades against your back<br />

ribs and press your tailbone toward your<br />

pubis.<br />

2. With an exhalation slowly lower your torso<br />

and legs to a few inches above and parallel to<br />

the floor.<br />

There’s a tendency in this pose for the lower<br />

back to sway toward the floor and the tailbone<br />

to poke up toward the ceiling.<br />

Throughout your stay in this position, keep<br />

the tailbone firmly in place and the legs very<br />

active and turned slightly inward. Draw the<br />

pubis toward the navel.<br />

3. Keep the space between the shoulder<br />

blades broad. Don’t let the elbows splay out<br />

to the sides; hold them in by the sides of the<br />

torso and push them back toward the heels.<br />

Press the bases of the index fingers firmly to<br />

the floor. Lift the top of the sternum and your<br />

head to look forward.<br />

4. Chaturanga Dandasana is one of the<br />

positions in the Sun Salutation sequence. You<br />

can also practice this pose individually for<br />

anywhere from 10 to 30 seconds. Release with<br />

an exhalation.<br />

Either lay yourself lightly down onto the<br />

floor or push strongly back to Adho Mukha<br />

Svanasana, lifting through the top thighs and<br />

the tailbone.<br />

Beginner’s Tip:<br />

The completed form of Chaturanga<br />

Dandasana is quite difficult to perform at first,<br />

until your arms, back, and legs are strong<br />

enough to support you. From Plank Pose,<br />

begin by lowering your knees to the floor<br />

and then, with an exhalation, lower your<br />

sternum to within an inch or two above<br />

the floor.<br />

A partner can help you learn to anchor the<br />

pelvis in this pose and lengthen the spine.<br />

‘CARBS MAKE YOU FAT!’… REALLY? - BY BEN HUTTON<br />

The low carb or Ketogenic diet, is one<br />

most of us have heard of, and have been<br />

led to believe it is the best way to lose<br />

weight, but why? It begins with the rumour<br />

that carbohydrates make you fat, which<br />

isn’t the reality at all.<br />

So why do we think carbs make us fat? It’s nothing<br />

but simple association, the common ‘bad’ foods such<br />

as crisps, sweets, cakes, pizza, alcohol etc are all<br />

carbohydrate based, and it’s too much of these types<br />

of food that can lead to weight gain through a calorie<br />

excess.<br />

The reality is that SOME high carbohydrate foods<br />

are high in refined sugar, and high in CALORIES,<br />

but not all of them. It isn’t carbohydrate that causes<br />

weight gain, it is an excess in calories. If for example<br />

you required 2000 calories per day to maintain your<br />

weight, this could be made up of steak and salad, or<br />

doughnuts, it would be irrelevant for weight loss/gain.<br />

Of course there would be health implications, but<br />

weight loss is a simple numbers game…<br />

Carbohydrates are our body’s main source of fuel, and<br />

the only source of fuel for the brain. A no or low carb<br />

diet will cause tiredness, muscle fatigue and lack of<br />

concentration, and wont be maintainable long term,<br />

which often leads to a ‘yo yo’ diet, and a quick re-gain<br />

of weight.<br />

Low carb diets can be successful for weight loss, but<br />

this isn’t because you aren’t eating carbs, it is because<br />

the lack of carbs has caused a calorie deficit causing<br />

you to burn more calories than you’re consuming.<br />

Look at the basic eat well guideline, and imagine<br />

removing the majority of it! Does that sound fun?<br />

You can lose weight eating ANY food…IF your calories<br />

are reduced, so think before you ban bread and pasta<br />

from the household, is it necessary and is it really<br />

something you WANT to do?<br />

Sausage &<br />

spring mash<br />

pie...<br />

1. Boil the potatoes in salted water for 15 mins,<br />

adding the cabbage for the final few mins of<br />

cooking. Drain, then allow to steam- dry for a<br />

few mins. Add the milk and butter to the pan,<br />

warm through, then mash into the potatoes<br />

and cabbage with plenty of seasoning. Stir in<br />

the mustard, if using.<br />

2. While the potatoes are cooking, heat a<br />

large, shallow flameproof dish or a large<br />

non-stick frying pan. Brown the sausages,<br />

shallots and carrots for about 5 mins until<br />

nicely golden and the shallots are starting to<br />

soften. The sausages should be almost cooked<br />

through; lift them out, then set aside. Tip off<br />

any excess fat released by the sausages.<br />

3. Heat oven to 200C/fan 180C/gas 6. Turn<br />

up the heat under the pan, tip in the thyme<br />

and mushrooms, then fry until golden, about 3<br />

mins. Splash in the wine, then let it bubble and<br />

reduce by half. Add the stock and caramelised<br />

onions, then simmer until it has reduced a<br />

little to make a shiny gravy, and the carrots<br />

are cooked through. Season, then add the<br />

sausages to the gravy.<br />

Ingredients<br />

• 1½kg potato, cut into large chunks<br />

• ¼-½ Savoy cabbage, shredded<br />

• 100ml milk<br />

• 50g butter<br />

• 1 tbsp Dijon mustard<br />

• 2 tsp vegetable oil<br />

• 16 good-quality pork sausages<br />

• 10 shallots, peeled and halved if large<br />

• 4 carrots, thickly sliced<br />

• 2-3 thyme sprigs, plus extra to serve<br />

• 2 x 250g packs mushroom<br />

• 400ml full-bodied red wine<br />

• 300ml beef stock<br />

• 2 tbsp caramelised red onion<br />

4. Spoon the mixture into a baking dish or<br />

keep in the pan if it’s ovenproof. Top with<br />

the mashed potato, spooning it over in even<br />

dollops to prevent the gravy oozing up the<br />

sides. Can be made up to 1 day ahead and<br />

chilled. Bake, covered with foil, for 30 mins (or<br />

45 mins from chilled), removing the foil for the<br />

final 10 mins to brown the mash. Sprinkle with<br />

a little thyme to serve.<br />

The Wines<br />

of Rioja<br />

Rioja lies in the Northern part of Spain close to the Pyranees mountains. It<br />

isthought that the Phoenicians introduced the vine to the area although the<br />

Romans would have have progressed winemaking more so.<br />

BY ‘WINE BUFF’ FRED FISHER<br />

Monks played a very big part in winemaking and<br />

that is why monestories figure high in the history<br />

of wine production.<br />

The Muslim invasion of 711 Ad complicated the<br />

ownership of the region and it wasn’t until 1005<br />

that various kingdoms started to take over.<br />

In 1102 the Kings of Navarra and Aragon<br />

recognised Rioja and thereafter progress was<br />

made in the area being clearly a wines of note.<br />

In the late 1800’s when Phylloxera struck in France<br />

many Bordeaux wine makers fled to the Rioja<br />

region and took their expertise and oak barrels<br />

with them. Maybe that is why Rioja has been<br />

famous for oaked wines.<br />

In 1980 the region changed its name to La Rioja<br />

and during reorganisation following the Spanish<br />

transition to democracy it was constituted as a<br />

uni-provincial autonomous community. Its capital<br />

being Logrono.<br />

Geography and Climate...<br />

Located along the Ebro River the mountains<br />

shelter the area resulting in a moderate climate.<br />

Most of the region is on a plateau at about 460<br />

metres above sea level and divided into 3 areas.<br />

Rioja Alevesa, Rioja Baja and Rioja Alta.<br />

Rioja Alta - Found on the western edge at a<br />

high elevation and producing wines that are full<br />

bodied with medium alcohol.<br />

Malvasia - Can be blended with Viura for oaked<br />

wines. Musky and savoury and with the crispness<br />

of the Viura and oak be quite exceptional.<br />

Rioja Alavesa - The highest elevation, the coolest<br />

climate producing wines that are light and<br />

aromatic<br />

Rioja Baja - The southern edge at a lower<br />

elevation, a warmer and drier climate, producing<br />

wines that are deeper in colour and more fruity.<br />

The Grapes - Red...<br />

Other grapes are finding their way into Rioja e.g.<br />

Chardonnay, Sauvignon Blanc and Verdejo.<br />

The Categories and Ageing of<br />

Rioja...<br />

Denominacion de Origen Calificada or DOCa<br />

guarantees the origin and vintage of the wine.<br />

They can be White, Red or Rose.<br />

Tempranillo - Classic red grape produced soft,<br />

supple wines aromas of summer fruits and can<br />

have long ageing potential.<br />

Mazuelo - Usually blended with<br />

Tempranillo to add colour, weight<br />

and tannins.<br />

Garnacha - Adds warmth and<br />

spice, can be used for early<br />

drinking or keeping. Good on<br />

its own.<br />

Crianza - White Crianzas are aged for at least 6<br />

Rioja is often thought of as Spain’s most<br />

renowned wine region. They were known for their<br />

oaked wines and have remained firm favourites<br />

for that style.<br />

Conclusions...<br />

A move away from the extensive use of oak is appearing around the world but it is nice to<br />

know where to get oaked wines for those that like that style. Good luck to Rioja.<br />

BECCLES BEER FESTIVAL<br />

RETURNS TO HALL FOR SPRING...<br />

Following six successful autumn events, the<br />

organisers of Beccles Beer Festival have<br />

responded to popular demand and a Spring<br />

Beer Festival will be held at regular venue,<br />

the Public Hall in Beccles, on the weekend of<br />

Friday-Sunday, 6-8 th <strong>April</strong>.<br />

It will again be a celebration of Real Ales, Ciders<br />

and Craft Lager from 29 Breweries in Suffolk and<br />

Norfolk, and the organisers hope to see a repeat of<br />

last November when a record 1605 people visited<br />

the 3 day beer festival, drinking over 4,500 pints!<br />

Organisers Graham Elliott and Beccles Lido<br />

Limited Chief Executive, Shaun Crowley, told<br />

<strong>Bounce</strong> <strong>Magazine</strong> “The Autumn Beer Festival is<br />

arguably the biggest in the region and we are<br />

expecting that real ale enthusiasts will travel from<br />

all over East Anglia. It’s not just a celebration of<br />

local ales, but it’s held in Beccles Public Hall to<br />

raise funds for Beccles Lido Limited, which owns<br />

and runs the Hall, the Lido and Big Dog Ferry; and<br />

it’s run by Hall and Lido volunteers – so it also<br />

celebrates these fantastic community run Beccles<br />

attractions!”<br />

There will be live music, with the return of popular<br />

local performers Tosh & The Moonlighers on Friday<br />

at 9pm, playing a mix of party favourites and their<br />

own songs; and on Saturday night Solana play<br />

as part of their UK tour, bringing their stomping<br />

selection of toe tapping tunes combining folk,<br />

klezmer, flamenco, jazz and Arabic influences!<br />

Sunday will have a lower key vibe with families<br />

welcome. As usual, the Public Hall will also have<br />

a fully licensed bar selling wines, spirits and soft<br />

drinks for the non-ale drinkers; and there will<br />

be a good selection of hot and cold snacks to<br />

complement the beer, served by Lido and Hall<br />

volunteers. If you don’t drink them dry, off-license<br />

sales will be available from 5:30pm on Sunday.<br />

So make this a weekend to get over to Beccles -<br />

and why not use the bus or train so that you can<br />

really enjoy a selection of the tipples on offer?<br />

The Big Dog Ferry runs between Beccles Lido and<br />

the Locks Inn, Geldeston. A relaxing 3 mile boat<br />

trip along the River Waveney with the opportunity<br />

to see over 20 food and drink producers from<br />

Norfolk and Suffolk coming together, enabling<br />

guests to discover the flavours of East Anglia...<br />

and we were blown away with the standard.<br />

The Taste Circus concept was to create a<br />

community of food and drink producers<br />

that share similar beliefs. Each producer<br />

shared a stand and collaborative taste story<br />

with another and hence performed a taste<br />

sensation that belongs to both producers.<br />

other vineyards present.<br />

Lunch was a celebration of local ingredients<br />

prepared by Marwan Badran and his team, a<br />

warming cassoulet featuring British-grown<br />

beans, peas and barley from Hodmedod and<br />

pork and chorizo from Marsh Pig.<br />

“Such a great celebration of Norfolk and<br />

Suffolk produce” said one guest, while another<br />

said “What impressed me about the Circus of<br />

Taste was that the actual producers were there<br />

– they often send, on these occasions, a junior<br />

representative. The stories of their journeys<br />

were fascinating.”<br />

Hales Hall is the perfect venue for a magical<br />

Guests can either commission them to put on<br />

Chateau Engalin in South-West France.<br />

The next one to be held at Hales Hall will<br />

be in winter <strong>2018</strong> when we will welcome the<br />

Method<br />

• Preheat the oven to gas 4, 180°C, fan<br />

160°C. Grease and line a 20cm (8in)<br />

square tin.<br />

• In a large pan, melt the butter, sugar<br />

and cocoa over a low heat, stirring<br />

occasionally, until smooth. Remove from<br />

the heat and leave to cool for 2 minutes.<br />

Get your bakers hat on...<br />

These delicious brownie bites draw on<br />

the classic flavours of black forest gateau<br />

with sweet kirsch cherries and rich<br />

chocolate.<br />

Enjoy as an after-dinner treat or as a<br />

tasty gift. Simply box them up in an<br />

airtight container and eat within 1 week.<br />

Ingredients<br />

• 185g (6 1/2oz) unsalted butter,<br />

chopped, plus extra for greasing<br />

• 375g (12oz) caster sugar<br />

• 75g (3oz) cocoa powder<br />

• 3 large eggs<br />

• 100g (3 1/2oz) plain flour, sifted<br />

• 100g (3 1/2oz) drained cherries in<br />

kirsch, halved, plus 3 tbsp syrup from<br />

the jar<br />

• 75g (3oz) chocolate chips<br />

• icing sugar, for dusting<br />

• Using a whisk, beat the eggs into the<br />

chocolate mixture one at a time, until<br />

combined.<br />

• Stir in the flour with a wooden spoon<br />

until smooth, followed by the cherries<br />

and 2 tbsp of the syrup and the<br />

chocolate chips.<br />

• Pour the mixture into the prepared tin<br />

and bake for 35-40 minutes, or until set<br />

with a slight wobble in the middle.<br />

• Drizzle the remaining syrup over the<br />

just-cooked brownie; leave to cool in the<br />

tin.<br />

• To serve, cut into 25 squares and dust<br />

with icing sugar.<br />

• Enjoy warm or at room temperature.<br />

TOP TIP WHEN FREEZING:<br />

Bake according to the recipe but stop<br />

before adding decoration or icing if called<br />

for. Allow to cool completely. Wrap well<br />

in clingfilm and tin foil (to prevent freezer<br />

burn) and freeze for up to 3 months.<br />

the appeal of her wet-led pub by getting<br />

involved with women’s sport.<br />

Michelle explained: “Our pub was mainly<br />

male orientated, as is sports, so it was<br />

great to back the team and show the<br />

girls their worth by sponsoring them.<br />

“The Ingate is changing attitudes to how<br />

a traditional pub has been in the past –<br />

as we strive to take things forward in as<br />

positive way. We are so proud that BT<br />

Sport has recognised our achievements.”<br />

A landlady who has thrown her support behind her local<br />

woman’s football team has won BT Sport’s Manager of the<br />

Month award for January.<br />

Michelle is used to changing perceptions.<br />

Previously she brought art to the masses<br />

by running a gallery in Beccles before<br />

turning her attention to pubs.<br />

Michelle Payne, licensee at The Ingate Free House, in<br />

Suffolk, was quick off the mark to support Beccles Town<br />

Ladies FC when the side formed in August last year.<br />

The move shows how important Michelle believes<br />

women’s sport is. It has also helped her attract new<br />

Ladies she screens a wide range of sport<br />

including the Women’s Super League<br />

– which you can see on BT Sport – and<br />

3. Drain the lobster on a rack and let it cool down<br />

for 10 minutes, then break it open and reserve the<br />

meat.<br />

4. Poach the fillet of cod in the same, simmering<br />

fish stock for 5 to 6 minutes, then set it on a rack<br />

to cool down and reserve in the fridge until use.<br />

5. Wash and cook the whole of the leeks in salty<br />

water, refresh and reserve.<br />

6. Peel and cut the parsnip into wedges<br />

lengthways and cook them in the beetroot juice,<br />

then cool and reserve until use.<br />

SERVES 8<br />

A terrine most commonly refers to a French<br />

forcemeat loaf similar to a pâté, made with more<br />

coarsely chopped ingredients.<br />

Terrines are usually served cold or at room<br />

temperature. Here is a great terrine recipes to enjoy<br />

this spring.<br />

Ingredients<br />

• 1<br />

whole lobster<br />

• 400g<br />

cod fillet<br />

• 1,5 lit<br />

of fish stock<br />

• 2<br />

medium leeks<br />

• 100g<br />

cooked spinach<br />

• 2<br />

baking potatoes<br />

• 200g<br />

fresh parsnip<br />

• 400ml<br />

beetroot juice<br />

• 125 g<br />

salted butter<br />

• Salt and pepper<br />

• A few saffron strands<br />

• Cherry tomatoes and dill to garnish<br />

Method<br />

1. Lay a terrine mould (that fills 1 kg), with cling<br />

film and one layer of cooked leek leaves.<br />

2. Bring the fish stock to the boil, then plunge the<br />

whole, fresh lobster into the liquid, cover and cook<br />

for 7 to 8 minutes.<br />

7. Then Peel the potatoes and make little balls<br />

using a “parisienne” scoop.<br />

8. Cook the potatoes in saffron water and reserve.<br />

9. Blanch the cherry tomatoes into salty boiling<br />

water, cool in icy water, peel and reserve.<br />

10. Melt the butter, add 150ml of fish stock and<br />

reduce the liquid/stock by a third.<br />

11. Build the terrine layer by layer using all cooked<br />

ingredients and brushing between each layer<br />

with the mix of stock and melted butter, and<br />

seasoning.<br />

12. Fold back the cling film and press gently then<br />

let the Terrine set overnight in the fridge (slightly<br />

pressed).<br />

13. Slice and garnish with the blanched cherry<br />

tomatoes and dill.<br />

at the menu, we order the Arancini Balls to start, followed by a veggie burger and a surf and turf burger.<br />

Not long after the food arrives. Service is prompt, but not too quick, leaving<br />

enough time to finish the last sip of that cocktail! The meal was tasty, packed<br />

with amazing flavours and not a crumb was left. An added bonus to our<br />

evening was the attention to detail from the friendly staff, who went out of<br />

their way to ensure that our evening was a special one. We love it at Graze and<br />

you will find us their as regular and loyal customers”!<br />

Sexy and smooth, this tequila cocktail has<br />

a hint of lavender and a dash of sweet<br />

honey syrup. It’s spring in a cup, but<br />

since the floral flavours come from<br />

bitters, you can sip it all year round.<br />

Method<br />

1. Combine all ingredients in a shaker<br />

and dry-shake (without ice).<br />

2. Add ice and shake again to emulsify<br />

thoroughly.<br />

Ingredients<br />

• 1 1⁄2 oz Patrón silver<br />

tequila<br />

• 3⁄4 oz Fresh lemon juice<br />

• 3⁄4 oz Honey syrup*<br />

• 1 Egg white<br />

• 1 dash<br />

• Scrappy’s lavender bitters<br />

3. Strain into a chilled coupe glass, and<br />

garnish with a lavender sprig.<br />

Rejjie Snow, about his new album ‘Dear Annie’ & tour...<br />

REJJIE SNOW is a scene unto himself. Born in<br />

Dublin, he lives wherever his suitcase settles,<br />

wherever the songs send him, making albums<br />

in the middle of making other albums, and<br />

tangling words into beautifully complex<br />

knots that blur biography with fantasy over a<br />

shifting mass of rainy loops, technicolour keys<br />

and trippy percussion.<br />

is a rollercoaster ride of emotion, from the<br />

jet-setting escapism of EGYPTIAN LUVR and<br />

MON AMOUR to the visceral otherworldliness<br />

of SPACESHIPS and RAINBOWS, to the<br />

haunting heartache of ROOM 27 and THE<br />

ENDS, the album is a sweeping cinematic<br />

overture and a bold statement of intent from<br />

the wise-beyond-his-years 23-year old.<br />

And then there’s his voice, deep and<br />

otherworldly, capable of riding a beat with<br />

metronomic precision,<br />

cooing to raw piano, or<br />

yawping Prince-like over<br />

a soul-rock-jazz groove.<br />

His influences are as<br />

disparate as George<br />

Michael and Charles<br />

Bukowski. He designs<br />

clothes and paints. He<br />

sees the moon as his<br />

first love. He almost had<br />

a career as a footballer,<br />

but instead toured<br />

with Madonna, recorded with leftfield dance<br />

genius Kaytranada and, after signing to 300<br />

Entertainment in 2016, became label mate to<br />

fellow outsiders like Young Thug and Fetty<br />

Wap.<br />

In his own idiosyncratic manner, REJJIE<br />

SNOW croons and rhymes equally while<br />

brandishing his heart proudly on his sleeve.<br />

DEAR ANNIE is an invitation to embark on<br />

a journey to the surreal depths of his soul.<br />

It’s as much a rite of passage for him as it<br />

Rachel Ducker caught up with Rejjie, to find<br />

out about more about his new album and tour.<br />

R: How did you first get into<br />

music?<br />

I got into music through<br />

Playstation games and<br />

soundtracks; music just came<br />

naturally to me as a kid.<br />

R: Why did the Hip hop genre<br />

appeal to you back then?<br />

It was the lifestyle initially, but<br />

then I grew a passion for it and the<br />

art of storytelling along with the<br />

poetic side of the lyrics.<br />

R: I heard you moved to Florida in your teens<br />

on a football scholarship – that must have<br />

been an amazing opportunity?<br />

It was. It made me more open minded for the<br />

most part, but also America was good for me,<br />

it gave me that sense of discipline that I never<br />

had, its something I am really grateful for.<br />

R: Are your Irish roots very important to<br />

you?<br />

I try to always have my roots in my music,<br />

I always like to throw a lot of subtle Irish<br />

poetry into my songs, I think it’s important. I<br />

represent my country.<br />

R: How did you come up with the name Rejjie<br />

Snow and why?<br />

My little brother gave it to me, we came up<br />

with Rejjie and he used to call me ‘Snow’ as a<br />

kid, I don’t know why but yeah it stuck.<br />

R: You’ve just released your debut album<br />

DEAR ANNIE, which I have been listening<br />

to and absolutely love. Can you tell us more<br />

about it? Who is Annie?<br />

Thank you, Annie is a fictional character and<br />

throughout the whole album I am just talking<br />

to this person in my head, kind of in a diary<br />

setting, like Dear Annie… Dear Diary, that<br />

sort of thing. I really wanted to make it an<br />

enjoyable listen.<br />

R: You have a number of collaborators on<br />

the album – was it fun to work with different<br />

people?<br />

Yeah it was fun especially with the Grammywinning<br />

producer Rahki, for him to do my<br />

album was really great. I really enjoyed the<br />

female voices on there.<br />

R: Off the back of this, you are now<br />

embarking on a massive European tour and<br />

you’re even stopping by us in Norwich and<br />

Cambridge in <strong>April</strong> what can we expect?<br />

Lots of lights and visual this time, overall I<br />

think it will be a great experience, almost like<br />

going to see a movie, I want to capture the<br />

same experience in the show, so hopefully<br />

people will enjoy it.<br />

R: Do you enjoy being on tour?<br />

I hate it [laughs] I love just playing my shows<br />

but everything else I hate, travelling and<br />

getting out of a routine. It can be tough.<br />

R: So after the tour what is next for Rejjie<br />

Snow?<br />

I am working on a short film, so I am going to<br />

produce and direct that.<br />

R: Well thanks so much for your time<br />

Rejjie and best of luck with everything to<br />

come...<br />

Humphry Repton Inventor of<br />

Landscape Design...<br />

Celebrating the bicentenary of<br />

the death of Humphry Repton,<br />

the last great landscape<br />

designer of the eighteenth<br />

century has just taken place.<br />

Humphry Repton (21 <strong>April</strong><br />

1752 – 24 March 1818) was often<br />

regarded as the successor to<br />

Capability Brown; he also sowed<br />

the seeds of the more intricate<br />

and eclectic styles of the 19th<br />

century.<br />

The son of a collector of excise,<br />

John Repton, and Martha (née<br />

Fitch). John owned a transport<br />

business in Norwich, and<br />

Humphry attended Norwich<br />

Grammar School. By the age<br />

twelve he was sent to the<br />

Netherlands to learn Dutch and<br />

to start a career as a merchant.<br />

However, a rich Dutch family<br />

showed him pursuits such as<br />

sketching and gardening.<br />

When his parents died in 1778<br />

Humphry moved to a small<br />

country estate at Sustead.<br />

There he became a journalist,<br />

dramatist, artist, political agent,<br />

and a confidential secretary to<br />

his neighbour William Windham<br />

of Felbrigg Hall. Norfolk<br />

Botanist James Edward Smith,<br />

encouraged Humphry to study<br />

botany and gardening; and with<br />

his finances becoming smaller<br />

Humphry moved from Norwich<br />

to a small cottage at Hare Street<br />

near Romford in Essex. He<br />

continued to study and earned<br />

small amounts of money to look<br />

after his family, which included<br />

four children. His first paid<br />

commission was at Catton Park,<br />

to the north of Norwich, in 1788.<br />

Two of Humphry’s watercolours<br />

of the area survive today. He<br />

also removed many trees to the<br />

south of the park so the view of<br />

the spire of Norwich Cathedral<br />

can be seen.<br />

Humphry worked for clients,<br />

such as the Dukes of Bedford<br />

and Portland, and he preferred<br />

to develop grounds from scratch<br />

and to work on a more modest<br />

scale than Capability Brown. He<br />

borrowed items such as church<br />

towers, and even introduced<br />

monogramed milestones on the<br />

roads around some estates.<br />

He designed Woburn Abbey<br />

with themed garden areas<br />

such as Chinese, American,<br />

arboretum and a forcing<br />

garden. He later earned another<br />

commission from the Duke of<br />

Bedford and later designed<br />

the central gardens in Russell<br />

Square, part of the Bloomsbury<br />

development. The square was<br />

to be a flagship commission for<br />

Repton and was only one of<br />

three within central London.<br />

He quarrelled with many of his<br />

contemporise, one of these<br />

being John Nash, who, he<br />

claimed, stole from him the<br />

idea of using a Mughal style<br />

of architecture for the Royal<br />

Pavilion at Brighton.<br />

Having suffered a serious<br />

carriage accident which often<br />

left him needing to use a<br />

wheelchair for mobility. He<br />

died in 1818 and is buried in the<br />

graveyard of St Michael’s Church<br />

at Aylsham in north Norfolk.<br />

Hare Street where Humphry had<br />

his cottage in Romford, Essex<br />

is now called Main Road. It was<br />

later rebuilt as a bank, and on<br />

19 <strong>April</strong> 1969 a small plaque was<br />

unveiled in his memory. Repton<br />

Avenue, Repton Gardens and<br />

Repton Drive, in Romford, Essex<br />

are all named after Humphry.<br />

A change of scenery can work<br />

wonders. There’s definitely a<br />

reason we pop out for some<br />

fresh air. Whether you’re at home and need some time<br />

to think about something or you’re at work and it’s got<br />

a bit stressful.<br />

A step away for a moment may actually be a step<br />

in the right direction. Taking a minute to re-evaluate<br />

a situation is never a bad thing. You may find you<br />

come up with a new way to approach something or<br />

a solution that had never come to you before. Return<br />

with a new plan of action!<br />

Take a bath...<br />

To be honest I love any excuse for a bath. So when I’m<br />

feeling stressed it’s one of my got to options.<br />

Hot with bubbles please- guaranteed to make you<br />

sleep that bit better too. Reward yourself for the hectic<br />

day by zoning out. A glass of wine can be added to the<br />

equation if necessary.<br />

or cooking something new. Have some<br />

time out to focus on an activity you enjoy<br />

doing.<br />

Make plans...<br />

Schedule in something enjoyable for the<br />

weekend, with people you want to see.<br />

It’s always nice to have something to look<br />

forward to.<br />

Maybe even taking a cheeky day’s annual<br />

leave or a long weekend break! Sometimes<br />

we get too caught up in our busy routines<br />

that we forget to stop once in a while.<br />

In all seriousness, downtime is important<br />

and healthy! So make sure you get yours.<br />

SK’s Guide to Retinol...<br />

Unveiling fresh, spring-ready smooth<br />

skin is always satisfying, but how to do<br />

it right? Let us introduce you to Retinol,<br />

part of the Retinoid family.<br />

WHAT IS RETINOL?<br />

Retinol is part of a group of amazing anti-ageing<br />

ingredients, which also includes retinoids, retinoic<br />

acid and retinyl palmitate. These are highlyeffective<br />

when applied in skincare products and<br />

are easily incorporated into you daily routine.<br />

Retinol is the pure form of Vitamin A and is<br />

converted by technical biochemical processes to<br />

form Retinoic Acid, it is this which<br />

the skin uses to regenerate itself.<br />

WHAT WILL IT DO TO MY SKIN?<br />

As the purest form of Vitamin A<br />

available, Retinol/Retinoic Acid<br />

works like an antioxidant, halting<br />

the damage created by free radicals<br />

which causes wrinkles among other<br />

signs of ageing. Another trick up<br />

its sleeve, is that it is excellent at<br />

stimulating skin cells, causing them to burst into<br />

life and behave like a younger cell. When those<br />

cells happen to be Collagen, you have a winning<br />

combination. Retinol/Retinoic Acid is also known<br />

to help fade discolorations from previous sun<br />

damage, even out texture with old acne scaring,<br />

increase the blood supply to the skin and help<br />

reduce oil production with those with oily skin.<br />

PRECAUTIONS<br />

As with most effective anti-ageing<br />

ingredients, Retinol/Retinoic Acid does come with<br />

some precautions. Make sure to always wear a<br />

high SPF sunscreen while using retinol products, if<br />

you have regular treatments such as skin peels or<br />

laser hair removal, make sure to tell your therapist<br />

you are using Retinoids and avoid them if you are<br />

pregnant or breastfeeding.<br />

Decoding Labels<br />

What do the symbols really mean?<br />

Our skincare products are filling up with copious<br />

amounts of information including the ingredients,<br />

how to use it, plus a series of symbols - some are<br />

quite obvious but not all. What do they all mean<br />

and do we need to know?<br />

Any beauty or cleaning products we buy now will<br />

have a series of essential items displayed by law;<br />

part of fulfilling this criteria is an ingredients list<br />

and if the manufacturer so wishes they can add<br />

symbols and logos to represent their usp’s and<br />

certifications.<br />

PAO - Period after opening...<br />

When replenishing our toiletries cupboard or<br />

topping up our makeup collection, who really<br />

takes the time to look at the back of the packet<br />

to see how long their products will last? We all<br />

have that bottle of moisturiser that never ends<br />

but does it ever go out of date? The short answer<br />

is yes - over time your products will just lose their<br />

effectiveness.<br />

There should be a Best before date on your<br />

skincare bottle or a from open date. Often you’ll<br />

see a 6 or a 12 in a jar symbol - this means use this<br />

product within 12 months from opening to ensure<br />

it’s best effects. The idea of the symbol is to guide<br />

the consumer to use the product within the time<br />

frame so that it’s efficacy is not lost or it will not<br />

cause harm to the consumer.<br />

It is worth mentioning that when using an open<br />

tub of moisturiser it is beneficial to use a spatula to<br />

take out the cream as any bacteria on your fingers<br />

as they go into the cream will bread and cause the<br />

cream to be less effective.<br />

rigorous and shows that the product is completely<br />

organic.<br />

They review the full manufacturing process including<br />

sourcing of ingredients, formulation procedures and<br />

premises, as well as packaging.<br />

You may see the international COSMOS standards so you<br />

can be sure your certified product meets strict criteria<br />

wherever it was made.<br />

Being vegan means that you don’t consume<br />

any products that have been derived from<br />

or are a by-products from animals. In<br />

skincare a vegan free product won’t contain<br />

any dairy, honey or gelatine.<br />

Not only that the ingredients cannot be<br />

tested on animals either.<br />

Which symbols should I look<br />

for?...<br />

There are many many other symbols that<br />

you may see on your toiletries including<br />

Gluten free, the vegetarian society, recycled<br />

logo or even the british flag.<br />

The symbols you look for are based on your<br />

personal preferences however the key one<br />

I suggest looking at upon opening a bottle<br />

of moisturiser or a new mascara is the PAO<br />

symbol to ensure you get the best out of<br />

your products.<br />

dishes for the menu, utilising all of the fresh, spring<br />

produce from the Edible Jungle.<br />

“Castlefranco radicchio is an invaluable winter<br />

crop with an interesting past. It dates back to<br />

the 18 th century and got its nick name of ‘Orchid<br />

lettuce’ after a noble woman from Castelfranco,<br />

Northern Italy, wore a mature, freshly-harvestedhead<br />

on her evening gown. A cross between<br />

a Trevino radicchio and an endive, it was so<br />

beautiful,the locals thought it was an exotic flower.<br />

To Café Jungle...<br />

Café Manager Joe talks us through his dish...<br />

“I’m a big advocate of using antiquated ‘cooking’<br />

methods, such as pickling, curing and fermenting.<br />

The health benefits of natural fermentation have<br />

been rigorously explored in recent years. As a<br />

bonus it also reduces food waste, and allows us<br />

to eat ‘out of season’ in a responsible fashion.<br />

My inspiration for the dish happened all at once<br />

when Niamh arrived, beaming, with the first<br />

crop of our produce. As luck would have it blood<br />

oranges are in season too. Fennel and citrus is like<br />

Rock and Roll. Salmon came to mind instantly. It’s<br />

a fish with a bad rep’ of late, the safe bet.<br />

The flavour is subsequently milder than other<br />

winter radicchios. It’s a favourite of mine and<br />

incredibly easy to grow. The mature heads<br />

featured in the new Café dish were sown in seed<br />

trays in August and transplanted in October. It’s<br />

not fussy, happy in semi-shade or full sun which<br />

is helpful, as these were used as under-planting<br />

between taller crops such as kale and chard in the<br />

Edible Jungle.<br />

The fennel being pickled by Café Manager Joe<br />

was grown inside the Edible Jungle polytunnel<br />

over the winter months. Autumn sown, bulking<br />

fennel is my preference for this crop as it has a<br />

tendency to bolt in the summer months”.<br />

Well, when cured with sumac and Suffolk sea<br />

salt, the salmon becomes a wonderfully textured,<br />

aromatic piece of fish. The home made buttermilk<br />

adds some acidity and helps with the rich salmon<br />

flavour. Finally the pea shoots and micro mustard<br />

bring tiny pops of fresh flavour, helping to<br />

balance the bold radicchio. The salmon sits on the<br />

plate with a sense of uniformity and purpose. The<br />

fennel and oranges have been fermenting for 12<br />

days in a salt-brine, offering a wonderful umami<br />

tang to the crisp veggie.<br />

For me, this dish epitomises everything Niamh<br />

and I are trying to achieve for Café Jungle. Fresh,<br />

organically-grown produce, full of flavour and<br />

provenance, with zero food miles.<br />

The ‘field-to-fork’ collaboration sits proudly on<br />

the menu as a sign of things to come, a glimmer<br />

of spring and the<br />

bountiful harvests<br />

we’ll be enjoying in<br />

the months ahead”.<br />

Niamh has grown the above pea shoots inside<br />

the polytunnel, in a container without light.<br />

This method produces long tender pale stems<br />

that resemble bean sprouts but actually have a<br />

delicious strong pea flavour. A real delicacy and a<br />

favourite with every Chef.<br />

Kates Top Tip : Take cuttings of your<br />

favourite conifers.<br />

Spring is finally in evidence as<br />

daffodils and flowering trees start<br />

to bloom.<br />

Expect the inevitable <strong>April</strong> showers this month<br />

but with sunny days too, when you can turn your<br />

attention to the lawn.<br />

It’s an exciting month, with indoor-sown seeds<br />

well into growth, and it’s also time to start sowing<br />

outdoors. Just watch out for frosts...<br />

Deadhead daffodils and narcissi; give them a liquid<br />

feed or a sprinkling of bonemeal and then let them<br />

die down. Don’t cut off the leaves as they are<br />

necessary to replenish the bulb for next year.<br />

Keep deadheading spring bedding to keep it looking<br />

neat, and to encourage new flowers.<br />

Now the soil is warming up and things are starting to<br />

grow, add general purpose fertiliser before covering<br />

with mulch especially in borders, the fruit and<br />

vegetable patch and containers.<br />

Carry on removing moss and weeds from paths,<br />

terraces and drives.<br />

Make new beds and borders - mark the shape with<br />

sand trickled from a bottle, remove the top layer<br />

of growing vegetation and dig the ground over,<br />

incorporating as much organic matter as possible. If<br />

you are making a bed in the lawn, remove the turf – if<br />

you dig it in the buried grass will regrow.<br />

Finally, we’re out of the coldest<br />

March since records began and no<br />

doubt you would have thought about<br />

escaping to much warmer climes?<br />

You may have even already booked a<br />

getaway to sunnier shores, but for some the<br />

journey there could be arduous.<br />

With ever increasing costs, airlines are<br />

pouring as many bodies as possible into<br />

their aircrafts, whilst the no-frills carriers<br />

can sometimes be so basic, any frill seems<br />

as far away as that beach you’re staring<br />

at in the brochure. Fret not! Action Man<br />

is here to offer his top tips in long haul<br />

boredom relief and air rage<br />

avoidance.<br />

COMFORT...<br />

Whatever your carrier or destination, you<br />

will be sat for a prolonged period of time in<br />

what I guarantee is not the world’s comfiest<br />

chair, therefore your travel attire choice is key.<br />

Dress for your destination, you don’t want<br />

to be lugging suitcases at your resort whilst<br />

still in your jeans and jumper from home,<br />

likewise scraping ice off you car at Heathrow<br />

car park in your Speedo’s isn’t fun. Jogging<br />

bottoms are the epitome of comfort, however,<br />

you won’t be winning any style awards! A<br />

loose fitting chino might just strike the right<br />

balance. Consider pairing this with a fresh<br />

cotton tee but perhaps avoid white, especially<br />

for long haul trips. A spill or stain early in your<br />

journey will cheese you off for hours (trust<br />

me), you may also want to keep that jumper<br />

handy as it can get chilly at 40,000ft.<br />

Invest in a good travel pillow and set of<br />

headphones before you go, the courtesy<br />

options are sub-par at best. A good book is<br />

a must, though perhaps you’re saving this for<br />

the vacation itself. Mobile gamer? You’ll burn<br />

through that battery in no time, take a fully<br />

charged power bank (these can ONLY travel<br />

in your carry on) you’ll also need a pen for<br />

arrival documentation.<br />

SUSTENANCE<br />

Plane food has come on leaps and bounds<br />

but it can still be a bit hit and miss with<br />

limited options, especially when you’ve been<br />

dreaming about that full English breakfast,<br />

only to discover so has everyone else so<br />

you’re left with the fish curry... for breakfast!<br />

Consider taking some snacks to avoid<br />

starvation/boredom and maybe buy a drink at<br />

the shops after security, as you could use half<br />

your spending money on a thimble of Pepsi.<br />

Chewing gum will help with your ears during<br />

take off and landing.<br />

SEATING<br />

Everyone loves extra leg room, but these can<br />

be a costly extra, over wing exits will be right<br />

next to the noisy engines, whilst others are<br />

near toilets with your space becoming the<br />

waiting room. Do your research on the plane<br />

and chose your seat wisely.<br />

And finally... Action Man says: Relax!<br />

You are going on holiday, so is<br />

everyone else. Help with bags, show a<br />

little patience, be courteous.<br />

Theatre Royal Young Company’s troupe of actormusicians<br />

are launching the month with their production<br />

of Robert Louis Stevenson’s Treasure Island. Set sail<br />

for swashbuckling adventure on the high seas with the<br />

Join Paul Gambaccini as he reveals for the first time how<br />

he started life as a boy in the Bronx and wound up ‘The<br />

As a fundraiser for Theatre Royal, Clare College Choir are<br />

returning to St Mary’s Church for another concert of truly<br />

The London Academy of Music and Dramatic Art<br />

war, and the impact it can have on even the<br />

closest of families. With compassion and<br />

fearlessness, this is a story that needs to be<br />

Mountains: The Dreams of Lily Kwok is the<br />

stylish and evocative new play by award<br />

winning writer In-Sook Chappell, based on Helen Tse’s<br />

NEW MEMBERS OF THE FAMILY...<br />

First, it was those two kittens… now,<br />

its four chickens… what will I have to<br />

endure next?…<br />

Last month, we welcomed some new editions to<br />

the family. It didn’t go too well for poor little old<br />

me, (the suggested favourite). I was told off for<br />

being slightly over excited, but who could blame<br />

me? They have feathers! Anyway, it gave me<br />

inspiration for this month’s article… How do you<br />

introduce chickens to dogs? Good question hey?<br />

Uff, so here we go, my top tips…<br />

THE WHAT IS PREY DRIVE?<br />

Dogs who are of working breeds have<br />

manipulated prey drives. Signs your four legged<br />

friend is exhibiting prey drive: intense staring,<br />

ignores owner or other distractions, refuses<br />

to move, body tenses, motionless, crouching,<br />

rigid movements, lunging, lips twitching, pupils<br />

dilated. That kind of thing.<br />

and repetitive with consequences and rewards.<br />

CHICKEN TRAINING...<br />

Train your dog within 10 feet of the chickens.<br />

Repeat, stay consistent, and be patient. Each<br />

training session, move a foot or two closer, but,<br />
