B<strong>as</strong>ic Crust <strong>Recipes</strong><br />

A good pie crust is the hallmark of any pie, so here are two tried-and-true pie crust recipes<br />

that can be used with all of <strong>our</strong> fillings. First, choose the recipe you wish <strong>to</strong> bake and prepare<br />

the recommended crust <strong>as</strong> directed. All of <strong>our</strong> recipes call for one 9-inch pie pan.<br />

Cl<strong>as</strong>sic <strong>Pie</strong> Crust<br />

This will make <strong>to</strong>p and bot<strong>to</strong>m pie crusts, or two bot<strong>to</strong>m pie crusts for open pies. Any lef<strong>to</strong>ver dough can<br />

keep in the freezer for up <strong>to</strong> three months.<br />

Ingredients:<br />

1 cup butter<br />

2/3 cup white sugar<br />

1 egg yolk<br />

3 cups all purpose fl<strong>our</strong><br />

Pinch salt<br />

¼ cup cold water<br />

Cream butter and sugar. Mix in the egg yolk. Add all-purpose fl<strong>our</strong>, a sprinkling of salt and about ¼ cup<br />

of very cold water. Knead in<strong>to</strong> a crumbly mixture. Press about one half of the mixture in the bot<strong>to</strong>m and<br />

up the sides of a 9-inch pie pan. Or roll out half of the dough in<strong>to</strong> a 1/8-inch-thick circle and place in pan.<br />

Crimp edges with fingers.<br />

When the recipe calls for a baked pie crust, bake the dough for 15 minutes or until golden brown at 350ºF.<br />

Crumble or crumb <strong>to</strong>pping is used for the <strong>to</strong>p of some pies in this book. It’s made by loosely patting the<br />

small pieces of dough over the entire pie filling.
