Hi Everyone,<br />

This is the 11th issue <strong>Community</strong> <strong>Spirit</strong> Valencia e-magazine.<br />

As ever, with such a diverse community here in Valencia, I have<br />

been out and about meeting and interviewing people from all<br />

walks of life.<br />

<strong>Community</strong> <strong>Spirit</strong> Valencia is now becoming a grassroots project,<br />

with the great success of the first roundtable meeting in Lliria. I<br />

am now organizing a similar meeting for people who live in the<br />

city centre. These two events will be held every month, with the<br />

Minutes always being published in this e-magazine.<br />

A B O U T A N Y W A Y ?<br />

Some may say it is a dying art or it has been lost forever in our new world of technology and ‘social’ media.<br />

Back in the day when people used to share and help each other out, maybe, pop next door for a cup of<br />

sugar when they run out. People that lived in a community would watch out for each other and think about<br />

the lonely lady who lived down the road. It is hard to find this now with the way we have evolved into the<br />

digital world. The irony of it though, is that ‘social’ media is not actually that sociable. When was the last<br />

time you jumped on the metro and somebody said ‘Hello, Good morning, Buenos dias’? All you see is the<br />

tops of people’s heads now, even the family meal get together around the table seems to have<br />

disappeared.<br />

Richard saw this big hole in our lives and decided he would fill it with a revival of community spirit, digital<br />

version. Instead of technology ruling our lives community spirit intends to use technology to work for us<br />

and help bring back the community values that were available in the past.<br />

Stepping back in time is not always a good thing, but stepping back to collect something you left behind<br />

can have a positive effect on our future.<br />

The proof of the need for a revival of community spirit has already manifested itself by the rapid growth of<br />

the community spirit magazine and now the round table meetings. The meetings are a great place to have<br />

an informal get together to bounce ideas off of each other and wow did we come up with some good ideas,<br />

all of which will be published in the monthly e-magazine for anyone who wishes to join the active group.<br />

As you will see in the e-magazines the projects that were put forward are all to do with helping each other<br />

out and those around us and truly caring for each other and our neighbours and beyond. This is not just<br />

another expat group get together in the Valencia area this is different because it has wings to reach out<br />

and the sky is truly the limit.<br />

This maybe called the ‘<strong>Community</strong> <strong>Spirit</strong>’ but in reality it is the spirit of the community making things<br />

happen.<br />

If you don't know what the<br />

At the first meeting held on<br />

24th August <strong>2018</strong>, I asked<br />

people who attended the<br />

meeting what projects they felt<br />

were important for the<br />

community to support in the<br />

towns around Lliria.<br />

I also asked people what kind<br />

of support and help they were<br />

willing to give and types of<br />

volunteer roles that they<br />

would like take on?<br />

Going forward, the Rountable<br />

Meetings will be an<br />

opportunity to connect with<br />

like-minded people in the<br />

community, to be updated on<br />

progress and things which have<br />

happened in the community<br />

since the last meeting.<br />

It is also an opportunity to<br />

discouss new ideas and put<br />

them to the vote to see if it is<br />

something which the<br />

community is willing to<br />

support.<br />

I am now organising a second<br />

monthly meeting to be held a<br />

Zaitune cafe/restaurent in<br />

Russafa for people living in<br />

Valencia. I will bridge the two<br />

groups together, so that they<br />

support each other.<br />

Russafa is definitely one of the<br />

hippest places in the city of<br />

Valencia, full of little boutique<br />

shops, trendy cafes, bars and<br />

restaurants. It’s a very social place,<br />

and I normally bump into someone<br />

I know when I am walking through<br />

the narrow streets.<br />

I am always on the lookout for<br />

different and exotic places to eat in<br />

this area, so I was delighted when I<br />

discovered Zaitune on Calle<br />

Centelles, 18, just opposite<br />

Blondes, Brunettes and Redheads<br />

Hair Salon.<br />

Zaitune is a cozy bar / restaurant<br />

which serves a fusion of<br />

Mediterranean cuisine food. It’s<br />

been open for nearly two years<br />

now and has a good reputation for<br />

offering clean, healthy, fresh<br />

homemade and exotic food from<br />

the Mediterranean at very<br />

affordable prices. And it’s also a<br />

very sociable and fun place to eat.<br />

So without further ado, let’s get to<br />

know Somar Kirco, the owner and<br />

Chef of Zaitune.<br />

got a lot of secret ingredients from my<br />

Mum or my Aunts. Take the ‘Sandwich<br />

of the Week’ for example, sometimes I<br />

use some Armenian spices in it. I find<br />

that traditional food is boring, so I<br />

always like to be as creative as I can.”<br />

Richard: “So do you see yourself as a<br />

crazy inventor of food?”<br />

THE INTERVIEW<br />

Richard: “Ok, where are you<br />

from?”<br />

Somar: “I am Syrian Lebanese.<br />

My Dad is Syrian with Armenian<br />

roots and my mum’s family is<br />

Lebanese. We have roots from<br />

everywhere, my Dad’s whole<br />

family lives in Argentina and<br />

other South American countries.”<br />

Richard: “It feels like there is<br />

quite a fusion there?”<br />

Somar: “Exactly! Just like the<br />

food we have here. Yes, my mum<br />

is an international cook now. She<br />

gets influences from Armenia,<br />

Syria, Lebanon and definitely the<br />

middle east and that has all<br />

inspired me with my own<br />

cooking.”<br />

Richard: “Ok, so those are your<br />

roots. Can you tell me about the<br />

restaurant that you have here?”<br />

Somar: “I wouldn’t call it a<br />

restaurant, it’s more like a very<br />

casual bar restaurant.”<br />

Richard: “But it’s not really fast<br />

food because people like to spend<br />

time here eating their food don’t<br />

they?”<br />

Somar: “Yes, and everything is<br />

made fresh here. All of the food I<br />

prepare myself.”<br />

Richard: “So as the Chef, what type<br />

of fusion cooking do you do?”<br />

Somar: “Mainly the fusion that I<br />

have here is from the<br />

Mediterranean area, like Morocco,<br />

Greece, Lebanon and Syria, and<br />

then you have Spain and Italy. So it<br />

is a little bit from everywhere. But I<br />

Somar: “Well I like to create more<br />

casual fresh home-made food here. I<br />

come here early and prepare<br />

everything that day, I have the<br />

‘Starters’, ‘Salads’ and ‘Sandwiches’ on<br />

the Menu.”<br />

Richard: “Ok, can you walk me through<br />

your Menu and explain how it works.”<br />

Somar: “Basically it is four sections.<br />

You have the starters, where you have<br />

four different choices. Then you have<br />

three different choices of salads and<br />

then you have the sandwiches. Our<br />

speciality is the sandwiches. And finally<br />

the dessert section.”<br />

“We basically have a variety of three<br />

types of different bread. First is the<br />

Wrap Bread. Then there is the<br />

Moroccan Bread which is 100%<br />

homemade. And then the last bread is<br />

integral baguette with the cereals and<br />

the seeds.”<br />

“OK, because the sandwiches are the<br />

main section, let’s talk about those first.<br />

As you can see, number one and two<br />

are the same main ingredient but the<br />

difference is with the sauce and the

veggies that accompany them. So<br />

you can have the same main<br />

ingredient with two different<br />

sauces, and two different types of<br />

vegetables. For vegetables you<br />

always have a fresh option and a<br />

roasted option and then the same<br />

thing goes for the sauce. The first<br />

option goes with the tomato<br />

sauce which I make myself and it<br />

goes with the roasted vegetables<br />

which are eggplants, and green<br />

and red capsicums as well.”<br />

“Then for the second option it is<br />

the same meat fillet which goes<br />

with a really nice sauce which I<br />

make from black olives, with olive<br />

oil, little bit of garlic and a little<br />

squeeze of lemon. This is my<br />

favourite sauce actually, it’s a<br />

really special one. So the same<br />

meat goes with this and then you<br />

also have the fresh vegetables<br />

which go with it as well, and that<br />

is basically lettuce, green olives<br />

and tomatoes. You can also add<br />

the chilli sauce to any option.”<br />

love garlic actually, I think it is the<br />

essence of food. So that is Tzatziki<br />

and that goes with the fresh veggies<br />

and then number 4 goes with the<br />

tomato sauce again.”<br />

“The kebab is our kind of speciality, in<br />

Europe the Doner Kebab is very<br />

popular although it’s most probably<br />

not even meat! It is basically made<br />

out of potato and all the rubbish<br />

leftovers of meat. So I wanted to do a<br />

proper kebab option, but it is much<br />

better quality meat and has nothing<br />

to do with what you are used to!”<br />

“The proper kebab is meat on a stick,<br />

this is very common in places like<br />

Iran, Syria and Lebanon. This is where<br />

it originally comes from, and even in<br />

Turkey it is really common.”<br />

Richard: “So what sort of meat do you<br />

use?”<br />

Somar: “I mainly use beef meat. for the<br />

kebab I mix it with a bit of lamb fat, just to<br />

give it flavour. The idea here is to sell<br />

clean food, but at affordable prices.<br />

Almost everyone can come and eat here,<br />

it’s not like a privilege just for people who<br />

have a lot of money, I mean it’s a Euro 5<br />

Sandwich or a Euro 5 Salad or a Starter..”<br />

Richard: “I’ve tried your Sandwiches and<br />

they are a really big size, so you are<br />

definitely getting value for money!”<br />

Somar: “True, actually. Most people love<br />

the Aleppo Kebab, which is named after a<br />

city in Syria. We have a very special spice<br />

in Syria and Lebanon which is called ‘7<br />

Spices’ that we use in this and I love<br />

serving it to people because it reminds me<br />

of my roots and where I grew up.”<br />

“So the same thing applies for<br />

numbers 3 and 4, which is the<br />

chicken fillet and then the<br />

different sauces, so number 3<br />

goes with Tzatziki, which is a well<br />

known Greek sauce.”<br />

Richard: “What is that made<br />

from?”<br />

Somar: “Basically Greek yoghurt,<br />

with cucumber, and a little bit of<br />

Aleppo kebab

Richard: “How do you get inspired<br />

for food ideas for your kitchen?”<br />

Somar: “Well from family, friends<br />

and traveling experiences mainly.<br />

when I go travelling to places like<br />

India for example, I usually go to<br />

the local restaurants, not touristy<br />

ones. To experience the real food<br />

of the country. I want them to<br />

surprise me somehow with the<br />

taste, I really want to taste<br />

something exotic and then I get<br />

inspired!”<br />

Richard: “Well it seems to be<br />

working because your food does<br />

taste exotic and what you are<br />

serving does seem to stand out<br />

from your competitors.”<br />

Somar: “Thanks man. This was the<br />

point as well, because I was in the<br />

process of creating a totally new<br />

concept, so I wanted it to taste and<br />

feel different. I am a very social<br />

person, I love to meet people and I<br />

love to go travelling. I am used to<br />

the nomadic lifestyle and I really<br />

enjoy it to be honest. It keeps things<br />

fresh and you learn a lot from new<br />

cultures.”<br />

“I wanted the whole concept to stand out<br />

and feel different. When you come here,<br />

for example, we don’t have waiters<br />

serving you. Instead we explain what is<br />

on the menu and then give you a pen. You<br />

can tick the boxes of what you want on<br />

the menu and then give it to us. Of course<br />

we have waiters to serve the food, but<br />

the attention is not focused on the client<br />

all the time, rather it is about letting the<br />

client feel comfortable and relaxed as if<br />

they were at home.”<br />

“The attention of the main energy is on<br />

the food and the experience for the<br />

clients. We like to joke and play a lot with<br />

our clients to break the ice and have fun<br />

with them. We like people to come here<br />

and enjoy their time with us!”<br />

Richard: “So you are relaxed about the<br />

way people can eat the food as well?”<br />

Somar: “Yes, it’s sandwiches, starters and<br />

salads. So the salad you can eat with a<br />

fork, the starters you can eat with bread<br />

and dip it into a sauce and the sandwiches,<br />

well you just eat that with your hands man!”<br />

“It’s like a lot of friends all hanging out<br />

together in a very casual place having fun. I<br />

notice that a lot of clients start mingling<br />

together even though they aren’t sitting on<br />

the same table. If it was very formal and<br />

luxurious they most probably wouldn’t dare<br />

to do that, but here the vibe of the place just<br />

invites people to open up and chat with their<br />

neighbours.”<br />

“At the far end there is a social area with<br />

high tables and stools. It’s really setup for<br />

people who want to meet new people and<br />

share conversations whilst have their<br />

dinner. Valencia is special in that way as it is<br />

a very social city and people like to relax and<br />

enjoy their food before they move on to<br />

their next destination.”<br />

Richard: “Actually, in a small space you have<br />

a lot of different options you can offer<br />

customers, from a social bar area, to a more<br />

individual relaxed area, to the outdoor<br />

terraced area and even a take-away<br />

service!”


Somar: “Yes! And I try to get things<br />

organised here so I can serve food<br />

quickly and within people’s<br />

expectations. I really like it that when<br />

people come here for a take-away<br />

they can normally get it freshly<br />

cooked within about 5 or 10 minutes<br />

depending on what they order, so they<br />

can get home quickly to enjoy it after a<br />

hard days work for example.”<br />

Richard: “So what type of customers<br />

come here?”<br />

Somar: “They are really nice people<br />

actually. Mainly Spanish and expats,<br />

conscious people who are really<br />

considerate. They are generally really<br />

nice people who appreciate what we<br />

do!”<br />

Richard: “Can you tell me how to<br />

pronounce the name of your<br />

business?”<br />

Somar: “The name means a lot to me,<br />

it is ‘Zaitune’ which means the olive<br />

tree. For people who come from the<br />

Mediterranean, it is more like a sacred<br />

tree as we see it everywhere in our<br />

region. Olives and olive oil are a key<br />

ingredient in all our food dishes.”<br />

Richard: “Yes, it’s what connects everything<br />

together.”<br />

Somar: “Exactly! The oil and the tree itself,<br />

has a spiritual and symbolic meaning as well.<br />

It can also live for about 3,000 years, so I<br />

have a lot of respect for it. And lastly, it<br />

connects the whole Mediterranean region.”<br />

Richard: “Yes, at the very start of this<br />

interview you were talking about your roots<br />

and how important that is to your business<br />

and now here we are at the end of it talking<br />

about the olive tree and the name Zaitune. It<br />

all fits together perfectly!”<br />

particularly. As a person with relatively<br />

crappy skin I have always looked to these<br />

blown eczematic rage. One of my regular<br />

customers marvels at the fact that<br />

although, for years, she has suffered from<br />

dried hands, my Suma soaps have helped<br />

give them moisture.”<br />

synthetic detergent foaming agents, is<br />

you would find with every other<br />

toothpaste. However, by removing typical<br />

ingredients like SLS (Sodium Lauryl<br />

do very little. They just<br />

make it easier to clean<br />

off, not allowing for the<br />

Richard: “And why do you recommend<br />

using these products?”<br />

David: “The Suma soaps are handcrafted<br />

using a blend of olive oil, coconut oil, and<br />

shea butter, and retain all the soap's<br />

naturally released glycerine. The bars are<br />

individually boxed in plastic-free<br />

packaging. They are free from parabens,<br />

SLS and palm oil. They are Vegan, BUAV<br />

approved, and cruelty-free.”<br />

David: “The Faith in Nature shampoos<br />

and conditioners are a firm favourite.<br />

They come in a range of scents, and each<br />

have their own unique benefits. Seaweed<br />

strengthens the hair, Chocolate helps with<br />

volume, Tea Tree is an antiseptic, great if<br />

you spend a lot of time around children<br />

who are susceptible to lice, as well as<br />

healing the scalp. All of the products have<br />

suggested hair types from dry to normal<br />

to oily but the more profound healing<br />

properties vary with the ingredients, of<br />

course. If you have an issue that you<br />

would like to attend to, I would<br />

recommend doing some research.”<br />

“There are a lot of companies out there<br />

whose products contain ingredients that<br />

promise to heal, revitalise and add<br />

volume to hair. However, these products<br />

can also contain some very damaging<br />

ingredients, both to the individual and the<br />

environment, and over time people<br />

realise the unsustainability of these<br />

“miracle” products.”<br />

Although I have complete faith in the<br />

products I sell, I would encourage parents<br />

to read the ingredients of all of my<br />

products and ensure they are safe for<br />

their children. I discussed, in depth,<br />

possible implications with the mother of<br />

one of my students. Her 8-year-old son<br />

was having some skin irritations on his<br />

face. After said discussion she bought the<br />

product, Dr Bronner’s 4 in 1 sugar soap,<br />

and I am happy to say that his skin issue<br />

was resolved.”<br />

“The main products that are child<br />

why did you decide to<br />

set up this business?”

David: “I have been using Suma and Faith<br />

in Nature products for years. I vividly<br />

remember the ethical shop that I first<br />

discovered Suma soaps. You could buy<br />

four 45g bars of soaps for 4 pounds.<br />

Since then prices have risen but I always<br />

found these products to be quite<br />

affordable, and their mission statement<br />

and quality always made it a worthwhile<br />

purchase for me.”<br />

“At the start of this year I started thinking<br />

about setting up a company. I wanted<br />

something that would be sustainable and<br />

would contribute in some way. I’d thought<br />

about rastros or something to do with<br />

reclamation. I continue to have an idea of<br />

an “English” space, somewhere where<br />

children from low income families could<br />

come and learn English. I looked at<br />

logistics, I wrote to AMPA, but all the<br />

information I received yielded no or costly<br />

results. Finally, I settled on the idea of<br />

creating a company that would try to<br />

make organic products more affordable.”<br />

“Organic, Vegan, Natural, Fair Trade and<br />

Sustainable, to name but a few, have<br />

always been buzz words that have<br />

allowed companies to charge extortionate<br />

prices for their products. It makes no<br />

sense to me, other than greed, to hock a<br />

product with some or all of the qualities<br />

named above, and then charge ridiculous<br />

prices for it. What good are you doing if<br />

only a select few can afford it?”<br />

“I researched the cost of the products here in<br />

Spain and was dismayed at the prices. I knew that<br />

I could do better. Money isn’t the driving force for<br />

me. I want something that is sustainable,<br />

agreeable and affordable.”<br />

Richard: “So I am curious now, just to round<br />

things off, what is your mission?”<br />

David: “My mission, I guess, is to change a<br />

mindset that is prevalent in contemporary society.<br />

People always ask why the price of organic<br />

products is so high, but not a lot of people ask<br />

why the products they buy are so cheap. People<br />

see the prices and don’t look at the ingredients, or<br />

else they choose to ignore them. If I can find a<br />

middle ground where people would be happy to<br />

throw a few extra pennies at quality products<br />

rather than begrudgingly hand over their hard<br />

earned pay, then my mission is accomplished.”

An interview with Lia Escrig, macrobiotic teacher and<br />

consultant, a private chef and a yoga teacher.<br />

Whenever I look in the mirror, I am very happy to see what<br />

is staring back at me, even though my hair is grey now. But<br />

as I creep to 50 years old, I do notice that I don’t have as<br />

much energy as I used to have, and the aches and pains last<br />

a bit longer than they used to! So instead of getting into<br />

the comfort zone mentality and thinking that this is normal<br />

for this age, I decided that it’s time for a big lifestyle<br />

change.<br />

At the moment, I am more aware about my health and<br />

what I am eating. I really don’t want to be having too much<br />

caffeine, alcohol, refined sugar, white flour and processed<br />

foods. It doesn’t make me feel good. Now the problem is<br />

that as my life is changing, I don’t know what to eat any<br />

more! My recipes are getting a bit boring and I know that<br />

food is medicine for my body, but I just don’t know how to<br />

prepare it and cook it to have the best results. So instead<br />

of worrying and procrastinating about it, I thought I’d<br />

contact a friend, Lia Escrig is a macrobiotic teacher and<br />

consultant, a private chef and a yoga teacher. I met her<br />

Lia studied at the Kushi Institute in Becket Massachusetts,<br />

USA, and at the IME Institute Macrobiotics in Spain, also<br />

with Simone Kitchen in Amberes, Belgium. She has studied<br />

Dynamic Yoga with Godfrey Devereux and Jose Luis<br />

Cabezas and Hatha Yoga Training in Wild Mountain Yoga,<br />

California.<br />

THE INTERVIEW<br />

Richard: “So today we are going to learn about<br />

Macrobiotics with Lia. Some people are unsure about what<br />

macrobiotics are, so can you explain?”


Lia: “The essence of macrobiotics comes from Japan. It<br />

comes from years of observation within the body and<br />

nature, how it is all connected and there is also a lot of<br />

philosophy behind it too. Macrobiotics means Long and<br />

Stable Life. The knowledge of everything has an effect<br />

on our body and in our minds. When you are more<br />

aware of that, it is easier to choose what feels better for<br />

you. So with macrobiotics, you have more knowledge<br />

about the properties and energy of the food and that<br />

gives you more freedom to choose what is better for<br />

you. It’s important to have as less processed food as<br />

possible. Best to have whole grains, veggies, legumes,<br />

fruits, seeds, nuts and seaweed, pickles, etc.”<br />

Richard: “So what is the focus when people want to eat<br />

healthy food?”<br />

Lia: “The thing is that each person is different, so every<br />

person has to focus on different things, it really depends<br />

on the condition and lifestyle of the person. But the<br />

basis is to eat more whole grains, legumes, and veggies<br />

Lia: “Yes, it helps you to build up your immune system as it<br />

works throughout the whole of your body because everything is<br />

connected.”<br />

“I remember a few months ago working with a baby<br />

who was 9 months old. After two classes he started to<br />

clap his hands. Even though it seems like they can’t do<br />

anything, it is not true."<br />

"So it is a group activity, you can either choose to do a<br />

single class but the thing is that the classes are about<br />

teaching the kids English and if you want to learn<br />

something new then you have to repeat it and repeat<br />

it, so it’s best to do the classes all year around.”<br />

Richard: “At what age do kids normally start<br />

speaking?”<br />

Stephanie: “Most children speak their first words<br />

between 10 to 14 months of age. Although they can’t<br />

fully speak a language yet, you can see that they<br />

understand it in their responses to you... For example,<br />

when I say, ‘Can you find the blue shark?’ after a few<br />

classes they can get the blue shark for me, so they can<br />

understand even though they can’t speak yet.”<br />

Richard: “So I am curious, are you mainly teaching<br />

Spanish kids English or are you teaching English kids<br />

English?”<br />

Stephanie: “Most of the parents who are coming are<br />

native English speakers, but it is also a music/dance<br />

class so it is good for the overall development of the<br />

child. And I think that learning has to be fun, it is an<br />

adventure for kids.”<br />

Richard: “Is this how you learned when you were a<br />

kid?”<br />

Stephanie: “Well my parents always took the time to<br />

play with us. I went to a very open-minded school, they<br />

did a lot of creative things. Actually, I started dancing<br />

and singing when I was three years old! Almost every<br />

week I wanted to do singing and dancing and I wanted<br />

to be on the stage! I just loved to express myself. My<br />

parents always allowed us to do this because they<br />

believed you have to do what you love!”<br />

Richard: “It’s funny that there is a theatre school right<br />

next door to where you live here!”<br />

Richard: “OK, so tell me about the ‘Swing’ … what sort of<br />

music do you play for the kids?”<br />

Stephanie: “Basically very popular English songs. There are a<br />

lot of nursery rhymes which are very old fashioned and use<br />

difficult English language so I try to find music which is easier,<br />

like ‘Wheels on the Bus’ or ‘Heads, Shoulders, Knees and<br />

Toes’. Things that I am pretty sure almost everybody knows.”<br />

“The more I repeat tunes and songs, the more it gives the kids<br />

a feeling of safety and comfort as they start to recognize and<br />

remember them. I also use a lot of objects in the classes like<br />

animals, musical instruments, a parachute. Making it visual<br />

really helps with the learning process. So after 3 or 4 weeks, I<br />

do a few new songs and sometimes I repeat other songs<br />

depending on what works for the group.”<br />

Richard: “How long do the courses last for?”<br />

Stephanie: “It is a 45 minute class. If you really enjoy the<br />

classes, then you can join for as many as you want over<br />

however many years you want to attend. I work with themes<br />

and all of the seasons. Also, it doesn’t matter when you join in<br />

because most of the songs are easy, you’ll remember them<br />

pretty quickly.”<br />

Richard: “So how often do you do it in the week?”<br />

Stephanie: “I mostly do it on mornings and afternoons each<br />

week at different locations. The list of the different locations<br />

and days is in the box next to this article.”<br />

Richard: “OK, so how much does it cost?”<br />

Stephanie: “Well you can buy a card for 10 classes and there<br />

is no time limit to it, so you can use it all year around. You can<br />

buy 10 classes for Euro 100, and then if you bring 2 children it<br />

is Euro 70 extra. So if you bring one child it is Euro 100 and if<br />

you bring 2 children it is Euro 170. You get a stamp every<br />

time you join a class, once the card is full you get the next<br />

class for free. And if you bring a new mum and dad to the<br />

class, then you get one class for free as well.”<br />

"Then a single class is Euro 12. It’s very important to reserve<br />

a spot, as I only allow a maximum of 8 kids, I want to give all<br />

the kids the attention they deserve."<br />

Stephanie: “Yes, that is true.”

with them during the class?”<br />

Stephanie: “Yes, that is very important. It is a bonding<br />

experience, it is quality time with their kids. So we do<br />

lap or they have to walk around with them and dance.<br />

So it is very important that they are with them,<br />

especially important for the babies!!!”<br />

“Yes, it is a social class. That is why I allow babies from<br />

8 months old to kids that are 4 years old. I believe that<br />

everyone can help each other out. I don’t really believe<br />

in rules about what kids can do at certain ages, I think<br />

that you never know what kids are capable of doing<br />

when you give them lots of love and encouragement."<br />

Richard: “Well I think that it is wonderful that you are<br />

encouraging kids to do this, just imagine what these<br />

kids will achieve when they are older! Can you tell me<br />

what your mission is with this project?”<br />

Stephanie: “My mission is to be able to help kids to<br />

express themselves, and to become beautiful,<br />

confident and authentic people, and to know that they<br />

can achieve anything they want too and that it should<br />

be fun to learn. Yes, help them to have fun while they<br />

are learning, that’s it!”<br />

the liver is designed to stop any kind of chemical. So our body<br />

is not designed for medicine. It has to heal on its own! Don’t<br />

interfere with the body’s mechanism. That’s how I think about<br />

it.”<br />

Richard: “So this is turning the pharmaceutical industry on its<br />

head by saying that we can heal ourselves. So how is the best<br />

way to help the body to heal itself? ”<br />

Dr. Biswaroop: “As we all know, the body has its own immune<br />

system. The immune system recognises the nutrition that goes<br />

into the body in its natural state. So the only thing is eat, get<br />

some sunlight and rest… think positive. The body can do the<br />

work the best in crisis and in normal life also.”<br />

Richard: “What is your mission and intention with your<br />

medical work?”<br />

Dr Biswaroop: “They are a profit making<br />

venture, it is just a business. Business<br />

cannot be done with a healthy person<br />

and it cannot be done with a dead<br />

person. But it can be done with people<br />

who are alive and sick.”<br />

Dr. Biswaroop: “My mission is to encourage everyone to be<br />

their own Doctor. For healing ourselves we should not be<br />

dependant on someone else. We should be our own<br />

mechanic, our own engineer, our own doctor. I believe we can<br />

all have a life journey of at least 100 years on this planet when<br />

we take care of ourselves and become our own doctor. So<br />

think of yourself like a new car we were given at birth, but in<br />

the middle of the journey something happens to it, so we<br />

should have a little bit of knowledge of how to fix it.”


Richard: “So what is your medical<br />

background and experience?”<br />

Dr Biswaroop: “I completed my Post<br />

Graduation in Diabetes Education from<br />

International Diabetes Federation,<br />

Belgium, and got a specialization in<br />

Nutritional China Studies from Cornell<br />

University, USA, and later completed my<br />

Doctorate in Public Health from Vietnam.<br />

But I believe that the most important<br />

qualification is that I have had until now<br />

about 20,000 patients I have seen. That<br />

experience is much more valuable than<br />

those academic qualifications.”<br />

Richard: “Yes I agree, life experience<br />

and healing people is the most<br />

important thing. So can you tell me<br />

about your practice in India?”<br />

Dr Biswaroop: “Yes, this is my office<br />

here about 10 km from New Delhi. We<br />

have a virtual diabetes school, so I don’t<br />

encourage my patients to come and<br />

meet me. I tell them to stay at home<br />

wherever you are and connect with me<br />

through Skype. We monitor the patient,<br />

we prescribe them a diet while they are<br />

staying at their home, they are getting<br />

cured and they are getting off medicine.”<br />

“So we have patients from all over the<br />

world.”<br />

Richard: “And I see that you are doing<br />

events? Can you tell me about what you<br />

do at your events?”<br />

Dr. Biswaroop: “Yes, twice a month we have a training<br />

programme for the masses. Where we invite the ordinary<br />

people and I train them how to be their own Doctor. For<br />

example, their temperature is high, their blood sugar is<br />

high, etc, so in those circumstances what are the steps to<br />

take? To relieve yourself from the pain and find a cure.<br />

That is the training we do.”<br />

“I put a video recording in my posts so people can benefit<br />

even if they don’t come to the events.”<br />

Richard: “Ok, so you can help people in Europe then, well,<br />

anywhere with an internet connection?”<br />

Dr. Biswaroop: “Yes, and we also have a centre in<br />

Switzerland, in Zurich. So I will be in Zurich on 30th<br />

August this year. I am traveling a lot actually, I will be out<br />

of the country for 15 days!”<br />

Richard: “Why is diabetes such a big problem in India or<br />

in Asia?”<br />

Dr. Biswaroop: “I believe that out of all the medical<br />

conditions, Diabetes is the Number 1 problem. Not only a<br />

health issue, it is also an economic issue, it is a social<br />

issue and it is a political issue. I’ll explain, Diabetes in a<br />

medical term means high sugar in your blood. Diabetes is<br />

not given the status of a disease, it only means high sugar<br />

in your blood. For example, high blood pressure, if I run<br />

right now and you check my blood pressure, it will be 200<br />

x 100. High blood pressure. When your blood sugar is<br />

high, there is a kind of metabolism in your body leading to<br />

that high blood sugar. Even if you have had Diabetes for<br />

the last three decades, within 3 days you can bring the<br />

blood sugar back to a normal rate. It is not a chronic<br />

illness, it is not an illness which you have to live with for<br />

the rest of your life.”


“With some simple changes, you can bring down the<br />

blood sugar within 3 days! You just take out the<br />

excess sugar from the body and you become normal<br />

again, and that is what I teach to my clients. If you<br />

want, in one minute I can teach you as well?”<br />

Richard: “Yes, please!”<br />

Dr. Biswaroop: “Yes, very simple only 2 RULES to<br />

remember!”<br />

“Number 1 - You cannot remain a diabetic patient.”<br />

“Number 2 - If you are already taking some medicine,<br />

within the 3 days you need to taper down the<br />

medicine, taper down the insulin if you don’t do that<br />

your blood sugar will be too low. People may even<br />

die.”<br />

“And there are 3 Steps:<br />

Step 1: Decide to eat only fruits in the morning. Any<br />

fruits that you like, you may want to eat mango,<br />

banana, grapes, apples, oranges. Basically, any fruit<br />

which is locally available.”<br />

“The quantity is very important. 100 grams of all the<br />

kinds of fruits. You must eat 700 grams or more, it is<br />

better if you eat more of course! If you eat less than<br />

700 grams then it is just food for your body, but if it<br />

is more than 700 grams then it becomes medicine<br />

for your body. That’s important to remember.”<br />

“So the more you eat the better your sugar will be<br />

under control. This is something in contrast to what<br />

you have been hearing about diabetes. But the truth<br />

is that blood sugar is controlled by eating a large<br />

number of fruits. So that is Step 1, which means that<br />

until 12 noon you are not allowed to eat anything<br />

else! No tea, no coffee, no noodles, no bread. Just<br />

fruits and fruits!!”<br />

“Step 2 is that when you sit for lunch or when you sit for<br />

dinner, always sit with two plates for you. The first plate<br />

you can have 4 types of vegetables of your own choice<br />

and which you can eat raw. For example, tomato,<br />

cucumber, radish, carrot, etc. The quantity depends upon<br />

your body weight. In my case 70kg x 5 times is 350 grams<br />

or more of raw vegetables.”<br />

“Step 3. Now you have finished the first plate, you can eat<br />

the food on the second plate. That is conventional home<br />

cooked food which you have been eating since your<br />

childhood. Anything, pasta, noodles, rice, bread!”<br />

Richard: “What sort of quantity?”<br />

Dr. Biswaroop: “Any quantity you want! But you are only<br />

allowed to eat it once you have finished the first plate.”<br />

Richard: “Gosh that reminds me of being at school again!”<br />

Dr. Biswaroop: “I know what is going on in your mind!<br />

You are thinking that if you eat that much on the first<br />

plate, you won’t be able to eat anything on your second<br />

plate. But the truth is that in the first 3 days you might<br />

feel full by eating plate one, but by the 4th day, the more<br />

you eat on plate one, the more hungry you will feel. Your<br />

appetite will increase. Your metabolism will increase. And<br />

your ability to eat food will also increase. The only rule<br />

that I say is, avoid eating meat and dairy products. So no<br />

milk, no butter, no cheese, no eggs on the second plate.”<br />

“So remember this is the same rule for lunch and dinner.”<br />

“So Step 3 is what not to eat. So that is NO ANIMAL FOOD<br />

and NO BAD FOOD.”<br />

Richard: “Processed food?”


Dr. Biswaroop: “Yes, so if you follow these three<br />

rules, within 3 days your blood sugar is bound to<br />

come down and you have to really taper down the<br />

medication. And remember with this method, you<br />

cannot remain a diabetic patient. This will cure you<br />

very quickly.”<br />

Richard: “That is very good news! So who can<br />

people trust now if their allopathy doctors are not<br />

telling them the truth about these medical conditions<br />

and many other conditions?”<br />

Dr. Biswaroop: “People have to be their own Doctor.<br />

So they survive and live healthily and die healthy.”<br />

The Zodiac is the embodiment of the principle of energy interaction. It is an imaginary band surrounding our<br />

planet and divided into 12 equal sectors. As the Earth travels on its course around the Sun in a year, it<br />

consecutively reveals to the observer on the surface the 12 sections of space (the Sun from our position on<br />

Earth appears to be located in one of the 12 signs every month, constantly moving to the next, counterclockwise).<br />

The 12 signs are a manifestation of the 4 elements in 3 different styles of action (called MODES).<br />

There are 3 fire, 3 air, 3 earth and 3 water signs, making up a total of 12. In a certain way, we can speak of 3<br />

zodiacs, as the 4-fold pattern which marks the start of each season (spring – Aries, summer – Cancer, fall –<br />

Libra and winter – Capricorn) is repeated twice more during the year in the periods between the Equinoxes and<br />

the Solstices.<br />

The 3 MODES of Energy Expression:<br />

The elements themselves are quite broad categories of 4 general styles of adjustment and perception, but each<br />

of them operates in one of 3 ways as what the Zodiac describes is, in fact, a cyclic process of growth – a new<br />

form is being born, it grows up, matures and dies. Everything has its beginning, mid-period, and end and these 3<br />

life phases require a different mode of activity if the cycle is to follow its natural path and all phases of<br />

transformation it includes. And this cycle may be of the lifetime of any form of organized activity, be it a person<br />

or a business organization. Anything which at some point appears, has its lifespan and then disappears or gets<br />

modified. Thus, we have the MODES:<br />

Cardinal: motion is straightforward – initiates, leads to new territories, expands the field of action<br />

Fixed: motion in a circle – manages, controls and makes productive, sustains and develops over time<br />

Mutable: motion in a spiral – combining the other two, brings change always at a higher level


Psychological Implication of the 4 Elements and the 3 Modes in Astrology<br />

All 4 elements in their 3 modes exist in every person, but everyone is consciously more attuned to some and<br />

less to others. There are also conflicting pairs, as well as mutually supportive, compatible energies. The<br />

combinations are infinite, but the particular one we were born with (reflected in the sum total of factors in<br />

our birth chart), puts a definite stamp on the way we would perceive the world and react on all kinds of life<br />

situations. Our predisposition to one or several will suggest the specific way we feel about ourselves and our<br />

approach to relationships.<br />

Different energy patterns will imply areas of talent and skills, as well as others of struggle and sense of<br />

inadequacy. The elements are thus the very substance of what both the body and mind are made of and the<br />

study of the birth chart can show how we can make the best use of the energies we can tap on while balancing<br />

the expression of those we are not so attuned to. There is a direct parallel between the meaning or the<br />

Zodiac signs in astrology and the archetypes in Carl Jung’s depth psychology. Jung’s division of archetypes<br />

into 4 groups (Intuition, Feeling, Sensation, and Thinking) also links to the characteristics of the 4 Elements.<br />

The Element Fire – INTUITION<br />

Masculine, active, assertive energy, characterized by spontaneity and vitality. It dwells in the world of<br />

imagination and abstract future-oriented action. Fire can be speculative, gambling, unstable and capricious,<br />

often highly detached from the material world and its demands. Living in a state of constant expectancy of<br />

the next step on the road, bound by the need for constant motion and expansion. The whim of the moment<br />

can push it in ever new directions, making it unreliable, but never boring.<br />

The Element Water – FEELING<br />

Feminine, passive, receptive energy, seeking to flow and merge. For all 3 signs, interpersonal relationships<br />

are of major importance. Perception of life can be very subjective and judgment is often made on the basis of<br />

how something or someone makes them FEEL. Water is emotional, subconscious and highly perceptive of<br />

other people’s moods, also deeply sensitive and compassionate. Due to its dependence on intensive and<br />

positive human contact, it can be clingy, fluctuating and unpredictable.<br />

The Element Air – THINKING<br />

Masculine, dynamic, mental energy, probing into the mechanisms of the intellect and operating through logic,<br />

set frameworks and abstract ideas. Air signs work with information, exchange of thoughts and constant<br />

communication are vital needs for them. It is the most human of all elements and the one associated with<br />

reason and objectivity, often at the expense of the feeling function which here is very weak and difficult to<br />

connect with.<br />

The Element Earth – SENSATION<br />

Feminine, grounded, practical and very physical. Earth lives in the world of material objects and tangible<br />

reality. Only what can be perceived through the senses is regarded to be factual and worth accounting for.<br />

Stable, reliable, sustaining and predictable, but often stubborn, slow to change and stuck in repeating<br />

obsolete patterns. Can become depressive and cynical due to lack of positive intuition.


ARIES (CARDINAL FIRE) – its goal is to become more courageous and to strengthen his/her will, fighting battles of<br />

all sorts under pressure from external forces. Moving forward into a new territory where it’s scary, unfamiliar and<br />

risky and doing that in spite of fear. Being motivated to act with initiative and trust in the positive outcome of<br />

future endeavors. Aims to put the past behind its back.<br />

TAURUS (FIXED EARTH) – stabilization of the uncontrolled conquering impulse by demanding practical and<br />

material realization of the new ideas, so a process of efficiency and productivity can be achieved. Utilizing<br />

resources so they lead to some form of harvest at a later stage. Sustained labour for the sake of a tangible result<br />

which is then to be used as a building block for personality.<br />

GEMINI (MUTABLE AIR) – expansion of the personal sphere of operation and mobilizing of a new type of<br />

resource – a wide field of contacts and information exchange. On a mission to gather as many details about the<br />

immediate environment as possible and include them in his/her arsenal, so a sense of order in the mind is<br />

eventually achieved. Through mental perception and adaptation, one seeks orientation and classification.<br />

CANCER (CARDINAL WATER) – how I feel about myself and those closest to me, this question needs to find a<br />

definite answer through painful soul-searching in conditions of great vulnerability. Personality tries to define its<br />

roots and boundaries, so it can withstand the test of meeting the outer world with an open heart. A new direction<br />

is again set, but this time leading inward to the depths of the psyche and the hidden world of the unconscious<br />

which is to guide the way forward.<br />

LEO (FIXED FIRE)– here fire is active, expressive, seeking a demonstration of its core energy in palpable,<br />

registrable terms. Generosity and grandiose gestures need to receive adequate feedback. Talent and achievement<br />

are to be appreciated and allowed to impress upon the environment and especially on other people. Fire needs to<br />

be given a field to build and create with its own means.


VIRGO (MUTABLE EARTH) – corrections and re-evaluations have to be made to regulate the urge for expansion<br />

and these stem from a sense of failure and inadequacy. Something in the process of materialization of the personal<br />

potential has not worked out and there must now be a pause for reflection and then humble choice of a new<br />

direction, implying discipline, learning from superiors and a readiness to take a new road beyond the individual<br />

ego and towards equal relating.<br />

LIBRA (CARDINAL AIR) – joining hands with others for the sake of the common good becomes a defined goal<br />

which needs to be put to practice. Entering into relationships follows a compulsive feeling of it being the only<br />

positive next step, as difficult as it may feel. The future is in mutual interrelatedness and air need to permeate<br />

through all walls so far dividing people and force them to connect despite differences. And that is to be achieved<br />

through air means – words in dialogue.<br />

SCORPIO (FIXED WATER) – the dangerous journey into merging with another, especially the mate, has already<br />

been taken. Now there must be and will result, positive and negative. The union will produce a new strength for<br />

the parties or will shake them down to their roots if they are not prepared to work for a balanced union with all<br />

compromises and sacrifices that it entails.<br />

SAGITTARIUS (MUTABLE FIRE) – for change to be brought and for it to be effective and ubiquitous, the sphere of<br />

operation has to be expanded in large scale, reaching out to foreign cultures, exotic concepts, philosophical ideas.<br />

A dream for something larger than the individual person’s aspirations needs to be born and offered out as a<br />

solution to the need of whole groups to move on to the next level and live together in harmony.<br />

CAPRICORN (CARDINAL EARTH) – provided all previous levels have been passed successfully, the accumulated<br />

resources and experiences would eventually crystallize and form a stable structure, a universal system of<br />

organization which now sets the tone for the life of whole groups and societies. What has been built must be<br />

preserved and for that to happen, a strong, resilient container should be used in the form of institutions of<br />

authority and large managerial systems.<br />

AQUARIUS (FIXED AIR) – the structure of the massive ‘house’ build by this point is now under review for design<br />

imperfections, the proper functionality of services, quality of life of the people occupying it. These are all being<br />

reassessed. Great scrutiny of the intellect is used to estimate the value of the building and if found defective, to<br />

trigger quick reform and alterations. And even the most solid of structures gets old and derelict under the<br />

pressure of time, calling for total renovation or demolition.<br />

PISCES (MUTABLE WATER) – death or rebirth, only two options for change at the end of the cycle exist. It is now<br />

important to SENSE which parts of the old are worth preserving and which ones must definitely be relinquished<br />

without sentiment or regret. Only the essence must remain if the old house’s foundations are to be used to build a<br />

new future in the next cycle of life.
