WELCOME
MESSAGE
Lee Lik Hsin
CEO, Scoot
Hello, and Welcome Aboard!
Our newest aircraft – cheekily named
Chapati Party – has joined our family!
As Scoot’s very first Airbus 320neo
aircraft delivered from Toulouse in
France, it made its maiden flight on 29
October 2018 as TR610 departing from
Singapore for Bangkok. The new
fuel-efficient and eco-friendly aircraft
signifies the start of our narrow-body
fleet renewal strategy to better serve
Scoot’s short-to-medium haul network
in Asia and offer customers more
budget-friendly fares by keeping our
unit costs low.
At Scoot, we also believe there is more
to keeping our customers happy than
with just low fares, which is why we are
devoted to improving the Scoot
customer experience as well as
innovating to offer you greater value
through our products and services. So far,
our efforts have paid off! Scoot scored
75.4 out of 100 points - the highest
attained by a low-cost carrier - in the
Customer Satisfaction Index of
Singapore 2018 conducted by Singapore
Management University’s Institute of
Service Excellence. This is an increase of
3.5 points year-on-year and affirms that
we are on the right track!
We’ve heard your calls to allow longer
lounge access as part of our Scoot-in-
Style package. Therefore since
October, customers with a longer
connection time in Singapore may now
choose to Scoot-in-Style by selecting
the new 6-hour transit lounge access
option for Scoot flights departing
Singapore. Located at the SATS Premier
Lounge in Changi Airport, Terminal 2, sit
back and relax in the lounge with
shower facilities, massage chairs and
refreshments while waiting for your
flight. To complete the V.I.P. experience,
the package also includes
BoardMeFirst 1 priority check-in and
boarding privileges!
#WannabeaScootee? Our latest Epic
piping hot new selections such as the
aromatic Madras Curry with Basmati,
our Signature Laksa Goreng with Prawn
for that spicy kick, and old favourite,
Beef and Mushroom Lasagna. For a
limited time only, F.E.A.S.T.’s Egg Prata
PLAN AHEAD AND
DELEGATE
I mainly travel for recurring
industry events, so I am able to
plan my trips ahead of time. But
the reality of my line of work and
my job is that I go where and
when duty calls. If there is
business to be won, I’m there.
Fortunately, I have a great team
behind me whom I can rely on to
take care of the business while
I’m away.
TAKE THE RED-EYE
I suffer badly from jet lag. The
only way I cope is by taking
red-eye flights as much
as possible for the
long haul, as I sleep
rather well in the
air. Doing this also
means that I can
have a productive
morning when I
arrive at my
destination.
PACK SOME
ENTERTAINMENT
I never travel without my
earphones and a streaming
in-flight entertainment app (like
ScooTV!) downloaded onto my
phone. They keep me
entertained for hours,
especially during
long-haul flights. I
always bring my
SYDNEY
SEAFOOD, SIGHTS,
AND SMELLS
My adventures into getting to
know Sydney began before the
sun rose at Sydney Fish Market.
As the Tsukiji of the southern
hemisphere, I learn that the
marketplace sees an average
of 55 tonnes of seafood
brought in daily for auction to
wholesalers and local restaurants.
With an objective to peek
behind the scenes of their
auction facility, I arrange a tour
with resident fish expert Alex
Stollznow (he’s eaten 450 out
of 600 edible species that pass
through the market annually).
After exchanging pleasantries,
Alex walks me through the
Dutch auction process and
brings me to the exact place
where the action usually
happens. I get an up-close look
at the surrounding wholesalers
filleting tuna, plus an extremely
rare glimpse of Chef Tetsuya
Wakuda (from Sydney’s famed
Tetsuya’s Restaurant), who was
making his rounds at Claudio’s
to pick out seafood for his
menu that night!
Of course, touring Sydney
Fish Market wouldn’t be
complete without a sampling
of the fresh seafood for sale, so
I pick freshly shucked oysters
and a baked scallop for a quick
breakfast. Sweet, succulent,
juicy, and fresh only begin to
scratch the surface of the
umami-rich and naturally
sea-salty morsels that I devour
in just a couple of minutes.
After the tour, I head to
Haymarket for brunch.
Although an enclave where
Chinese immigrants have
thrived, I find out that the city’s
version of Chinatown is also
the centre for some of
Sydney’s best Asian food. It’s at
Edition Coffee Roasters that I
found an interesting
introduction to Asian fusion
cuisine with their Deedee’s
Chicken Karaage and Grilled
King Prawns with Shellfish
Butter and Charred Lemon.
After filling my tummy, I
Sydney’s iconic attractions are
at Sydney Harbour, and the
best way to take them all in is
via ferry. The public ferry from
Balmain Village.
From the heart of Sydney, I
head to the coast of Bondi
are chilly, the cold weather
While most visitors to Bondi
there’s more to the beach than
just surfing. Small craft
spend the rest of the afternoon
learning about the history of
perfume-making and what
makes a good bottle of
perfume, before whipping up
my signature scent from her
collection of essential oils.
As the Sydney sun begins to
set, there was no better way to
MORSELS, AND
MAGIC
It’s late in the evening when I
arrive in Melbourne, but the
nightlife here is just getting
started. My first stop is in Little
Bourke Street, which I’ve been
told by friends living in the city
has become well-known for its
Italian trattorias. While most
restaurants have a snaking
queue outside and turn down
walk-ins for the night, I
miraculously manage to snag a
seat at +39 Pizzeria right at the
end of their first seating. The
restaurant is Italian to the hilt
with its Naples-centric menu
inspired by the owners’
grandmothers.
Following dinner, a slow walk
along Little Bourke Street
reveals a hidden alley where I
stumble upon a sweet surprise
– nitrogen ice cream!
Instagram-worthy Dex2rose
has been known for its creative
desserts involving plumes of
nitrogen gas that keep desserts
at freezing temperature, and it
is here that I get a taste of
freshly-churned Thai teaflavoured
ice cream. The sweet
treat and increasingly cool
climes outside also called for a
caffeine pick-me-up – a hot
mocha with charred
homemade marshmallow.
The heavy Italian meal and
sugary dessert keep me full
and sleepy till the next
morning. But once I’m up, I’m
ready for brunch at Adelphi
Hotel’s Om Nom Kitchen. In a
city where cafes continually try
to outdo each other with
brunch selections, this
in-hotel restaurant is a
winning contender. Regular
Australian brunch staples are
given a fresh twist, like the
Green Brekky – a take on
scrambled eggs on toast that
featured parmesan custard,
chimichurri, asparagus, and a
green pea croquette.
Although already
stuffed, I venture forth
for more food at
Queen Victoria Market.
At seven-hectares, it is
the largest and most
intact open-air
market still surviving
from the 19th
fascinating food walk around
the growth and transformation
of American cuisine in
Australia, a food phenomenon
that started in the 1940s. We
try the burgers from the oldest
American diner in Melbourne,
and make mandatory stops at
American Doughnut Kitchen
for just-fried jam-filled
doughnuts, Schmucks Bagels
for authentic New York-style
To walk off the calories, I
planned on visiting the Royal
Botanic Gardens, but the
sudden downpour forces me
to change plans. Instead, I
venture for shelter at the
Australian Centre for the
Moving Image, a museum for
film, TV, video games, digital
around, there’s Wonderland,
an interactive exhibition on
Lewis Carroll’s timeless classic
Alice’s Adventures in
Wonderland and how it has
inspired story-telling from
simple illustrations to
adaptations in silent films,
puppetry, animations, live
action films, music videos in
various languages, and more.
the epitome of Melbournian
café culture. The area is
definitely worth the 20-minute
Australian drink to wash it all
After experiencing both
which city is better: neither.
Whether you’re after the
honestly, I can’t wait to be
MULTIMEDIA
EXTRAVAGANZA
Hong Kong’s landscape is
famously bright with city lights,
but it gets even brighter (and
more exciting) once winter
arrives. Throughout December,
the entire city celebrates the
Hong Kong Winterfest, a
month-long, citywide
celebration that culminates
with the fireworks display at its
New Year Countdown
Although many parts of the
city are illuminated with light
that’s unquestionably a
must-see: The Hong Kong
This multimedia light show is a
indulging everyone with a
parade of colours and images
choreographed with music and
sound effects, of course.
And while the Hong Kong
Pulse Show is always a
showstopper no matter the
season (it runs different shows
throughout the year), it
regularly pulls out all the stops
for its winter version. Bright,
SYDNEY
WHERE TWO WORLDS
COLLIDE
Sydney has always been a
cultural powerhouse – and
some argue the country’s
cultural capital (shh… don’t tell
Melbourne) – so it’s no surprise
that you’ll find one of Australia’s
top Christmas attractions here.
Since 2010, the Lights of
Christmas has been fascinating
visitors with its stunning lights
shows and interactive storytelling.
Every evening, from early
December until Christmas day,
the entire 75-metre façade of St.
Mary’s Cathedral is illuminated
with vivid 3D projections. Each
year’s show centres on a
Christmas theme, using light,
sound, and animation to impart a
seasonal message.
And if the show isn’t enough
to impress you, the sight of a
medieval, Gothic-style
cathedral lit up with vibrant
colours and 3D images will
surely leave you breathless. It’s
this juxtaposition of the old and
new – the leap into the future
while staying firmly rooted to
the past – that defines Sydney
and the rest of Australia.
There may be no snow or
winter chill here during Christmas
(it’s summer here this time of
year), but the Lights of Christmas
proves that it’s the spirit of the
season that truly matters.
A once-forgotten corner in a
Zen garden
How can a coworking
space encourage you
to think outside the
box? In a mixed-use property
in Guangzhou’s
characteristically traditional
Huakang Street, it’s by putting
you inside, well, a box.
It may sound contradictory,
but at Atelier Peter Fong, it is
what it is. The 250-squaremetre
suite features an
artisanal cafe, meeting room,
breakout lounge, and
brainstorming area separated
into three crisp white boxes,
unified by a floating aluminium
canopy.
It’s a work of art by
Lukstudio, the firm that created
Noodle Diner Sanlitun SOHO’s
awe-inspiring “noodle rack”
concept in which steel frames
and wires were formed to look
like hanging noodles in a drying
box. Known for developing
avant-garde architectural
solutions, this Shanghai-based
boutique design group makes
it a point to offer a delightfully
unique and unforgettable
spatial experience to their
client and customers.
“We try to analyse the
purpose, the site, and the usage
as thoroughly as we can to
deduce the possible creative
directions. Then we will use all
our efforts to protect our
concept as we turn it into reality,”
says director Christina Luk. “Our
interest has always been about
the public space. We always
strive to create engaging
experiences and boost
interaction between people.”
THE BIG IDEA
For Lukstudio’s project,
entitled “In and Between
Boxes,” the plan was to
revitalise an old building in a
local neighbourhood beside
the Tianhe district to create a
destination of inspiration and
connection. The client, Peter
Fong, wanted to enliven the
community by ushering in a
contemporary platform where
people can enjoy quiet
moments and meet individuals
with whom they could
exchange ideas.
For his cafe-cum-coworking
space, Peter opted for
something simple and
streamlined after he saw
Lukstudio’s headquarters – an
office built around a tree. “He
liked how minimal it was and
how we managed to maximise
daylighting,” shares Christina.
The project seemed right up
the team’s alley, but it wasn’t
without a challenge: they also
had to work around the
structural constraints of the
multi-storey complex where
the space is located. “The
existing site was quite chaotic
with messy pipes and irregular
beams, so our response was to
‘purify’ it.”
And that was how the box
motif of Atelier Peter Fong
came to be. “The introduction
of white boxes encased all the
unpleasant irregularities, and
allowed us to carve openings,
frame views, and play with light
on surfaces.”
Christina also recounts the
design process for this
coworking hub. “We spent a lot
of time studying the facade to
derive these three boxes
because we wanted to activate
this forgotten corner with a
contemporary and inviting
design,” she shares. “Once we
were happy with the streetscape,
we then shaped these boxes
largest metropolis after
Shanghai and Beijing.
PHOTOGRAPHY LUKSTUDIO, ATELIER PETER FONG
according to their purposes
and their relationship with the
outside and one another.”
IT’S THAT SIMPLE
The result is a series of
protruding squares, each
containing the distinct sections
of the coworking space. In
between each box are
corridor-like voids – painted in
grey and which retained the
original structural ceiling – that
hark back to China’s intricate
alleyways. Bringing them all
together is a floating aluminium
canopy that also delineates
the old and new, the traditional
and unconventional.
A minimalist style permeates
its interiors, defined by white
walls and terrazzo flooring that
offer a subtle play of light and
shadow. Stylish furniture from
Muuto, Paustian, and Hay match
the clean lines while elegant
lighting fixtures from Bentu and
Flos add a sense of warmth.
The corner end reveals the
first box: the APF Kafe serving
Melbourne’s Seven Seeds
coffee. Wooden stools are
placed by the wide glass
windows and large niches that
frame and seamlessly link to the
Zen gardens outside. Light wood
elements on the central bar and
wall panels provide a soft contrast
to the predominantly white theme.
Beside it is the first in-between
void, which also serves as the cafe’s
secondary entryway. Here, a cluster
of tables set against a grey wall
makes for a laid-back communal
area. At the back is a long white
table with office chairs that can also
be used for buzz sessions.
The second and third boxes
contain the brainstorming area and
meeting room, with the working area
as their in-between void. The
minimalist vibe is carried over to
these zones, but the design is more
straightforward with long timber
panels and white-and-grey office
furnishings. Two particular features,
however, actually catch your eye:
the triangular cut-out entrance
carved at its edge and a Zen rock
garden that connects the various
segments of the coworking space.
White boxes and
gray in-betweens
form the cafe/
coworking space’s
facade.
It’s interesting to note how
Lukstudio’s efforts correlate
with Atelier Peter Fong’s
purpose: creating an out-ofthe-box
experience from a
fundamental concept. Looking
at this structure, it seems like
the objective was achieved.
Not only does the design
breathe new life into an ageing
suburb. It also emphasises
what a coworking space should
be: a place for collaboration
and formation of fresh ideas.
CHINA AND
COWORKING
The interest in coworking has
caught up in China now more
than ever. In a report released
by Jones Lang LaSalle in 2016,
the rise of coworking in the
country can be owed to its shift
towards a sharing economy,
the government’s support of
startups, and the millennials’
need for flexibility and mobility
in the workplace.
As the trend shows no signs
of declining, and factoring in
the upsurge of unicorn
enterprises and the digital
nomad lifestyle, shared spaces
are becoming increasingly
popular. Even traditional
companies are moving into
coworking offices, if not
creating a similarly styled space
in their facility. Such a setup
benefits them by allowing their
employees to collaborate with
other departments and think
outside the box.
And to cultivate creativity
and synergy, coworking spaces
must go beyond providing a
few work tables and stable
Wi-Fi connectivity. They must
be able to combine design and
function to create an inspiring
environment and foster
community-building — which is
what Atelier Peter Fong
delivers.
By envisioning a space that
combines a calm atmosphere
and architectural innovation,
Lukstudio forms not only an
avenue to share resources and
knowledge but also a place to
nurture exceptionally
productive experiences.
“Welcome to Kreuzberg,” the
historian and volunteer Berlin
on Bike (berlinonbike.de) tour
guide says brightly after
hopping out of Beast, her
reliable pedal-driven vehicle.
“This place used to be a
druggie haven in the late 1970s
and early 1980s when the
Berlin Wall was up,” she shares
matter-of-factly, motioning
towards heavily graffitied
concrete panels, a single
vintage clothing store, and a
corner biergarten (beer
garden). “Now, it’s one of the
coolest places to hang when
in Berlin.”
Kreuzberg is just one of the
numerous areas in the German
capital that went through an
unexpectedly organic, hipstercool
makeover. After the fall of
the wall and reunification of
East and West Germany in 1989,
the unorthodox city is suddenly
left with an abundance of dingy
abandoned warehouses. These
gloomy and expansive spaces
were transformed into venues
for illegal parties – empty
power plants, military bunkers,
and other underground stations
became makeshift nightclubs
and temporary homes for
emerging DJs. Needless to say,
Berliners saw a unique
opportunity to celebrate
freedom: by filling ownerless
buildings with nonstop parties
and techno music.
LEGALLY BAND
To date, many unnameable
underground music bars still
operate without a proper rental
licence, yet local authorities
turn a blind eye towards them.
As long as these unregistered
music venues don’t stir trouble,
they’re pretty much left alone
to their devices. That’s why
some underground techno
pubs prefer to keep their head
down by avoiding any form of
publicity – the illegal (but
relatively harmless) element of
these establishments adds
extra charm to the city’s
cultural fabric.
So how do underground
music spots entice potential
patrons? Simple: good old
word-of-mouth advertising. In
fact, 8MM’s Alexus Remzi ‘Olli’
Konuk has always been
hesitant to grant travel
magazine interviews because
targeting tourists isn’t part of
his marketing strategy.
“Don’t get me wrong, tourists
are very much welcome here,”
the dive bar and independent
music institution owner quickly
clarifies. “However, we’ve always
been a modest establishment
since 2002, so we prefer to
focus on cultivating the small
niche audience we have, which
is the post-punk/psychedelic
music aficionados. In turn, they
tag their fellow indie music lover
friends along with them who,
over time, become pub regulars.”
In the cutthroat entertainment
industry, it’s surprising that the
music venues in Berlin is to be
an avenue for up-and-coming
artists and music lovers first,
and a revenue-generating
establishment second. This
unwritten mission to proactively
collaborate with local artists
and give them a platform to
showcase their talents are what
keep the underground music
ecosystem thriving.
Nanette* of SO36 attests to
that calling. “Everybody is
important,” the punk rock club
spokesperson says. “From
musicians and event organisers
to loyal music supporters and
media people who ensure that
we’re on the music fans’ radar
– each have their unique way
of keeping the underground
scene alive.”
It wasn’t always a smoothsailing
for this pioneer
underground nightclub. When
SO36 first opened in 1978, they
had regular punk and new wave
acts playing at their nightclub;
this was on top of the wellflocked
art events that they ran.
Amid the success SO36 was
enjoying, the local police shut
down the establishment in the
mid-1980s, citing undisclosed
reasons. It was only in 1990
when non-profit organisations
helped SO36 reopen the club
with the condition to transform
it into a venue where punk
concerts, political gatherings,
theatre plays, techno parties,
and even LGBT-related events
could be held. The rest, they
say, is history.
ISSUES ON SPACE
Compared to other European
cities such as Paris and
London, Berlin has been a far
more viable base for
entrepreneurs to start their
own companies, thanks to
competitive property rental
prices. But in recent years,
these relatively low prices have
come under threat from
gentrification.
For the past couple of years,
commercial corporations have
been buying out as much city
space as they can. “The
market has dramatically
increased over the years,” Olli
shares ruefully. “Property prices
are shooting up – as a result,
independent music venues are
forced to relocate outside the
city centre where rental costs
are more reasonable.”
Nanette agrees. “Old lease
contracts with agreed budgetfriendly
rates are ripped apart
and renewed with sky-high
settlement prices,” she says. “It’s
hard to find inexpensive rental
spaces in Berlin nowadays, and
even harder to buy property for
business purposes.”
With the city’s tenant-friendly
laws being stretched to their
limits, it’s daunting to think that
these underground music
venues may eventually cease
operations in the future.
Without the artistic freedom
and ample space that old
Berliners enjoyed after the fall
of the wall, it won’t come as a
surprise if Berlin soon turns into
a generic hipsterville where
multinational companies
control creative freedom. Now,
it’s up to the locals to keep the
underground music venues
showing up, supporting local
Pascal Feucher and co-owner/
Suffering from motion sickness when you travel?
NBAN can help you!
NBAN is a drug-free method proven to alleviate that nauseating feeling you
experience when travelling– all without side effects. It does so via an acupressure
point known as Pericardium 6. Many have benefitted because it really works!
What is Motion Sickness?
Motion sickness is what people experience when what their eyes are perceiving is at odds
with what their body is feeling (Vestibular System Imbalances). A typical scenario of motion
sickness is sitting in a ship or plane, feeling the motions of the ship or plane, and yet visually
perceiving that you are sitting still (not moving) inside a cabin. This will then cause symptoms
of motion sickness to appear, such as dizziness, fatigue and nausea.
Amongst many other benefits, NBAN also helps with pregnancy related morning sickness.
The millennial vibes are
strong as I take a stroll
down Dang Thai Mai
street in Hanoi’s secluded Tay
Ho area. An emerging star in
one of the hippest hoods in
Vietnam’s ancient capital, the
street balances age-old
tradition with an understated
– but detectable – current of
youthful energy.
With the early-evening
twilight casting a romantic glow
on proceedings, young
couples ride pillion on their
Vespas to nearby Tay Ho (West
Lake) – the largest of the city’s
many lakes – whispering sweet
nothings to each other as they
participate in the
time-honoured Vietnamese
tradition of di choi, roughly
translated as “hanging out”.
The spate of new businesses
that line the street, too, have a
dynamism in keeping with
Hanoi’s status as the country’s
capital of understated cool. At
The Bottle Shop, Vietnam’s
booming craft beer scene is
showcased via the city’s most
robust selection of local and
international craft brews,
ciders, and spirits.
Close by, Chaouen Lounge
doubles down on the craft
booze theme – serving a wide
variety of bottles along with
Middle Eastern and
Mediterranean sharing plates.
Just along the street at
Bao Wow, meanwhile, chef
Phan Nhu Long and his partner
Katie Taylor are attending to a
packed house of diners,
hooked on their delicious
Taiwanese baos.
The couple has only been
operating their venture at the
current premises since earlier
in 2018, having piloted the
concept successfully in
pop-up form at music festivals
and flea markets around Hanoi.
And it is this “can-do” sense of
possibility that is helping
transform the onceconservative
grand dame of
Indochina into such a lively
old lady.
“Hanoi feels like one of the
most creative cities in
southeast Asia. I love it,” agrees
Ian Paynton, the English
founder of Hanoi-based
creative agency
We Create Content, as we work
our way through a Fun Guy
(teriyaki mushroom, Asian slaw,
house pickles, coriander, and
radish) and a fried chicken bao.
“It’s so soulful, and there’s
inspiration to be found
everywhere; in the way people
tackle daily problems, the retro
Vietnamese typography, the
colours of the crumbling
buildings, and among the city’s
creatives.
“Living costs are still relatively
low, which gives artists, writers,
photographers, and designers
the space they need to work
on personal projects. I think
that’s when some of the best
work can happen. It seemed to
me like the perfect
environment to set up a
creative agency that services
the region.”
I see plenty of evidence to
back up Paynton’s fervour
during my time in Hanoi.
Breakneck development has
only partially diluted Hanoi’s
intrinsic charm, and it’s hard
not to be won over by the city’s
charismatic tapestry of lakes,
temples, and street scenes. As
well as gleaning inspiration
from the past, I immerse in
Hanoi’s modern vitality – a
stew brought to bubbling point
by creatives and entrepreneurs
from Vietnam and overseas.
Over the course of the
weekend, I browse
contemporary art galleries such
as Manzi, sip cold-brew
coffees and kick back with a
book at Tranquil Books and
Café, and see the nights out
with live shows and DJ sets at
venues such as Hanoi Rock
City and Savage.
One evening, I adjourn to
Truc Bac Lake and another of
the city’s hip new gathering
points, Standing Bar, to speak
to co-owner Giles Cooper.
Cooper, a lawyer from New
Zealand, has been based in
Hanoi since 1999. When
Cooper arrived, Hanoi was a
very different beast than it is
today. Although Vietnam was in
the process of opening its
economy after years in the
international cold, the capital
– as the seat of the ruling
Communist Party and the
vanguard of Vietnamese
nationalism – was still a
somewhat insular place, with
few foreigners and little in the
way of contemporary music,
art, or food and beverage
options.
“There have been a few
changes since then,” he jokes
over a glass of IPA from Ho Chi
Minh City-based brewers
Heart of Darkness – one of 19
beers on offer in Standing Bar’s
impressive tap room. “Having
said that, I don’t think that
anything has intrinsically
shifted. When I arrived, there
were fewer foreigners in Hanoi,
but it was still a cool place.
Now, there are more foreigners
here, and more Vietnamese
coming back from overseas so
there are more different
ideas and viewpoints
being thrown into the
mix, which can only be
a good thing.”
Of course, modern
Hanoi is not just about
creative agencies, left-field art
venues, tucked-away bars,
and cutting-edge restaurants.
Ho Chi Minh City may have
witnessed more breakneck
development, but there’s cash
aplenty in the capital these
days – I witness at least six
Bentleys negotiating through
the swarm of motorbikes on
my first day alone – which
means that bohemian doesn’t
equate to basic.
Indeed, my hotel, the Sofitel
Legend Metropole Hanoi, is a
fine example of this. Built by
the French in 1901, the
Metropole was described, with
typical Gallic fanfare, on
opening as the ‘largest and
best-appointed hotel in
Indo-China’.
Previous patrons include
louche, creative icons like
Somerset Maugham, Graham
Greene, and Charlie Chaplin.
Folk singer and anti-war
activist Joan Baez, meanwhile,
is believed to have hunkered
down in the hotel’s “secret
bunker” during an American
bombing raid in 1972.
While the Metropole is
steeped in over a century’s
worth of history, its near
neighbour – Tadioto – is an icon
of the city’s recent creative
renaissance. For a final insight
into Hanoi life, I saunter across
the tree-lined boulevard to the
venue (which serves variously as
a bar/cafe, event space, and as
a meeting spot for arty types of
all stripes) to meet owner
Nguyen Qui Duc.
Duc, a memoirist, poet,
scriptwriter, translator, former
on-air personality for US
National Public Radio, and the
son of the highest South
Vietnamese official ever
imprisoned by the North, is
regarded as a figurehead of the
Hanoi scene – largely due to his
own conviviality and uncanny
ability to create spaces
conducive to creative ferment.
Tadioto has been around in
various incarnations since 2006
but has now been a fixture in its
current location since 2014.
Despite its air of relative
permanence, though, it retains a
freewheeling ethos that, once
again, encapsulates the spirit of
new Hanoi.
“Everyone supports each
other here,” says Duc, while
doling out generous pours from
yet another bottle of red
Bordeaux. “It’s like a village. A
village with six million people.”
the city. This creative space
TAKABISHA
Tokyo
Japan’s Fuji-Q Highland Amusement
Park is widely known for their
high-octane, adrenaline-pumping
roller coasters, and one that stands
out is the Takabisha – literally. You’ll
be able to spot the twists and turns
of this structure from a distance
away, which will likely incite either a
gasp of fear or squeal of excitement.
The Takabisha even clinched a world
record as the world’s steepest falling
angle at 121 degrees. With speeds of
100 km/hr in a mere two seconds,
this is not for the faint-hearted.
Not to be outdone, the Gold Coast’s
Warner Bros. Movie World houses a
rollercoaster of equally exhilarating
proportions. The Green Lantern ride,
themed after the favourite DC
Comics character, boasts the
steepest inverted drop in the
sharp and unpredictable turns. Sure,
it might have a slightly lower speed
its death-defying degree is still
unparalleled to many others. We
CRAZY BIRD
While the Takabisha and Green
scenic outdoor views at breakneck
speeds and angles, the four-seater
Crazy Bird in Happy Valley Tianjin gives
indoor sights. The 120-degree dive
right from the get-go is just a prelude
to the remaining mayhem of loops
and inline twists, and at only 70
seconds, riders will undoubtedly want
to go for seconds. Crazy Bird is also
one of the only El Loco-style coasters
in the world, so you can check that off
your bucket list after catching your
TOPSY TURVY TIPS
Heed these safety
guidelines for the best
theme park experiences!
Slow and steady
Start slowly with coasters
without 360-degree loops
and sudden turns to avoid
giving both your body and
mind a shock.
Ease it, not quease it
Don’t rush to the coasters
after a hearty meal – head
to the shops or watch the
parades instead to allow
for digestion first.
Bare minimal
Tie your hair up, ditch the
THE HOTS FOR
HOT
POTS
If you can’t stand the heat at
home, then get out of the
kitchen and have it your way
with these seven different styles
of hot pots from around
the world!
CHINA
HUOGUO ( 火 锅 )
The idea of bringing the stove to the dining table
started in China as a simple way to cut down on
cooking time and to have everyone join in the
communal feast. Chinese hot pot or huoguo is a
completely versatile dish that can be
personalised to suit particular tastes and dietary
restrictions. Hot pot starts with a soup base, and
popular ones include premium chicken stock,
mala (spicy and numbing), and tomato soup.
Then, raw ingredients are thrown in to cook over
time. The social meal used to be served only
during special occasions, like at reunion during
the Lunar New Year, but these days, hot pot
restaurants make it easy to enjoy hot pot all
year long.
COCONUT CHICKEN HOT
POT ( 椰 子 鸡 火 锅 )
The southernmost province of China is
known for its tropical climate and beach
resorts, and is home to one of the most
unusual soup bases used in a hot pot.
Coconut water is boiled with strips of
coconut flesh before the main ingredient,
Wenchang chicken, a chicken species
indigenous to Hainan, is added in. This
results in a broth that’s sweet and savoury
and complements all sorts of other
ingredients like seafood, beef, and corn.
MOOKATA (หมูกระทะ)
Hot pot or barbecue? That’s a dinner
decision you never have to make with
Thailand’s mu kratha, also commonly
known as mookata in Southeast Asia. The
innovation that lies in this Thai hot pot is
the game-changing 2-in-1 dome-shaped
grill surrounded by a steamboat moat. This
allows diners the opportunity to boil or grill
their ingredients. As a bonus, the juices
from the grilled ingredients on the dome
drip down into the soup, creating a
flavourful broth at the end of the meal.
BUDAE JJIGAE (부대찌개)
This is one hot pot that gets a military salute from
us. Budae jjigae, also known as army stew, was
born out of the need to use up surplus rations
from the American army bases after the Korean
War. The nutrition-packed stew is a great
marriage of traditional Korean flavours such as
gochujang (red chilli paste) and kimchi, and very
westernised ingredients like bacon, sausages,
Spam, baked beans, and cheese. To
substantiate the meal, Korean ramyun instant
noodles and chewy tteok (steamed rice cakes)
are added.
SUKIYAKI (すき 焼 き)
Japanese cuisine has lots of different styles of hot pots
and sukiyaki is just one of the many that can be
enjoyed at home or in a restaurant. Sukiyaki is cooked
in a square pan and is one of the very few styles that
involves frying the meat in the pan before the other
ingredients are added to the pot. Thin slices of beef are
lightly seared in sugar until caramelised before tofu,
onions, mushrooms, and konjac noodles are added to
the pot. Instead of a soup, the ingredients are stewed
in warishita, a mixture of mirin, sake, sugar and soy
sauce for a thick and sweet gravy. It’s customary to then
dip the cooked ingredients into a beaten raw egg
before consuming.
HOT POT FOR ONE
No fire, no stove, no pot
– no problem! Instant hot
pots are the craze in Asia
right now. The box kits
come with retort packs of
ingredients that are
placed into the container
and cooked by a wateractivated
heat pack that
generates hot steam for
15 minutes.
LOK LOK
If you have a sudden hankering for hot pot in Malaysia, finding a
lok lok van is your best bet. This on-the-go hot pot may be served out
of the back of vans, but there’s nothing sketchy about it. The usual
ingredients for hot pot are skewered, with each stick colour-coded to
match a price list. The sticks are then plunged into pots of boiling soup
before being dipped into buckets of sauces. For those seeking more
flavour, try the Malaccan-style lok lok that uses satay peanut sauce to
cook the ingredients instead.
French it up
A classic dipping sauce enjoyed by
all, garlic butter is great for those
who don’t like spice: finely mince
garlic to add to melted butter, salt
and season with cayenne pepper to
taste, and garnish with parsley
flakes if needed.
Drop it like it’s hot
Chilli sauce goes with pretty much
everything. For a traditional garlic
chilli sauce, blend chillies with garlic
and ginger before seasoning with
sugar, vinegar, and salt. For more
tang, a squeeze of lime will do the
trick.
BEAUTY HOT POT
They say you are what you eat,
and in Singapore it’s possible to
eat beauty in the form of hot pot.
What makes a beauty hot pot is
its use of collagen in the soup
base, usually derived from boiling
down chicken skin, bones, and
cartilage, which creates a thick
and creamy stock with a rich
chicken flavour. Drinking the soup
is said to have abundant benefits
like easing joints, strengthening
keratin found in nails and hair,
and improving skin elasticity to
keep faces looking young.
To elevate the customer experience,
Scoot has embarked on the following
initiatives since the merger:
Identify pain points through customer
surveys
Scoot partnered with Qualtrics to
launch a Net Promoter Score (NPS)
survey since July 2018, gathering postflight
feedback from customers
across various touchpoints
Touchpoints identified as requiring
improvement include boarding and
check-in process, call-centre
servicing, flight disruption handling,
and cabin interiors.
regional destinations. Chapati Party
made its debut with Scoot flight TR610
from Singapore to Bangkok on 29
October 2018.
Scoot will also delve deeper into the
feedback received, and work with our
partners to address high priority pain points.
Leverage on digital to improve customer
experience
Scoot introduced Automatic Bag Drop
(ABD) machines in July 2018, giving
customers departing from Singapore
Changi Airport a more streamlined
check-in process.
Scoot also introduced Asia Pacific’s first
transactional chatbot by an airline. A key
milestone in Scoot’s vision of creating a
mobile-first customer experience, our
chatbot, nicknamed M.A.R.V.I.E. (Most
Awesome Resourceful Virtual Intern Ever),
is able to handle customers’ queries in
English, assist customers to search for
flights, display fares and availability, make
flight bookings, and allow payment by
credit card – essentially complete a full
ticket sale.
Strengthen customer service organisation
Scoot’s Customer Service team has more
than doubled from a year ago and now
stands at 20-strong. Aside from the
day-to-day handling of customer feedback,
Scoot also wants to proactively chart and
define the entire customer experience.
“CHARTING OUR PATH,
US RIGHT THROUGH THE
Behind Scoot’s seamless
online security system and
user-friendly web interface is a
40-strong Information
Technology team headed by
Vice President, Jason Chin.
The IT team is segmented
into the four pillars: Security,
Operations, Solutioning, and
Information Management.
If you’ve been reading our
in-flight magazine over
the last few months, you
would’ve seen the feature
on our CEO’s Lik Hsin’s
Scootitude flight, and how
he leads the organisation.
This month, we’re shining
the spotlight on our
Information Technology
importance of their role in
Security
Solutioning
IT
THE SCOOT SCOOP
The Security team is our
frontline against cyber-attacks,
ensuring that all business
transactions and data are not
exploited by establishing
necessary controls, sharing
best practices, and reinforcing
adequate protection behind
the scenes. They are ones that
tune this techie stuff (Firewalls,
Anti-virus etc.) every day to
keep us safe from hackers!
Operations
Solutioning is a key to the
Digital Transformation at
Scoot. The solutioning team
splits into four clusters to focus
on the following areas; internet
bookings, mobile bookings,
finance, and corporate systems.
Together, they enable the
business with technology
enhancements, streamlining
processes, reducing complexity,
increasing agility and efficiency
to enhance both the customer
and employee experience.
Information
Management
The IT department isn’t
resting on its laurels; they’re
looking to build the A team
they need to support the
Digital Revolution in Scoot.
If you are
a developer with
mobile application
expertise and possess
the relevant
knowledge in machine
learning, predictive
analytics, or Salesforce
– and have
Scootidtude to boot –
then we want you!
The Operations team’s objectives
are two-fold; technology
infrastructure architects to meet
uptime availability of all systems
and supporting our ground
operations such as check-in
systems or Auto-Bag-Drops!
Apart from maintaining the
performance of external
systems, they deal with our
ever-demanding employees.
Our employees expect the best
because we want to be able to
do the same for our customers.
All hands on deck, the team will
jump in to tackle IT crisis (such
as IT service provider
disruptions) in the everchanging
cybersecurity
landscape.
All this would be in vain if
we didn’t have an
Information Management
team. They analyse and
provide complex data to
help the business make
critical decisions to achieve
business goals. Teamwork
makes a well-oiled machine
run smoothly. While the
teams work independently,
you’d often see them
collaborating to piece the
final product together.
Fun fact: In 2011, CNN listed roti prata as one of the
world’s 50 most delicious food items that should be
tried at least once in a lifetime, calling it “a flipping
great dish”!
Roti means “bread”, and prata means “flat.” A good
prata should be soft inside while crispy outside. CNN
said it well - “Roti prata is flipped and turned and
flipped again before it’s heated over a grill plate. Its
preparation is so theatrical that you’ll feel like dancing
a jig while you’re eating it.”
Egg prata is the most common variant of the plain
prata, which is usually served with mutton curry,
chicken curry, daal (lentil stew), or fish curry.
F.EAST (Flavours of the East) is an innovative
Singaporean start-up that recently created the world’s
first Egg Prata with Fish Curry potato chips. For its
earlier flavours (Hainanese Chicken Rice and Singapore
Laksa), F.EAST won the “Best New Brand” award at the
Asia Food Innovations Awards 2018.
SCOOTSURANCE
FOR SOLO TRAVELLERS
The world is your oyster — and it’s too big to have to wait
around for a companion everytime you need to scratch the
wanderlust itch. With Scootsurance by your side, you can
travel with a peace of mind!
THE SCOOT SCOOP
HOLD UP – ISN’T TRAVELLING
ALONE DANGEROUS?
Contrary to what most people believe, solo travel does more
good than harm. And when you’re armed with Scootsurance,
these five reassuring perks are here to give you a worry-free
solitary jaunt:
Trip curtailment/rearrangement
- Stuck alone in a foreign place because of
a natural disaster or airport closure? Get
reimbursed up to $800* for any prepaid
travel fare and accommodation costs that
cannot be recovered or any additional
charges for your accommodation
(excluding the cost of meals and room
service) and travel fare that is necessarily
incurred to alter your itinerary.
24/7 support
hotline* - Even
without a travel
buddy, you can call
Scootsurance’s
24/7 hotline for
support in case of
emergencies.
KrisFlyer points - Imagine this: you want “me-time” so badly, but a
natural disaster happens, and you are forced to cancel the trip. Don’t worry
– with Scootsurance, you can receive reimbursement for a booking that was
paid for using KrisFlyer frequent flyer points (up to $500) so you can re-book
that much-needed self-discovery trip without a second thought.
Travel delay
compensation - Planned
your itinerary perfectly but your
plans are disrupted because of
travel delay due to adverse
weather conditions? Receive
$150 for every six hours of delay
(up to $600) which you can use
to rework your itinerary.
Peace of mind - Be
assured with the knowledge
that you are covered before
engaging in extreme
activities like bungee
jumping, taking hot air
balloon rides, parachuting,
skydiving, hang-gliding,
playing snow sports, and
indoor rock climbing!
REASONS WHY YOU
SHOULD GIVE SOLO
TRAVEL A SHOT
Personal growth.
Mulling over a major life
decision that you need to
make? Solo travel gives you
that boost of courage by
clearing your mind and
creating some muchneeded
mental space.
Broadened horizons.
By immersing in a different
culture that’s utterly foreign
to you, solo travel opens you
up to new perspectives and
allows for self-awareness.
Complete freedom.
Where to go, what to eat,
and what to do next when
exploring a new city will be
entirely up to you. Solo
travel allows you to do
whatever you want,
whenever you want.
Self-discovery.
The beauty of spending
time in solitude is that it
lets you reflect on your
past and present
decisions, as well as
discover more about what
makes you, you.
SCOOT
SECURITY
POLICY
Scoot reserves
the right to deny
boarding to
passengers who
are inappropriate
on board or
on the ground
with their
comments or
behaviour.
KEEP MOVING
Maintaining good blood
circulation and muscle relaxation
goes a long way towards avoiding
Deep Vein Thrombosis (DVT), a painful
condition that arises when a clot obstructs
blood flow in a vein. Though it’s a rare
occurrence, don’t take any chances,
especially during long flights. During your
flight, move your legs and feet for a few
minutes every hour. Stand up and stretch
your arms and chest.
CABIN PRESSURE
Changes in cabin pressure during the flight
may cause discomfort in the ears. Relieve
ear pain by swallowing hard, holding your
nose and gently breathing out with your
mouth closed. If travelling with toddlers or
infants, give them a sweet or feed them a
snack when cabin pressure rises,
particularly during take-off.
SAFETY FIRST. NO COMPROMISE
Your safety is our number-one priority, but you have a part to play
too. The cabin crew’s safety briefing and the safety information
card in your seat pocket provide crucial details in the unlikely event
of an emergency. Always pay attention to these details on each
flight you take because information can vary, such as the location
of emergency exits and equipment. If in doubt about anything
safety-related, ask. Our crew are specially trained to ensure your
safety at all times. Regardless of the situation, safety must never
be compromised, so follow the crew’s safety instructions at all
times. It is an offence to refuse to obey any lawful command
of the captain or cabin crew.
CABIN CLEANLINESS
Please do not place rubbish or other discarded items in your
seat pocket or on the floor. Trash bins and napkins are located in the
lavatories. Unless you have strict dietary requirements not catered
for on board our flights, please refrain from bringing outside food
and beverages into the aircraft. We have a delicious array of meals
and snacks on offer, including tempting vegetarian and halal options.
A320 /”Transmitting”
mode on B787) unless advised by crew.
Personal headphones or earphones must be
unplugged and not in use when the aircraft is
taxiing, taking off and landing. Laptops may
not be used and must be properly stowed
when the aircraft is taking off, landing and on
the ground. If you’re boarding or disembarking
the aircraft on the tarmac, you must switch off
your devices. At any point of the flight, the
captain or cabin crew may advise you to turn
off your devices.
STAY HYDRATED
Low humidity in the cabin
can cause your body to
dehydrate. Drink lots of
non-alcoholic beverages
during your flight and
apply moisturiser liberally
to combat dryness. Consume alcohol in
moderation while on board as high altitude
intensifies its effects. The consumption of any
alcoholic beverage not purchased from the
inflight menu is not permitted.
DON’T SMOKE
Scoot enforces a strict no-smoking policy on all
its flights, which also prohibits the use of
e-cigarettes. Please refrain from lighting up in
the lavatories, as doing so could endanger the
safety of your fellow guests or disrupt the flight.
