he or she goes for your neck<br />

and uses hands to choke you.<br />

• Slip both of your arms in<br />

between his and grab his<br />

head with your hands to lock<br />

your hold.<br />

• Pull the attacker towards you<br />

while rotating your body,<br />

positioning yourself to throw<br />

him to the ground.<br />

• Lower your hips underneath<br />

his and pull him forward and<br />

then toss him over your hip.<br />

• When he falls to the ground,<br />

use this opportunity to punch,<br />

kick, or run away.<br />

WHEN YOUR SHIRT<br />

• Step forward and lower<br />

yourself to shift your weight.<br />

This should stabilise your<br />

weight, making it harder for<br />

your attacker to pull you off<br />

effectively trapping his arm under<br />

• Pull your clasped hands upwards<br />

and then extend the assailant’s<br />

elbow to lock his arms and keep<br />

him in place. Doing so will give you<br />

enough time to make an escape<br />

“As a teenager, I quit my<br />

business administration degree<br />

after three semesters and<br />

turned to brew school. I’ve<br />

always been fascinated with<br />

biology,” Oli shares. “To me,<br />

brewing is a mixture of<br />

craftsmanship, creativity, and<br />

science – if all three come<br />

together you are going to end up<br />

with really great beers.”<br />

<strong>In</strong> 1999, after stints working in<br />

Japan and Venezuela, Oli<br />

rounded up a few friends and<br />

got to work transforming a<br />

derelict S-Bahn unit at the<br />

Hackeschen Markt into a<br />

brewery. On 21 November 1999,<br />

his dream became a reality:<br />

Brauhaus Lemke opened for the<br />

very first time.<br />

Today, Brauhaus Lemke am<br />

Hackeschen Markt has more<br />

than doubled in size; a<br />

labyrinth of pumps,<br />

fermenting tanks, and bottling<br />

machines are ensconced<br />

beneath the red brick arches<br />

of the former S-Bahn station in<br />

Berlin’s Mitte area. His brewing<br />

empire now extends to<br />

Brauhaus Lemke am Alex and<br />

am Schloss, producing more<br />

than 12 styles of beer.<br />

Oli heads up a team of nine<br />

brewer engineers, brewmasters,<br />

and brewers, who must have a<br />

formal education or an<br />

apprenticeship to join the ranks.<br />

As Oli puts it, “Right now with the<br />

craft movement, a lot of people<br />

think that everyone is a brewer.<br />

But to maintain quality, you need<br />

official training.”<br />

To the uninitiated, the term<br />

“brewer engineer” might sound<br />

like a little, well, overengineered.<br />

But a mere five<br />

minutes into a tour of Brauhaus<br />

Lemke, any misconceptions<br />

fade away. Creating a new batch<br />

of beer can take up to 100 brews<br />

and multiple years to get right.<br />

The site itself requires constant<br />

maintenance, such as the<br />

recent nine-month excavation<br />

project to lower the ground,<br />

making way for a state-of-theart<br />

brewhouse.<br />

Oli walks us through his<br />

“newest invention”, the new<br />

brewhouse; a web of metallic<br />

pipes engulfed in warm air that<br />

smells of sweet, sugary malt.<br />

We meet Victor, the guy who is<br />

responsible for boiling the malt<br />

and coaxing the liquid through<br />

each step with scientific<br />

precision.<br />

“Aren’t the machines<br />

beautiful?” Oli quips, with the<br />

satisfied grin of someone who<br />

so clearly loves what they do.<br />

“This is where the whole process<br />

starts. With this brewhouse, we<br />

produce up to six batches a day<br />

in a 24-hour shift. Each batch is<br />

3,500 litres. This machine will<br />

ten-fold our capacity.”<br />

The excess spelt grain from<br />

the brewhouse is picked up by<br />

local farmers and fed to cows or<br />

pigs; a small but important cog in<br />

this well-oiled machine.<br />

Under the next archway,<br />

Freddy, a tattooed brewer<br />

apprentice, is overseeing the<br />

fermentation and washing the<br />

kegs, and in the following, Jens,<br />

the full-time welder, is kept busy<br />

repairing pipes and<br />

reconfiguring equipment.<br />

To a gentle soundtrack of<br />

clinking bottles and whirring<br />

machinery, staff are busy filling<br />

and labelling beers, the final<br />

stage before they are boxed<br />

up for sale. “1,900 bottles an<br />

hour go through this system.<br />

That’s very little – in a big<br />

brewery, they would be<br />

making 30,000 bottles per<br />

hour. It works for us.”<br />

Oli holds up the fruit of<br />

his labour, a freshly<br />

bottled and labelled<br />

beer, the Berliner<br />

Weisse. “We do a lot of<br />

research with the<br />

Technical University of<br />

Berlin (TU), and we recently<br />

collaborated with them to<br />

bring the Berliner Weisse back<br />

to life. It was introduced to<br />

Germany from France in the<br />

1600s but died away.”<br />

We stroll over to the<br />

Brauhaus Lemke am Alex, a<br />

cavernous restaurant and<br />

brewery directly across from<br />

Alexanderplatz, which holds a<br />

special significance for<br />

Berliners. “Every East German<br />

knows of this place. They used<br />

to kid that it was the only place<br />

where they could get bananas<br />

before the wall fell.”<br />

“Beer has always been a big<br />

part of the German culture, but<br />

over time it’s become a<br />

commodity. It’s ridiculous how<br />

beer is priced in supermarkets.<br />

We navigate back along the<br />

walkway past the S-Bahn<br />

archways, a space brought to<br />

life with murals by artists at TU<br />

University, and where many an<br />

after-work brew is shared on<br />

long bench tables.<br />

After a near two hour tour,<br />

we settle into the leafy,<br />

cobblestoned courtyard at<br />

Hackeschen Markt with a tasting<br />

board of beer and some hearty<br />

German fare: schnitzel, pork<br />

knuckle and currywurst. You<br />

would think that Oli would tire of<br />

talking about beer at this point,<br />

but that’s not the case.<br />

“Some craft brewers try to<br />

shock you with their beer, but<br />

that’s not our style. Our aim is to<br />

make you say ‘I want another<br />

one of those.’ We don’t just<br />

want to appeal to tourists, or<br />

hipsters, or traditional beer<br />

drinkers. We make beer for<br />

everyone.”<br />

After talking us through the<br />

beers, from a Bohemian Pilsner<br />

to an <strong>In</strong>dia Pale Ale, Oli<br />

excuses himself to get back to<br />

work: emails, meetings, fixing<br />

machinery, quality checks. The<br />

brewery is a complex web of<br />

moving parts that never sleeps.<br />

“I don’t have a normal day at<br />

work – every day is different.<br />

I’m not complaining,” he says.<br />

“You’d better not complain;<br />

this place is your second<br />

home,” I tell him.<br />

“No,” he replies, “it’s my first.”<br />

Bali makes for an alluring<br />

proposition. “We came to Bali<br />

because we were looking for a<br />

place with potential, love for<br />

art, and a lot of walls,” shares<br />

artist Julien Thorax, owner of<br />

the ALLCAPS Supply Store &<br />

Gallery and founder of the<br />

Tropica Art Festival. With street<br />

art saturated in western cities,<br />

Thorax and other artists come<br />

to Bali to enjoy a scene guided<br />

by the principle of karma,<br />

relaxed vibes, and growing<br />

talent. “Three years ago, there<br />

café. It’s become part of the<br />

“Street art is the universal<br />

language of young people.<br />

Young artists try to express<br />

themselves differently, and<br />

there are no rules except one:<br />

Suby. He would know: the<br />

France-born artist began<br />

doing graffiti at age 12. He kept<br />

his passion for street art when<br />

he moved to Ho Chi Minh and<br />

pass to be amazed by it. It is<br />

always changing, always a<br />

surprise. It can bring you to<br />

places you would never have<br />

been if you stuck to your<br />

travel guide. You will meet<br />

different people, maybe get<br />

to know the real Vietnam.”<br />

destroyed any day, so there<br />

is an element of urgency in<br />

viewing it.” It’s a sentiment<br />

the team at HKwalls agrees<br />

with: “A lot of what makes<br />

street art great is the desire<br />

to find the art, see it in<br />

person, and get photos<br />

before it vanishes like all<br />

street art eventually does.”<br />

“The biggest gallery in the world<br />

is the streets,” declares Janno<br />

Gonzales, one of the founders<br />

of Gerilya, an art collective<br />

established by three university<br />

Town, Penang’s capital, a<br />

Heritage Site, George Town<br />

shophouses, colonial<br />

buildings, places of worship,<br />

and private jetties. It was also<br />

the first British settlement in<br />

It’s Friday night in Nanchang,<br />

and the volume is building<br />

towards a loud crescendo.<br />

East of the Ganjiang (or Gan)<br />

River, in the claustrophobic<br />

melee of the old city, locals<br />

crowd into strip-lit restaurants<br />

to clank beer bottles and tuck<br />

into the freshwater fish<br />

banquets that is a feature<br />

cuisine in Jiangxi Province.<br />

Later, the atmosphere will be<br />

dialled up a notch as the city’s<br />

party people migrate to the bars<br />

and clubs on Ming De Lu Street<br />

and Fuzhou Road – two of the<br />

most buzzing spots to dance<br />

and imbibe the night away.<br />

Nobody would call this<br />

release of energy at the end of<br />

the working week subdued; but<br />

it is positively cathedral-like<br />

compared to the unholy racket<br />

emanating from the downtown<br />

rehearsal space where local<br />

heroes Explosicum are putting<br />

some new material through its<br />

deafening paces.<br />

One of China’s leading thrash<br />

metal outfits, Explosicum have<br />

released three studio albums<br />

and starred at music festivals<br />

around the Middle Kingdom<br />

and in Asia. And as they crank<br />

into crowd-pleasers from their<br />

latest release, Living’s Deal, it’s<br />

easy to see why they have<br />

grabbed the attention of<br />

China’s ever-expanding<br />

contingent of metalheads.<br />

Songs such as “Endless<br />

Killing”, “Kill Them All” and “Die<br />

For Thrash” pass by in rapid-fire<br />

succession: atonal melodies,<br />

grunted lyrics, and shredding<br />

lead guitar producing a sound<br />

that is horrific for cosy<br />

singalongs but perfect for<br />

heaving mosh pits populated<br />

by angst-ridden Asian youths.<br />

Their brutal power and<br />

breakneck pace of their songs<br />

are clearly influenced by US<br />

thrash metal Godheads such as<br />

Metallica, Slayer and Megadeth.<br />

The artwork on their album<br />

sleeves, meanwhile, features<br />

familiar tropes of the genre such<br />

as gore, lighting and skulls.<br />

But Explosicum is a product<br />

of their surroundings as much<br />

as they are beholden to the<br />

heroes of the thrash scene.<br />

For example, the sleeve art on<br />

their second album, Raging<br />

Living, shows tattered posters<br />

of a faceless Mao Zedong on a<br />

wall while a figure bearing a<br />

strong likeness to China’s<br />

one-time leader is shown<br />

being swept away on a river of<br />

molten lava.<br />

The growing popularity of<br />

the Nanchang band is<br />

indicative of the diversification<br />

of the music scene in China.<br />

From major metropolitan<br />

centres such as Beijing,<br />

Shanghai, and Guangzhou to<br />

the second tier (but still<br />

massive) cities such as Harbin,<br />

Kunming, and Sanya, an<br />

eclectic spread of genres<br />

ranging from all stripes of metal<br />

to hip-hop, dream pop and<br />

indie-folk are breaking through<br />

and thriving.<br />

– a long-term Buddhist retreat,<br />

spiritual centre, and the official<br />

summer residence of the<br />

Chinese Communist Party.<br />

<strong>In</strong>deed, Nanchang is famous<br />

for its vital role in the country’s<br />

recent history. The Nanchang<br />

Uprising in 1927 is recognised<br />

as the official launching point<br />

of the Chinese revolution, and<br />

the city was bestowed the<br />

name “City of Heroes” by the<br />

politburo as a reward.<br />

These days, Nanchang’s<br />

contingent of highly respected<br />

musicians are among those<br />

bolstering the veracity of that<br />

forceful moniker.<br />

Particularly strong is the city’s<br />

metal scene. Explosicum is<br />

spreading its appeal to metal<br />

fans around the region with<br />

recent appearances at festivals<br />

in Osaka in Japan and Vientiane<br />

in Laos.<br />

After years of touring, the<br />

four-piece is now widely<br />

accepted as one of the premier<br />

thrash acts in the region. It’s no<br />

surprise then that other<br />

Nanchang metal outfits are<br />

intent in emulating their success.<br />

Currently making waves in the<br />

local live scene are Dopamine<br />

and Be Persecuted. Unlike<br />

Explosicum, whose music speeds<br />

along like one of China’s bullet<br />

trains, the two bands major in<br />

more ponderous sounds.<br />

Both have sizeable<br />

followings in Nanchang and their<br />

recorded output – especially<br />

Dopamine, who lighten the<br />

mood by introducing different<br />

textures to their music – has<br />

grabbed the attention of music<br />

lovers around China.<br />

Founder Deng (short for<br />

DengZhang) started out by<br />

importing black metal CDs from<br />

overseas to sell them in<br />

Nanchang. A member of Be<br />

Persecuted, Deng used his<br />

new label as a way of releasing<br />

the band’s first demo in 2006.<br />

The recording gained traction<br />

internationally, and soon metal<br />

bands from around the world<br />

were contacting Deng with a<br />

view to having their music<br />

distributed in China.<br />

Since then, Pest Productions<br />

has gone from strength to<br />

strength; it has garnered a<br />

reputation for openmindedness<br />

with its acts<br />

spanning a variety of metal<br />

subgenres. The label celebrated<br />

its ten-year anniversary in 2016<br />

with major events in Beijing and<br />

Shanghai, and aims to become<br />

“Asia’s most famous underground<br />

metal label.” Not bad for an<br />

operation that started out in<br />

Deng’s tiny college dorm.<br />

“We are not in it for the<br />

money,” says Deng. “But we still<br />

have plenty of ambition. Our<br />

intention from the start has<br />

been to invest in human capital.<br />

To be a vehicle for bands to<br />

develop and better themselves.”<br />

MORE THAN JUST<br />

METAL<br />

While the Nanchang metal scene<br />

is prominent, there’s more to the<br />

city’s music landscape than<br />

brooding lyrics and fiddly guitar<br />

solos. <strong>In</strong>deed, there are numerous<br />

other styles to investigate. Like<br />

metal, hip-hop is on the rise in<br />

China, and Nanchang’s<br />

contributions include Ocase,<br />

California-based Lei Lei, and SJoK,<br />

the founder of local hip-hop<br />

collective GanGanG.<br />

Other notable players on the<br />

alternative music scene range<br />

from Wang Xu, an artist/<br />

experimental musician and<br />

co-founder of acclaimed<br />

Nanchang gallery Snarte Space –<br />

to Jingdezhen Renaissance, who<br />

specialises in a mellow, delicate<br />

style of folk-influenced indie.<br />

Back in the centre of Nanchang,<br />

Explosicum is winding down at<br />

rehearsal. As Friday night wears<br />

on, many locals will make their way<br />

to karaoke to sing along to<br />

Mandopop and slushy ballads.<br />

Few will be trying their hand at<br />

“Endless Killing” or any other<br />

Explosicum songs. Nevertheless,<br />

the presence of such radical<br />

elements makes Nanchang febrile<br />

territory for any musical explorer.<br />

Don’t be mistaken by Mykonos’ reputation as a party-hard, shop-tilyou-drop<br />

town. There is an underrated, laidback vibe to this island<br />

that’s worth exploring, as Bryan Yeong discovers<br />

While Santorini is a<br />

more frequented<br />

holiday destination<br />

in Greece (mainly due to<br />

aesthetic-savvy <strong>In</strong>stagrammers)<br />

it doesn’t mean that its sister<br />

island Mykonos should be<br />

swept under your radar.<br />

Located some 180 kilometres<br />

southeast from the Greek<br />

capital of Athens, Mykonos is<br />

a town bursting with colourful<br />

exuberance – a juxtaposition<br />

from the single-toned<br />

whitewashed buildings that<br />

Greece is synonymous with.<br />

From what I gathered via<br />

presumptions and minimal<br />

research, I initially expected<br />

rowdy youths, a bustling<br />

nightlife, and luxury<br />

boutiques around every<br />

corner. I mean, the island<br />

does play second home to<br />

Hollywood A-listers like<br />

Leonardo DiCaprio and<br />

Lindsay Lohan for summer<br />

escapes, after all. But as I<br />

would soon realise, Mykonos<br />

doesn’t always take<br />

precedence over the lifestyles<br />

of the rich and famous, as I<br />

set forth to discover sites that<br />

highlight different aspects of<br />

the astonishing isle.<br />

LITTLE VENICE<br />

Upon hitting the town centre,<br />

the quaint storefronts instantly<br />

beckoned me for a stroll along<br />

its grey street pavements. Led<br />

by an excellent guide who was<br />

eager to share her wealth of<br />

knowledge about her<br />

hometown with us, I followed<br />

and listened intently to every<br />

impassioned detail she<br />

imparted along the way. Our<br />

casual paces ultimately brought<br />

us to Little Venice, a picturesque<br />

corner to the southwest of the<br />

island lined with restaurants<br />

and bars that overlook the<br />

waters. The unrivalled views<br />

while dining here make for<br />

some postcard-worthy<br />

snapshots and memories,<br />

especially when<br />

complemented by the golden<br />

hour of sunset.<br />

As I turned my gaze towards<br />

the left, I witnessed a sight that<br />

demanded attention away from<br />

the deep blue sky and sea.<br />

After absorbing one breathtaking<br />

sight after the other, we<br />

ventured to the neighbourhood<br />

of Kastro for what was possibly<br />

the whitest building I’ve ever<br />

seen. Kept extremely minimal<br />

with the entire structure painted<br />

in Greece’s signature white –<br />

sans the entranceway, a scatter<br />

of windows, and the overhanging<br />

bell – the construction of<br />

Panagia Paraportiani is an<br />

architectural dream. I couldn’t<br />

stop marvelling at how the<br />

archways and curvature of the<br />

building’s exterior gleamed<br />

with a majestic glow beneath<br />

the afternoon sun, while also<br />

noting how the five churches<br />

within seamlessly marry<br />

together as one.<br />

ANO MERA<br />

The next day saw me ditch the<br />

surrounds of buildings for a<br />

taste of the rural side of<br />

Mykonos. Ano Mera is a village<br />

that sits about eight kilometres<br />

from the town centre and<br />

features the enviable<br />

combination of lush vineyards<br />

and farms while maintaining<br />

close proximity to the<br />

beach. The best<br />

and most unique<br />

way of exploring<br />

Ano Mera is with<br />

Yummy Pedals<br />

gr), an all-ages<br />

bicycle tour that takes one off<br />

the beaten path. Through routes<br />

alongside stunning views, you’ll<br />

also get to immerse yourself in<br />

the history and culture of the<br />

area thanks to experienced<br />

guide Dimitra. Despite strong<br />

winds threatening to pause my<br />

cycle up some fairly steep<br />

slopes on the way to the pit stop<br />

of Fokos Beach, it was nothing<br />

that sheer determination<br />

couldn’t overcome. I’m grateful<br />

I did too, for the serenity of<br />

having a bite amidst the<br />

panoramic views of untouched<br />

nature is not something I’ll<br />

forget any time soon.<br />

a mere 4 kilometers from<br />

the main town, and<br />

there’ll be plenty of<br />

transport services on<br />

standby to take you there<br />

DELOS ISLAND<br />

While there is already plenty to<br />

see and do within Mykonos, a<br />

trip there isn’t complete<br />

without visiting the nearby<br />

island of Delos. Between April<br />

to October, daily ferries will<br />

take you to the ruins that are<br />

rich in archaeology and Greek<br />

mythology. Getting a tour<br />

guide is optional, but highly<br />

recommended, especially if<br />

you want to delve deeper into<br />

the intricate history of the<br />

well-preserved holy ground.<br />

My guide, Amaryllis, skillfully<br />

painted the mythological<br />

history through her words as<br />

we combed through different<br />

landmarks together. Delos first<br />

appeared to the goddess<br />

Leto, and eventually<br />

became the birthplace of<br />

her twins Apollo and<br />

Artemis. From the mosaic<br />

tiles at the House of<br />

Dionysus to the royal statues<br />

at The Terrace of the Lions,<br />

every advancing step took<br />

us further back in time to<br />

appreciate present day even<br />

more. And thanks to<br />

Amaryllis’ expertise, we even<br />

got to experience Delos’<br />

grandeur from unique<br />

vantage points, before<br />

capturing photographic<br />

memories to take a part of<br />

the enclave home with us.<br />

Having landed back onshore in<br />

Mykonos, I wanted to wrap up<br />

my visit on a high note – literally.<br />

Getting to 180 Sunset Bar<br />

presents a bit of an uphill<br />

hike, but the rewarding views<br />

overlooking the entirety of<br />

Mykonos is worth the effort.<br />

Once I traversed up to Mykonos<br />

Castle Panigirakis, I took notice<br />

of an archway that framed my<br />

view of the sky and sea, before<br />

shifting focus on the open-air<br />

bar itself. Decked with overhanging<br />

lanterns, comfortable cushion<br />

chairs, and a relaxed ambience,<br />

the setting knows just how to<br />

draw patrons in for some serious<br />

relaxation. I took comfort in a pile<br />

of pillows and ordered a mojito<br />

to accompany my last night in<br />

Mykonos. With a drink in hand, I<br />

was bathed in the red-andorange<br />

hued evening sun as I<br />

watched Mykonos town begin<br />

to light up for the night. That<br />

magic hour was the best way to<br />

cap off my Mykonos visit, and I<br />

knew full well then which Greek<br />

island I’d be recommending for<br />

future visits.<br />

storytelling. He bids the fellow<br />

goodbye, clambers up a folded<br />

steel ladder, and plugs in his<br />

headphones. And then – as if an<br />

invisible freezing spell has been<br />

cast upon him – Roy stands<br />

completely still on his makeshift<br />

stage for the next hour like a<br />

statue. Just like that, it’s showtime<br />

for the veteran street busker.<br />

“I don’t exactly know what I<br />

should call it,” Roy ponders when<br />

asked about his busking<br />

performance. “I used to perform<br />

with my body painted in silver from<br />

top to toe and then don a pair of<br />

trunks. Nowadays, I prefer to dress<br />

in a simple black coat and jeans<br />

with no makeup at all.”<br />

He’s talking about Roy the<br />

But now it seems that<br />

persona no longer exists.<br />

“It’s hard to explain to<br />

people what I do now since<br />

most of them are used to<br />

seeing me in shiny body<br />

paint,” he says. “I’ve stripped<br />

away the excess elements<br />

and brought the focus to my<br />

eyes instead. I can remain still<br />

for up to one and a half hours<br />

without even blinking.”<br />

“I believe I’m the only person<br />

in the world who can do that!”<br />

According to a spokesperson<br />

from Singapore’s National Arts<br />

Council, the primary objective of<br />

the Busking Scheme when it was<br />

introduced in 1997 was to<br />

provide engagement<br />

opportunities for hobbyists.<br />

More importantly, it was meant<br />

to be a platform for emerging<br />

and established artists to<br />

interact with street audiences<br />

through their creative<br />

expressions.<br />

testament to the Scheme’s<br />

success. To them, they agree<br />

that busking in Singapore has<br />

gained greater public visibility,<br />

acceptance, and appreciation in<br />

“Busking makes art more<br />

accessible to the masses which,<br />

in turn, brings life and vibrancy to<br />

an otherwise quiet street,”<br />

Jonathan says. “Moreover, street<br />

performing helps showcase the<br />

many talents hidden around<br />

Singapore.”<br />

He adds, “As performance<br />

artists, we are grateful for the<br />

freedom to choose when,<br />

where, and how we like to busk.<br />

The intimate space we create for<br />

our audience during our shows<br />

is an experience we won’t trade<br />

for anything else in the world.”<br />

While there’s a lot of wriggle<br />

room for creative liberty,<br />

Jonathan doesn’t shy away from<br />

sharing the challenges that<br />

come with performing on the<br />

streets, saying “if it rains, we have<br />

to wait until it stops before we<br />

Aside from being at the mercy<br />

of the weather conditions, the<br />

young entertainer notes that the<br />

most challenging aspect of<br />

busking is keeping the audience<br />

interested enough for them to<br />

not walk away. Plus, they have to<br />

think of innovative ideas and up<br />

their skills constantly to maintain<br />

a watcher’s attention.<br />

point for the pair. “Five minutes<br />

into our show, there was no one<br />

“We were so demoralised by<br />

the negative reception that it<br />

took us more than three hours<br />

to muster up the courage to<br />

perform a second set which,<br />

thankfully, went so much better<br />

this time!” he says triumphantly.<br />

“Our spectators are different<br />

from the audience in paid<br />

shows,” Jonathan shares<br />

matter-of-factly. “Busking<br />

audiences can walk away<br />

anytime they want, while<br />

theatregoers are committed to<br />

finishing a show they spent<br />

good money on no matter how<br />

boring the performance is.”<br />

When acoustic guitar player<br />

and singer Muhammad Firdaus<br />

(stage name Fyrdauz Macbeth)<br />

started his busking journey in<br />

early 2016, he propped up a<br />

board beside him that read: I<br />

busk to make the world a<br />

better place. To this day, his<br />

love for sharing his music with<br />

the public and using it to make<br />

a positive impact remains his<br />

top motivations.<br />

“Singapore is a unique<br />

country with people from<br />

different walks of life, and I<br />

believe that music can inspire<br />

people in one way or another,”<br />

the talented male crooner<br />

says. “I have received<br />

messages from complete<br />

to experimentation, which is<br />

probably why currywurst is touted as the<br />

“most Berlin dish of all” for its unusual<br />

pairing of ketchup and curry powder. Born<br />

out of the kitchen of a resourceful housewife<br />

who traded spirits with British soldiers for<br />

ketchup and curry powder, this iconic<br />

street food is a simple one that can be<br />

easily replicated at home – slice up a<br />

population, shrimp curry is<br />

classic comfort food from the<br />

Aloha State. Unlike many other<br />

curries where everything is<br />

thrown into a pot to stew,<br />

shrimps are first pan-fried until a<br />

lovely seared crust is formed<br />

before they are added to the<br />

curry. Another unexpected twist<br />

is the garnishes used; shrimp<br />

curry is given the Hawaiian<br />

Thailand has so many varieties of curries, and<br />

Chiang Mai’s khao soi is one of the top favourites.<br />

The northern-style curry noodle dish shares its<br />

roots with Burmese-style ohn no khao swè, which<br />

also has boiled egg noodles served in a curry soup<br />

and garnished with deep-fried crispy egg noodles.<br />

The curry in khao soi is similar to Thailand’s yellow<br />

curry, or massaman curry, a variant developed by<br />

Thai Muslims centuries ago. To cut the richness of<br />

the coconut milk in khao soi, squeeze a wedge of<br />

lime over the dish.<br />

carrier has commenced its <strong>flight</strong>s<br />

to Nanchang from Singapore on<br />

2 July <strong>2018</strong>.<br />

As the capital city of Jiangxi<br />

province in China, the beautiful<br />

Nanchang is home to scenic<br />

attractions such as the largest<br />

freshwater lake in China, Poyang<br />

Lake, and the Meiling National<br />

Forest Park.<br />

Celebrating the launch of the<br />

Singapore-Nanchang direct <strong>flight</strong>,<br />

TR112 passengers were invited to<br />

participate in fun activities and<br />

lucky draws onboard the <strong>flight</strong>.<br />

Nanchang, a major railway hub<br />

connecting eastern and southern<br />

China, is <strong>Scoot</strong>’s latest destination in<br />

China, which accounts for onethird<br />

began to put the plan into action<br />

and got hold of some uniforms for<br />

him to try on for size (he is a little<br />

wider than we thought!). Here’s his<br />

detailed account during his first<br />

day as a <strong>Scoot</strong>ee!<br />

My calendar’s blocked off for two<br />

days, and I am secretly rostered<br />

on two <strong>flight</strong>s as a <strong>Scoot</strong>ee. Only<br />

the project team’s in the loop at<br />

this point; there’s no turning<br />

back. Our destination? Osaka!<br />

D-Day<br />

The midnight oil’s burning,<br />

and I’ve got a stack of<br />

manuals to go through before<br />

the <strong>flight</strong>. You’d be amazed<br />

at how much our crew have<br />

to know, but I understand<br />

that knowledge and training<br />

are the only ways to ensure<br />

crew and passenger safety<br />

while we keep up service<br />

standards. Even though I am<br />

only an extra crew and not<br />

manning a full position, I still<br />

have to be knowledgeable<br />

about standard operating<br />

systems and not trip up the<br />

rest of the team.<br />

“I WON’T KNOW WHAT’S<br />

D-Day<br />

It’s showtime! Everyone meets<br />

up at the briefing centre before<br />

the <strong>flight</strong>, and for the first time,<br />

they are told that I am joining<br />

them onboard. Sure, some<br />

nervousness is there, but smiles<br />

break out as I share with them<br />

what my expertise is – and<br />

that’s cleaning toilets! The<br />

briefing takes place as usual,<br />

then off to the aircraft we go.<br />

While making our way through<br />

the passenger terminal, I<br />

understand for the first time<br />

why the uniform is always worn<br />

with pride; your uniform is the<br />

ultimate symbol of who you<br />

are and what you do.<br />

We meet the pilots for a<br />

quick brief, and then prep the<br />

cabin before boarding<br />

commences. It’s not always<br />

easy to maintain a sunny<br />

personality 24/7 for hundreds<br />

of people, but our crew<br />

manages to do it every day.<br />

Shortly after takeoff and<br />

the seatbelt signs have been<br />

turned off, we get to work.<br />

Food is heated and served;<br />

carts are rolled out. While I<br />

didn’t make a single F&B sale<br />

on one trip down the aisle, my<br />

fellow <strong>Scoot</strong>ees kindly offered<br />

consolation and<br />

encouragement. Also, I’ve<br />

come to know that serving<br />

meals and drinks is a<br />

balancing act – literally!<br />

Thankfully, there were no<br />

spillages under my watch. As<br />

our <strong>flight</strong> nears to descent,<br />

trash was mounting, and<br />

toilets needed cleaning. I’ve<br />

come to know that the crew<br />

uses Post-it notes to record<br />

who has cleaned the toilets<br />

and during what times, so I<br />

jotted down my name as<br />

instructed. Time flies when<br />

you’re having fun, and before<br />

you know it, we are<br />

approaching Osaka, so we<br />

ensure the passengers are<br />

buckled in for landing.<br />

POST-FLIGHT<br />

The crew and I enjoyed some<br />

Japanese food once we<br />

settled in Osaka. And no,<br />

we didn’t forget to bring<br />

home a bottle of sake<br />

(Japanese rice wine). The<br />

camaraderie is strong, and I<br />

am reminded once again<br />

that a company’s success<br />

depends on their people.<br />

KEEP MOVING<br />

Maintaining good blood<br />

circulation and muscle relaxation<br />

goes a long way towards avoiding<br />

Deep Vein Thrombosis (DVT), a painful<br />

condition that arises when a clot obstructs<br />

blood flow in a vein. Though it’s a rare<br />

occurrence, don’t take any chances,<br />

especially during long <strong>flight</strong>s. During your<br />

<strong>flight</strong>, move your legs and feet for a few<br />

minutes every hour. Stand up and stretch<br />

your arms and chest.<br />

CABIN PRESSURE<br />

Changes in cabin pressure during the <strong>flight</strong><br />

may cause discomfort in the ears. Relieve<br />

ear pain by swallowing hard, holding your<br />

nose and gently breathing out with your<br />

mouth closed. If travelling with toddlers or<br />

infants, give them a sweet or feed them a<br />

snack when cabin pressure rises,<br />

particularly during take-off.<br />

SAFETY FIRST. NO COMPROMISE<br />

Your safety is our number-one priority, but you have a part to play<br />

too. The cabin crew’s safety briefing and the safety information<br />

card in your seat pocket provide crucial details in the unlikely event<br />

of an emergency. Always pay attention to these details on each<br />

<strong>flight</strong> you take because information can vary, such as the location<br />

of emergency exits and equipment. If in doubt about anything<br />

safety-related, ask. Our crew are specially trained to ensure your<br />

safety at all times. Regardless of the situation, safety must never<br />

be compromised, so follow the crew’s safety instructions at all<br />

times. It is an offence to refuse to obey any lawful command<br />

of the captain or cabin crew.<br />

CABIN CLEANLINESS<br />

Please do not place rubbish or other discarded items in your<br />

seat pocket or on the floor. Trash bins and napkins are located in the<br />

lavatories. Unless you have strict dietary requirements not catered<br />

for on board our <strong>flight</strong>s, please refrain from bringing outside food<br />

and beverages into the aircraft. We have a delicious array of meals<br />

and snacks on offer, including tempting vegetarian and halal options.<br />

Personal headphones or earphones must be<br />

unplugged and not in use when the aircraft is<br />

taxiing, taking off and landing. Laptops may<br />

not be used and must be properly stowed<br />

when the aircraft is taking off, landing and on<br />

the ground. If you’re boarding or disembarking<br />

the aircraft on the tarmac, you must switch off<br />

your devices. At any point of the <strong>flight</strong>, the<br />

captain or cabin crew may advise you to turn<br />

off your devices.<br />

STAY HYDRATED<br />

Low humidity in the cabin<br />

can cause your body to<br />

dehydrate. Drink lots of<br />

non-alcoholic beverages<br />

during your <strong>flight</strong> and<br />

apply moisturiser liberally<br />

to combat dryness. Consume alcohol in<br />

moderation while on board as high altitude<br />

intensifies its effects. The consumption of any<br />

alcoholic beverage not purchased from the<br />

in<strong>flight</strong> menu is not permitted.<br />

DON’T SMOKE<br />

<strong>Scoot</strong> enforces a strict no-smoking policy on all<br />

its <strong>flight</strong>s, which also prohibits the use of<br />

e-cigarettes. Please refrain from lighting up in<br />

the lavatories, as doing so could endanger the<br />

safety of your fellow guests or disrupt the <strong>flight</strong>.<br />
