Chapati Party – has joined our family!<br />
As Scoot’s very first Airbus 320neo<br />
aircraft delivered from Toulouse in<br />
France, it made its maiden flight on 29<br />
October <strong>2018</strong> as TR610 departing from<br />
Singapore for Bangkok. The new<br />
fuel-efficient and eco-friendly aircraft<br />
signifies the start of our narrow-body<br />
fleet renewal strategy to better serve<br />
Scoot’s short-to-medium haul network<br />
in Asia and offer customers more<br />
budget-friendly fares by keeping our<br />
unit costs low.<br />
At Scoot, we also believe there is more<br />
to keeping our customers happy than<br />

I mainly travel for recurring<br />
industry events, so I am able to<br />
plan my trips ahead of time. But<br />
the reality of my line of work and<br />
my job is that I go where and<br />
when duty calls. If there is<br />
business to be won, I’m there.<br />

behind me whom I can rely on to<br />

I suffer badly from jet lag. The<br />
only way I cope is by taking<br />
red-eye flights as much<br />

long haul, as I sleep<br />

My adventures into getting to<br />
know Sydney began before the<br />
sun rose at Sydney Fish Market.<br />
As the Tsukiji of the southern<br />
hemisphere, I learn that the<br />
marketplace sees an average<br />
of 55 tonnes of seafood<br />
brought in daily for auction to<br />
wholesalers and local restaurants.<br />
With an objective to peek<br />
behind the scenes of their<br />
auction facility, I arrange a tour<br />
with resident fish expert Alex<br />
Stollznow (he’s eaten 450 out<br />
of 600 edible species that pass<br />
through the market annually).<br />
After exchanging pleasantries,<br />
Alex walks me through the<br />
Dutch auction process and<br />
brings me to the exact place<br />
where the action usually<br />
happens. I get an up-close look<br />
at the surrounding wholesalers<br />
filleting tuna, plus an extremely<br />
rare glimpse of Chef Tetsuya<br />
Wakuda (from Sydney’s famed<br />
Tetsuya’s Restaurant), who was<br />
making his rounds at Claudio’s<br />
to pick out seafood for his<br />
menu that night!<br />
Of course, touring Sydney<br />
Fish Market wouldn’t be<br />
complete without a sampling<br />
of the fresh seafood for sale, so<br />
I pick freshly shucked oysters<br />
and a baked scallop for a quick<br />
breakfast. Sweet, succulent,<br />
juicy, and fresh only begin to<br />
scratch the surface of the<br />
umami-rich and naturally<br />
sea-salty morsels that I devour<br />
in just a couple of minutes.<br />
After the tour, I head to<br />
Haymarket for brunch.<br />
Although an enclave where<br />
Chinese immigrants have<br />
thrived, I find out that the city’s<br />
version of Chinatown is also<br />
the centre for some of<br />
Sydney’s best Asian food. It’s at<br />
Edition Coffee Roasters that I<br />
found an interesting<br />
introduction to Asian fusion<br />
cuisine with their Deedee’s<br />
Chicken Karaage and Grilled<br />
King Prawns with Shellfish<br />
Butter and Charred Lemon.<br />

The Sydney-Melbourne rail<br />
corridor is a great option for<br />
travellers who want to cross<br />
from one city to another<br />
within a day. Take the NSW<br />
TrainLink XPT, which has<br />
two services daily. The<br />
trains are decked out with a<br />
buffet car serving food and<br />
drinks, and the overnighter<br />
has sleeper car options to<br />
allow passengers a<br />

do a little sightseeing. Most of<br />
Sydney’s iconic attractions are<br />
at Sydney Harbour, and the<br />
best way to take them all in is<br />
via ferry. The public ferry from<br />
Circular Quay to Pyrmont Bay<br />
goes around Darling Harbour,<br />
and the half-hour trip affords<br />
me uninterrupted (and<br />
tourist-free) views of the Opera<br />
House, Harbour Bridge, and<br />
Balmain Village.<br />
From the heart of Sydney, I<br />
head to the coast of Bondi<br />
Beach. It’s the tail-end of<br />
winter and although the winds<br />
are chilly, the cold weather<br />
doesn’t stop surfers from<br />
Gushiv D’Arcy runs perfume<br />
and organic skincare classes<br />
from a studio in her home.<br />
riding the colossal waves. I’m<br />
not one for sea sports, so I<br />
make my way to Bondi<br />
Icebergs Club to see the<br />
incredible ocean water pool<br />
built right where the crashing<br />
waves meet the coastline.<br />
While most visitors to Bondi<br />
Beach are here for the sea,<br />
sand, and sun, I conclude that<br />
there’s more to the beach than<br />
just surfing. Small craft<br />
workshops within the<br />
neighbourhood pique my<br />
interest; after scouring the<br />
vicinity, I find a studio wherein<br />
makeup artist and<br />
cosmetologist Gushiv D’Arcy<br />
schools me on the basics of<br />
creating custom fragrances. I<br />
spend the rest of the afternoon<br />
learning about the history of<br />
perfume-making and what<br />
makes a good bottle of<br />
perfume, before whipping up<br />
my signature scent from her<br />
collection of essential oils.<br />
As the Sydney sun begins to<br />
set, there was no better way to<br />
experience the golden hour<br />
than at the beach itself. I<br />
marvel at how amazing the<br />
cotton candy hues fill the sky<br />
before heading back to the<br />
hostel to prepare for my<br />
departure to Melbourne.<br />

It’s late in the evening when I<br />
arrive in Melbourne, but the<br />
nightlife here is just getting<br />
started. My first stop is in Little<br />
Bourke Street, which I’ve been<br />
told by friends living in the city<br />
has become well-known for its<br />
Italian trattorias. While most<br />
restaurants have a snaking<br />
queue outside and turn down<br />
walk-ins for the night, I<br />
miraculously manage to snag a<br />
seat at +39 Pizzeria right at the<br />
end of their first seating. The<br />
restaurant is Italian to the hilt<br />
with its Naples-centric menu<br />
inspired by the owners’<br />
grandmothers.<br />
Following dinner, a slow walk<br />
along Little Bourke Street<br />
reveals a hidden alley where I<br />
stumble upon a sweet surprise<br />
– nitrogen ice cream!<br />
Instagram-worthy Dex2rose<br />
has been known for its creative<br />
desserts involving plumes of<br />
nitrogen gas that keep desserts<br />
at freezing temperature, and it<br />
is here that I get a taste of<br />
freshly-churned Thai teaflavoured<br />
ice cream. The sweet<br />
treat and increasingly cool<br />
climes outside also called for a<br />
caffeine pick-me-up – a hot<br />
mocha with charred<br />
homemade marshmallow.<br />
The heavy Italian meal and<br />
sugary dessert keep me full<br />
and sleepy till the next<br />
morning. But once I’m up, I’m<br />
ready for brunch at Adelphi<br />
Hotel’s Om Nom Kitchen. In a<br />
city where cafes continually try<br />
to outdo each other with<br />
brunch selections, this<br />
in-hotel restaurant is a<br />
winning contender. Regular<br />
Australian brunch staples are<br />
given a fresh twist, like the<br />
Green Brekky – a take on<br />
scrambled eggs on toast that<br />
featured parmesan custard,<br />

that started in the 1940s. We<br />
try the burgers from the oldest<br />

and make mandatory stops at<br />
American Doughnut Kitchen<br />
for just-fried jam-filled<br />
doughnuts, Schmucks Bagels<br />
for authentic New York-style<br />
bagels, and a very traditional<br />
Philly cheesesteak all within<br />
walking distance from the<br />
market.<br />
To walk off the calories, I<br />
planned on visiting the Royal<br />
Botanic Gardens, but the<br />
sudden downpour forces me<br />
to change plans. Instead, I<br />
venture for shelter at the<br />
Australian Centre for the<br />
Moving Image, a museum for<br />
film, TV, video games, digital<br />
culture, and art. This time<br />
around, there’s Wonderland,<br />
an interactive exhibition on<br />
Lewis Carroll’s timeless classic<br />
Alice’s Adventures in<br />
Wonderland and how it has<br />
inspired story-telling from<br />
simple illustrations to<br />
adaptations in silent films,<br />
puppetry, animations, live<br />
action films, music videos in<br />
various languages, and more.<br />
On my final morning, I have<br />
some time to kill before having<br />
to head to the airport, so I<br />
check out the ever-changing<br />

Australian drink to wash it all<br />
down – a flat white.<br />
After experiencing both<br />
cities, there’s only one<br />
conclusion to the question of<br />
which city is better: neither.<br />
Whether you’re after the<br />
laidback lifestyle of Sydney or<br />
the exquisite food destination<br />
that is Melbourne, both offer<br />
something personally different<br />
for every traveller, and<br />
honestly, I can’t wait to be<br />
back to revisit both of them.<br />

How can a coworking<br />
space encourage you<br />
to think outside the<br />
box? In a mixed-use property<br />
in Guangzhou’s<br />
characteristically traditional<br />
Huakang Street, it’s by putting<br />
you inside, well, a box.<br />
It may sound contradictory,<br />
but at Atelier Peter Fong, it is<br />
what it is. The 250-squaremetre<br />
suite features an<br />
artisanal cafe, meeting room,<br />
breakout lounge, and<br />
brainstorming area separated<br />
into three crisp white boxes,<br />
unified by a floating aluminium<br />
canopy.<br />
It’s a work of art by<br />
Lukstudio, the firm that created<br />
Noodle Diner Sanlitun SOHO’s<br />
awe-inspiring “noodle rack”<br />
concept in which steel frames<br />
and wires were formed to look<br />
like hanging noodles in a drying<br />
box. Known for developing<br />
avant-garde architectural<br />
solutions, this Shanghai-based<br />
boutique design group makes<br />
it a point to offer a delightfully<br />
unique and unforgettable<br />
spatial experience to their<br />
client and customers.<br />
“We try to analyse the<br />
purpose, the site, and the usage<br />
as thoroughly as we can to<br />
deduce the possible creative<br />
directions. Then we will use all<br />
our efforts to protect our<br />
concept as we turn it into reality,”<br />
says director Christina Luk. “Our<br />
interest has always been about<br />
the public space. We always<br />
strive to create engaging<br />
experiences and boost<br />
interaction between people.”<br />
THE BIG IDEA<br />
For Lukstudio’s project,<br />
entitled “In and Between<br />
Boxes,” the plan was to<br />
revitalise an old building in a<br />
local neighbourhood beside<br />
the Tianhe district to create a<br />
destination of inspiration and<br />
connection. The client, Peter<br />
Fong, wanted to enliven the<br />
community by ushering in a<br />
contemporary platform where<br />
people can enjoy quiet<br />
moments and meet individuals<br />
with whom they could<br />
exchange ideas.<br />
For his cafe-cum-coworking<br />
space, Peter opted for<br />
something simple and<br />
streamlined after he saw<br />
Lukstudio’s headquarters – an<br />
office built around a tree. “He<br />
liked how minimal it was and<br />
how we managed to maximise<br />
daylighting,” shares Christina.<br />
The project seemed right up<br />
the team’s alley, but it wasn’t<br />
without a challenge: they also<br />
had to work around the<br />
structural constraints of the<br />
multi-storey complex where<br />
the space is located. “The<br />
existing site was quite chaotic<br />
with messy pipes and irregular<br />
beams, so our response was to<br />
‘purify’ it.”<br />
And that was how the box<br />
motif of Atelier Peter Fong<br />
came to be. “The introduction<br />
of white boxes encased all the<br />
unpleasant irregularities, and<br />
allowed us to carve openings,<br />
frame views, and play with light<br />
on surfaces.”<br />
Christina also recounts the<br />
design process for this<br />
coworking hub. “We spent a lot<br />
of time studying the facade to<br />
derive these three boxes<br />
because we wanted to activate<br />
this forgotten corner with a<br />
contemporary and inviting<br />
design,” she shares. “Once we<br />
were happy with the streetscape,<br />
we then shaped these boxes<br />

outside and one another.”<br />
IT’S THAT SIMPLE<br />
The result is a series of<br />
protruding squares, each<br />
containing the distinct sections<br />
of the coworking space. In<br />
between each box are<br />
corridor-like voids – painted in<br />
grey and which retained the<br />
original structural ceiling – that<br />
hark back to China’s intricate<br />
alleyways. Bringing them all<br />
together is a floating aluminium<br />
canopy that also delineates<br />
the old and new, the traditional<br />
and unconventional.<br />
A minimalist style permeates<br />
its interiors, defined by white<br />
walls and terrazzo flooring that<br />
offer a subtle play of light and<br />
shadow. Stylish furniture from<br />
Muuto, Paustian, and Hay match<br />
the clean lines while elegant<br />
lighting fixtures from Bentu and<br />
Flos add a sense of warmth.<br />
The corner end reveals the<br />
first box: the APF Kafe serving<br />
Melbourne’s Seven Seeds<br />
coffee. Wooden stools are<br />
placed by the wide glass<br />
windows and large niches that<br />
frame and seamlessly link to the<br />
Zen gardens outside. Light wood<br />
elements on the central bar and<br />
wall panels provide a soft contrast<br />
to the predominantly white theme.<br />
Beside it is the first in-between<br />
void, which also serves as the cafe’s<br />
secondary entryway. Here, a cluster<br />
of tables set against a grey wall<br />
makes for a laid-back communal<br />
area. At the back is a long white<br />
table with office chairs that can also<br />
be used for buzz sessions.<br />
The second and third boxes<br />
contain the brainstorming area and<br />
meeting room, with the working area<br />
as their in-between void. The<br />
minimalist vibe is carried over to<br />
these zones, but the design is more<br />
straightforward with long timber<br />
panels and white-and-grey office<br />
furnishings. Two particular features,<br />
however, actually catch your eye:<br />
the triangular cut-out entrance<br />
carved at its edge and a Zen rock<br />
garden that connects the various<br />
segments of the coworking space.<br />

It’s interesting to note how<br />
Lukstudio’s efforts correlate<br />
with Atelier Peter Fong’s<br />
purpose: creating an out-ofthe-box<br />
experience from a<br />
fundamental concept. Looking<br />
at this structure, it seems like<br />
the objective was achieved.<br />
Not only does the design<br />
breathe new life into an ageing<br />
suburb. It also emphasises<br />
what a coworking space should<br />
be: a place for collaboration<br />
and formation of fresh ideas.<br />

The interest in coworking has<br />
caught up in China now more<br />
than ever. In a report released<br />
by Jones Lang LaSalle in 2016,<br />
the rise of coworking in the<br />
country can be owed to its shift<br />
towards a sharing economy,<br />
the government’s support of<br />
startups, and the millennials’<br />
need for flexibility and mobility<br />
in the workplace.<br />
As the trend shows no signs<br />
of declining, and factoring in<br />
the upsurge of unicorn<br />
enterprises and the digital<br />
nomad lifestyle, shared spaces<br />
are becoming increasingly<br />
popular. Even traditional<br />

The faint crunch of rubber<br />
tires rolling on leaf-strewn<br />
asphalt breaks through<br />
the quiet boroughs of Wedding<br />

“Welcome to Kreuzberg,” the<br />
historian and volunteer Berlin<br />
on Bike (berlinonbike.de) tour<br />
guide says brightly after<br />
hopping out of Beast, her<br />
reliable pedal-driven vehicle.<br />
“This place used to be a<br />
druggie haven in the late 1970s<br />
and early 1980s when the<br />
Berlin Wall was up,” she shares<br />
matter-of-factly, motioning<br />
towards heavily graffitied<br />
concrete panels, a single<br />
vintage clothing store, and a<br />
corner biergarten (beer<br />
garden). “Now, it’s one of the<br />
coolest places to hang when<br />
in Berlin.”<br />
Kreuzberg is just one of the<br />
numerous areas in the German<br />
capital that went through an<br />
unexpectedly organic, hipstercool<br />
makeover. After the fall of<br />
the wall and reunification of<br />
East and West Germany in 1989,<br />
the unorthodox city is suddenly<br />
left with an abundance of dingy<br />
abandoned warehouses. These<br />
gloomy and expansive spaces<br />
were transformed into venues<br />
for illegal parties – empty<br />
power plants, military bunkers,<br />
and other underground stations<br />
became makeshift nightclubs<br />
and temporary homes for<br />
emerging DJs. Needless to say,<br />
Berliners saw a unique<br />
opportunity to celebrate<br />
freedom: by filling ownerless<br />
buildings with nonstop parties<br />
and techno music.<br />
LEGALLY BAND<br />
To date, many unnameable<br />
underground music bars still<br />
operate without a proper rental<br />
licence, yet local authorities<br />
turn a blind eye towards them.<br />
As long as these unregistered<br />
music venues don’t stir trouble,<br />
they’re pretty much left alone<br />
to their devices. That’s why<br />
some underground techno<br />
pubs prefer to keep their head<br />
down by avoiding any form of<br />
publicity – the illegal (but<br />
relatively harmless) element of<br />
these establishments adds<br />
extra charm to the city’s<br />
cultural fabric.<br />
So how do underground<br />
music spots entice potential<br />
patrons? Simple: good old<br />
word-of-mouth advertising. In<br />
fact, 8MM’s Alexus Remzi ‘Olli’<br />
Konuk has always been<br />
hesitant to grant travel<br />
magazine interviews because<br />
targeting tourists isn’t part of<br />
his marketing strategy.<br />
“Don’t get me wrong, tourists<br />
are very much welcome here,”<br />
the dive bar and independent<br />
music institution owner quickly<br />
clarifies. “However, we’ve always<br />
been a modest establishment<br />
since 2002, so we prefer to<br />
focus on cultivating the small<br />
niche audience we have, which<br />
is the post-punk/psychedelic<br />
music aficionados. In turn, they<br />
tag their fellow indie music lover<br />
friends along with them who,<br />

an avenue for up-and-coming<br />
artists and music lovers first,<br />
and a revenue-generating<br />
establishment second. This<br />
unwritten mission to proactively<br />
collaborate with local artists<br />
and give them a platform to<br />
showcase their talents are what<br />
keep the underground music<br />
ecosystem thriving.<br />
Nanette* of SO36 attests to<br />
that calling. “Everybody is<br />
important,” the punk rock club<br />
spokesperson says. “From<br />
musicians and event organisers<br />
to loyal music supporters and<br />
media people who ensure that<br />
we’re on the music fans’ radar<br />
– each have their unique way<br />
of keeping the underground<br />
scene alive.”<br />
It wasn’t always a smoothsailing<br />
for this pioneer<br />
underground nightclub. When<br />
SO36 first opened in 1978, they<br />
had regular punk and new wave<br />
acts playing at their nightclub;<br />
this was on top of the wellflocked<br />
art events that they ran.<br />
Amid the success SO36 was<br />
enjoying, the local police shut<br />
down the establishment in the<br />
mid-1980s, citing undisclosed<br />
reasons. It was only in 1990<br />
when non-profit organisations<br />
helped SO36 reopen the club<br />
with the condition to transform<br />
it into a venue where punk<br />
concerts, political gatherings,<br />
theatre plays, techno parties,<br />
and even LGBT-related events<br />
could be held. The rest, they<br />
say, is history.<br />
ISSUES ON SPACE<br />
Compared to other European<br />
cities such as Paris and<br />
London, Berlin has been a far<br />
more viable base for<br />
entrepreneurs to start their<br />
own companies, thanks to<br />
competitive property rental<br />
prices. But in recent years,<br />
these relatively low prices have<br />
come under threat from<br />
gentrification.<br />
For the past couple of years,<br />
commercial corporations have<br />
been buying out as much city<br />
space as they can. “The<br />

shares ruefully. “Property prices<br />
are shooting up – as a result,<br />
independent music venues are<br />
forced to relocate outside the<br />
city centre where rental costs<br />
are more reasonable.”<br />
Nanette agrees. “Old lease<br />
contracts with agreed budgetfriendly<br />
rates are ripped apart<br />
and renewed with sky-high<br />
settlement prices,” she says. “It’s<br />
hard to find inexpensive rental<br />
spaces in Berlin nowadays, and<br />
even harder to buy property for<br />
business purposes.”<br />
With the city’s tenant-friendly<br />
laws being stretched to their<br />
limits, it’s daunting to think that<br />
these underground music<br />
venues may eventually cease<br />
operations in the future.<br />
Without the artistic freedom<br />
and ample space that old<br />
Berliners enjoyed after the fall<br />
of the wall, it won’t come as a<br />
surprise if Berlin soon turns into<br />
a generic hipsterville where<br />
multinational companies<br />
control creative freedom. Now,<br />
it’s up to the locals to keep the<br />
underground music venues<br />
breathing by continuously<br />
showing up, supporting local<br />
artists, and paying for gigs.<br />

briefly describe their magnum<br />
opus. “The idea behind Urban<br />
Spree was to create something<br />
more than the sum of its four<br />
parts: the art gallery, beer<br />
garden, concert venue, and<br />
club,” Josh continues. “We<br />
intertwine these areas with<br />
each other through large-scale<br />
events, so that our patrons get<br />
to see our urban playground as<br />
a collective unified entity.”<br />
With a refreshing concept that<br />
could change Berlin’s listening<br />
experience, does Urban Spree’s<br />
amalgamation of contemporary<br />
art and underground music give<br />
them the upper hand over<br />
their competitors?<br />
“We don’t necessarily stand<br />
out from others per se, but we<br />
do curate or push our<br />
concerts in a certain<br />
direction,” Josh answers<br />
humbly. “Our rule has always<br />
been to work with local and<br />
indie promoters with whom<br />
we share the same musical<br />
taste and vision, regardless of<br />
what musical genre they play.”<br />

down Dang Thai Mai<br />
street in Hanoi’s secluded Tay<br />
Ho area. An emerging star in<br />
one of the hippest hoods in<br />
Vietnam’s ancient capital, the<br />
street balances age-old<br />
tradition with an understated<br />
– but detectable – current of<br />
youthful energy.<br />
With the early-evening<br />
twilight casting a romantic glow<br />
on proceedings, young<br />
couples ride pillion on their<br />
Vespas to nearby Tay Ho (West<br />
Lake) – the largest of the city’s<br />
many lakes – whispering sweet<br />
nothings to each other as they<br />
participate in the<br />
time-honoured Vietnamese<br />
tradition of di choi, roughly<br />
translated as “hanging out”.<br />
The spate of new businesses<br />
that line the street, too, have a<br />
dynamism in keeping with<br />
Hanoi’s status as the country’s<br />
capital of understated cool. At<br />
The Bottle Shop, Vietnam’s<br />
booming craft beer scene is<br />
showcased via the city’s most<br />
robust selection of local and<br />
international craft brews,<br />
ciders, and spirits.<br />
Close by, Chaouen Lounge<br />
doubles down on the craft<br />
booze theme – serving a wide<br />
variety of bottles along with<br />
Middle Eastern and<br />
Mediterranean sharing plates.<br />
Just along the street at<br />
Bao Wow, meanwhile, chef<br />
Phan Nhu Long and his partner<br />
Katie Taylor are attending to a<br />
packed house of diners,<br />
hooked on their delicious<br />
Taiwanese baos.<br />
The couple has only been<br />
operating their venture at the<br />
current premises since earlier<br />
in <strong>2018</strong>, having piloted the<br />
concept successfully in<br />
pop-up form at music festivals<br />
and flea markets around Hanoi.<br />
And it is this “can-do” sense of<br />
possibility that is helping<br />
transform the onceconservative<br />
grand dame of<br />
Indochina into such a lively<br />
old lady.<br />
“Hanoi feels like one of the<br />
most creative cities in<br />
southeast Asia. I love it,” agrees<br />
Ian Paynton, the English<br />
founder of Hanoi-based<br />
creative agency<br />
We Create Content, as we work<br />
our way through a Fun Guy<br />
(teriyaki mushroom, Asian slaw,<br />
house pickles, coriander, and<br />
radish) and a fried chicken bao.<br />
“It’s so soulful, and there’s<br />
inspiration to be found<br />
everywhere; in the way people<br />
tackle daily problems, the retro<br />
Vietnamese typography, the<br />
colours of the crumbling<br />
buildings, and among the city’s<br />
creatives.<br />
“Living costs are still relatively<br />
low, which gives artists, writers,<br />
photographers, and designers<br />
the space they need to work<br />
on personal projects. I think<br />
that’s when some of the best<br />
work can happen. It seemed to<br />
me like the perfect<br />
environment to set up a<br />
creative agency that services<br />
the region.”<br />
I see plenty of evidence to<br />
back up Paynton’s fervour<br />
during my time in Hanoi.<br />
Breakneck development has<br />
only partially diluted Hanoi’s<br />
intrinsic charm, and it’s hard<br />
not to be won over by the city’s<br />
charismatic tapestry of lakes,<br />
temples, and street scenes. As<br />

from the past, I immerse in<br />
Hanoi’s modern vitality – a<br />
stew brought to bubbling point<br />
by creatives and entrepreneurs<br />
from Vietnam and overseas.<br />
Over the course of the<br />
weekend, I browse<br />
contemporary art galleries such<br />
as Manzi, sip cold-brew<br />
coffees and kick back with a<br />
book at Tranquil Books and<br />
Café, and see the nights out<br />
with live shows and DJ sets at<br />
venues such as Hanoi Rock<br />
City and Savage.<br />
One evening, I adjourn to<br />
Truc Bac Lake and another of<br />
the city’s hip new gathering<br />
points, Standing Bar, to speak<br />
to co-owner Giles Cooper.<br />
Cooper, a lawyer from New<br />
Zealand, has been based in<br />
Hanoi since 1999. When<br />
Cooper arrived, Hanoi was a<br />
very different beast than it is<br />
today. Although Vietnam was in<br />
the process of opening its<br />
economy after years in the<br />
international cold, the capital<br />
– as the seat of the ruling<br />
Communist Party and the<br />
vanguard of Vietnamese<br />
nationalism – was still a<br />
somewhat insular place, with<br />
few foreigners and little in the<br />
way of contemporary music,<br />
art, or food and beverage<br />
options.<br />
“There have been a few<br />
changes since then,” he jokes<br />
over a glass of IPA from Ho Chi<br />
Minh City-based brewers<br />
Heart of Darkness – one of 19<br />
beers on offer in Standing Bar’s<br />
impressive tap room. “Having<br />
said that, I don’t think that<br />
anything has intrinsically<br />
shifted. When I arrived, there<br />
were fewer foreigners in Hanoi,<br />
but it was still a cool place.<br />
Now, there are more foreigners<br />
here, and more Vietnamese<br />
coming back from overseas so<br />
there are more different<br />
ideas and viewpoints<br />
being thrown into the<br />
mix, which can only be<br />
a good thing.”<br />

Of course, modern<br />
Hanoi is not just about<br />
creative agencies, left-field art<br />
venues, tucked-away bars,<br />
and cutting-edge restaurants.<br />
Ho Chi Minh City may have<br />
witnessed more breakneck<br />
development, but there’s cash<br />
aplenty in the capital these<br />
days – I witness at least six<br />
Bentleys negotiating through<br />
the swarm of motorbikes on<br />
my first day alone – which<br />
means that bohemian doesn’t<br />
equate to basic.<br />
Indeed, my hotel, the Sofitel<br />
Legend Metropole Hanoi, is a<br />
fine example of this. Built by<br />
the French in 1901, the<br />
Metropole was described, with<br />
typical Gallic fanfare, on<br />
opening as the ‘largest and<br />
best-appointed hotel in<br />
Indo-China’.<br />
Previous patrons include<br />
louche, creative icons like<br />
Somerset Maugham, Graham<br />
Greene, and Charlie Chaplin.<br />
Folk singer and anti-war<br />
activist Joan Baez, meanwhile,<br />
is believed to have hunkered<br />
down in the hotel’s “secret<br />
bunker” during an American<br />
bombing raid in 1972.<br />
While the Metropole is<br />
steeped in over a century’s<br />
worth of history, its near<br />
neighbour – Tadioto – is an icon<br />
of the city’s recent creative<br />
renaissance. For a final insight<br />
into Hanoi life, I saunter across<br />
the tree-lined boulevard to the<br />
venue (which serves variously as<br />
a bar/cafe, event space, and as<br />
a meeting spot for arty types of<br />
all stripes) to meet owner<br />
Nguyen Qui Duc.<br />
Duc, a memoirist, poet,<br />
scriptwriter, translator, former<br />
on-air personality for US<br />
National Public Radio, and the<br />
son of the highest South<br />
Vietnamese official ever<br />
imprisoned by the North, is<br />
regarded as a figurehead of the<br />
Hanoi scene – largely due to his<br />
own conviviality and uncanny<br />
ability to create spaces<br />
conducive to creative ferment.<br />
Tadioto has been around in<br />
various incarnations since 2006<br />
but has now been a fixture in its<br />
current location since 2014.<br />
Despite its air of relative<br />
permanence, though, it retains a<br />
freewheeling ethos that, once<br />
again, encapsulates the spirit of<br />
new Hanoi.<br />
“Everyone supports each<br />
other here,” says Duc, while<br />
doling out generous pours from<br />
yet another bottle of red<br />
Bordeaux. “It’s like a village. A<br />
village with six million people.”<br />

While Hanoi has plenty in<br />
the way of art galleries,<br />
Doclab offers a rare and<br />
valuable showcase for<br />
experimental filmmakers in<br />
the city. This creative space<br />
was established in 2009<br />
and has since been<br />
dedicated to showing<br />
documentaries,<br />
experimental films, and<br />
video art. While the<br />
emphasis is on<br />
Vietnamese auteurs,<br />

and sukiyaki is just one of the many that can be<br />

in a square pan and is one of the very few styles that<br />
involves frying the meat in the pan before the other<br />
ingredients are added to the pot. Thin slices of beef are<br />
lightly seared in sugar until caramelised before tofu,<br />
onions, mushrooms, and konjac noodles are added to<br />
the pot. Instead of a soup, the ingredients are stewed<br />
in warishita, a mixture of mirin, sake, sugar and soy<br />

Airbus in 2014, Scoot has finally taken<br />
delivery of its first Airbus A320neo<br />
aircraft from Toulouse, France.<br />
The aircraft, bearing registration<br />

Party, landed in Singapore Changi<br />
Airport on 7 October <strong>2018</strong> at exactly<br />
7.39 p.m.<br />
The delivery marks the beginning of<br />

With 75.3 points out of 100, Scoot has<br />
scored the highest among low-cost<br />
carriers in the Customer Satisfaction<br />
Index of Singapore <strong>2018</strong>, conducted<br />
by Singapore Management University<br />
Institute of Service Excellence.<br />
The low-cost carriers sector mean<br />
score was 73.1. In addition, Scoot<br />
registered a year-on-year increase of<br />
3.6 points. Scoot’s parent airline<br />
Singapore Airlines also topped the<br />
full-service carriers sector with a<br />
score of 78.1, against the sector’s<br />
mean score of 74.5.<br />
To elevate the customer experience,<br />
Scoot has embarked on the following<br />
initiatives since the merger:<br />
Identify pain points through customer<br />
surveys<br />
Scoot partnered with Qualtrics to<br />
launch a Net Promoter Score (NPS)<br />
survey since July <strong>2018</strong>, gathering postflight<br />
feedback from customers<br />
across various touchpoints<br />
Touchpoints identified as requiring<br />
improvement include boarding and<br />
check-in process, call-centre<br />
servicing, flight disruption handling,<br />
and cabin interiors.<br />

Scoot introduced Automatic Bag Drop<br />
(ABD) machines in July <strong>2018</strong>, giving<br />
customers departing from Singapore<br />
Changi Airport a more streamlined<br />
check-in process.<br />
Scoot also introduced Asia Pacific’s first<br />
transactional chatbot by an airline. A key<br />
milestone in Scoot’s vision of creating a<br />
mobile-first customer experience, our<br />
chatbot, nicknamed M.A.R.V.I.E. (Most<br />
Awesome Resourceful Virtual Intern Ever),<br />
is able to handle customers’ queries in<br />
English, assist customers to search for<br />
flights, display fares and availability, make<br />
flight bookings, and allow payment by<br />
credit card – essentially complete a full<br />
ticket sale.<br />
Strengthen customer service organisation<br />
Scoot’s Customer Service team has more<br />
than doubled from a year ago and now<br />
stands at 20-strong. Aside from the<br />
day-to-day handling of customer feedback,<br />
Scoot also wants to proactively chart and<br />

Fun fact: In 2011, CNN listed roti prata as one of the<br />
world’s 50 most delicious food items that should be<br />
tried at least once in a lifetime, calling it “a flipping<br />
great dish”!<br />
Roti means “bread”, and prata means “flat.” A good<br />
prata should be soft inside while crispy outside. CNN<br />

Deep Vein Thrombosis (DVT), a painful<br />
condition that arises when a clot obstructs<br />
blood flow in a vein. Though it’s a rare<br />
occurrence, don’t take any chances,<br />
especially during long flights. During your<br />
flight, move your legs and feet for a few<br />
minutes every hour. Stand up and stretch<br />
your arms and chest.<br />
CAB<strong>IN</strong> PRESSURE<br />
Changes in cabin pressure during the flight<br />
may cause discomfort in the ears. Relieve<br />
ear pain by swallowing hard, holding your<br />
nose and gently breathing out with your<br />
mouth closed. If travelling with toddlers or<br />
infants, give them a sweet or feed them a<br />
snack when cabin pressure rises,<br />
particularly during take-off.<br />
SAFETY FIRST. NO COMPROMISE<br />
Your safety is our number-one priority, but you have a part to play<br />
too. The cabin crew’s safety briefing and the safety information<br />
card in your seat pocket provide crucial details in the unlikely event<br />
of an emergency. Always pay attention to these details on each<br />
flight you take because information can vary, such as the location<br />
of emergency exits and equipment. If in doubt about anything<br />
safety-related, ask. Our crew are specially trained to ensure your<br />
safety at all times. Regardless of the situation, safety must never<br />
be compromised, so follow the crew’s safety instructions at all<br />
times. It is an offence to refuse to obey any lawful command<br />
of the captain or cabin crew.<br />

Please do not place rubbish or other discarded items in your<br />
seat pocket or on the floor. Trash bins and napkins are located in the<br />
lavatories. Unless you have strict dietary requirements not catered<br />
for on board our flights, please refrain from bringing outside food<br />
and beverages into the aircraft. We have a delicious array of meals<br />
and snacks on offer, including tempting vegetarian and halal options.<br />

the ground. If you’re boarding or disembarking<br />
the aircraft on the tarmac, you must switch off<br />
your devices. At any point of the flight, the<br />
captain or cabin crew may advise you to turn<br />
off your devices.<br />
STAY HYDRATED<br />
Low humidity in the cabin<br />
can cause your body to<br />
dehydrate. Drink lots of<br />
non-alcoholic beverages<br />
during your flight and<br />
apply moisturiser liberally<br />
to combat dryness. Consume alcohol in<br />
moderation while on board as high altitude<br />
intensifies its effects. The consumption of any<br />
alcoholic beverage not purchased from the<br />
inflight menu is not permitted.<br />
DON’T SMOKE<br />
Scoot enforces a strict no-smoking policy on all<br />
its flights, which also prohibits the use of<br />
e-cigarettes. Please refrain from lighting up in<br />
the lavatories, as doing so could endanger the<br />
safety of your fellow guests or disrupt the flight.<br />
