Munao’s visualization was vastly different than the scenes of Chicago’s famed financial district, yet it was one that was equally synonymous with the area’s history — the sight of a meticulously prepared caramelized crust pan pizza. Munao traded his usual shirt-and-tie work-attire for a chef’s apron and paired up with a business partner to reopen a local favorite pizza place in Morton Grove. Filled with the desire to further venture out, Munao sold his shares after a year and started to look for a location of his own. It didn’t take him long, and he found a space in downtown Wilmette, an ideal spot for his pizza place. Lefty’s Pizza Kitchen, 1156 Central Ave. in Wilmette, opened to the public July 18. “It’s the perfect spot,” Munao said. “I was looking for a spot along the North Shore. ... I really want to draw everybody in. I think it’s the best pizza around. I just want everybody to have a try.” Prior to Lefty’s opening in mid-July, Munao carefully worked to craft a menu that complements the pizza options. According to Munao, Lefty’s pizza options are the heart of its menu. “Our pan pizza is our speciality,” he said. “I believe in that and I know that’s good. I was worried a little about the thin (pizza), but it’s been amazing and we’ve really got great feedback on it.” Lefty’s pan pizzas place an importance on the pan itself, a method that Munao learned from his prior experience making pizza. “[From] the method I learned ... the pans themselves are important,” he said. “We buy pans and won’t serve a pizza out of them until they’re seasoned at least five times in our ovens. As each pizza cooks, that pan gets better and better. That’s a big part of our pan pizza. And another big part of our [pan] pizza is the caramelized crust that we do on the edge.” Lefty’s makes its own dough and sauce for both styles of pizzas, and Munao uses locally bought sausage, fresh, daily picked produce and a fine buffalo milk cheese. The pan pizza uses a standard mozzarella on the outer edge to help get the perfect caramelized crust. For Munao, one imperative element of each pizza Lefty’s serves is quality. “I’m all about the product,” he said. “First things first, we don’t ever send out a bad pizza. Second [for us] is customer service.” Beyond pizza, Lefty’s serves wings with five different sauces — barbecue, sweet barbecue, mild, hot and honey jalapeno — and a variety of salads. During the hours of 11 a.m.-3 p.m. during the week, and on Sunday, Lefty’s also serves single slices of thin crust cheese ($3.50), sausage or pepperoni ($4). High school students from the area who show their ID can get a slice and a soda for $5. When you go to order a pizza on Friday night, we hope you call Lefty’s.” Editors from 22nd Century Media headed to Lefty’s to taste its offerings, and, of course, we had to start with a pan pizza. We opted for one topped with mushroom, pepperoni and sausage. The pan pizzas start at $11.25 for a 10- inch and ranges to $20.95 for a 16-inch. After just a few bites, a consensus among our group of editors was quickly reached — the pizza lived up to its billing. The caramelized crust provided a crunchy, fitting end to the well-prepared pizza. Next up, we tasted the thin crust pizza topped with spinach and bell peppers. According to Munao, the thin crust has been a surprising hit for Lefty’s thus far, and it’s easy to see why. It’s thin, crispy crust is topped with the freshest of ingredients. Thin crust pizzas start at $9.50 for a 10- inch and range to $17.50 for a 16-inch. We next sampled Lefty’s wings, which are $11.95 for a dozen. Per Munao, the wings are hand-breaded, fried, sauced and then put into the oven to caramelize a bit. Lastly, we tasted Lefty’s chopped salad ($8.95) prepared with romaine and iceberg lettuce, red cabbage, bacon, diced chicken breast, diced tomato, green onion, ditalini pasta, and Gorgonzola. Those looking for other options than pizza, surely won’t be disappointed with what else Lefty’s has to offer.
