"After the Armed Forces, I continued to work<br />

in London, cooking in many Michelin starred<br />

establishments including A-Z Restaurants<br />

headed by Marco Pierre White. I also worked<br />

in France with the three time Michelin star<br />

Chef Roger Verge, at Moulin de Mougins, one of<br />

France's most prominent restaurants.<br />

"I really enjoyed my career path and I learnt so<br />

much. Cooking has taken me around the world<br />

and given me the chance to cook for some of the<br />

world’s most famous people, from rock stars like<br />

Ringo Star of the Beatles, to members of other<br />

Royal families, Prime Ministers, politicians and<br />

world leaders.<br />

"I have worked in Thailand, Tanzania, Canada,<br />

the Middle East, France, Switzerland and<br />

Germany. My passion for food remains as strong<br />

today as it did during my first days in a kitchen.<br />

I’ve learnt more about food from conversations<br />

with people, rather than working endless hours<br />

in a kitchen."<br />

James' passion is infectious and for the last 12<br />

years he's been sharing his skills in supporting<br />

The Rotary Organisations Young Chef of the<br />

Year and the Springboard Charity for developing<br />

young chefs. He explains:<br />

"My other passion is developing young chefs and<br />

giving them the chances, skills and practises that<br />

will lead to a career and a lasting love of food.<br />

"I also work with UNHCR (UN Refugee Agency)<br />
