The Angel Hotel Gears Up For An Exciting<br />

New Refurbishment...<br />

THE ANGEL HOTEL...<br />

The Angel Hotel, Bury St Edmunds, is<br />

closing the door to its ground floors –<br />

including the reception, bar, brasserie,<br />

restaurant and lounge – for the first<br />

time in over 50 years as it begins an<br />

extensive £750,000 refurbishment.<br />

Rumour has it the new look and feel<br />

of The Angel Hotel will draw on the<br />

building’s Georgian roots, notable<br />

characters from its past, and the local<br />

history, while also incorporating modern<br />

twists and comforts. Think all-day-dining,<br />

a sociable yet relaxed lounge and a<br />

luxurious dining room – there will be a<br />

space for every occasion.<br />

Robert Gough, owner of Gough Hotels,<br />

said, “The Angel plays a big part in<br />

the history of Bury St Edmunds, it’s<br />

iconic. But we did think it was time for<br />

a little bit of a face lift. Our plans for the<br />

refurbishment draw inspiration from the<br />

past, with a small nod to Charles Dickens,<br />

who mentioned The Angel in The Pickwick Papers (he<br />

stayed in this very building too!).<br />

“We want to make sure our new look-and-feel has<br />

something for everyone as we continue to welcome<br />

friends of The Angel both old and new. It’s going to be<br />

a period of change, but we look forward to bringing the<br />

character of the building and those who have visited, to<br />

life”.<br />

“We will also be appointing a Head Chef to join the team<br />

who will bring their own unique personality to the menu<br />

which will focus on seasonality and provenance. In the<br />

bar, our fantastic team will also be creating a new cocktail<br />

menu making sure there’s a tasty tipple suitable for<br />

everyone.”<br />

The extensive refurbishment will begin from 9 January<br />

with plans to relaunch in Spring 2019. During this time,<br />

the hotel will be offering a breakfast, lunch, afternoon<br />

tea and dinner service in a temporary location in the<br />

building, and rooms will be available as normal (see<br />

Well hello there! I’m back with my monthly column… OK, so firstly a reminder<br />

about me. I’m Zena (Zee for short), I’m 45, a mother and a grandmother.<br />

I’ll tell you what I LOVE... colour. Bright<br />

colours - red is up there with my favourites!<br />

There are so many shades<br />

to choose from - there’s a<br />

shade of red for everyone.<br />

It’s the month of love so I’ve<br />

got some love inspired fun<br />

finds for you.<br />

Let’s start at the top.<br />

Headwear, (as I stated last<br />

month), is bigger this season<br />

than it has been over the last<br />

few years. The Beret is my<br />

hat of choice. Its chic and<br />

stylish and is a statement.<br />

There are many ways to wear one and of<br />

course they are French... Paris is the city of<br />

love so I’m sticking to a theme here. Team<br />

it with breton stripe, a smart black trench<br />

coat and keep it casual.<br />

Red lips is a must for those of you that<br />

will be puckering up this Valentines Day. My<br />

reliable brands for a smudge<br />

and bleed free red lip are from<br />

Urban Decay, Mii Makeup<br />

and Revlon. The trend is still<br />

a matte or velvet lip. If you<br />

want your teeth to appear<br />

whiter choose a cool-toned<br />

lipstick - a pillar box red for<br />

example. Anything with a<br />

warm undertone will have<br />

the opposite effect. Also<br />

when wearing red, use a<br />

liner and a lip primer.<br />

If you know me, you will<br />

know I’m a huge fan of<br />

accessories, I’ve found some<br />

beautiful pieces from local and online stores.<br />

If you are of a bold nature, (or your other half<br />

is), then look to Erstwilder. Their fantastic<br />

acrylic jewellery is bold and fun.<br />

boutique called Pretty Candy. This bag<br />

is uber fun plus its Vegan.<br />

STOP THE PRESS... you know how<br />

much I love anything anti ageing? Well,<br />

imagine my joy at finding an actual GIN<br />

that has collagen in it? I know! It comes<br />

in a beautiful bottle and it is pink, it<br />

will make gorgeous drinks that even<br />

Dragon‘s Den rates as amazing!<br />

Finally, when I got married I had my<br />

nails painted with hearts. It was a<br />

different take on a French manicure<br />

that i‘d seen on Dita Von Tease. They<br />

were so pretty. These would be perfect<br />

for Valentines Day and will add the<br />

perfect finishing touch to your outfit.<br />

Finding the perfect<br />

wedding venue is likely to<br />

be at the top of any newly<br />

engaged couple’s list.<br />

1. NARROWING DOWN YOUR SEARCH...<br />

Much like finding your wedding dress, it is true for some<br />

brides that when you find the one, you’ll just know it.<br />

You’ll be able to picture yourself there on the day and<br />

the style of the building, both exterior and interior, will<br />

work with the theme of your wedding.<br />

With the venue playing a<br />

vital role in the success<br />

of your day, it’s the big<br />

decision you really need to<br />

get right. And there really is<br />

so much choice!<br />

Just like viewing a new property<br />

it is easy to become overexcited<br />

and fall in love with a place<br />

without checking the venue<br />

can cater to your requirements.<br />

So here are a few top wedding<br />

expert tips on venue hunting.<br />

2. IS THE CAPACITY RIGHT FOR YOU?...<br />

The size of the venue is incredibly important and will<br />

impact on budget and the enjoyment of your guests. Too<br />

small for your number of guests and the room will feel<br />

stuffy and overcrowded, but too big and guests will feel<br />

lost and the space will feel cold.<br />

3. IS IT THE RIGHT LOCATION?...<br />

Where will your guests be coming from? If they are not<br />

local, choosing a venue that is easily accessible, has<br />

accommodation on site or hotels in close proximity is<br />

desirable.<br />

4. DOES IT FIT WITH YOUR THEME?...<br />

Think about whether the venue works with and even<br />

enhances your wedding aesthetic. Consider the formality<br />

of the venue, how the weather will affect it, and the<br />

You are likely to have an idea of what<br />

your day will be like and the venue<br />

needs to be able to live up to this,<br />

for this reason, before viewing any<br />

venues sit down with your partner<br />

and discuss any non-negotiables.<br />

7. QUESTIONS TO ASK YOUR<br />

WEDDING VENUE...<br />

When you start to plan your big day,<br />

there are some essential questions to<br />

ask you wedding venue. You’ll need<br />

to find out what is permitted and,<br />

most importantly, what is not at your<br />

chosen venue.<br />

8. CHECK THE FINER DETAILS...<br />

At the venue viewing stage you will<br />

not know every detail of your day,<br />

however you must ask the venue<br />

what is not permitted. Finding these<br />

details out early in the planning stage<br />

before you book is essential.<br />

DON’T FORGET...<br />

Finding the venue will be one of<br />

the big milestones in your wedding<br />

planning and will determine your<br />

date and location and impact a lot<br />

of your other wedding planning<br />

decisions. I visited several venues,<br />

but one particularly stood out.<br />

Don’t rush into this decision its an<br />

important one to get right!<br />

UK’s most versatile orchestras, The London<br />

Concert Orchestra, under Musical Director<br />

Anthony Inglis for the majority of the tour.<br />

The orchestra can be heard regularly at the<br />

Barbican, Royal Festival Hall and The Royal<br />

Albert Hall, providing audiences with an<br />

eclectic repertoire from popular classics and<br />

opera, to hits from films and musicals. The<br />

London Concert Orchestra has worked with<br />

Katherine for the last two years in her series of<br />

hugely popular Christmas concerts.<br />

The Ulster Orchestra will be accompanying<br />

Katherine for the two Irish dates of the 2019<br />

tour. Based in Belfast, The Ulster Orchestra is<br />

Northern Ireland’s flagship arts organisation<br />

and its players comprise the only professional<br />

symphony orchestra in the region.<br />

The Orchestra performs regularly for<br />

BBC Radio 3 and Radio Ulster, including<br />

participating in the annual BBC Proms in the<br />

Park celebrations.<br />

Rachel Ducker catches up with Katherine to<br />

have a chat about her new album and UK<br />

tour stopping by us in Cambridge and Ipswich<br />

in May.<br />

HOW DID YOU GET STARTED ON THE PATH<br />

OF CLASSICAL MUSIC?<br />

I learned to sing in St David’s church in Neath<br />

as a chorister when I was seven and through<br />

my choral singing I fell in love with church<br />

music.<br />

I started having singing lessons, at which point<br />

my singing teacher suggested I start with a<br />

classical piece of music because of my choral<br />

training. It immediately clicked and I knew that<br />

was what I wanted to sing.<br />

WHO HAS MUSICALLY INSPIRED YOU?<br />

I didn’t really hear classical music until I started<br />

having singing lessons. At home, my family<br />

used to play all the big voices - like Barbra<br />

Streisand, Dame Shirley Bassey and my mum<br />

used to show me black and white films of Judy<br />

Garland and Julie Andrews. I really think it<br />

was those kinds of women that inspired me.<br />

It wasn’t until later when I heard Maria Callas,<br />

that she became my operatic inspiration, but<br />

it’s definitely always been strong females.<br />

WHAT DO YOU THINK YOU WOULD BE<br />

DOING NOW IF YOU HADN’T CHOSEN THE<br />

MUSICAL ROUTE?<br />

Well because I’ve been singing since I was<br />

four, I don’t really know any other route that<br />

doesn’t involve music, but if I hadn’t become<br />

a performer, I think I would have continued on<br />

with teaching.<br />

When I was studying at the Royal Academy of<br />

Music I became a singing teacher for a couple<br />

of years, and then I got my record deal and<br />

obviously my life changed. I really enjoyed my<br />

teaching and I’m still in touch with some of my<br />

students. I’ve always said it’s something i’d like<br />

to do later<br />

on in life.<br />

YOUR NEW ALBUM IS OUT NOW, WHAT<br />

WERE YOUR INTENTIONS WHEN YOU FIRST<br />

STARTED MAKING GUIDING LIGHT?<br />

Well it’s been four years since my last album<br />

came out and my life has changed so much in<br />

that time.<br />

I’ve got married, I’ve had two children, I’m very<br />

settled and happy, and I felt that was a nice<br />

mood to take into the studio and create an<br />

album that summarised how I was feeling.<br />

HOW DID YOU GO ABOUT CHOOSING THE<br />

SONGS THAT YOU COVER ON THE ALBUM?<br />

I wanted it to be a very spiritual, emotional,<br />

intimate album, so it was songs that touched<br />

my heart and it wasn’t about hitting all the<br />

high notes and how loud I could sing, it was<br />

really about trying to connect and move the<br />

listener in the way that these songs touched<br />

my heart.<br />

DO YOU HAVE A FAVOURITE TRACK<br />

AND WHY?<br />

I love to sing the song from The Greatest<br />

Showman called ‘Never Enough’ because<br />

it’s such an amazing and well-loved song.<br />

There’s also a very different interpretation<br />

of Stormzy’s ‘Blinded by your grace’. My<br />

daughter actually has a tiny little speaking<br />

part at the end of that song and it always<br />

makes me a bit teary when I hear her speak<br />

on the track.<br />

IS IT CORRECT THAT YOU WROTE A SONG<br />

FOR YOUR SON ON THE ALBUM - XANDER’S<br />

SONG? THAT MUST HAVE BEEN REALLY<br />

SPECIAL TO RECORD.<br />

It’s true - I actually didn’t intend to write<br />

a song for Xander. The album was nearly<br />

finished, I was upstairs in his bedroom feeding<br />

him and he’d fallen asleep in my arms and<br />

I basically wrote a prayer for his life, like a<br />

lullaby prayer with the same things that any<br />

mum wishes for their child. I played it for my<br />

producer and he said ‘we have to include this<br />

in the album’ so we managed to fit it in. He’s<br />

(Xander) probably going to kill me when he’s<br />

18 and think it’s the most embarrassing thing<br />

ever, but for me it’s nice to be able to show<br />

him that at the time of making this album he<br />

was there with me.<br />

HAS BECOMING A MUM CHANGED YOUR<br />

OUTLOOK ON MUSIC AT ALL?<br />

Yes definitely - I think it’s made me more<br />

emotional. It’s made me see the meaning of<br />

songs in a different way and it’s made me<br />

think about the future and sharing the music<br />

with them one day, so I think it’s affected my<br />

song choices.<br />

WHAT IS AN AVERAGE DAY LIKE FOR YOU?<br />

There is no average day in my life! There<br />

hasn’t been an average day in about 15 years<br />

(laughs) and there’s no pattern. I do so many<br />

different things from one day to the next.<br />

Whether it’s rehearsals or touring, or a day<br />

of promoting an album with interviews like<br />

this, through to presenting Songs Of Praise,<br />

or days of being mummy and taking my<br />

daughter to school or to swimming lessons.<br />

So there’s no routine but that’s probably why<br />

I love it so much and never get bored.<br />

HOW DID IT FEEL TO BE AWARDED AN<br />

OBE?<br />

Very surprised! I didn’t imagine I’d receive<br />

one at such a young age. It was a real shock<br />

when I received the letter but so special<br />

because it was given to me for services to<br />

music and charity and the charity aspect<br />

was to do with my work with macmillan but<br />

mostly I think for my work with the military<br />

which is something I’m really proud of.<br />

YOUR UK TOUR STARTS IN APRIL AND<br />

STOPS BY US IN IPSWICH, WHAT CAN<br />

FANS EXPECT?<br />

It’s going to be some of the songs from the<br />

new album as well as some of the favourites<br />

from all the other albums. I have a full<br />

orchestra with me because I strongly believe<br />

when people are spending the money to<br />

come to a concert I want to give them the<br />

best live experience possible. There are cuts<br />

in all sorts of music, but I feel strongly that<br />

we should bring with us a full orchestra with<br />

live musicians. I’ll have a wonderful special<br />

guest, my conductor Anthony Inglis who<br />

has been with me from the beginning, and<br />

they’ll be lots of frock changes and lots of<br />

fun! For me, it’s about singing the songs<br />

and connecting with people, but<br />

I also like to chat between the<br />

songs and it’s more of an evening<br />

with me because there’s a lot of<br />

interaction.<br />

DO YOU ENJOY TOURING?<br />

I love touring - it’s my favourite<br />

part of everything. I love being<br />

in the studio because you can<br />

make something, focus, get it exactly right and<br />

be really creative, but when you’re out in front<br />

of an audience and you see how the music<br />

affects them and how their eyes change, you<br />

feel the atmosphere in the room and nothing<br />

comes close to beating that. So that’s my<br />

favourite part of what I do.<br />

HAVE YOU EVER DEALT WITH PERFORMANCE<br />

ANXIETY?<br />

Yes, when I was younger as a teenager singing, I<br />

definitely felt that nerves got the better of me.<br />

It was something that I thankfully have<br />

overcome and now when I step out on stage,<br />

I’m as calm as I am talking to you and I don’t<br />

get nervous at all. When I was 13/14 up to<br />

probably 18 it definitely was something that I<br />

struggled with.<br />

WHAT WOULD YOU SAY HAS BEEN THE<br />

HIGHLIGHT OF YOUR CAREER SO FAR?<br />

I would probably say going out and entertaining<br />

the troops. Going and singing in Afghanistan,<br />

Iraq and Kosovo, there things I didn’t imagine<br />

doing as a young singer, but I’m so glad that I<br />

did because they’ve become some of my best<br />

memories and it’s so emotional.<br />

DO YOU HAVE ANY AMBITIONS LEFT<br />

TO ACHIEVE?<br />

Pavarotti but sadly he fell ill just before I was<br />

meant to perform for him. I wish that could have<br />

happened because to have sung with all three<br />

tenors would have been amazing.<br />

WHAT ADVICE WOULD YOU GIVE TO<br />

SOMEONE WANTING TO FOLLOW IN YOUR<br />

FOOTSTEPS?<br />

I would say to get as much experience under<br />

your belt as possible, so join school choirs,<br />

church choirs, county choirs and there’s national<br />

youth choirs of Wales and Great Britain.<br />

Enter competitions. It doesn’t matter if you<br />

don’t win them, I didn’t win many, it’s just about<br />

getting the experience.<br />

There’s also the two operatic societies, and<br />

I’d say to put on plays and shows and just get<br />

as much performance experience as you can,<br />

so that when you get your big break you’ve<br />

already put in a lot of work already, you know<br />

how things work and you’re ready for the<br />

opportunity.<br />

WHAT IS NEXT FOR YOU AFTER THE TOUR<br />

HAD FINISHED?<br />

Well lots of international concerts, but<br />

immediately afterwards it will be taking a break<br />

with the family as it’s quite an intensive tour and<br />

going straight back to mummy duties.<br />

Lots! I think you’ve always got to have new<br />

things to be striving towards. I’ve never done<br />

a soundtrack, or something like a Disney<br />

soundtrack or an animation which I think my<br />

children would love. Then it’s just to continue<br />

doing what i’m doing. I think doing a soundtrack<br />

would be really fun!<br />

YOU’VE WORKED WITH SOME GREAT<br />

MUSICIANS IN THE PAST – IS THERE ANYONE<br />

YOU WOULD STILL LIKE TO WORK WITH?<br />

I feel very fortunate that I have been able to<br />

sing with Placido Domingo and José Carreras<br />

multiple times. I was due to sing for Luciano<br />

‘Guiding Light’, out now<br />

via Decca Records.<br />

A series of articles which will feature boxing facts<br />

from both the past to the present...<br />

Over the years Ireland has<br />

produced a number of<br />

outstanding boxers who have<br />

gone on to win a variation of<br />

titles in the professional ranks<br />

the latest being Katie Taylor.<br />

Taylor who was born in Bray on<br />

the 2 July 1986 had an incredible<br />

amateur boxing career being<br />

a five times gold medallist at<br />

the world championships and a<br />

gold medal winner at the 2012<br />

Olympic Games. It was clear that<br />

with such an outstanding resume<br />

Taylor would eventually turn to<br />

the professional code. Taylor<br />

duly signed with Matchroom<br />

promotions and on the 26<br />

November 2016 she punched<br />

for pay for the first time at the<br />

Wembley Arena in London.<br />

The fighter coming out of the<br />

opposite corner was Poland’s<br />

Karina Kopinska who had a<br />

record consisting of Twenty<br />

four bouts winning seven losing<br />

fourteen with three draws. No<br />

one truly expected Kopinska to<br />

leave the ring with a victory but<br />

she was an acceptable opponent<br />

for Taylor in her maiden<br />

professional outing. Taylor soon<br />

revealed that she was a class<br />

above Kopinska winning in the<br />

third round of six.<br />

The second outing for Taylor<br />

saw her in action against<br />

Brazil’s Viviane Obenauf who<br />

carried into the ring a record<br />

of ten fights with one defeat.<br />

The pair crossed gloves at the<br />

Manchester Arena in Manchester<br />

on the 10 December 2016. After<br />

six rounds of action Taylor<br />

emerged the victor with a six<br />

round point’s victory.<br />

Taylor’s first chance to win a<br />

championship took place in<br />

her fifth bout on the 29 April<br />

2017 where upon she was<br />

to contest the vacant World<br />

Boxing Association International<br />

lightweight title against<br />

Germany’s Nina Meinke who<br />

was undefeated in five fights.<br />

The bout schedule for ten<br />

was concluded in the seventh<br />

round when Taylor stopped<br />

her opponent. The venue for<br />

the contest was the Wembley<br />

Stadium London.<br />

The USA saw Taylor in action<br />

on the 29 July 2017 when at<br />

the Barclays Centre in Brooklyn<br />

New York home fighter Jasmine<br />

Clarkson was the opponent with<br />

a slate of twelve fights winning<br />

four and losing eight. Clarkson<br />

retired in the third round of eight<br />

in a non-title bout.<br />

Taylor’s chance to win a World<br />

title fight took place in her<br />

next outing against the World<br />

Boxing Association lightweight<br />

holder Anahi Esther Sanchez<br />

of Argentina. The contest was<br />

to take place at the Principality<br />

Stadium in Cardiff Wales on the<br />

28 October 2017. Sanchez with<br />

a resume of nineteen fights with<br />

just two defeats would not be<br />

an easy opponent to overcome.<br />

A little drama took place even<br />

before the two entered the<br />

ring to do battle. Sanchez was<br />

unable to make the required<br />

weight and thus forfeited her<br />

championship. The fight went<br />

ahead for the vacant title with<br />

only Taylor eligible to take the<br />

crown should she win. At the<br />

end of ten rounds Taylor won<br />

the championship with a well<br />

deserved point’s decision.<br />

Taylor’s first successful defence<br />

of her title took place on the 13<br />

December 2017 at the York Hall<br />

Bethnall Green in London when<br />

she outpointed American Jessica<br />

McCaskill over ten rounds.<br />

McCaskill came into the contest<br />

with a record of six fights<br />

with one defeat. Taylor unified<br />

the championship when she<br />

outpointed holder Argentina’s<br />

Victoria Noelia Bustos over ten<br />

rounds for the International<br />

Boxing Federation World<br />

crown on the 28 April 2018 in<br />

a bout which took place at the<br />

Barclays Centre in Brooklyn New<br />

York. Prior to her meeting with<br />

Taylor Bustos had put together<br />

a record of twenty two fights<br />

with just four defeats. Taylor<br />

defended her titles successfully<br />

on three more occasions before<br />

2018 came to a close.<br />

2019 will be an exciting year<br />

for Taylor who is at present<br />

undefeated in twelve bouts.<br />

Taylor will be setting her sights<br />

on the World boxing Council<br />

and World Boxing Organisation<br />

versions of the titles in the<br />

months to come with the aim of<br />

becoming the undisputed World<br />

champion in her division proving<br />

that the Lady is a Champ.<br />

movement by strengthening the left leg and<br />

pressing the outer heel firmly to the floor.<br />

Rotate the torso to the left, keeping the two<br />

Beccles Lido is one of those ‘must see and<br />

do’ experiences for the spring/summer, (not<br />

long to wait), this traditional outdoor heated<br />

swimming pool sits right alongside the river,<br />

with plenty of paved and grassy places to<br />

sunbathe!<br />

Beccles town is made up of small<br />

market squares and winding streets<br />

nestled by the River Waveney.<br />

Around every corner you’ll find quirky,<br />

independent shops, restaurants and cafes.<br />

This month, to celebrate the local businesses<br />

within the town, we have put together a<br />

small feature showcasing some of Beccles<br />

independent businesses.<br />

WHAT TO DO WHEN VISITING BECCLES:<br />

Along with visiting some of our wonderful<br />

advertisers, there are plenty of opportunities<br />

to take to the river when you visit Beccles.<br />

You can hire a canoe, kayak, or day boat, from<br />

various companies in town.<br />

If you’d prefer to stay on dry ground, there<br />

are plenty of walks to take you through<br />

the lush Waveney Valley. Follow the river<br />

as it meanders through the pretty Suffolk<br />

countryside, or head northwards and explore<br />

the Beccles Marshes.<br />

There is also the Beccles Public Hall, which<br />

holds regular performances for the theatre<br />

and music lover.<br />

Events throughout the year include the<br />

Beccles Antiques Street Market and the<br />

Beccles Food and Drink festival, both in May.<br />

Plus, the town has its very own carnival in<br />

August.<br />

Team the bold flavours of mussels<br />

and chorizo with mellow cannellini<br />

beans and cavolo nero for a tasty,<br />

light meal. Ideal for a romantic<br />

evening.<br />

Cooking doubles as a way to provide both<br />

dinner for you and your date and a relaxing<br />

and fun activity to do together. So why not<br />

try this romantic recipe?<br />

1. Gently cook the shallots, parsley stalks,<br />

garlic and chorizo in the oil in a large pan<br />

with a lid or casserole dish until the shallots<br />

are softened – about 5 mins.<br />

2. Add the cavolo nero and cook for a<br />

couple more mins, then add the wine and<br />

cook for another 1 min.<br />

3. Stir in the beans, then add the mussels,<br />

ensuring they’re well coated with the<br />

sauce, and cover with the lid. Cook for a<br />

few mins, shaking the pan to release the<br />

mussel juices, until they’ve all opened<br />

(discard any that haven’t).<br />

Ingredients<br />

• 2 shallots, finely chopped<br />

• small bunch parsley, stalks and leaves<br />

separated and chopped<br />

• 2 garlic cloves, finely chopped<br />

• 100g cooking chorizo, skin removed and<br />

chopped<br />

• 1 tbsp olive oil<br />

• 100g cavolo nero, stems discarded, leaves<br />

shredded<br />

• 150ml white wine or sherry<br />

• 400g can cannellini beans, drained and<br />

rinsed<br />

• 500g mussels, cleaned and beards removed<br />

• 1 lemon, halved<br />

4. Scatter over the parsley leaves and<br />

squeeze over the lemon to serve.<br />

Method<br />

1. Heat the oven to gas 7, 220°C, fan 200°C.<br />

Unroll the pizza dough and cut each circle<br />

into quarters. Transfer the slices to 2 oiled<br />

baking sheets. Mould the top of each into a<br />

heart shape.<br />

2. Make the garlicky greens by heating the<br />

oil in a nonstick frying pan with the crushed<br />

garlic, stirring for 1 min. Add the sliced<br />

• 200g pack mozzarella balls and slowroasted<br />

and tomato topping, add to a jar tomato<br />

and chilli pasta sauce; simmer for 5 mins.<br />

Spread onto the pizza bases and top with<br />

50g sliced half-fat mozzarella. Scatter over<br />

chopped flat-leaf parsley to serve.<br />

• 1 tsp olive oil<br />

• 1 garlic clove, crushed<br />

• 100g sliced greens<br />

• nutmeg, grated<br />

• 2 tsp ricotta<br />

• 1 tsp Parmesan or vegetarian hard cheese,<br />

Vietnamese Meatball Salad...<br />

Get the New Year off to a delicious and healthy<br />

start with this tasty and nutrient-packed salad using<br />

Powters Chef’s Pig sausagemeat<br />

INGREDIENTS:<br />

• 300g rice noodles, cooked<br />

• Half small cucumber, deseeded and grated<br />

• 2 tbsps Vietnamese fish sauce<br />

• 1 tsp sugar<br />

• 4 spring onions, sliced thinly on the diagonal<br />

• 1 garlic clove, minced<br />

• Large handful fresh mint, coriander and basil leaves<br />

• 1 pack Chef’s Pig sausagemeat<br />

• 1 medium gem lettuce, very thinly<br />

sliced<br />

• 4 tbsps pickled red cabbage<br />

• 1 tbsp Hill Farm Rapeseed Oil<br />

FOR THE DIPPING SAUCE:<br />

• Juice of two small limes<br />

• 4 tbsps cold water<br />

• 2 tbps fish sauce<br />

• 1 tsp sugar<br />

• 1 tsp rice vinegar<br />

• 1 red chilli, deseeded and finely chopped<br />

1. Prepare the rice noodles according to<br />

pack instructions. Rinse with cold water,<br />

drain thoroughly and set aside.<br />

2. Now make the cucumber salad. Using a<br />

potato peeler, create cucumber ribbons and<br />

use your hands to squeeze out the juice into<br />

a small bowl. Mix together the dipping sauce<br />

ingredients and pour over the cucumber.<br />

3. Put the sugar and fish sauce in a small<br />

saucepan and cook over a medium-low heat<br />

until the sugar dissolves. Set aside to cool.<br />

4. Put half the spring onion, garlic, chopped<br />

mint and pork in a bowl. Tip in the fish<br />

sauce and sugar mix and use your hands to<br />

thoroughly mix everything together. Cover<br />

with cling film and chill for at least an hour.<br />

5. Shape the pork mixture into small<br />

meatballs and pan fry with a little Hill<br />

Farm Rapeseed oil until golden. Divide the<br />

cold noodles, lettuce, remaining spring<br />

onion, cucumber mixture and red cabbage<br />

between four bowls and serve with the<br />

meatballs on top and the dipping sauce<br />

drizzled over.<br />

Or any romantic occasion... It would seem obvious that Sparkling wine<br />

would be a first choice but that leaves out pinkwine as another choice.<br />

Valentine’s Day celebration. With this method<br />

the bubbles last only a very short time. I<br />

wouldn’t even consider that for a romantic<br />

occasion.<br />

It would be more advisable to head for a wine<br />

using the tank or charmat method to obtain<br />

the bubbles.<br />

Sparkling...<br />

The selection here is very wide ranging<br />

from the modest end of the market to the<br />

higher end of the market with very expensive<br />

champagne.<br />

For the less expensive you wold probably<br />

need a wine made by a simple method,<br />

namely a wine having been injected with<br />

carbon dioxide gas to create the bubbles.<br />

This could lead to disappointment and ruin a<br />

wine is made in a sealed tank to retain the<br />

bubbles. This is much more satisfying with the<br />

bubbles lasting much longer.<br />

The most rewarding method is that made<br />

like champagne where the wine is made in a<br />

acceptable, namely Cava, Prosecco, Cremant<br />

de Bourgogne etc which are made the same<br />

way but also use other grapes. With these,<br />

like champagne can offer pink wines as well.<br />

Pink (Rose)...<br />

For some reason pink coloured wines have<br />

romantic overtones.<br />

Pink wines seem to fit the occasion of<br />

Valentines Day and there are a considerable<br />

range to choose from.<br />

To obtain the pink colour you need black<br />

grapes, although there are some, like Pinot<br />

Gris (Pinot Grigio) that are pink in<br />

colour anyway.<br />

There are two main ways to<br />

make a pink wine. One is to<br />

add red wine to white wine<br />

and the depth of colour will<br />

depend on how much red<br />

is added to the white. It is a<br />

fairly accurate way to get the<br />

desired amount of pink in the wine.<br />

The other method is to use only black grapes<br />

and leave the skins in contact with the<br />

pressed juice in order to extract the colour<br />

over time.<br />

This is much more difficult to reach the<br />

desired colour as it is necessary to keep<br />

monitoring the process until the colour is<br />

what you are after<br />

Sources...<br />

Most of the wine producing countries around<br />

the world make pink wines as a matter of<br />

course.<br />

They are mostly achieved by using black<br />

grapes with the main exception of Pinot Gris<br />

(Pinot Grigio) which has pink coloured grapes.<br />

One of the most famous pink producing<br />

areas is Provence in Southern France. Its<br />

main reputation is built on this product and<br />

they often have very shapely bottles which<br />

you could say enhance the Valentine’s Day<br />

experience.<br />

The most famous of these is called<br />

Chateau de l’Aumerade ‘Cuvee<br />

Marie Christine’ Rose Crus Classe<br />

Cotes de Provence. It is made<br />

from Cinsault, Grenache and<br />

Syrah grapes.<br />

There are many other good roses<br />

around the world, which are made from a<br />

variety of Black grapes, particularly Cabernet<br />

Sauvignon, Pinot Noir and Zinfandel.<br />

One form of Rose which is very light in colour<br />

is often call Blush. Made from The Zinfandel<br />

grapes in California and reached cult status at<br />

one time.<br />

Not as serious as other roses but fun<br />

nonetheless.<br />

Conclusions...<br />

Very popular in summer and warm times outdoors, pink wines are more appreciated now as<br />

the colour matches the sunshine. Have a go at the Provence ones or Southern Rhone ones<br />

like Tavel or Lirac, and enjoy. Of course, the ultimate has to be Pink Champagne at this special<br />

date in February or indeed any other time if the mood takes you.<br />

Norfolk is all about picturesque<br />

countryside, on which you can<br />

always spot a Saxon or Norman<br />

church tower.<br />

Whether it’s taking a trip to the coast; walking<br />

through the Broads National<br />

Park; or enjoying a romantic<br />

city break in Norwich, there is<br />

something to offer everyone.<br />

Known as the gateway to<br />

the Broads, the village of<br />

Coltishall is busy riverside village, with its own<br />

common, good walks, eighteenth-century<br />

buildings, interesting shops and several<br />

Broads Quality Charter eating-places.<br />

On the banks of the River Bure, in the luscious<br />

surrounds of deep Norfolk, sits the Norfolk<br />

Mead. This elegant Georgian hotel was bought<br />

and refurbished by husband and wife team<br />

James Holliday and Anna Duttson in 2014.<br />

With over 8 acres of lovingly kept private<br />

grounds and 16 contemporary rooms and<br />

suites, the hotel now provides a sophisticated<br />

and gentle base for its guests.<br />

The impressive red brick building stands<br />

akimbo, whilst wide sash windows and deep<br />

balconies promise a glorious view looking out<br />

over the sweeping grounds and river.<br />

The Mead comes with its own hire boat for<br />

exploring the Broads and can fit up to six<br />

people, it even comes complete with a fresh<br />

picnic provided by the hotel.<br />

First Impressions...<br />

We arrive in the winter sunshine – it casts a<br />

light on green meadows and babbling brooks<br />

that surround the hotel. Spoilt with ‘Samphire’<br />

suite, we were not disappointed. Its large<br />

four-poster king-size bed did not dominate<br />

the spacious airy room. The décor, both<br />

contemporary and stylish included the stand<br />

out freestanding bath, in perfect viewing point<br />

of the TV.<br />

It is often the small things that make you<br />

smile. Homemade brownies and thick creamy<br />

milk from a local dairy are left in each room<br />

daily, along with tea and coffee making<br />

facilities, so you can make yourself right at<br />

home.<br />

Award winning dining…<br />

The Mead’s reputation for exquisite food<br />

precedes itself. Anna’s background at the<br />

helm of a successful catering company, which<br />

numbers the McLaren racing team among its<br />

clients, means that the two AA rosette food is<br />

as refined as the rest.<br />

After an aperitif at the bar we were given the<br />

opportunity to browse the seasonal menu and<br />

make our selection.<br />

We were lead to our table and it wasn’t long<br />

before the food arrived. Opening with Pigeon<br />

Breast with caramelised Feta and<br />

Baby Beets, my husband wished<br />

he had ordered this again for<br />

the main course. I opted for<br />

the Mushroom Arancini<br />

with smoked aubergine<br />

puree, which was full of<br />

flavour, the smokiness<br />

of the Aubergine was<br />

delightful.<br />

As a vegetarian I was delighted<br />

to see one of my favourite mains<br />

on the menu. The Wild Mushroom Gnocchi,<br />

Feta Cheese, Chestnut Mushroom, Nut roast,<br />

Courgette & Rosemary Emulsion, Baby<br />

Gem, Pine Nuts, Basil Oil was irresistible<br />

and exceeded expectations. My husband<br />

was similarly impressed with his choice of<br />

Cod Loin, Sea Purslane, Roasted Cauliflower<br />

Puree, Smoked Cod Bon Bon, Heritage<br />

Tomato’s, Peas, Spring Onion,<br />

Parsley and Watercress Sauce.<br />

Unable to resist, we both<br />

indulged in the Chocolate Duo;<br />

Chocolate Brownie, Chocolate<br />

Torte and Pistachio Ice Cream<br />

to conclude a wonderful<br />

evening.<br />

Ready to face the day…<br />

After a wonderful nights sleep in<br />

Samphire, it was time to face the day<br />

ahead, but not before breakfast. With a varied<br />

selection of freshly baked breads, cereals,<br />

jams and juices from the buffet, as well as<br />

hot options from the grill, you couldn’t ask<br />

Method<br />

1. In a cocktail shaker, combine the<br />

pomegranate juice, vodka, and<br />

Chambord. Shake to combine.<br />

2. Place 1 chunk dry ice into the bottom<br />

of each glass.<br />

Ingredients<br />

• 1 cup pomegranate juice<br />

• 2 shots strawberry vodka<br />

• 2 shots Chambord<br />

• 2 small chunks dry ice (optional)<br />

• 2 strawberries cut into hearts,<br />

for garnish (optional)<br />

3. Pour the martini over the a very small<br />

piece of dry ice.<br />

4. Garnish with skewered strawberry<br />

hearts if desired.<br />

minutes or until it reaches 105°C on a sugar<br />

thermometer.<br />

A homemade gift for the one<br />

you love...<br />

Treat your Valentine to some delicately<br />

floral and nutty Turkish delight. These<br />

colourful sweets make a wonderful<br />

homemade gift for friends, family and<br />

loved ones.<br />

Ingredients<br />

• 385g caster sugar<br />

• 2 tsp lemon juice<br />

• 50g cornflour<br />

• 1 tsp cream of tartar<br />

• 100g pistachios<br />

• 2 tbsp rosewater<br />

• 1/2 tsp pink food colouring<br />

To serve<br />

• 180g icing sugar<br />

• 20g cornflour<br />

Method<br />

1. Place the sugar, lemon juice and 160ml of<br />

water in a pan over a medium heat and stir<br />

2. Meanwhile, place 50g of the cornflour, cream<br />

of tartar and 180ml of water into another<br />

saucepan and stir over a medium heat until the<br />

mixture thickens to the consistency of glue.<br />

Gradually stir the sugar syrup into the<br />

cornflour mixture. Cook over a low heat for<br />

1 hour, stirring occasionally until the mixture<br />

reaches a light golden colour. (It should reach<br />

the “soft ball” – 112–115°C – stage on a sugar<br />

thermometer.)<br />

3. Meanwhile, blanch the pistachios for 2<br />

minutes in boiling water and drain. Put them on<br />

a teatowel and rub them for a minute or two to<br />

remove the outer skin. This will leave you with a<br />

lovely green pistachio.<br />

4. Remove the Turkish delight mixture from the<br />

heat and stir in the rosewater, food colouring<br />

and pistachios until well combined.<br />

Pour into a greased loaf pan lined with a<br />

double layer of cling film. Place in the fridge for<br />

4 hours or until firm.<br />

5. Mix the icing sugar and 20g of the cornflour<br />

together and dust the chopping board liberally<br />

with the mixture. Turn the Turkish delight out<br />

onto the board and cut into 18 evenly sized<br />

squares using an oiled knife.<br />

6. Toss the cubes in the remaining icing sugar<br />

until it is well covered.<br />

remember some specific details.<br />

These can come by asking deeper questions instead<br />

of your standard ones.<br />

rather than later - what have you got to<br />

The Most Expensive Cap<br />

in the world...<br />

Herbert Rumsey Wells<br />

became a partner in his<br />

father’s company T Wells &<br />

Son of 4 St Andrews Street,<br />

Norwich in 1904 selling caps,<br />

hats, ties, badges, sashes and<br />

ribbons.<br />

In 1914 Herbert introduced the<br />

first ever semi-soft service cap<br />

for Officers. He was so proud<br />

of his city and his country that<br />

he gave his caps local names,<br />

which were the Brancaster,<br />

the Blofield, the Westwick,<br />

the Conesford, the Wellscap,<br />

the Yare, the Reepham, the<br />

Burgh, the Wroxham and the<br />

Plumstead. Ladies products<br />

were also included, with the<br />

Rumishanter and matching scarf<br />

and for Norfolk schoolboys there<br />

was the Sprowston.<br />

By 1935 the company was<br />

described as being the most<br />

expensive capmaker in the<br />

word. There was also a branch<br />

in Cheapside, London. The<br />

company which was then<br />

called T Wells can be traced<br />

back to 1815 when Mr Wells<br />

had premises at Cockey Lane,<br />

Norwich (now London Street)<br />

before moving to St Andrews<br />

Street during the 1870s. One<br />

of the first newspaper adverts<br />

placed in the Norwich Mercury<br />

stating ‘the company beg to<br />

acquaint their friends and the<br />

public that they have opened<br />

the above situation, where there<br />

is now ready for their inspection<br />

an elegant and extensive<br />

selection of goods’.<br />

When Herbert took over adverts<br />

became more direct, and one<br />

advert stated ‘Some men wear<br />

some sort of a cap made from<br />

some sort of cloth, cut in some<br />

sort of way – the sort of chap<br />

you see in railway carriages.<br />

They serve their purpose there I<br />

suppose, but, if these men knew<br />

what awful sights they looked<br />

in them, they would have more<br />

respect for themselves and<br />

consideration for those who<br />

have to look at them.’<br />

Herbert invented the ‘Doggie’<br />

which was the Rolls-Royce of<br />

the cap world which was made<br />

to fit the wearer’s head. A<br />

conformateur was used to<br />

take measurements, and these<br />

were sent across the world to<br />

wherever the cap wearer ended<br />

up.<br />

The business had customers<br />

across the Empire and it<br />

was claimed they would be<br />

recognised by wearing his cap.<br />

Ex-patriots would greet them<br />

with a hearty handshake saying:<br />

‘I don’t know who the blazes<br />

you are, sir, but you’re wearing<br />

a Rumsey wells cap, so dash it,<br />

come and have a drink!’.<br />

Working with many weavers,<br />

he came by an 18th century<br />

peacock-patterned Norwich<br />

design which he offered over<br />

five hundred colourings. Herbert<br />

received Royal recognition and<br />

that his company had been<br />

honoured with Royal commands.<br />

He travelled around Norwich<br />

on his bicycle and supported<br />

local charity and cycling<br />

organisations and attracted top<br />

cycling champions to the city<br />

and also produced many cycling<br />

equipment.<br />

Aged 60, Herbert died in<br />

December 1939 with out a fifth<br />

generation to take over staff<br />

members Edna Watling and<br />

Elsie Bugden took over until<br />

closing in 1974.<br />

Today Herbert is remembered<br />

with a blue plaque situated<br />

between a residential block<br />

of flats named after him and<br />

the Rumsey Well public house<br />

where the business was situated.<br />

This month <strong>Bounce</strong><br />

<strong>Magazine</strong> was kindly<br />

invited along to review a<br />

couple of treatments at<br />

the new Southwold Beauty<br />

Salon, Blush & Glow.<br />

Rachel Ducker was sent along<br />

to spend an afternoon with<br />

salon owner Chelsey for some<br />

much needed TLC.<br />

“It was a grey drizzly day, one<br />

of those ones you really don’t<br />

want to go out in.<br />

Fortunately as I stepped<br />

through the doors of<br />

Blush & Glow,<br />

my mood was<br />

instantly<br />

lifted.<br />

provided a calm and serine<br />

atmosphere to relax in.<br />

Teamed with a peppermint<br />

tea I was ready<br />

to relax.<br />

I took at seat at<br />

the Moroccan<br />

inspired foot baths, dipped<br />

my feet in the warm water<br />

and my luxury pedicure<br />

began.<br />

With a busy start to the New<br />

Year I have to confess my feet<br />

have been a bit neglected,<br />

but after a rasp, soak, salt<br />

scrub, nail file, some cuticle<br />

work, an amazing foot mask<br />

and my favourite part, the<br />

heated booties, my feet<br />

started to feel very pampered<br />

indeed.<br />

After a coat of coral<br />

pink nail varnish<br />

my treatment was<br />

complete.<br />

To take me to<br />

that next level of<br />

relaxation I was led<br />

to one of the treatment<br />

rooms for a Head in the<br />

Clouds massage.<br />

I spent a heavenly 30<br />

minutes having my scalp,<br />

neck, shoulders, and face<br />

massaged.<br />

At one point I almost drifted<br />

off to sleep. I actually enjoyed<br />

this even more than a neck,<br />

shoulder and back massage,<br />

there is something about<br />

having your head touched!<br />

I would highly recommend<br />

this treatment for those who<br />

lead busy lives; work a lot on<br />

computers and tend to get<br />

tension in the upper body.<br />

I have to say I walked out of<br />

the room in a bit of a daze<br />

and actually had such a lovely<br />

afternoon with Chelsey I<br />

didn’t want to go home.<br />

down on the A-Z of what’s in your bottles...<br />

[A] The world of cosmetics is not the simple<br />

one that our mothers knew.<br />

We are far beyond cleanse,<br />

tone and moisturise with our<br />

routines and ingredients have<br />

become the stuff of text books.<br />

Every year a new product comes<br />

onto the market with its promise of<br />

rejuvenation, hydration, dewy glow<br />

and flawless skin. From hyaluronic<br />

acid through nanospheres to peptides<br />

we’re swept up in the language of<br />

formulations and marketing. But do any<br />

of us really know what it all means? This<br />

year I’m going to take you through the<br />

lexicon of cosmetic chemistry, picking<br />

out an A-Z of ingredients that make<br />

up the potions in your bathroom. The<br />

goodies, the baddies and the absolute<br />

stars.<br />

So let’s start at the very beginning...<br />

A is for one of my absolute favourites,<br />

Vitamin A and it’s worth a month to<br />

itself. You’ll also see it referred to in<br />

its different forms as Retinyl Palmitate<br />

or just Retinol, depending on its<br />

formulation. Vitamin A products are<br />

among the most widely used active<br />

ingredients in skin care, but they<br />

are often misunderstood, and don’t<br />

produce equally beneficial effects on<br />

the skin. That’s why some anti ageing<br />

creams vary so much in price.<br />

Retinol is the whole vitamin A molecule,<br />

and is therefore just a fancy name for<br />

Vitamin A, whereas retinyl palmitate is<br />

a combination of retinol with another<br />

chemical called palmitic acid. However,<br />

experts agree that the one family of<br />

ingredients that reduces wrinkles and<br />

firms skin is retinoids.<br />

What does it actually do? Retinol has<br />

the ability to penetrate the skin and<br />

increase elasticity. It makes the skin<br />

look smoother, reduces pore size,<br />

and improves wrinkles. Retinol aids<br />

in the resurfacing and rejuvenation<br />

appearance, but it will take much longer<br />

and be less dramatic.<br />

of skin, giving a clearer, more vibrant<br />

complexion for all ages and skin types.<br />

It removes the top layer of dead skin,<br />

while also generating collagen (the<br />

skin’s structural fiber) in the skin. As<br />

we get older, collagen breaks down,<br />

creating lines and large pores. Retinol<br />

penetrates deep into the skin, where it<br />

converts to retinoic acid and really goes<br />

to work changing your skin in a way no<br />

other ingredient does.<br />

So when you buy a cream promoting<br />

the effect of retinol, it’s important to<br />

know the concentration, as well as<br />

the type of retinol used. If it’s near<br />

the end of the listed ingredients, the<br />

concentration is going to be low and<br />

you could be wasting your money<br />

on what s basically an oil and water<br />

emulsion with some fragrance. And if<br />

it’s too cheap it’s because it’s not the<br />

real deal. Over-the-counter creams will<br />

always err on the side of caution. If you<br />

want proper Retinol you will need a<br />

cosmeceutical brand and be prepared<br />

to pay a bit more for it. Used properly,<br />

you’ll be delighted you made the<br />

investment.<br />

But do read the labels on your pots<br />

because much more retinyl palmitate is<br />

needed to produce the same effects..<br />

In general, you should use a cream that<br />

contains at least 0.2% retinol. Retinyl<br />

palmitate may still improve the skin’s<br />

Myth or Makeover?...<br />

We’ve all heard skincare myths to help<br />

our skin look fresher and younger for<br />

longer, but who should you listen to and<br />

do they really work?! We wanted to take<br />

you through our top 5 favourites.<br />

#1 Toothpaste treats spots<br />

Breakouts are very visual and we will often try<br />

anything to get rid of them quicker! Even this old<br />

wives tale. While toothpaste does have cooling<br />

and anti-bacterial properties which may help<br />

to soothe the inflammation of a breakout the<br />

ingredients are too harsh for your skin.<br />

They are designed to clean the hard surface of<br />

your teeth not your delicate skin. Toothpaste can<br />

also cause unwanted dry patches which could<br />

develop more unwanted issues.<br />

Instead try a dab of Argan oil on the spots<br />

overnight - it’s healing properties will reduce the<br />

inflammation combined with a good cleansing<br />

routine morning and night - your breakouts won’t<br />

last for long.<br />

#2 Don’t use oil on oily skin<br />

This one is really common. Many people come to<br />

us with with concerns over oily or combination<br />

skin, scared of using an oil on their face.<br />

This myth is simply not true. The correct choice<br />

of oils will work with your skin and restore<br />

it’s natural balance. In some cases the skin is<br />

overcompensating for being dehydrated and so it can be a<br />

vicious circle. Finding the right products for your skin type<br />

is key.<br />

Don’t be afraid of using a hydrating face serum or healing<br />

natural oil in your skincare routine. If you’re unsure of which<br />

one is right for your skin type we’re happy to offer you<br />

advice.<br />

#3 The more expensive the product, the<br />

better quality it is?<br />

This myth frustrates me the most. I hate to see people<br />

waste money on the strength of a brand without checking<br />

out the ingredients. Sometimes less is more - As the old<br />

saying goes!<br />

Many products with less ingredients, and simpler<br />

formulation processes are more cost effective and can offer<br />

you a purer product at a potentially higher quality.<br />

The size of the marketing budget is not indicative of the<br />

efficacy of the product.<br />

Always check the labels of the products you’re buying<br />

to ensure they fit your ethical choices as well as match<br />

your skincare requirements. Don’t worry if the labels look<br />

confusing - we can help you.<br />

SPRING IS IN SIGHT<br />

Kates Top Tip : Don’t leave houseplants on<br />

windowsills behind the curtains on frosty nights,<br />

especially if your windows are not double-glazed.<br />

This month there are signs of the<br />

approaching spring, with bulbs<br />

appearing and wildlife waking up<br />

as light levels and temperatures<br />

increase.<br />

General<br />

There’s plenty to do indoors this month to prepare<br />

for the season ahead.<br />

Outdoors, as the garden comes to life again, it’s time<br />

to prune shrubs and climbers, such as Wisteria as<br />

well as evergreen hedges.<br />

Sowing and planting<br />

Lily bulbs can be planted in pots, for flowers this<br />

summer. After growing on indoors or in a cool<br />

greenhouse, they can be moved onto the patio when<br />

in flower, so that you can enjoy the blooms.<br />

Bulbs coming up in the rock garden or in containers<br />

may benefit from overhead protection from the<br />

rain and snow. A sheet of glass or Perspex placed<br />

on piles of bricks will do the job. Sweet peas can<br />

be sown under cloches, in a cold frame, or in a cool<br />

room in the house.<br />

Any sweet peas that were sown earlier in the autumn<br />

can now be potted.<br />

spectacular that is the Super Bowl! I’ve<br />

always been a fan of “the greatest show on<br />

turf” but with the fantastic live coverage<br />

of NFL Red Zone on Sky Sports Mix every<br />

Sunday evening and the excellent BBC<br />

analysis programming I’m more invested<br />

than ever plus with more games held at<br />

Wembley and a blossoming domestic league,<br />

UK interest is at an all-time high.<br />

The night of Sunday February 3rd will see<br />

the Champions of the NFC & AFC divisions<br />

face off at the sold out 80,000 seater<br />

Mercedes-Benz arena in Atlanta, the match<br />

ticket alone would you over £5000 so best you<br />

follow my example, join the 160 million global<br />

television viewers and host a Super Bowl Party!<br />

Coverage starts on BBC One from 2330hrs<br />

and will run past 4am on Monday morning,<br />

consider booking Monday off! With the holiday<br />

request confirmed you can make a night of it<br />

so get the gang round but you must cater a<br />

solitary bag of Doritos won’t even see kick off!<br />

The take aways won’t be open at that hour<br />

so you’ll have to conjure something up to see<br />

you through the 5 hour sporting extravaganza.<br />

Nobody is expecting any Michelin starred<br />

Heston magic but if you want the party to be a<br />

success, then put the effort in.<br />

American football has multiple game play<br />

stoppages so there are opportunities to throw<br />

some pizzas in the oven, breakout a platter<br />

of sandwiches, or even something more<br />

Keeping the troops hydrated is a fine balance,<br />

such a sporting occasion at Casa Action<br />

Man calls for a few beers but too many and<br />

I’ll be examining the backs of my eyelids by<br />

the second half, a gatorade or two may be<br />

required, especially if we head into overtime<br />

but do remember that you’ll want to sleep,<br />

eventually!<br />

A few decorations also help set the mood, the<br />

Pub/Garage will be dressed accordingly with<br />

a multitude of Super Bowl Party paraphernalia<br />

available through Amazon.<br />

Be courteous! Not just a gracious host to<br />

your guests but do consider anyone in the<br />

household and your neighbours who might<br />

prefer to sleep during the small hours of the<br />

morning, if that’s the case do try to keep the<br />

whooping, hollering and singing along to the<br />

Maroon 5 half-time show down to a minimum,<br />

if you do annoy the significant other you’ll<br />

have to go big on the 14th to make amends!<br />

If you like the action and think you could do it<br />

then why don’t you give it a go? Bury Saints<br />

American Football team have just started their<br />

pre-season training and welcome new player<br />

even with no experience, search for them on<br />

twitter and Facebook.<br />

Foals have announced dates as part of Forest Live, the summer<br />

concert series organised by the Forestry Commission.<br />

From playing chaotic house parties in their<br />

home city of Oxford to becoming major festival<br />

headliners across Europe, Foals’ trajectory has<br />

been remarkable. They’ve earned critical acclaim<br />

(NME and Q Award wins, plus Mercury Prize,<br />

Ivor Novello and BRIT Award nominations)<br />

and fan devotion (1.7 million sales of their four<br />

Gold-certified albums, plus over half a billion<br />

streams at Spotify since 2015) in equal measure.<br />

And while the majority<br />

of contemporaries have<br />

fallen by the wayside, Foals<br />

continue to hit new peaks.<br />

After more than a decade<br />

in the game, Foals again<br />

embrace that love for the<br />

unconventional with the<br />

bravest and most ambitious<br />

project of their career: not<br />

one, but two astonishing<br />

new albums: ‘Everything<br />

Not Saved Will Be Lost’.<br />

A pair of releases, separate but related, they<br />

share a title, themes and artwork. ‘Part 1’ will be<br />

released on March 8th, with ‘Part 2’ following in<br />

rehearsal space before exporting<br />

those sketches into the recording<br />

phase at 123 Studios, Peckham,<br />

with the assistance of engineer<br />

Brett Shaw. They’d repeat the cycle<br />

between the two spaces, effectively<br />

creating an ongoing feedback loop<br />

as they sought to push every new idea to the<br />

finish line.<br />

FOALS - FOREST LIVE<br />

Profoundly tethered but possessing their own<br />

personalities, the two bodies capture the most<br />

compelling, ambitious and cohesive creations<br />

that Foals – completed by Jimmy Smith (guitar),<br />

Jack Bevan (drums) and Edwin Congreave (keys)<br />

– have ever produced.<br />

Eager to break the traditional pop song structure,<br />

the 20 tracks defy expectation. There are<br />

exploratory, progressive-tinged tracks which<br />

occasionally break the 10-minute mark alongside<br />

atmospheric segues which make the music an<br />

BESSIE TURNER<br />

MUSIC<br />

Bessie Turner is a singer song writer based<br />

in East Anglia.<br />

Her style is an eclectic pastiche of her<br />

musical heroes; she is influenced as much<br />

by Lauryn Hill as she is Dionne Warwick.<br />

Yet it is her own uniqueness – in both her<br />

personality as well as her music – that sets<br />

her apart as an artist and performer. Her<br />

voice rings with a soulfulness that floats<br />

like a cloud; wistful, effortless and above all<br />

charming.<br />

Bessie released her debut single Big Sleep<br />

on her own label in April 2017 to entirely<br />

unexpected acclaim; the song was viewed/<br />

streamed more than 10,000 times in the<br />

first 12 hours of her existence as a recording<br />

artist. With support from BBC Introducing<br />

and after performing a live session for BBC<br />

Introducing in Suffolk the single wound up<br />

with plays on BBC Radio 1 and 6 Music. Six<br />

weeks into her career Bessie Turner was<br />

asked by BBC Introducing to appear at<br />

Latitude festival.<br />

Her second single ‘Words You Say’ was<br />

released In September 2017. It received<br />

its world premier from Jo Wiley on BBC<br />

Radio 2. The song has gone on to be played<br />

extensively by Jo Wiley and Zoe Ball on<br />

BBC Radio-2, Steve Lamacq on BBC Radio<br />

6 Music and Huw Stepehens on BBC Radio<br />

1. In December 2017 Bessie was invited to<br />

perform a filmed live session at London’s<br />

legendary Maida Vale Studios for Jo Wiley<br />

and Radio-2. The following month she<br />

recorded a stripped back set for Steve<br />

Lamacq’s Radio 6 Music show.<br />

Bessie Turner’s debut EP 22:22 was self<br />

released on Don’t Try in April 2018. The<br />

same month she headlined her own run of<br />

UK and EU shows well as supporting Baxter<br />

Dury on selected dates of his tour.<br />

Bessie was invited to headline the BBC<br />

Introducing Stage at Latitude 2018 where<br />

she also performed live on Zoe Ball’s Radio<br />

2 show to millions of listeners worldwide.<br />

In August 2018 she headlined the BBC<br />

Introducing stages at Reading and Leeds<br />

Festival.<br />

She is currently working with Grammy<br />

winning producer Richard Woodcraft on a<br />

follow up to 22:22.<br />

In May 2019, Yuself / Cat Stevens is set to reissue<br />

‘Back To Earth’ in various formats<br />

In 1978, after having sold millions<br />

of records and become one of the<br />

biggest international artists of the<br />

1970s, Cat Stevens decided to step<br />

out of the rock star spotlight and<br />

walk away.<br />

That year, he was to release<br />

his final album under that<br />

name.<br />

While Stevens’ legions of<br />

fans were saddened by<br />

the news, along with the<br />

musicians who had played<br />

with him on record and<br />

stage, the singer himself<br />

was exhilarated by the<br />

prospect of moving on.<br />

“It was like going back to<br />

my original nature,” he reflected at the time.<br />

“Back to wide-eyed childhood again.”<br />

The appropriately-titled Back To Earth was his<br />

parting gift: an album that saw the Londonborn<br />

singer saying farewell to his fans, while<br />

obliquely explaining his decision to quit in<br />

songs such as ‘Last Love Song’ and ‘Just<br />

Another Night’.<br />

In 2019 Back To Earth is to be reissued in<br />

various formats on Cat-O-Log Records/<br />

BMG, including a deluxe boxset featuring<br />

the original album (remastered at Abbey<br />

Road), along with demos, unreleased tracks,<br />

and material from UNICEF’s 1979 Year Of<br />

The Child concert, the singer’s last live<br />

performance as Cat Stevens. The release<br />

marks the first in a series of reissues and<br />

expanded editions that will cover Yusuf / Cat<br />

Stevens’ entire recording career, spanning a<br />

remarkable five decades.<br />

Upon its original release, Back To Earth<br />

received rave reviews.<br />

Cat Stevens had been thinking<br />

long and hard for some time<br />

about quitting his music<br />

career. Aside from general<br />

disillusionment with fame,<br />

the singer had experienced<br />

a spiritual epiphany after<br />

being caught in a rip current<br />

and nearly drowning when<br />

swimming in the Pacific Ocean<br />

three years earlier. Crying to<br />

the heavens, “If you save me,<br />

I’ll work for you,” he was rescued by a gentle<br />

wave which carried him back to the shore.<br />

What he calls his “gradual awakening”<br />

and decision to become a Muslim in 1977,<br />

changing his name to Yusuf Islam, was<br />

sparked by his brother gifting the singer a<br />

copy of the Quran for his 27th birthday. “I had<br />

discovered a new way to view the universe,”<br />

he explained back then. “Like a kid who had<br />

travelled by spiritual rocket to an exciting new<br />

world.”<br />

A NEW ADDITION IS ON IT’S WAY...<br />

Well, I don’t know? First<br />

cats, then chickens and now<br />

something called a baby?...<br />

Apparently i’m going to have a new little brother or<br />

sister, but I will have you know, I am still going to be<br />

top dog I will have you know! Uff!<br />

So this month in honour to the new addition, here<br />

are a few of my top tips for introducing your new<br />

baby to your four legged best friend!<br />

Make gradual changes to your dog’s routines:<br />

Such as a change in where the dog sleeps or when<br />

he gets walked — before the baby comes home,<br />

so that the dog will not associate the changes<br />

with the baby. Go through the baby’s routine<br />

before the baby arrives, including changing,<br />

feeding, rocking and walking with an<br />

empty stroller.<br />

Acclimate your dog to baby smells: Once the baby<br />

is born, bring an article of the baby’s clothing or<br />

a baby blanket home so the dog can get used to<br />

the infant’s scent.<br />

Give your dog plenty of attention when the baby is<br />

around: You don’t want him to decide good things<br />

only happen when the baby isn’t around.<br />

Have “safety zones” for the dog: A safe zone is a<br />

private space – a crate, a bed, a gated laundry room,<br />

where he or she can get away when the activity is<br />

too much for him or her.<br />

Lessen the amount of play and attention you give<br />

your dog before the baby arrives: You do not want<br />

to “last minute” lavish your dog with affection, only<br />

to have it stop when the baby comes home.<br />

Play a tape recording of various baby sounds:<br />

Do this in your house for increasing lengths of time<br />

so your dog can adjust to the new sounds before<br />
