Kremer III Contributing Editor For the past 14 years, Frank’s Shrimp & Chicken in Mokena has been serving up some of the area’s freshest seafood and frying up some of the tastiest chicken. In 2019, Frank’s will have something new to offer customers: an expanded dining room. The restaurant’s expansion is slated for late January. The food menu will not change, though owner Frank Castro has applied for a liquor license to be able to offer customers wine and beer with their meals. Castro said the idea to expand the dining area came from numerous requests from his customers, and when the shop next door became vacant he decided now was the time to cast a bigger net. “We’re going to have a nice big entrance for the customer to sit down and relax, watch TV, have maybe a glass of wine or a beer,” Castro said. Castro credited his son Nick with being a big part of the reason the restaurant’s expansion is on the horizon Nick started working with his father when Nick was around 13 years old. At that time, Castro owned JR Seafood in Oak Lawn. “We still see a lot of our customers who used to come into JR come in here now,” Castro said. “They moved south, and they’re very happy to see us here.” Castro’s love of seafood goes even further back than that, back to his days working in Chicago’s busy fish market scene. “In my younger years, I started working at this place downtown called Chicago Fish House, in the processing department, where all the fresh fish used to come in,” Castro said. The seafood is flown into Chicago O’Hare International Airport from all over the world and then sold at a market in Lombard, where Castro makes the 5:30 a.m. trip 4-5 times per week to personally inspect all his purchases and bring them back to his restaurant.
