Damascus and <strong>Boker</strong> Core Damascus,<br />
both in strictly limited editions.<br />
Both series are equipped with handforged<br />
stainless Damascus. There<br />
are only a few blacksmiths in the<br />
world who have mastered the difficult<br />
technique of hand-forging stainless<br />
steel into a true Damascus. The<br />
handle wood of these special models<br />
is made from historic oak beams from<br />
the keep, the main tower of Burg<br />
Castle.<br />
HANDMADE SINCE 1869.<br />
Since 1869, our Solingen Manufactory<br />
has been making knives with the tree<br />
symbol – our trademark of international<br />
fame and the historic crest of the<br />
<strong>Boker</strong> family (first registered as a<br />
trademark in 1674). There couldn't<br />
be a better symbol for our identity<br />
and our aspirations - the tree was<br />
one of the earliest human symbols,<br />
venerated as a mythical giver of life.<br />
Unlike any other symbol, it stands for<br />
our quality consciousness, our loving<br />
attention to detail and our sustainable<br />
environmental stewardship.<br />
The tree has roots and a firm place to<br />
stand. As an ecosystem, it is a living<br />
being and a habitat. At the same time,<br />
it grows and develops. This is how<br />
we see ourselves, as well. We are<br />
constantly optimizing the functionality<br />
of our knives, using cutting-edge<br />

metallurgical methods and the forms<br />
of contemporary schools of design.<br />
One of many examples is our kitchen<br />
knife series <strong>Boker</strong> Pure CPM,<br />
in which we realized the reduced<br />
design vocabulary of Danish designer<br />
Jens Ansø in powder metallurgical<br />
CPM-154 steel, combining it with<br />
domestic oak wood. This CPM steel,<br />
produced with the latest technology,<br />
far surpasses more established types<br />
of kitchen knife steel with its excellent<br />
properties for cutting tools.<br />
Our newly developed and handforged<br />
kitchen knife series <strong>Boker</strong> Core<br />
combines the traditional production<br />
method and reliable benefits of a<br />
die-forged bolster knife with light,<br />
innovative lines. Two exclusive<br />
highlights are our knives <strong>Boker</strong> Saga<br />
This medieval fortress is a famous<br />
landmark of the Bergisches Land, and<br />
was the ancestral seat of the Counts<br />
von Berg, who gave our region its<br />
name. These new special limited<br />

We are a modern and sustainable<br />
company with roots in an industry with<br />
a long regional history. Our region is<br />
the Bergisches Land, where blade<br />
production was established as early as<br />
the Middle Ages, thanks to two main<br />
factors. The dense forests supplied<br />
wood as a renewable resource that<br />
could be carbonized for forging. Many<br />
rivers running through narrow valleys –<br />
primarily the Wupper River – supplied<br />
easily accessible, renewable energy<br />
for grinding mills and smithies.<br />
Now, the Bergisches Land does<br />
not actually take its name from its<br />
mountainous topography ("Berg"<br />
being German for "mountain"), but<br />
from the noble House von Berg.<br />
Their mighty counts left their mark<br />
on the region like no other dynasty,<br />
reaching all the way to the Rhineland.<br />
It is no accident that their ancestral<br />
seat of Burg Castle has become the<br />
landmark of the Bergisches Land.<br />
Thanks to our close relationship with<br />
the castle preservation association,<br />
Schlossbauverein Burg an der Wupper<br />
e.V., we were able to obtain a small<br />
amount of wood from the 100-year-old<br />
oak beams of this historic monument.<br />
with living quarters was rebuilt in the<br />
early 20th century, modeled after<br />
Romanesque towers built around<br />
the year 1130. From the top with its<br />
three wooden brattices, visitors have<br />
a panoramic view all the way to the<br />
neighboring town of Remscheid. A<br />
covered bridge connects the tower<br />
with the shield wall and wall walk.<br />
In medieval times, it was the only<br />
access to the tower.<br />
Today, the west side of the keep has<br />
an additional entrance to the ground<br />
floor. The archway bears a sandstone<br />
plate with information about the<br />
history of the mighty tower. In the<br />
past, the ground floor was called the<br />
dungeon, accessible only through<br />
an opening from the floor above and<br />
used as storage for stone balls. In<br />
case of an attack, the defenders of<br />
the keep would pelt attackers with<br />
the balls from the upper floors. The<br />
ground floor could hold up to 12 tons<br />
of stones. From the first floor, stairs in<br />
the outside walls, which are up to four<br />
meters thick, lead to the upper floors.<br />
We process pieces of the original oak<br />
beams of the keep at Burg Castle with<br />
all due respect and diligence to make<br />
handles for our <strong>Boker</strong> Core Damascus,<br />
an edition strictly limited to 199<br />
pieces. The blade is truly special -<br />
the hand forged stainless Damascus<br />
has a breathtaking pattern and offers<br />
excellent resilience and hardness (60<br />
HRC), which makes the <strong>Boker</strong> Core<br />
Damascus an exclusive collector's<br />
item and guarantees exceptional<br />
performance for all cutting tasks in<br />
the kitchen. In Solingen, the forged<br />
blade piece consisting of 300 layers<br />
of Damascus is brought to a red heat<br />
and die-forged into its beautiful shape<br />
by a drop hammer weighing two tons.<br />
What better way to express our respect<br />
for the history of our region and our<br />
craft than by referring to the Counts<br />
von Berg and their ancestral home?<br />
Each of these works of art comes in<br />
an elegant leather covered gift box<br />
with a certificate of authenticity and<br />
individual serial number.<br />
The wood was sourced from the socalled<br />
keep, the main tower of Burg<br />
Castle, which is an impressive 105<br />
feet tall. The foundation of the keep<br />
(46 ft. x 36 ft.) was laid in the first<br />
building phase of the castle in the 12th<br />

We asked ourselves how the knife<br />
of all knives should be made. Which<br />
materials and techniques should be<br />
used? Then we found the answer, and<br />
developed a world premier.<br />
For the <strong>Boker</strong> Damascus Superior<br />
series we use, for the first time, a<br />
four strand Torsion Damascus with a<br />
separately forged Damascus cutting<br />
edge, which is done by German<br />
Damascus forger Andreas Henrichs<br />
with fascinating precision, exclusively<br />
for <strong>Boker</strong>. In an extremely elaborate<br />
process, single Damascus layers are<br />
forged by hand to a massive square<br />
Damascus bar. This square bar is<br />
twisted 15 times, which creates the<br />
unique pattern of Torsion Damascus.<br />
Four of those strands, and a fifth nontwisted<br />
Damascus strand are forgewelded<br />
into the final shape.<br />
The result is a blade blank with<br />
extraordinary structure, unbelievable<br />
stability, and the basis for excellent<br />
cutting ability. In the <strong>Boker</strong><br />
Manufactory in Solingen, the blade<br />
blank will then be processed by<br />
hand in more than 150 steps to the<br />
complete knife.<br />
THE ART OF DAMASCUS FORGING<br />
This method of forging Damascus<br />
was used in the Middle Ages to forge<br />
extremely high class sword blades for<br />
the gentry. Swords made of Torsion<br />
Damascus were extremely rare and<br />
sought after, so much so that the<br />
Vikings raided parts of Europe to<br />
obtain such swords.<br />
DAMASCUS DETAILS IN HANDLE<br />
For the handles, we use African<br />
Grenadill hardwood. Grenadill wood<br />
offers a beautiful grain, which is a<br />
perfect addition to the intricate blade,<br />
and provides an excellent balance to<br />
the knife. Due to its high content of<br />
oil, it is highly moisture resistant.<br />
The impressive wooden handle is<br />
framed by two Damascus bolsters<br />
and a Damascus butt cap, both made<br />
of stainless powder metallurgical<br />
Damascus with 300 layers. The<br />
handle pieces are individually handfitted<br />
to each blade, providing balance<br />
and beauty.<br />
Each of these works of art carries an<br />
individual serial number, making it<br />
possible to track the entire production<br />
process in the <strong>Boker</strong> Manufactory. The<br />
knife will be delivered in an exclusive<br />
wooden presentation case and<br />
includes a certificate of authenticity<br />
and owner‘s manual.<br />

1 BOKER CAMELLIA OIL<br />
This high quality, pure camellia oil<br />
is made according to a traditional<br />
Chinese recipe, and has many uses.<br />
The thin oil is extracted from the<br />
seed of the camellia tree, is neutral in<br />
taste, odorless, and does not dry. The<br />
camellia oil is food safe and impresses<br />
with its special purity.<br />
Corrosion protection: The acid-free,<br />
non-resinous, and non-evaporating<br />
camellia oil is traditionally used to<br />
protect from corrosion in the care of<br />
high quality knife blades made from<br />
carbon steel, as well as tools and<br />
weapons. It is purely organic and<br />
perfect for preserving non-stainless<br />
kitchen knives and straight razors as –<br />
in contrast to other care oils – does not<br />

DAMASCUS<br />
Damascus steel – a millennia-old<br />
blacksmithing craft that still unfolds<br />
its fascination today. The first proof<br />
of Damascus is a Celtic sword from<br />
about 500 BCE. Even though this<br />
forging technique most likely did not<br />
originate with the Celts, they did<br />
manage to perfect the process. The<br />
first artisan Damascus blades were<br />
made by the Teutons during the Great<br />
Migration Period (300 to 450 CE).<br />
They were able to use controlled<br />
forging processes to make specific<br />
and, more importantly, repeatable<br />
Damascus patterns.<br />
Swords made from torsion Damascus<br />
were made with extremely<br />
sophisticated production methods,<br />
even by today's standards. Artifacts<br />
like the sword from a grave near<br />
Sutton Hoo (England) posed an<br />
enormous challenge for today's<br />
Damascus blacksmiths, until they<br />
figured out how to replicate this<br />
fascinating sword.<br />
At the time of the development in<br />
Europe, steel of excellent quality was<br />
also made in Japan, which was mainly<br />
used in the forged katana blades<br />
wielded by the samurai. For the<br />
longest time, history considered Japan<br />
to be the pioneer. Japanese swords<br />
were generally seen as superior to<br />
the European ones, although that is<br />
historically incorrect.<br />
Due to different cultural conditions,<br />
many more high quality Japanese<br />
than European swords have made<br />
it through the centuries unscathed.<br />
While Japanese swords were lovingly<br />
passed down from generation to<br />
generation, the artisan swords of<br />
Northern Europe were often sent to<br />
the grave with their owners and got<br />
lost in the mists of time.<br />
This led to an apparent "supremacy"<br />
of old Japanese swords in the present<br />
day, which cannot be matched by<br />
European artifacts in comparably<br />
flawless condition. Looking back, it<br />
can be said that forging multi-layered<br />
steel was originally a means to achieve<br />
the best possible material quality.<br />
The decorative element of Damascus<br />
took much longer to come into its<br />
own. Today, Damascus steel is still<br />
very popular. However, this general<br />
enthusiasm is no longer rooted in<br />
technical consideration, but rather an<br />
expression of passion for the material<br />
and its special look that still radiates<br />
a near magical fascination. Today,<br />
there are several methods for making<br />
Damascus steel:

CLASSIC HANDFORGED<br />
DAMASCUS<br />
For this oldest of all types of<br />
Damascus, at least two types of<br />
steel of different composition are<br />
forged together. After forging, the<br />
piece of steel is folded and forged<br />
again, which doubles the number<br />
of layers. The process is repeated<br />
until the desired number of layers is<br />
reached. By using steel types with<br />
different features, the blacksmith can<br />
influence the quality of the Damascus<br />
significantly; a particularly hard steel,<br />
for instance, can be combined with an<br />
especially resilient steel in order to<br />
achieve a balanced ratio of hardness<br />
and edge retention. Since stainless<br />
steel cannot be forged together under<br />
normal circumstances, this classic<br />
forging technique generally uses nonstainless<br />
carbon steel. This means<br />
that the resulting forged Damascus is<br />
not stainless either.<br />
Of course, the quality of Damascus<br />
steel is also directly dependent<br />
on the quality of the base steels.<br />
Damascus as such is not necessarily<br />
a mark of quality but simply denotes<br />
the production process of the<br />
material. The Damascus pattern is<br />
influenced by forging and the number<br />
of layers, but it can also be created<br />
by embossing the finished forged<br />
Damascus bar. By embossing the bar<br />
with the help of an embossing punch<br />
with a specific pattern, the layers<br />
within the Damascus shift against<br />
each other. The embossed pattern<br />
appears as texture in the Damascus<br />
steel once the embossed material is<br />
ground into a blade.<br />
On a freshly ground blade, the<br />
pattern is barely visible. It needs to<br />
be finished in a special acid bath, in<br />
which both types of steel react to the<br />
acid by darkening at different levels.<br />
This brings out the pattern created<br />
by the texture and reveals the true<br />
magnificent beauty of Damascus<br />
steel.

HANDFORGED STAINLESS<br />
DAMASCUS<br />
There are some basic differences<br />
between this forging technique<br />
and that of classic, non-stainless<br />
Damascus. Since stainless steel<br />
cannot be forged together under<br />
normal circumstances, some clever<br />
Damascus blacksmiths came up<br />
with a technique that circumvents<br />
this obstacle. The essential factor is<br />
oxygen. While classic, non-stainless<br />
Damascus is forged and folded in a<br />
regular open forge, the ambient air<br />
is the deciding factor for stainless<br />
Damascus – it prevents stainless steel<br />
layers from being forged together.<br />
Therefore, stainless Damascus is<br />
made by preparing layer packages and<br />
forging them in a vacuum.<br />
All Damascus smiths have their own<br />
tricks that fall under the heading of<br />
trade secrets, and cannot be explained<br />
in detail here. In the knifemaking<br />
community, Chad Nichols, from<br />
Mississippi, is one of the most<br />
renowned Damascus smiths who<br />
makes stainless Damascus - his topgrade<br />
material is not just utilized by<br />
various knife manufacturers, but also<br />
by many custom knifemakers around<br />
the globe as premium Damascus<br />
for particularly fine models. Nichols<br />
Damascus has a fine, rich patterning<br />
that makes it very popular, but many<br />
users also value the material's great<br />
practical functionality, which makes<br />
his Damascus their first choice. Apart<br />
from many knives in our “Outdoor<br />
& Collection” catalog, Chad Nichols<br />
Damascus, which typically has more<br />
than 200 layers, is also used in our<br />
kitchen knife series <strong>Boker</strong> Pure<br />
Damascus.<br />
HANDFORGED TORSION<br />
DAMASCUS<br />
One of the most sophisticated<br />
methods for forging Damascus<br />
steel is torsion Damascus. Here,<br />
a twist is added to the classic<br />
folding of the material. This creates<br />
a unique pattern and the control<br />
needed to master this forging<br />
process requires the highest level of<br />
expertise. Torsion Damascus was<br />
found in the few preserved Vikings<br />
swords, made at a time when the<br />
most sophisticated pieces were<br />
forged with outstanding skill and<br />
craftsmanship, far superior to the<br />
standard swords of the day, even in<br />
technical terms.<br />
The highly complex forging process<br />
that creates the characteristic<br />
pattern makes torsion Damascus<br />
one of the rarest and most exclusive<br />
types of Damascus steel. <strong>Boker</strong><br />
uses such hand forged torsion<br />
Damascus,made by the German<br />
Damascus smith Andreas Henrichs,<br />
for the kitchen knife series <strong>Boker</strong><br />
Superior - a standout in the world<br />
of kitchen knives due to their<br />
individually handforged blades.

SAN MAI DAMASCUS / CORE<br />
DAMASCUS<br />
One modern and very common<br />
variation is San Mai Damascus, or<br />
core Damascus. In its composition<br />
and production methods, it is very<br />
different from the other types of<br />
Damascus. San Mai really denotes<br />
a multi-layered blade that is not<br />
folded (unlike Damascus), but<br />
typically consists of three layers<br />
- a hard core as the center layer<br />
and two softer outer layers that<br />
add stability and flexibility. In the<br />
case of core Damascus, the center<br />
layer of modern kitchen knives<br />
is often made from a continuous<br />
piece of Japanese VG-10, a high<br />
performance cobalt alloy steel with<br />
a fine structure and high level of<br />
corrosion resistance.<br />
In contrast to a classic San<br />
Mai blade, the outer layers are<br />
significantly softer than the core<br />
but they consist of Damascus<br />
steel. However, this Damascus is<br />
usually not hand forged, but mass<br />
produced, by means of the rolling<br />
method. These blades can be<br />
recognized by their center layer of<br />
mono steel that usually peeks out<br />
from underneath the Damascus<br />
layers towards the cutting edge.<br />
This concept basically leads to an<br />
odd number of layers (typically 37,<br />
67 or 69, though other numbers are<br />
possible).<br />
Since classically folded and forged<br />
Damascus doubles its layers with<br />
each fold, forged Damascus has an<br />
even number of layers (usually 200<br />
to 300), while San Mai Damascus<br />
can also be distinguished by its<br />
odd number of layers. The quality<br />
mainly depends on the material of<br />
the core; as a general rule, blades<br />
made from contemporary mono<br />
steel can be just as good as or<br />
even superior to a Damascus blade.<br />
Such a core Damascus is used in<br />
our Damascus Olive and Damascus<br />
Black series, for instance, where<br />
its qualities and exclusive look have<br />
won over enthusiastic fans for many<br />
years.<br />
POWDER METALLURGICAL<br />
DAMASTEEL<br />
One special type of industrially<br />
produced Damascus is the Swedish<br />
Damasteel. The Damasteel company<br />
developed a procedure to combine<br />
powder metallurgical steel into a<br />
true Damascus steel in a continuous<br />
production process. The special<br />
production process of powder<br />
metallurgical steel (such as the CPM-<br />
154 in our <strong>Boker</strong> Pure CPM series)<br />
allows for higher alloys, which create<br />
a particularly fine and even structure<br />
– a basic requirement for the best<br />
cutting performance. The production<br />
process of Damasteel combines the<br />
advantages of powder metallurgical<br />
steel with the fascinating appearance<br />
of Damascus, which gives it a special<br />
place among the Damascus steel<br />
types.<br />
Despite its exclusively industrial<br />
production, Damasteel is definitely<br />
a premium Damascus that offers<br />
outstanding edge retention and a<br />
high level of corrosion resistance in<br />
everyday use. <strong>Boker</strong> uses Damasteel<br />
for the blades of our best straight<br />
razors, but also as appliqué or handle<br />
inlay for other kitchen knives (<strong>Boker</strong><br />
Superior Damascus) and outdoor<br />
knives.<br />
In conclusion, it has to be said that<br />
Damascus steel is not a technical<br />
requirement for producing high<br />
quality blades today and that<br />
Damascus as such is not a quality<br />
guarantee. However, like an exclusive<br />
mechanical watch that always<br />
radiates a special flair even though<br />
a modern quartz watch would tell<br />
time just as reliably at a much lower<br />
price, a Damascus blade, with its<br />
breathtaking look and often tangible<br />
texture, is a piece of living history.<br />
It isn't always purely a matter of<br />
efficiency – even in our fast paced,<br />
high-tech world, there is some space<br />
left for excellent craftsmanship and<br />
the beautiful things in life.

A milestone in the history of kitchen<br />

is the handle material. The bog oak<br />
wood is not a "species" of wood, but<br />
oak logs, which laid in water or swamps<br />
for centuries and came up when the<br />
ponds or swamps dried out. Over this<br />
long period of time, the tannic acid of<br />
the wood reacts with the iron salts<br />
in the water, which results in a very<br />
high hardness and a handsome, deep<br />
brown coloring. This exquisite handle<br />

Close to the headquarters of the<br />
<strong>Boker</strong> Manufactory in Solingen,<br />
Germany, lies Burg Castle on the<br />
Wupper River - the landmark of the<br />
Bergisches Land. It is also one of the<br />
largest castles in western Germany<br />
and the largest reconstructed castle<br />
complex in North Rhine-Westphalia.<br />
Today, Burg Castle is used for<br />
a variety of cultural purposes,<br />
including as a museum, event venue<br />
and memorial.<br />
In order to be able to fully maintain<br />
this landmark in the future and<br />
renew the energy system, an<br />
extensive renovation program was<br />
begun in 2017 and is set to continue<br />
until 2024. The renovation has<br />
enabled us to obtain an exclusive<br />
inventory of original 100-year-old<br />
oak beams from the mighty keep of<br />
Burg Castle.<br />
With great care and craftsmanship,<br />
we process these historic oak beams<br />
from the keep into handle scales for<br />

CONSTRUCTION OF A KITCHEN KNIFE<br />
CONSTRUCTION METHODS & BLADE JOINTS<br />
The knife has been an essential universal tool for more than 2.4 million years. Knives are available in a wide variety of shapes<br />
and designs for almost any purpose. As a tool, kitchen implement, decorative object or collector's item – people value the<br />
advantages of these sharp tools in every kitchen. The construction possibilities for a kitchen knife are almost as varied as the<br />
possible uses – from cutting fresh bread to carving a beef tenderloin or filleting fresh fish. At the <strong>Boker</strong> Manufactory, we use<br />
three different blade and handle joint designs, depending on the knife series. Each design has its own tradition and purpose,<br />
and offers different advantages in terms of production, handling and use. Despite all differences, these designs of <strong>Boker</strong> kitchen<br />
knives have one thing in common - they are all excellent and superior kitchen knives that you will never want to put down.<br />

THE FORGED BOLSTER<br />
European kitchen knives are mainly used to cut with pressure.<br />
The die-forged bolster offers a few distinct advantages. For<br />
this cutting technique, the index finger or middle finger presses<br />
down on the end of the blade. Thanks to its three dimensional<br />
shape, the bolster serves as a comfortable pressure point.<br />
At the same time, its weight supports the cutting movement<br />
when the blade moves forward. The knives in our <strong>Boker</strong> Core<br />
series are die-forged with a bolster. Die-forging is a technique<br />
with roots in the early days of industrialization. First, a roughly<br />
shaped piece is cut off from the raw material. This piece<br />
is brought to a red heat and hammered into shape inside a<br />
massive form consisting of two halves, top and bottom. This<br />
process is also called drop forging. The bottom die serves as<br />
a counter surface. The die dropping down onto the blade is<br />
affixed to a drop hammer weighing two tons. The resulting<br />
blade blank needs to be soft-annealed before the blanks are<br />
deburred, which means that the excess material created during<br />
the forging process is removed. The blank is calibrated again<br />
on a knuckle joint press with 800 tons of pressing force. This<br />
process is particularly suitable for sharply contoured blade<br />
profiles. The bolster remains a technical challenge, even and<br />
especially after forging. A grinder now shapes the knife's fine<br />
contour from the rough blank. The complex three-dimensional<br />
and conical structure of the bolster requires the grinder's full<br />
experience and concentration. Careless handling can cause<br />
unsightly dents or notches at all junctions of the blade and<br />
handle.

THE FULL TANG — ROBUST & SIMPLE<br />
The full tang is the simplest and most robust solution. The<br />
concept comes from outdoor knives, and is most often used<br />
for knives that need to be particularly sturdy and withstand<br />
even abuse and improper usage, such as prying or chopping.<br />
The full tang follows the entire handle shape; the scales are<br />
riveted on from both sides. Then, the handle scales are fitted<br />
to the tang on a belt sander and also rounded so that they<br />
offer a pleasant and secure grip. The knives in our <strong>Boker</strong> Saga<br />

THE PUSH TANG —<br />
AS MUCH AS NEEDED, AS LITTLE AS POSSIBLE<br />
The push tang is the lightest of the listed joints. Its philosophy<br />
is "as much as needed, as little as possible". The actual tang<br />
is narrower than the ricasso that goes on into the handle. The<br />
tang runs through about a third of the length of the handle.<br />
Here, it is held by a single stainless steel rivet. The wood at<br />
the front end of the handle is protected by a finely satinized<br />
ferrule. Fitting the ferrule is particularly difficult, because its<br />
spot on the handle is both conical and oval. This means that<br />
it doesn't have a regular geometric shape. This construction<br />
follows the Japanese tradition and we use it for our series<br />

Japanese cooking, most cuts are pulled. With this technique,<br />
the blade is easier to control if the handle is lighter compared<br />
to the blade. If flexural forces came into play during the<br />
cutting process – though those are negligible when working<br />
with food – they would be happening in the strongest spot of<br />
this connection.

KNIFE<br />
Depending on the series, making<br />
a kitchen knife requires up to<br />
80 different production steps.<br />
About ten in-house departments<br />
are involved. Each build and<br />
finish requires some of the same<br />
processing steps and some<br />
different ones. Before production<br />
can begin, the product idea is<br />
built digitally with the help of<br />
CAD software. A simple handdrawn<br />
sketch made by one of our<br />
knife designer and custom knife<br />
makers often serves as the basis<br />
for the first construction drawing.<br />
Once the design engineer has<br />
determined all production-relevant<br />
components, they are either<br />
made in-house or procured from<br />
suppliers. Then, production can<br />
begin.<br />
THE DROP FORGE<br />
The base material is cut into<br />
pieces, brought to a red heat and<br />
hammered in a massive die with a<br />
drop hammer weighing two tons.<br />
The resulting blade blank needs<br />
to be soft-annealed before it can<br />
be deburred, which means that<br />
the excess material created during<br />
the forging process is removed.<br />
The blank is calibrated again on a<br />
knuckle joint press with 800 tons<br />
of pressing force. We use this<br />
process exclusively for knives with<br />
a forged bolster.<br />
HARDENING<br />
The heat treatment of steel is a high<br />
art. When we harden and anneal<br />
steel, we push for the limits of the<br />
steel in question. In order to attain<br />
the required edge retention, the steel<br />
needs to be as hard as possible,<br />
while also having enough resilience<br />
not to break during use.<br />
GRINDING<br />
Here, the blade receives its long<br />
tapering grind from spine to edge.<br />
Cooling the piece requires great<br />
diligence at this stage. Otherwise,<br />
heat might warp the blade or even<br />
take away some of its hardness.<br />
GLAZING<br />
True Solingen handcraft begins with<br />
glazing. Here, the spine is ground,<br />
the transition from blade to tang is<br />
cleaned up and the unique Solingen<br />
blue finish is applied. The blades<br />
of the <strong>Boker</strong> Saga Satin series keep<br />
their blue satin finish surface. For<br />
the series <strong>Boker</strong> Damascus Olive and<br />
Damascus Black, the blades are also<br />
sand blasted, which brings out the<br />
texture of the stainless Damascus.<br />
DAMASCUS ETCHING<br />
Here, the blades of the hand forged<br />
Damascus knives are etched in<br />
order to bring out the lines of the<br />
different steel layers. We use a<br />
specially formulated acid bath, which<br />
is precisely adapted to the Damascus<br />
and the desired look of the blade.<br />
"It's all black before the saw." This<br />
means that you have to cut into the<br />
wood in order to be able to tell which<br />
parts and how much of the purchased<br />
raw material is actually usable.<br />
MOUNTING & FINE GRINDING<br />
In mounting, handles and blades are<br />
'married." Depending on the build,<br />
the knife is assembled with rivets,<br />
hollow rivets or extremely durable<br />
adhesive connections. The contour<br />
is also pre-shaped on the grinding<br />
belt. The contour that was prepared<br />
in mounting is now given its final<br />
finish on fine grained grinding belts<br />
and discs. Apart from the blade, the<br />
knife receives its final aesthetics and<br />
functionality.<br />
FINAL CHECK - HONING<br />
At the end of the process, experienced<br />
eyes scrutinize the knives. Only<br />
completely flawless knives are handhoned<br />
and then checked again,<br />
cleaned and packaged.<br />
STAMPING<br />
Here, the blades of the non-forged<br />
knives are stamped out of plates or<br />
coils – depending on the material's<br />
commercial form – or cut with a<br />
laser or water jet cutter. Forging<br />
and stamping are the respective<br />
first steps in making a knife. The<br />
purpose and shape of the product<br />
is already recognizable.<br />
SCALES<br />
This department stores lumber from<br />
indigenous trees, 5,000-year-old bog<br />
oak and rare burl varieties. The first<br />
step of handle production is cutting<br />
the wood by hand on a bench saw –<br />
with a level of accuracy down to 1/10<br />
of a millimeter. The resulting piece<br />
is then finished by hand or on a CNC<br />

Danish design emerged as a style<br />
in the middle of the 20th century,<br />
strongly influenced by the ideas of<br />
the German Bauhaus. This design<br />
movement developed its own<br />
no-nonsense look characterized<br />
by simple formalism, minimalism,<br />
clarity and functionality, as well as<br />
by the use of cutting edge industrial<br />
technology in the realization of this<br />
design vocabulary. This is the<br />
tradition of Danish designer and<br />
custom knifemaker Jens Ansø, who<br />
designed the kitchen knife series<br />
<strong>Boker</strong> Pure following these exact<br />
design principles.<br />
The knives have unique, classically<br />
simple lines and offer excellent<br />
balance, handle ergonomics and<br />
functionality. This minimalistic<br />
design is highlighted with the use<br />
of "Bergische Eiche," a regional oak<br />
wood, for the handles. The pleasing<br />
pattern of the elaborately finished<br />
oak wood is only interrupted by<br />
three understated stainless steel<br />
rivets, which are applied with<br />
great care in a completely manual<br />
process.<br />
In order to match the aesthetic<br />
quality of the series with its<br />
technical properties, we use<br />
the powder metallurgical steel<br />
CPM-154, made by the American<br />
manufacturer Crucible Industries.<br />
This steel is made by melting the<br />
already excellent base steel 154-CM<br />
in order to add more carbides.<br />

The steel is then atomized in a<br />
vacuum and quenched with a cold<br />
air jet. The resulting steel powder<br />
is pressed and sintered below<br />
melting temperature. This process<br />
makes it possible to give the steel a<br />
much higher carbide concentration<br />
than regular blade steel; and the<br />
carbides give the steel additional<br />
hardness and edge retention.<br />

established, popular kitchen knife<br />
steel, the chromium-molybdenumvanadium<br />
steel X50CrMoV15, as<br />
well as to the excellent 440C. The<br />
superior edge retention of the 440C<br />

In Münster's historic district of<br />
Kiepenkerlviertel, Martina Herlitzius<br />
and Jörg Lamskemper manage the<br />
retail store that has been nurturing<br />
the culture and tradition of premium<br />
artisanal knives since 1881. Their<br />
inventory consists of more than<br />
10,000 products. They focus on<br />
German manufacturers, but also offer<br />
international brands – always made<br />
by true experts. Durable, repairable<br />
– with functionalities that meet just<br />
about any needs in the kitchen, home<br />
or garden, for hobbies or professional<br />
purposes.<br />
Quality and durability can no longer<br />
be taken for granted. The market is<br />
dominated by mass-produced knives,<br />
scissors and cutlery. You cannot regrind<br />
or fix those if there is a problem<br />

In the skilled crafts and trades, it is still<br />
fairly common to pass a company from<br />
one generation to the next. This is<br />
certainly true for Carl Herlitzius GmbH<br />
& Co. KG, Münster – the company<br />
celebrated its 125th anniversary<br />
in 2006. In 1881, knifemaker Carl<br />
Herlitzius settled down in Münster,<br />
on Jüdefelder Straße. The company<br />
remained at its next address (Am<br />
Drubbel) until the building was torn<br />
down in 1905. The company then<br />
moved to the Kiepenkerlviertel, and<br />
Carl Herrmann Herlitzius was born the<br />
same year.<br />
After the store building Bogenstraße<br />
43 was bombed and leveled in 1945,<br />
he was the one who rebuilt it with his<br />
own hands. In the late 1970's, Carl<br />
Herlitzius III took over the business and<br />
managed it with his wife, Gertrud. In<br />
the mid 1990,s, their daughter, Martina<br />
Herlitzius, and Jörg Lamskemper<br />
joined the family company. And the<br />
next generation is already waiting in<br />
the wings…

BLADE SHAPES — PURPOSE & USE<br />
At first glance, the wide variety of lengths, widths and shapes of kitchen knife blades might seem a little confusing.<br />
Since all knives are ultimately made for cutting, they are distinguished by their specific intended purpose. The<br />
advantages of the different shapes for different applications are fairly clear and easy to understand, so that the<br />
overwhelming number of choices can be narrowed down. The following list of knife descriptions will help you find<br />
the right tools for your kitchen.<br />
THE PARING KNIFE<br />
The paring knife is a small solid foundation for any kitchen<br />
knife set. The blade is narrow so that it can follow the<br />
outer circumference of a small potato as well as the inner<br />
circumference of an apple core. Paring knives are most<br />
often used without a board, they are simply held above a<br />
pot or bowl. But you can also use them with your cutting<br />
board to quickly cut a single onion used in a meal for one<br />
or two people or the ingredients of a quick lunch salad.<br />
THE CARVING KNIFE<br />
The carving knife has a long narrow blade capable of<br />
cutting paper-thin slices of roast beef, pot roast or<br />
ham. The blade is narrow to provide a smaller surface<br />
for the meat to stick to. The first choice for foods with<br />
a juicy and dense texture.<br />
THE PEELING/PARING KNIFE<br />
The length of a peeling knife blade is comparable to that<br />
of the paring knife, though the edge is straight with a<br />
sheepfoot tip. This makes for better utilization of the full<br />
cutting length, because the blade is pulling itself into the<br />
cut. The straight edge is also better suited for cleaning<br />
and scraping root vegetables, because the blade has more<br />
contact with the surface and is easier to control.<br />
THE MEAT FORK<br />
Compared to a regular tableware fork, the meat fork offers<br />
the advantage of its two long and very pointy tines that<br />
can easily penetrate deep into the meat. That makes it<br />
perfect for carving and serving large pieces of cooked<br />
meat. Thanks to its long tines and handle, the meat fork<br />
also makes a great barbeque tool.<br />
THE STEAK KNIFE<br />
Steak knives are set on the table. Unlike regular tableware<br />
knives, a steak knife is sharp enough to cut meat into<br />
clean bites without ripping or tearing it. Depending on<br />
your personal preference, we offer steak knives with a<br />
smooth cutting edge for the purists, or with a serrated<br />
edge.<br />
THE FILLET KNIFE<br />
The fillet knife is an extreme form of the carving knife. Its<br />
main purpose is the preparation of fish. The fine tip can<br />
be used for opening fresh fish. The slender blade offers<br />
raw or smoked salmon practically no surface for adhesion.<br />
The flexible blade can be flattened onto the cutting board<br />
in order to separate the fish skin from the fillet just above<br />
the board. A light knife for light cooking.

THE SANTOKU<br />
The Santoku knife, or just Santoku for short, serves the<br />
same purpose as the European Chef's Knife. The literal<br />
translation emphasizes this: San = three and Toku =<br />
virtues. The three virtues are fish, meat and vegetables.<br />
The Santoku became popular after World War II, when<br />
the Japanese economic boom meant that meat began to<br />
appear on menus next to fish. A Japanese blade shape<br />
was combined with a symmetrical European blade<br />
grind. One striking feature is the shorter length with<br />
the sheepfoot tip. It is proper to use the Santoku for<br />
pulling cuts, following Japanese tradition. The front part<br />
of European kitchen knives used to guide the knife on<br />
the cutting board is not necessary for a Santoku.<br />
THE BREAD KNIFE<br />
Professional chefs refer to the bread knife as "the<br />
saw." However, they are not just cutting bread with<br />
this knife, but all foods that are not strongly textured,<br />
e.g., cabbage. Pastry chefs use their bread knives to<br />
separate cake layers. The wide blade makes it easy<br />
to control in soft materials. Another advantage is the<br />
knife's excellent edge retention. When used correctly, a<br />
knife is not dulled in contact with the material but with<br />
the cutting board. With a serrated edge, only the tips<br />
touch the cutting board, protecting the real edge behind<br />
them.<br />
THE ALL-PURPOSE/UTILITY KNIFE<br />
The all-purpose/utility knife combines the best of all<br />
worlds. It can be used in hand and on the cutting board.<br />
The medium-size blade offers a reasonable compromise<br />
for easy straight and curved cuts. An aesthetically<br />
pleasing all-purpose knife can also serve as a very nice<br />
table or steak knife.<br />
THE CHEF'S KNIFE<br />
The Chef's Knife is the knife you buy when you can only<br />

The production of a blade and the<br />
use of fire were the first two cultural<br />
achievements on which each further<br />
built. Even today, the knife is one of<br />
the most versatile and sustainable<br />
tools, and its tasks are still the<br />
same as in the early days of human<br />
history.<br />
We have never forgotten that.<br />
For almost a century and a half,<br />
our customers have been using our<br />
<strong>Boker</strong> knives in the most adverse<br />
conditions where it matters, right<br />
where they were invented - in the<br />
open air. We owe our knowledge<br />
and skills to their experience. This<br />
enables us to produce knives that<br />
simply do more in all conditions. In<br />
our series <strong>Boker</strong> Saga, this origin is<br />
most apparent. Three categories<br />
determine the essence of a knife:<br />
the material, the form and the<br />
surface.<br />
THE MATERIAL — SUPERIOR<br />
STANDARD<br />
Steel is the basis on which knives<br />
are made. The demands on steels<br />
are many times higher in the hunting<br />
and outdoor area than in the range<br />
of kitchen knives - you could almost<br />
say - merciless. For the kitchen<br />
knife series Saga, we use the<br />
hunting knife steel 440C stainless.<br />
This steel is well above the already<br />
high standard of X50CrMoV15,<br />
which is commonly used for high<br />
quality Solingen kitchen knives by<br />
established market entrants.<br />
The high steel quality can be visualized<br />
by the standardized DIN test for<br />
determining the cutting performance.<br />
In a direct comparison, the cutting<br />
performance of the Saga kitchen<br />
knife series tested according to DIN<br />
EN ISO 8442-5 is exactly 100% higher<br />
in the paper-cut test after 60 strokes<br />
than in the case of well known<br />
competitors. The initial sharpness<br />
also convinces with a result that is<br />
more than 20% better.<br />
In the production of perfectly<br />
contoured handles, only the highest<br />
quality raw materials are used.<br />
Available in a lovely, high density<br />
Grenadill wood, or indestructible<br />
G10 - both resistant to temperature<br />
and humidity. With the first touch,<br />
the ergonomics become apparent.<br />
Every arc, every sweep in the line<br />
adapts to a point of the hand and<br />
communicates absolute control and<br />
an outstanding cutting experience.<br />
The wide, dovetailed end of the<br />
handle, found in the larger models,<br />
provides additional grip safety. The<br />
high strength is based on the full<br />
tang construction, which reaches<br />
from the tip of the blade to the end<br />

THE SURFACE — SLICK AND<br />
ROBUST<br />
The finish is key. It crowns the knife<br />

For the Saga G10 series, the<br />
optimized cutting performance is not<br />
only guaranteed by the full flat grind<br />
of the 440C blade, but also by the<br />
surface finish, which is achieved in a<br />
specialized grinding process, and is<br />
characterized by outstanding gliding<br />
properties through the cutting<br />
material, thus enhancing the already<br />
superior cutting performance. For<br />
the Saga Grenadill series we offer, for<br />
the first time in the sector of kitchen<br />
cutlery, a stonewash finish. This<br />
special finishing method upgrades<br />
the existing cutting performance, as<br />
well as providing extreme resistance<br />
against scratches, with the micro<br />
structure of the finish. This tried and<br />
true finish has been used in outdoor<br />

The knife is humankind's oldest<br />
tool. The need for sharp blades is<br />
just as old and still very pressing<br />
today. According to a survey, more<br />
than 90% of German households<br />
use dull knives. Even though<br />
everybody uses knives in the<br />
kitchen, the subject of sharpening<br />
knives is still shrouded in mystery.<br />
For many people, sharpening and<br />
honing are unfamiliar territory<br />
- skills ascribed only to an elite<br />
circle of select specialists who<br />
use secret methods to make dull<br />
knives sharp again; it is almost like<br />
magic.<br />
However, there's really no wizardry<br />
involved. If you find the method<br />
that is right for you, you can restore<br />
the edge of your own knives to<br />
exquisite sharpness without a<br />
problem. One more thing about<br />
manual sharpening - there is an<br />
old adage saying that things done<br />
quickly are not worth much. If<br />
something is worth doing, it<br />
is worth doing slowly. A good<br />
manual sharpening process always<br />
takes a little more time. A manual<br />
knife sharpener who is primarily<br />

SHARPENING<br />
Of course, modern technology is catching<br />
up with the subject of sharpening, but<br />
many of the "experts" on this subject are<br />
traditionalists. And that usually means: you<br />
use stones.<br />
Such stones can be very different in nature;<br />
they can be natural stones, synthetically<br />
produced, or even hybrids. Stones are<br />
generally not used dry. Depending on the<br />
stone, you need water (such as Japanese<br />
water stones, which need to be watered, or<br />
the Belgian Chunks, which only moisturizes<br />
the surface), or oil, as in the centuriesproven<br />
Arkansas stones. While the oil in<br />
the oil stone only has the task of ensuring<br />
the sliding on the stone and wash away<br />
worn steel particles from the stone, the<br />
water forms a grinding sludge, especially<br />
in the Japanese water stones, which is<br />
instrumental in sharpening.<br />
Especially for very fine cutting, the highest<br />
qualities of the Arkansas oil stones have<br />
tremendous potential, but here as well, it's<br />
generally a matter of personal preference.<br />
There are different methods of sharpening<br />
with the bench stone - some prefer a circular<br />
motion or "8" trajectory with the edge (i.e.<br />
with the spine of the blade ahead), sharpening<br />
one side of the blade until a burr emerges and<br />
then changing sides. In particular, in the case<br />
of the fine print, the respective mutual pull<br />
against the cutting edge (i.e. with the cutting<br />
edge ahead) is a popular method. And as so<br />
often in life, there is not one correct method<br />
here - trying out and finding the personally<br />
preferred method is the way to go.<br />
When sharpening, it is essential to maintain<br />
the correct angle. When sharpening on<br />
the stone, on the one hand, it has to be<br />
determined correctly and, on the other hand,<br />
to be constantly maintained during the entire<br />
sharpening process, which of course requires<br />
some practice and experience.<br />
If you appreciate the traditional method but<br />
are open to more modern materials, you can<br />
of course also consider ceramic or diamond<br />
coated bench stones. While the handling is<br />
identical to water or oil stones, it can usually<br />
be dispensed with oil or water, and the wide<br />
range of grits also offers all options.<br />
It is important that after creating a burr,<br />
depending on the grinding method, it is<br />
removed cleanly. For this purpose, a leather<br />
strop will do, which, possibly also treated<br />
with abrasive paste, represent the final step<br />
and the cutting edge "meets the finishing<br />
touch."<br />

This sharpener, made of synthetic ruby, is 20 times harder than<br />
hardened steel (20,000 Knoop hardness, which is roughly a 200<br />
hardness in Rockwell units)! The most unusual aspect of this sharpener<br />
is the high efficiency (taking less time for sharpening), in combination<br />

The finely tapered edge that can bend<br />
when coming in contact with a bone or a<br />
hard cutting surface is straightened with<br />
a sharpening steel. The knife is carefully<br />
placed on the steel and pulled across on<br />
alternating sides with light pressure and<br />
with the spine first (important!). This<br />
straightens the bent edge and refreshes<br />
the knife's cutting power.<br />
The steel should not be confused with<br />
its similar half-brother, the rod sharpener.<br />
Though they look very similar, the<br />
difference is that the rod sharpener is made<br />
with abrasive materials, such as ceramic,<br />
synthetic ruby or diamond-coated steel.<br />
Since these rods are used for sharpening,<br />
they are also handled differently.<br />
Perfect for quick touch-up sharpening,<br />
the sharpener is used by pulling the knife<br />
along the rod, edge first, until the desired<br />
level of sharpness is reached. Unlike the<br />
steel, the rod sharpener does take material<br />
off the edge; this is a true sharpening<br />
process. You need to know that neither of<br />
the two tools is suitable for replacing the<br />

ARKANSAS OIL STONES<br />
The oil stones by RH Preyda are hand-hewn in Hot Springs in the<br />
Ouachita Mountains in Arkansas, the world's only deposit of these<br />
stones. The unique micro-crystalline structure makes Arkansas oil<br />
stones extremely durable. Unlike other whetstones, the oil stones<br />
never need to be trued or planed. The stones consist of Novaculite,<br />
based on 99.9% pure silicon that possesses its unmatched sharpening<br />
properties only in this particular configuration. Depending on the<br />
quality of the stone, the sharpening properties range from coarse to<br />
ultra-fine, which should satisfy even the most sophisticated users.<br />
The sharpening oil is completely non-toxic and food-safe (USDA<br />
approved), so that the stones can be used even for knives used in<br />
food preparation. Arkansas oil stones are not classified by grit but<br />
by density; the denser the stone, the finer the edge.<br />

2 FOX CHAMPAGNE SABER<br />
The tradition of opening a Champagne<br />
bottle with a saber was born in the<br />
Napoleonic era. The "sabrage" with<br />
the Briquet saber was founded in<br />
1812 by the general himself after<br />
winning a battle. This unique custom<br />
has survived to this day, and not only<br />
in France. It is a special highlight<br />
at any festive occasion. When done<br />
correctly, it generally works without<br />
issue. After the wire basket is<br />
removed from the cork, one drives<br />
the blade of the saber along the<br />
bottleneck and onto the thickening of<br />
the neck below the bottle head. The<br />
whole bottle head comes off with a<br />
bang and the Champagne flows out.<br />
Any resulting glass fragments fly<br />
forward, propelled by the pressure.<br />
The torn off bottle head with the<br />
cork will be labeled with the date<br />
and will then serve as a reminder of<br />
the celebration or as a talisman. True<br />
to the original, the especially high<br />
quality Champagne Saber by Fox is<br />
manufactured in the famous cutlery<br />
workshop in Maniago, Italy. The blade<br />
is made of corrosion resistant T5MOV<br />
stainless steel. The sturdy handle<br />
is adorned with an intricate, elegant<br />
design. This Champagne Saber is<br />
certainly ready for any challenges at<br />

of a Santoku, while the classic chef's<br />
knife was the source of inspiration for<br />
the ChefYouGo. The blades of these two<br />
extremely compact and flexible models are<br />
finely satined, while the scales consist of<br />
black G10 with a red fiber layer. Leather<br />
