Japchae translates as mixed vegetables.<br />
When it was first invented in the 17th<br />
century, it was a noodle-less dish.<br />
Today, the main highlight of the dish<br />
is glass noodles stir fried with colourful<br />
vegetables. The Japchae has a balanced<br />
sweet and savoury flavour with a<br />
crunchy vegetable texture that’s neither<br />
raw nor soft, and bouncy glass noodles<br />
that are not mushy. You will find that<br />
wood fungus, julienned carrots and<br />
sesame seeds are a favourite inclusion in<br />
