Slow Cooked Creole Chicken<br />
An ideal recipe for a slow cooker - prepare in the morning for a delicious meal, ready for when you get home. If you<br />
don’t have a slow cooker you can place all the ingredients into a casserole dish and place in the oven on the lowest<br />
heat for 2-4 hours or until cooked.<br />
Ingredients<br />
4 skinless, boneless chicken breast fillets<br />
Salt and pepper to taste<br />
Cajun seasoning to taste<br />
1 (400g) tin chopped tomatoes<br />
1 stalk celery, diced<br />
1 green pepper, diced<br />
3 cloves garlic, minced<br />
Method<br />
Serves 4-6<br />
Place chicken breasts in the dish of a slow cooker.<br />
Season with salt, pepper and Cajun seasoning to taste.<br />
<strong>St</strong>ir in tomatoes, celery, green pepper, garlic, onion,<br />
mushrooms, green chilli and sliced artichokes.<br />
Cook on the Low setting for 10 to 12 hours, or on High<br />
for 5 to 6 hours<br />

100g mushrooms, sliced<br />
150g jar sliced artichokes<br />
1 fresh green chilli, seeded and chopped
