With that being said, one would say that Just Shrimp’s menu goes beyond “just shrimp.” “Our menu has expanded quite a bit since we first opened,” said Christina Mihalos, “Items such as the gator po’ boy and the tilapia that had been featured as specials had such high feedback that we added them to our menu permanently. As time went on, we saw that customers were looking for a healthier alternative, so we added a few things, such as the smoked salmon and our now grilled options.” Their newest menu items are grilled shrimp skewer and fresh grilled salmon. Both items are served with vegetables and a baked potato, as opposed to the traditional sides of fries and coleslaw. Just Shrimp’s menu includes jumbo wild caught shrimp, different fish dinners, such as fish n chips, lake perch, catfish, tilapia, as well as a variety of fish sandwiches and po’ boys. They have an array of different side choices, as well as their daily lobster bisque soup. It has been just about three years since Mihalos convinced her family to turn their Chicken Wild restaurant around to what is now Just Shrimp. “By experimenting a little first, we added different fried shrimp and fish items to our previous restaurant. Due to the high demand, I was able to see that this concept might just work since there is nothing like us nearby,” Mihalos said. “It was then, together with my dad, that we decided to switch the whole concept to, Just Shrimp.” Mihalos is a fourth-generation restaurateur, and growing up and around the restaurant industry has helped her greatly along the way. “Although there are many challenges I face being a young female restaurateur, having my dad by my side along the way does help tremendously,” she said. In addition to their newly grilled menu items, Just Shrimp is also offering a soft shell crab po’ boy while still in season. This seasonal item is loved by customers, and is only offered for a few weeks out of the year.
